So...whats for dinner?

Cheese cake is the best stuff....right up there with banana laffy-taffy ..... :-)

Oh Special K! Squirrel stories! Pledge! I couldn't be happier.
My week: Monday: BS and tests for surgery next week; Tuesday: DD to Allergist and blood testing -- she knocked two nurses against the wall, blood everywhere; Wednesday: the starter went out in the car; tow truck dealer rental car etc. and my mother was here

So your squirrel stories are a lifesaver!
Dinner? I am really liking vegan frozen mac and cheese. Trying to get protein up in advance of surgery. It appears I will have to eat a truckload of humuus everyday. Moonflower, I am getting your beer bread recipe! It is my mom's.

Tonight's dinner was inpsired by the leftover quart of mushroom ragu in the fridge. What is good with mushrooms? Steak! We haven't had a steak in at least 6 months but there was a lovely one in the freezer. So that is what happened. A huge salad, roasted potatoes, a grilled steak topped with cremini mushrooms. There is enough steak left for two more meals. Probably will make a composed salad and who knows what else.
My mother is having a hard time today. Her first Easter without my Dad at the table. Traditionally, she has dinner with my sister and her husband at the Town & Country [just as old-fashioned as it sounds.] The empty chair will be most noticeable when there are traditions involved.
Tomorrow I go back to work. I still have the bandages but I feel fine. My client's tomorrow have been waiting for three weeks for this meeting, so it is time. And we need the money!
Hope everyone who celebrates Easter had a perfect day.

Sorry for your Mom, Susan. This was the first Easter without my Mom:(. I missed her.
Just got back from Myrtle Beach on Friday. Had a wonderful time, but it was cold. Everyone kept saying it is usually 70 degrees, just my luck. Our first time there, we are thinking we'll go back.
Had my two sisters, my brother, my nephew, niece, her DH and 4 week old baby for dinner tonight. Good times! Made a filet mignon roast, garlic mashed potatoes, asparagus, beet salad, and desserts and appetizers. Well-deserved rest right now. I haven't checked in for two weeks, hope all is well with everyone, it will take a while to catch up. Happy Easter! -
The cioppino turned out really well. We've a ton of frozen salmon, so thawed out a filet and hubby deboned it. I used the boned out pieces, an onion, some celery a few peppercorns, white wine and water and made fish stock on Saturday. On Sunday I made the cioppino using the salmon (of course), scallops and some freshly dug clams (it was a good low tide...
). For some reason I've always been afraid to make cioppino (I think because I've always disliked red clam chowder - which bears to relationship...). Anyway, this was my first cioppino ever and it was really good. I have a hunch it will become a staple - then hubby won't have to go to a restaurant for it anymore.
-
Congratulations on your successful cioppino maiden voyage, Garden! Sounds wonderful. DH and I frequently like to break with tradition with our holiday menus....and it is usually one of the only times he cooks! My favorite is his lobster paella a la valentiana, which has been featured in this house for Thanksgiving and Christmas dinners. He is also one who never passes up the opportunity to order cioppino when it's on a restaurant menu.
So happy for you that you have added this to your repertoire....with your access to fresh fish, it is perfect!
Carole, was it you who said that you were going to spring for the Vita Mix? You can get a shorter container now, since, yes, the original size does have to be stored away from the base if you don't want it to go rough your roof! Not sure what the engineering guy was on when designing that very inconvenient model!
We had a lovely brunch yesterday at Sam's in the Seaport District with DS2. I had a fritata after an interesting appetizer of portabello carpaccio with julienned radish, some greens and what seemed like a balsamic mushroom caviar...very nice. What was even nicer were the lovely servers, and the harbor view on one of our first pretty spring days in the Bean. Finished off our afternoon at DS2's bachelor pad watching the women's hoops...happy to see the ND gals win handily. Our dessert during basketball viewing was/were those ice cream balls that Trader Joe's has....green tea, and strawberry flavors. I actually like them, especially the green tea ones. Nice to have on hand, as DS2 found out!
For yesterday's dinner we finished up the leftover chicken, roasted tomato, farro soup which (as you might imagine) was even more tasty after two days of "mingling".
Susan, I feel for your mom....and you dealing with hers as well as your own sadness. Be prepared..... Father's Day is even more difficult after losing one's dad. It was weird passing right by all the cards at CVS....just punctuated the loss.
Hugs to you and your family.
Laurie, sounds like your Easter weekend was great! Just what you needed!
-
I know how you feel, I lost my Dad just before Fathers Day. My Mom died May 31st 1996 of BC and her birthday as just around Mothers day. May 13th.
Here is my results for the Easter Duck, I am not fond of Duck but this was pretty good with the orange sauce.

