So...whats for dinner?

Missed a few weeks. Just tired. Must be low magnesium again. Deb, hugs. 2nd, glad you managed a good evening. Those are sometimes hard to come by. I'll be married 40 years later this year. , yep, 20 happy years! LOL it is what it is. My DH surprised me by being there for me during tx. I ate a salad for supper, even though raw veggies give me problems still. It tasted so good though.
Much love to all. -
option 1: cheese quesadilla's for the kids and BLT for me. (maybe Sun)
option 2: homemade froozen lasanga and rolls. (maybe Sat)
One will be Saturday and one will be Sunday depending on my mood.
Have a good weekend. My bone scan yesterday was clear so I am one happy girl!

-
Last night was a perfectly grilled burger on an English muffin with a HUGE salad. The preparation for tomorrow's party begins today. I will make some of the dressings for the salads, whip up the butter and make the potato salad. Potato salad is always so much better on the second day. Yesterday, I washed all the serving dishes and lined them up. They will just barely fit on the buffet table [i.e. my husband's client table.] Who knows what we will eat today. When you spend the day chopping and dicing, food isn't actually very appealing to eat. So, we shall see.

Jen, yay for happy clear bones!
Moon glad you checked in....and that DH supported you through treatment.
Susan, you never cease to amaze me! Enjoy your celebration.....:)
Was home by myself last night since I'm still recouping from this virus, (feels a bit better this morning)and decided not to go with DH to his board meeting in the Berkshires. He facetimed with me and took me through a tour of the new kitchen I will be cooking in this September. Yikes! Did I actually promise to do that?!
So for my solo dinner I sautéed some mushrooms and onions with garlic and topped a store bought (not frozen) cheese pizza with those veggies and some extra parmesan. Turned out pretty good along with an easy cuke/scallion salad. DH will enjoy the leftovers when he returns.
Hopefully, tomorrow I will rejoin the human race and attend our friends' graduation party at a French restaurant in Back Bay. These friends are from Paris, so I'm suspecting that this restaurant should be close to authentic.
Have a good Saturday everyone..... -
Jen, I second the hurray for a good bone scan! It's not fair that you should be worrying about such things at your young age.
Susan, take a picture of your buffet table with the food and share it with us. Your guests are in for a tasty celebratory meal.
Moon, it's good to hear from you.
I'm feeling a little tired this morning. Our dinner guests stayed later than my usual bedtime. I didn't even get all the cleanup done. Tonight's dinner may be hot dogs at the Abita Opry, the last performance of the short season.
-
Last nights dinner was dan dan noodles with stir fried veggies. It was quite spicy, my mouth is still tingling. We're leaving town for a few days Monday, so I need to use up stuff. I think tonight I'll use up the leftover poblano and Anaheim peppers and make a pork and green chile stew over rice.
Lacey, I hope you get over your virus soon. Susan, good luck with your party, I'm sure the food will be awesome. Jen, congrats on your clear scan! Monica, hope you get your energy back soon. Here's an extra ((hug)) for everyone I missed! -
Carole, what is an opry? And Nancy, where did you get those spicy noodles?
Jen: clear bones! Yes! That amazingly good news.
-
Bobo, an "opry" is a countrified version of "opera." You've heard of the Grand Ole Opry in Nashville. Abita Springs is a tiny village on the northshore (of Lake Pontchartrain). It has the Abita Opry, held in the Abita Springs town hall. Four different performers or groups of performers are on the program and each gets 30 min. to entertain the gathering.
The performances are sold out. The master of ceremonies is a past mayor of Abita Springs. There's a food concession with limited offerings. Home-made chicken gumbo and rice, homemade bread pudding, hot dogs with chili, and cookies and cake made by some of the local women. The profits go to various local organizations or school clubs. It's all very small town and fun. The average age of those attending is at least in the 60's. Some of the musicians are from New Orleans and are quite good. Others not as good.
I watched Martha Stewart and her guest make pasta today. I will have to look into a pasta attachment for my Kitchen Aid mixer.
Bobo, how are you liking your VitaMix? Is it worth the cost? I'm still undecided about spending that much money for a blender.
