So...whats for dinner?
Comments

Shopping the freezer found meatloaf! Mashed up some taters, and threw in some garlic confit and warmed frozen peas. Also made a simple butternut squash soup as a starter. The main plate was a bit heavy but it sure was easy.

-
Susan... Must be on the same wave length - meat loaf in the oven with steamed asparagus, roasted veggies (Brussel sprouts, snap peas, and baked yams.
-
Meatloaf tomorrow night since DH going to dentist for start of crown and needs soft food. Love freezer meals.
-
Susan, I would love to see the inside of your fridge, freezer and pantry.

Seaside & Moon: I like your "U" word "unremarkable". I went in for my 2 year check after DCIS w/8cm tumor & a double mastectomy and clear margins - and a ULS & biopsy found multiple new tumors in the chest wall. My prognosis "U" word was "unfavorable". Not much to say but sh*t. So I'm starting again with IDC this time. The tumor board met today to review all the new tests & I see my onco Wednesday. Needless to say I'm scared. Anyone who has ties to a good thread here for chemo, or IDC, or HER2+, or new primaries, or recurrances - please PM me the link. I'll keep to dinner conversations on this thread but thought some of you might have good references.
I love brussel sprouts cut in half roasted witn fingerling potatoes, also cut in half, & hunks of onion. Toss in olive oil & spices and roast approx 30 minutes at 425.
Went to a great restaurant yesterday called The Raven. I had grilled rainbow trout, french green lentils & wilted spinach w/pecans. And for my treat while I'm waiting for new treatment plans, a friend and I split TWO desserts - cherry tart w/almonds & creame brulle w/strawberries & blackberries. It's already 80 degrees in Houston so we ate on the patio.
Hope everyone else is doing well.

minustwo - I PMed you

Love the variety of meals presented today....you can tell we are in a seasonal transition!
Ditto on the comment about seeing your food storage places, Susan!
I stopped at our local farm and garden center to drop a Patriots taggie off to one of the owners (ds2's good friend) who just had second son. Picked up some lovely pansies and veggies, including some ramps which I incorporated into a chicken/pasta dish for dinner.
I only recall having had ramps in restaurants, and I have to say while I liked the idea of using them and the dish was fine, (I think it really appealed to me because I
had taken a long walk and was starving, not having eaten since the late morning) I was underwhelmed. Will try them again with eggs, as many recipes would suggest.
Laurie, so happy for you that you intitiated a family tradition of the late winter, early spring getaway. It sounds like it was great and definitely fun for everyone as a redo. I liked the way you managed your relax time with the overall active vacation. Mentioning your brother's doggie duty reminded me of why we have not (and probably will not) replace Lacey Lu. Everyone asks us when we are getting another dog. Most likely never, but when DS2 gets one we will do some doggie foster care as needed. I'm surprised that I have been as content w/o a pooch as I am.....maybe the lack of energy. And truthfully, our last pooch was not a good excercise walking dog....sniffed every few inches! Loved her tho.....
Went to the Cancer Center today to be interviewed by the PT of the Strength and Movement program (how many more times will I need to tell my "story"?!) She was actually very nice, and the good part is that I will join a fitness program(which is free so far...amazingly enough), and work with a personal trainer for ten weeks, and have access to the hospital fitness center daily for that amount of time to work on general aerobic and strength training. I am eager to get more energy, and have noticed a bit of an improvement with my daily brisk walking...so this might help even more. In the past I could have cared less about a regular exercise program, but feeling so fatigued for the last year makes me want to correct that.
About to join DH watching the Championship NCAA game. Felt badly that ND gals played so poorly last night against UCONN, but was so proud of Skylar Diggins (to whom a win would have meant the most this year), the ND guard, who is graduating. She was totally mature in her handling of the loss.
Michelle, I hope all is going well with you.....:) I found my limit at the baby shower I attended to be three hours, but mainly because I saw many friends, there with whom I could catch up. And boy, it just takes a baby shower to show you how much more "stuff" babies/parents " require" these days. WOW!
Nance, bought some snow peas today to try what you endorsed so nicely! You guys are really expanding my culinary horizons.
I am realizing that I get in habits of what I cook and need to try things we don't usually eat, a bit more, since DH and I are both game. -
Minus, our posts crossed....(((((HUGS)))).
-
Lacey, I fear I've mislead you. The peas were snap peas, not snow peas. Don't know how the snow will roast. My bad!
-
((((((Minus two))))))) huge hugs for you.
-
Thanks for the hugs ladies. I'll check in after the final staging & treatment plan later this week.
-
Minus, that's just crappy news. Best wishes to you and I'm throwing in some (((hugs))) too.
-
Nance...hee hee...and my bad....I meant snap peas too!

