    Will be having pizza with friends and watching a movie at my place tonight.  My house sitter is coming and wants meat.  I want anchovies.  The two are not allowed to touch each other.

    I am looking for a few cheap, easy freezable casseroles to leave for him.  I've decided to adopt him, I like him so much.  But he's getting vegetarian casseroles.  I figure mac and cheese and then enchiladas.

    Still a beautiful day here in New England

    This is a hit in my family. Potatos o'brien frozen 1 bag. 1 can creamed corn.

    bacon or sausage. Veggie subs works too

    combine and bake or nuke til potatos are done. Sounds bad but tastes great. You can up nutrition by including sweet potatos and it really is good. Cheap and easy. Leftovers just add milk or cream or soy milk to make soup. But I never have enough to make soup.

    I was glad to hear that Michelle is up for pizza...and Susan, that is awesome news on the PET/CT.

    Not much going on here other than car repair stuff.

    I haven't figured out anything for dinner yet.   I do have the sourdough warming up, so most likely, it will be biscuits with "something else".

    Dinner tonight was a slice of Americana. Fried chicken thighs, garden tomatoes just sliced, steamed green beans and baked local corn. The peach clafouti just came out of the oven [local peaches] and we will all enjoy a spoonful or two in a little bit. Mr. 02143 remarked "I love how we can move from India, to the deep South, to Greek [tomorrow] in three days without any jet lag."

    Kids will return home from a wedding weekend late tonight. The four-legged, hairy housemates can't wait.

    susan - yay for the good PET scan!  Love Mr. 02143's comment about the jet lag!

    laurie - DH2?  I am assuming you meant DS2, unless there is something you want to tell us.....  hope you are all feeling better.

    Dinner tonight was leftover ribeye, sliced thin and combined with carmelized onion and BBQ sauce on kaiser rolls served with leftover rice and broccoli.  DH says he wants ice cream.

    Susan, I too enjoyed Mr 02143's clever comment. Peach clafouti??? Oh my....be still my heart and tummy!



    According to DH who returned tonight, I am probably on for making that fancy dinner in May since there is some other conflict in Jan when the board next meets. May seems nice and far away. ;)



    Cooked most of today....roasted lots of stuff, tomatillos (will try a roasted salsa this time), onions, several colors of peppers, eggplant, and several sizes and colors of tomatoes. the whole effort was a bit haphazard, but I got it done. Then I made a corn, leek, red pepper, potato chowder, which tastes pretty good. I used the stock I made with the green tops of the leeks (drives me crazy to chuck those), and I added some chicken flavored "better than bouillon" for a bit more flavor. Looking forward to having it tomorrow!



    Tonight we went to a casual town fundraiser (auction of painted Adirondak chairs)where the refreshments were great......huge fruit tray, delightful array of sandwiches on focaccio, (sp?)and plenty of tasty finger desserts.

    Comfort food today, chicken with homemade noodles. I also tried something new for me. Although I make bagels regularly, I've never made pretzels, so I did. I love 'em. So pretty and very easy. I'm a little embarrassed to say that it took me a few minutes to figure out how to shape a pretzel. I know very well what one looks like but recreating it was something else until I Iooked at a picture. It was a duh moment to be sure. Now I'm looking for a good beer cheddar horseradish dipping sauce.



    Dh has requested hand pies. He has discovered that he can eat one without doing too much damage to his diet. Fortunately I have pastry crust and fillings already made up in the freezer. It'll be easy to make him a happy man today.

    I don't remember if it is Nancy or Susan that posted the minestrone soup recipe?  I was just looking at it as I plan to head to the store and make it this week.  Is there really no broth?  Just H20?

    It was Nancy and, yes, there's broth/stock in the recipe. I've made it several times sometimes adding things like browned sausage and chick peas, etc. Sometimes not. It is delicious!! The recipe is back on page 352 (just change the page number in the url) or do a search on auntienance with Minestrone as the subject and it should come up.



    I noted that Nancy had said in a later post to not add the pasta to the soup but to cook it separately so it doesn't soak up all the broth in the leftovers!

    Laurie, the recipe calls for vegetable or beef broth. I use beef.

    I wonder where the heck I got 4 cups of water? 

    We are sauteing up the last of the garden veggies- zucchini, squash, green pepper, eggplant with some mushrooms and onions, adding some grilled chicken and making pockets out of it for dinner.

    I can't wait to try the soup!  I am going to the store tomorrow I think....

    We are in the same boat of using up the last produce from the garden!



    Made Tyler Florence's Roasted Tomato Soup last week and liked it so much that I made a repeat batch to freeze (minus the cream which I will add when warming it up to eat later). May actually do one more batch of that. DH harvested his jalepenos and made them into poppers some for the freezer and some he and DS are eating watching football.