I'm missing all the folks who aren't checking in. Hope you're all doing ok.
-
Kids had the quesadilla's and I ended up eating cereal with strawberries. The hour of biking wore my butt out!
-
Bobo, the noodles themselves (udon) came from an Asian market. I made the dan dan.
Carole, I would love to have the pasta attachments for my kitchenaid, but I think they're way too expensive. My stand alone maker was a fraction of the cost. -
Okay, I'm going to need the Dan Dan recipe. I don't even know what it is, but I feel I need it.
Carole, I thought that might be an Opry! Wow. It's worth it just for the food! I love my Vitamix so much; it is a wonder. It comes with a fantastic cookbook. I never say that about appliance cookbooks. And if you like smoothies at all, or milkshakes, or Starbucks Frappuccinos... you've got to have one. In fact, Starbucks actually uses the Vitamix!
Best thing: you put ingredients for soup in, put it on for 6.5 minutes, and... the soup comes out hot! The Vitamix -- the action of the Vitamix -- heats it up!
Nancy, it makes the best easy pasta sauces -- with fresh tomatoes, or pesto, or cheese sauce that you could pour (hot) onto macaroni, then top with buttered bread crumbs and just whoosh it in the oven!
Sincerely,
Vitamix lady
-
Deb. Hugs to you. Like I've said before, I never know what to say at times like this. Probably because there isn't anything magic to say.... prayers to you....
Lacey, get well soon.
Jen, clear scans...that's almost the best news...To me, the best would be finding out the cancer stuff was just a bad dream that really didn't happen.....
Bobo. I saw your comment about running. I used to run, quit, gained almost 70 pounds and started to run again. I've managed to lose about 40 pounds. My pants went from 40 inch waist being tight to 36 inch waist being comfortable. In college, I wore 32s or 34s, depending on the pants.
All the talk of less than supportive husbands makes me wonder about myself sometimes. I wonder if I'm just like "them". I hope not and I try not to be. I guess that I think about it is a good sign.
Last year we didn't go camping...something about BC, surgery, chemo, radiation, etc..... This year we're all planning to get out into the "boondocks". So, I pulled down the lanterns and stoves (Coleman). I knew one stove worked..I had used it to cook the waffles. The other stove and two lanterns fell victim to stale gas. I hadn't emptied the tanks out and after two years, the gas went stale and turned into a nasty goo that clogged things up. I spent the afternoon cleaning and rebuilding the stove and two lanterns. Most of the stuff is about 30 years old and is still going strong...despite my screwup.
Hugs to everyone I missed.... Off to cook some ground buffalo. I'm trying to get the grilling in before it gets too hot. Later in the summer, it's almost hot enough to grill without firing up the grill.... :-)
Eric
-
Just sayin Eric, your being on here for Sharon kinda precludes your not being there for her! LOL that's one thing you don't have to worry about. How do your clean your stove out? I think mine might have the same problem. I wasn't the one who put it away last year! Can you pm me?
Just had a hamburger today. Much love to all. -
BoBo, you are the best marketer ever! If I ever invent a cool kitchen appliance I will give you a free one to showcase!
I love my Vitamix also, tho I probably use it less than you....love making my smoothies in it every other morning (I save one for the second morning to avoid the time consuming task of gathering all the veggies, fruits, nuts). By the way, if you like green smoothies, (I use cruciferous vegetables, and carrots along with, orange, apple, blueberries, banana, walnuts, chia seeds)they are even more appetizing if you add a raw beet....makes it such such a beautiful raspberry color! Of course only if you like beets....;) Bonus.....they are reputed to be good for your liver! But, oh, the color! Yum.....
Eric, somehow I doubt you could qualify for a negligent husband or father! I mean really.....baking a zillion cookies for your wife's classes! And yes, self-awareness/self monitoring counts for a lot. Your comment about the late summer heat has me picturing you frying eggs on the sidewalk in one of your restored pans.
Nance, is your pasta maker one of the crank variety? I think someone gave me one many years ago....still in the box....somewhere.I should get it out and have a flour fest! -
Hi everyone, just checking in...we went out to dinner last night at The Daily Catch at Boston Harbor. It was one of those discount coupons...the dinner was very reasonably priced but the food was not very good. I had linguine with red clam sauce and the clams were chopped up in the sauce and very rubbery...ick. The folks who chose swordfish or tuna were happier with their meals although nothing was served hot.