Just heard a message from my credit card fraud dept....lots of fraudulent charges...then DH checked our most frequently used credit card and similar fraud but even more charges....whoever it is likes to buy tons of stuff at WalMArt! My best guess is that the account numbers were picked up from my recent online purchases. Pain in the rear!
We'll deal with all the notifying tomorrow..... -
Minus, what awful news. Keep us posted. Hugs to you.
Tennessee is a favorite retirement state as is Florida and Texas because of the no income tax.
Thinking of Michelle and Debbie. Hope you both are doing well.
-
(((Minus))) Sorry to hear your unfavorable news. Hopefully things will get under control with a good treatment plan. And I don't think you need to avoid talking about it on this thread - we are here to support you!
I am doing well, actually feeling better than I have in a few weeks. My appetite has been good and my energy level has definitely improved. Yesterday I managed to go to the Town Clerk and take care of hubby's car registration then went to the grocery store, bought ingredients for a chicken stirfry and lunch stuff, and bring it all home, put it away and cook dinner. That's more than I've been able to do in a while. The occasional nausea seems to be gone, too. I'm still enjoying daily ice cream!
-
thanks Special K on the tax info thanks to our lovely realestate agent, we kind of have an idea of what to expect tax wise. She has been so good to us and really honest with the pros and cons of NC living. I have also done my homework. It still doesnt even compare to what we are paying for in NY. With land and school taxes we figure we have paid for our house 3 times over 30 years.
Seaside We will deffinitely have to get together when your "dream" comes true and you retire there as well.
Minus two {{{HUGS}}} The triple positive group on here is great with lots of information on dealing with Her2. I am a Her2 pos also and received the drug Herceptin for a year...really not many side efeects from this drug. Good luck to you with your treatment.
I am thinking sloppy joes for dinner and some veges. Really trying to boost the vege sides and try to eliminate some carbs.
-
Michelle, glad you are feeling well!
-
Michelle- Great to hear you are feeling well!
Carrie- I take my allegra either at lunch time or after dinner, I find it helps with stomach upset. Hope it helps! Looking at houses sounds like it would be fun! Did your daughter end up going with you?
Lacey- YUCK to the credit card fraud! I hope it is easy to sort out and done with quickly. Also good for you for going to PT and trying to turn your energy around! I hope it helps. I am back in PT as well to deal with all my muscular issues. Mine is all stretching and mild strengthening along with some massage. Love the massage part