    It is cold here today and aside from a hoped for Indian Summer, things outdoors are winding down. Now, if someone would just break the news to the lawn that we would like to be done mowing, that would be nice..lol!

    Yay, Joyce, for being such a good friend to Michelle!  Glad to hear Michelle has an appetite for pizza.

    I'll have to look up the minestrone recipe.  I make beef vegetable soup with noodles but have not ever made minestrone.

    I cooked red beans with andouille sausage and Boston butt roast for Sunday dinner at my mother's house.  Also made a garden salad and heated up some bought garlic bread.  I forgot to take my brown rice I'd cooked so dh and I had to eat the white rice my mother cooked in her rice cooker. 

    Eric, hope you have/had fun kayaking.  I love to see people kayaking.  And nothing makes a prettier picture than kayaks pulled up on the shore of beautiful water.  I have lots of those pictures!

    This soup always fills hungry bellies and is perfect on a chilly fall day!    2 garlic cloves, minced  2 carrots, peeled and cubed  1 cup butternut squash, peeled and cubed  1 small sweet potato, peeled and cubed*  ½ yellow onion, quartered  2 tablespoons extra virgin olive oil  4 cups chicken stock, store-bought or homemade  2-3 cups leftover shredded chicken or 1 pound uncooked chicken breasts  ¾ teaspoon dried parsley  1 teaspoon sea salt  ½ teaspoon dried thyme  ½ teaspoon dried rosemary  ¼ teaspoon dried oregano  ¼ teaspoon cracked pepper  1 cup water  2 cups baby spinach  *For SCD, eliminate the sweet potato and increase the butternut squash to 2.5 cups    http://www.againstallgrain.com/2013/01/30/leftover-roast-chicken-soup-with-roasted-vegetables/

    Instructions
    1. Preheat oven to 425 degrees F.
    2. Toss the vegetables in the olive oil and sprinkle with salt and pepper. Roast for 20 minutes, until the vegetables are tender.
    3. Meanwhile, bring the chicken stock to a simmer in a large stockpot. Add the chicken, herbs, and salt and pepper. Cover and cook while the vegetables are roasting, about 15 minutes. For raw chicken breasts, cook for about 45 minutes, until chicken is cooked through and tender enough to shred with a fork.
    4. Add half the vegetables to the soup, and place the other half in a blender. Make sure to put all of the onions quarters into the blender. Puree the vegetables with the 1 cup of water.
    5. Add the vegetable puree and baby spinach to the soup. Simmer for 5-10 minutes, until the spinach is wilted and the soup is hot. Adjust seasonings to your taste.

    Deb, I'm going to try that recipe.   Just curious..what's SCD?

    Sharon and I were out on the lake about 5 hours.  The wind was probably 15-20mph and the swells made the kayaking a bit of a challenge...and a lot of fun.

    Sharon would sometimes go alone if I couldn't go with her.  Unfortuately her BMX and axillary node dissection ruined her ability to get a kayak up onto the rooftop carrier...which meant she couldn't go unless I could go too.   The trailer I put together makes it easy for her to load the kayaks on her own.  To say she is excited is an understatement.

    A search for debbie's Belgian chicken recipe last night sent me down memory lane.  I went back and read some of the early pages of this forum.  Michelle was there among the first "regulars," along with Apple.  I wonder what happened to some of the others like Naturegirl and Iago.  I remember that I read the posts daily but did not join in at first.

    I found the recipe and saved it.  Debbie, if you're reading this, why Belgian beer instead of some other kind? 

    Joyce, your report, though not surprising, makes me feel very sad.

    Dinner will be leftovers from yesterday's dinner.

    Joyce you are in my prayers too. Its so hard to lose a close friend. The news about Michelle makes me want to cry. But I am glad her family and friends are there for her. May they all have the strength to get through this with love to guide them.

    Joyce, yes thank you so much for letting us know about Michelle. My heart just sank. I'am so very sorry I know how close you are, and so sad and sorry for her family. And sad for all of us here who know her. I took a picture of her the other day on FB where she is wearing the bunny outfit, she looks so darling and cute. It will stay on my cell phone pictures forever! Sending love, strenght, peace and Hugs!

    Carole- I also like Laurie have used other beers as well, but for me personally I think the dark beers give it the best flavors, I have used guinness, tried  coors light but it didn't have the true flavors the darker beer give it. If you go to any store just find a dark beer like a stout or ale and it will work.

    Susan- Glad to hear your scans were clean

    Eric- I think SCD stands for soup complusive disorder? Just kidding of course!

    Cuban sandwiches for lunch today, dinner tonight will be sloppy joes with sweet potato ff and brownies for dessert.