I'm feeling well - no nausea so far from Wednesday's treatment. And my energy level is not too bad - I actually went shopping for a bit yesterday plus had lunch at Ruby Tuesday's...I love their fruit teas.
Carole - when we lived in Missouri we had an Opry Hall about 45 minutes away in Kansas. The talent was fabulous and we took my mom a few times because she just loved it!
Speaking of Missouri, our tenants told us they are going to stay in our house for 3 more years...yay. The bad news is that both air conditioning compressors failed within 24 hours and it's a $6000 replacement! Oh well, they are 19 years old so it was bound to happen.
-
Bobo, the version I make uses ground pork, but here is a vegan recipe for dan dan:
http://mobile.seriouseats.com/recipes/2013/02/vegan-dan-dan-noodles-recipe.html
Eric, not to worry, I think you come under the "mighty good" category ;-) -
Eric, I had to smile at your worrying about being a non-supportive husband. You might worry instead about not doing enough for yourself.
Nancy, you're right about the KitchenAid pasta attachments being expensive. Actually the attachment for rolling and cutting two long pasta shapes costs as much as the mixer itself.
Wow, bobo, you're a real advertisement for the Vita Mix. I don't doubt the brand is the best. It's used in restaurants and bars.
Today's main meal will be lunch following attending church with my mother. She and I will drive to Loranger, LA, about 30 min., to have the buffet at Chris's Restaurant. It features hi-cal hi-fat southern favorites like crispy fried catfish fillets, fried chicken, roast beef and gravy, chicken and dumplings, lots of overcooked veggies, some of them "smothered." Also a small salad bar. Dessert comes with the meal. I just gained a few lbs. listing the menu!
DH will stay home and watch Nascar, golf and whatever and eat whatever he chooses to eat, leftovers or take-out sandwich from Subway or a nearby gas station that makes great poboys.
-
Lacey and Luv RV -- how are you both feeling? Thinking of you guys today. I just ate humuus with rice crackers and fresh blackberries.
Lacey, I need your cruciferous veg with beets smoothie recipe! Don't tell me you just make it up.
There is always the danger of putting too many vegetables into the smoothies -- then they come out chewy. And do you add a little ice? And when? Have chia seeds standing by...Nancy, many thanks for my Dan Dan recipe! I love all things to eat that are any kind of Asian -- Vietnamese, Japanese, Thai -- well, I don't love Chinese. Too heavy.
Carole -- well said about Eric! Eric, I hear your warning regarding not running. I must say, though, I have no energy at all. Ate all this protein right after surgery -- and counted everything -- but now I'm just grazing, and I'm working so much, and I have no stamina. Don't quite know how to ramp up to it.
I made a six-minute chocolate cake to take to our friends' house -- her birthday -- and I made a cream of mushroom soup this morning that DLLP and I will have tonight, later. After I whoosh it up first in... you guessed it... the Vitamix.
-
I read some of the other forums on here and it seems unsupportive spouses are talked about a lot.
I guess I do a lot of things...I also want to make sure I don't turn into the dad in Hary Chappin's "Cat's in the Cradle" where dad got so busy providing stuff that he didn't provide himself.
-
Eric- You are so aware and supportive. Tour wife and DD are lucky to have you!
Carol- Congrats on the golf win!