Busy day today running errands and getting things done. I need to go to the grocery store tomorrow, not too much to choose from for dinner tonight. Looks like meatloaf, mashed potatoes and pea pods.
-
Michelle, that's great news that you're feeling good. I'm a little envious about the daily ice cream!
Laurie, to you still make out a weekly dinner menu? I find that very impressive.
Lacey, the PT will probably do you a lot of good. I would love to have a trainer but am too cheap to pay one.
I had a great day on the golf course today. Shot 10 strokes under my par. Our foursome tied for 1st place and were knocked down to 2nd place in a scorecard playoff but I still won a $35 gift card to Academy Sports store. After a fairly heavy lunch afterwards, I'm not hungry so I'll fix up some leftover sweet potato and roast pork for dh. Spring golf is wonderful with a lot of roll that helps those of us who don't hit long.
The high temp was in the low 80's today. We have the A/C on in the house.
-
Carol- Congrats on your golf game! And yes, I do still plan a weekly menu. I get input from the family the night before so far I have only 2 requests, avocado chicken and stuffed shells. So that leaves me up to creating the rest! (grrrr)
-
Well Crap, Minus!! That news just sucks... I know this is scary stuff but, as with the first go 'round, the beginning is the worst and, while it doesn't lower the crapiness level, as you put a plan together it's a bit easier to get your head around!
Will be thinking of you tomorrow when you see your MO.. And, I agree with Michelle, this thread is so much more than dinner and cooking... It's more like sitting around the kitchen table talking... Feel free to pull up a chair, pour yourself a cup of coffee (or maybe a glass of wine) and talk about whatever you need to! -
I used to make a weekly menu when my son was little. He took a lot of pleasure in seeing what was coming up for dinner. It did help when I was working so that I knew I had what I needed to cook that night. Since I'm retired and it's just the two of us now, I make frequent trips to the store because I seem to always want to cook what I don't have. The only time I seem to have a menu in advance is if I'm having guests.
Congratulations on your golf game Carole. Lacey good luck with the credit card mess. Happened to us recently too. -
((((Minus2))))), we will support you, feel free to vent any way that helps here. Michelle, good news! Hope you keep feeling better and better. Lacey, that definitely s$cks. But I'm sure you will get it straightened out. Carol, congrats on the golfing! That is stupendous. It got to 85 here today, supposed to get to 87 tomorrow, then I think down to a high of 60. We didn't get any snow the last two years. Yippee! I miss debbie too, hope she is doing okay.
Bedo, thanks for the encouragement re the teenage daughter. You too Lacey. Don't know what happened to the little girl who thought mom could do no wrong, but don't think she's coming back.
Leftover veggie chilli tonight. Probably not the smartest choice for the hot day. I need to start thinking summer. Yay! -
Kay- Don't say she won't come back! My mother and I had about 4 years where we did not get along, we were too alike I think. 14-18. At 19 or so dawn broke over my marble head and I realised she was the smartest person ever and we once again became best friends. More than ever before. We started taking girl vacations and I will never forget the time when we were on the Conn. Shore sipping wine with our feet on the balcony railing and she said she had no idea when she had a baby girl that this would be her favorite time, when we became friends. Hold on it gets better! I still am so thankful that I came to my senses and realized what an idiot I was and how wonderful she was. I have so many wonderful memories and laughs to remember.
-
Laurie08... So happy for you and appreciate that situation. I have an 18yo daughter and for the last couple years she's been furious with me for things going on in her life I have no control over. Lately, things have been happening that are showing her that its wonderful to have goals and dreams, but they may not happen as she thought they should. She's learning things happen for a reason. Maybe there's hope for her yet!
Had a big so no plans for dinner. Hubby got to have sandwich from leftover meatloaf - he loves those sandwiches. As for tomorrow, either ham or beef/chicken chili. Depends on what my parents (who are here from out of state for the week) want. -
I'm sitting in an Italian restaurant in the "Miracle Mile" in Las Vegas...wishing I was home. Business travel isn't much fun.....
Eric -
Eric... "Miracle Mile" aka The Strip? Even if you don't gamble (which I don't) there's lots to do. So enjoy people watching there - so many crazies!!
-
Yep. I'm in the Elara Hilton at the south end of Miracle Mile.
-
Eric, you remind me of my "little" brother (51 yrs and 6ft.5in. tall) who lives in Atlanta. He doesn't enjoy work-related travel and is a home-body.
Nancy, we go to the supermarket a lot, too. The way Laurie plans her meals is more economical, I think. Frequent trips and less planning leads to more impulse buying and more chances of food items getting "lost" in the refrigerator until they've completely changed their character and become garbage!
The view out the windows this morning looks like a greenhouse. Overcast, hot and humid. Tomorrow the mucky Gulf air with be battling with the cold air moving in from the west.
Does anybody have a Green Egg grill? If so, how do you like it?
-
Carole Impressive golf game!
Kay Someone once told me that my daughter would change back around when she hit 20...I remember thing Ahhh I cant wait that long. but they were right, and when she graduated from college and was out on her own, she grew up tremendously and now we are the best of friends and can talk "adult" girl stuff and figure out lifes challenges together. Laurie, yes she went with us on our trip to NC and was so useful in taking notes and pictures for us (has all the best technology) She also challenged us on the long drive with some pretty funny trivia..laughed our butts off. She actually ran into a guy in a bar in New Bern that she had worked with as a teenager here in upstate NY What are the chances of that?
Going out for hump night so no cooking tonight YAY!