Sorry I haven't been on and I know I am missing a lot of you
Things have just been busy with spring and playing outside so much. Between kids, the house, the yard and getting ready for a camping trip this weekend. I don't think I have stopped for a minute and this week will be much of the same. This morning we went to a carnival that they put on at a local school and the kids had a blast. We were there for over 2 hours. They had games that the kids would win tickets to pick out prizes at the end and they had craft projects and face painting etc. Now I have to go to my brothers for an afternoon BBQ which I had completely forgotten about!! The Bruins are on at 3 so I am not sure how long I will stay. We got the pool opened this weekend and in less than 24 hours DH got it crystal clear, psyched!! For food it was a regular week with nothing too exciting last night was grilled chicken sandwiches. I am already trying to put my menu together for camping and am thinking of trying to do an orzo pasta salad. Ok- I have to run but for those of you not on facebook this is the most recent update from Debbie- Went to Grants pass to see my Dad, he was in the hospital for 10 days, he came home yesterday. I love my dad so much, while there we also saw some good friends for dinner at my brothers restaurant and some nice talks with my brother who I love a lot! Chuck is doing better still using the cane and having minor head aches, but starts therapy next week, we are hoping that will help. Much love to everyone. -
Eric, yes that song was always disturbing to me....probably b/c my dad was always super absorbed in his corporate career. I hardly think you have to worry about giving of yourself in your family. My DH was more focused on family needs once we started to have kids and gave up a partner track high travel job so he could be an available father/husband. We made some financial sacrifices at that time, but for me that sure beat being a basically single mom to two active boys! And our adult sons grew up with a solid caring role model....except for his lack of cooking skills!

OK BoBo....here's a for instance smoothie that I made this AM. I do not measure anything very much:
a few brussels sprouts,
a carrot (I peel it since I'm a germ phobe),
a few kale leaves (I leave the spine out, but I suppose it would get ground up if included) (spinach is great if no kale is around)
about a tablespoon chia seeds
a beet, cut in chunks
half a banana
an orange without the skin (you could try including the skin I guess)
an apple without the core (my preference)
half cup or so of frozen (or fresh) blueberries. Today I used some frozen that I picked last August!
some frozen pineapple (Trader Joes sells a great bag of cut up pineapple)
some nuts...today I used almond slivers since I was out of walnuts
I add about five ice cubes and some non-pulp orange juice and blend away.
Todays mix made four glasses of a beautiful raspberry colored smoothie that was delightful. Shared one with DH and am hoping that sealing the others up in the refridge doesn't result in too much nutrient loss for the next couple of days.
So you can make much less....and honestly you can put just about anything you want in your smoothie, and make it much smaller if you are not into the saving thing. Have fun!
Thanks for the well wishes. My cold seems much better....but Jeeze, I have not had allergies like this since I was a kid. Please....some rain!, I need the air to clear so I can go out of the house. I have been housebound for the last few days to avoid the pollen filled air....and have missed some beautiful weather!
Tonight ( hopefully after a rain shower;), we are headed to our Parisian friend's daughter's graduation celebration at a little French Bistro in Boston. I'm eager to see what this restaurant is like...had never heard of it....but I trust their judgement since they would know what is close to authentic French! Plus I'm looking forward to seeing them after bagging out of last Thursday's dinner.
Hope all you midwest folks are staying safe today given the serious storm forecasts. -
Laurie, so good to learn that you are going to head out in that new camper!! Yay! Orzo salad sounds perfect for the trip. Love those little kid school fairs.:)
Go Bruins! (from the daughter of a former absolutely crazed Rangers fan) -
bobo - I admit I always liked even the Americanized Chinese food served by the majority of restaurants courting the American pallet, things like you find on your average combo plate. I came to love it when I was introduced to the lighter items like beef broccoli which is served with simple pan juices. Also Mongolian or Mandarin style dishes tend to be lighter than the typical Cantonese (which is the style in our Americanized restaurants).
The friend and co-worker who introduced me to the lighter fare is a Chinese whose family comes from the northern part of China, or the Mandarin speaking area. He not only taught me how to order from a menu but invited me to his home for dinner where I ate foods I had only read about and some I had never heard of. Edited to add: It was fantastic, one of the most memorable meals of my life.
-
Chabba: you are totally right about the real Chinese food. I find it doesn't resemble what I've eaten in the past at all.
Lacey -- I literally clapped when I saw your smoothie recipe! Do you add any water? Like 1/2 cup?
Laurie -- no worries about not posting. I have been in your shoes. You are incredibly well-put-together socially for someone with boys your boys' age. Plus you look so pretty in your picture!
You should have seen what I looked like then. Yikes. Sweatpants covered in cat hair.Off to the Vitamix right this minute to try Lacey's recipe!
p.s. Eric, you are NOT like the Cat in the Cradle. You are not the cat, nor are you the cradle. I'm losing control of this metaphor, but you get the idea

-
Bobo... You should get royalties for your Vitamix promotions. Not sure what I'll get to replace the one that broke, have also heard Nutribullet is really good, especially for the money, ease of use and compact nature. Wish I had the budget for the Vitamix, would love the soup and ice cream features.
Lacey.. Thanks for the juicing recipe. I've also been told not to forget the ginger. I just put in what I like, a little bit of this, a little bit of that. Usually includes beets when I have them, they make for such a pretty color and great taste.
Auntie Nance/Nancy... Kitchen Goddess! Love reading about all these new dishes (new to me), then check out the recipes on the Internet if you don't provide the recipe. You are expanding my recipe collection.
Eric... Please assure yourself you sound like a wonderful husband and father! Definitely appears that you do what you (humanly) can and that alone speaks volumes! You help both women in your life, they are blessed!
To everyone else I missed... Need to go back and reread to see who I missed. Enjoy the rest of your Sunday/weekend all! -
Actually the smoothies sound delicious. but I never feel like I had s meal when its just a smoothie. Also, I need to put a bit of protein for my breakfast. I like yogurt, but I'm not crazy about it. I am just a pain I guess! LOL. Tonight was a salad and leftover chili. Of course raw goods and I still don't get along, but every now and then I just have to eat some, even if it means I may need go have a bathroom handy! LOL
And, Eric? I'll be the little Roman slave in the bottom of the chariot saying you're not THAT good, just so you don't get a swelled head.... Your welcome, Sharon! LOL -
BoBo dear, right.....I did not mention water ....but it is a sometimes addition, depending on how much oj I add. Today with several ice cubes and the juice, I did not need it. And I tend not to put ginger in these unless I am in the mood for a ginger taste. Love ginger in other things, but not sure about it in this smoothie that has the fruit flavors predominating...but to each one's own! Yes, I hear the bullet is also a nice smoothie machine.
We had the most delightful evening with friends at LaVoile restaurant....really good French food....not so easy to find in "the Bean" (Boston). We are really pleased that our friend's daughter enjoyed a happy graduation, especially since four years ago she left for college from Paris just a couple of months after her mom died. She is a strong gal, and gave such a touching appreciation "speech" at the end of the dinner.
Chabba...always nice to see a post from you.
Nite all.... -
Oh, Moon, I used to put greek yogurt in my smoothies, and still add nuts for some protein....but I decided to delete the dairy. Seriously, you will find that the smoothie I make keeps you filled for an amazingly long time! I had nothing but that and some tea and then coffee today before we went out to dinner.....not that I am recommending skipping a mid-day meal. I just find sometimes that smoothies make me less hungry for a long time.
-
Hi everyone, I am alive and well! I'm eating better including yesterday when we went to Parker's Maple Barn for brunch. The junior/senior breakfast was a pancake, egg, strip of bacon, sausage link, potatoes (I substituted baked beans) and a slice of toast. I didn't eat it all, but I did a pretty good job. We brought home a gallon of syrup to share with the family. For supper I had a stuffed pepper that I had cooked and frozen a couple months ago. I think we'll have penne with sauce for supper tonight.
DH is "working" on retiring - just a few more days and he'll be finished. He is starting to plan his golfing excursions! And we are talking about a trip to Yellowstone, I hope we can pull it off.
-
I also don't feel like I've had a meal when I drink a smoothie for breakfast. And they don't keep me from getting hungry even when I include half a cup of Greek yogurt and a couple tablespoons of chia seeds. But I also get hungry in 2 or 2 1/2 hours when I have one of my WW breakfasts like a slice of wheat bread toast with peanut butter and a banana. My digestive system works very efficiently!
Luv, your brunch meal sounds yummy to me. I visited Yellowstone for the first time about 5 yrs. ago and enjoyed seeing the geysers and other natural wonders. But it was in July and there were more visitors than animals! It was crowded and hot. We also visited the Tetons and Glacier that same summer. I hope your trip works out.
No idea what is for dinner tonight. Leftover green beans and sweet potato casserole in the refrigerator.