-
Very nice, Deb. I have actually never tried making a whole duck....am only a breast girl.

-
Very impressive Deb, looks delish!
-
Last night was fish tacos with chipotle slaw and pinto beans. I think tonight will be a new recipe for smoked sausage with lentils, coleslaw and applesauce.
-

When I was in Phoenix, I met Debra (InspiredbyDolce). We had a great lunch and a fabulous dessert - profiteroles. Little puff pastries filled with roasted banana ice cream then drizzled with chocolate sauce, and caramelized banana slices - it was so yummy! The picture of the two of us was taken by the bartender - it's a little fuzzy but you get the idea. I really wanted to go back for that dessert but we didn't get there...bummer!
-
Took me a moment to recognize you Michelle without the bunny suit. ;-)
*susan*
-
Wow Michelle, beautiful!
-
LOL, Susan, but that dessert could also have given Michelle away!
Have a good evening everyone. Am excited to see the ND women play Duke tonight.
Was about to have a smoothie for dinner to counteract the three peeps I ate this afternoon, but DH just called to say he is skipping the program he'd planned to attend, so I will get onto a recipe finder site to use up the poached chicken I had in refrige. Hmmmm.....and still need to get out for a walk....but brrrrr today.
The icemaker guy came this AM and we have saved a few thousand dollars with his installing a new icemaker and line instead of springing for a new refridge. Definitely better for this particular time. -
Great picture Michelle!
We had a fantastic Easter weekend in Lincoln, NH. Our condo looks right out onto Loon Mountain ans you can watch everyone skiing. Also, the sun was amazing. It shines on our porch the whole day long and we were sitting out there in t shirts and jeans and soaking up the rays. The boys loved skiing and the indoor pools and slept great which was wonderful. My brother and girlfriend cam up and we made chicken Parmesan spaghetti and meatballs with a wonderful salad and homemade dressing my brothers girlfriend made. We cam back last night and will head back up tomorrow night until Saturday.
Saturday night we went out with friends and hit a few places for appetizers and drinks. I had the best potato skins ever at one place and split some enchiladas with DH at another that were ok, but a bit dissappointing.
Now I need to come up with our menu for the next few days and hit the grocery store in the morning. Tonights dinner is very easy, pork chops peas and rice. I know the kids will eat!!
Hope everyone is well!

Forgot to add I am 100% hooked on Downton Abbey and watching it like mad! Thanks for suggesting it! I also tried Panko bread crumbs for the first time and was amazed at the difference in taste- so much better. What is the difference? Just a bigger bread crumb?
Seaside- Going back to your menu/calorie question. I would love it if restaurants did that. That way I could choose to be good/bad and not wonder.
-
Tonight we had fish tacos with pico, cabbage dressed with lime juice and a wonderful avocado. Black beans on the side. Perfect us of a perfectly ripened avocado.
Michelle, I agree. You look wonderful. Great moments, meeting others from this board. Laurie, I really like Lincoln a lot. I used to play lots of concerts there, but haven't been into town in years. I just cruise by on my way to see my mother. [Wow, almost typed parents.] When I am traveling, and not eating out for a special event, I really want calorie counts on the menu. But When I am splurging, not sure I want to know! I need to get down to the new Seaport area one of these days. I am about 2.5 miles away after all.

Great picture Michelle! Laurie, I am with you on Downton Abbey! I am finished now, won't spoil it for you. What a great show! And season 3 is the best of all. I agree about the pinko too.
Made nachos tonight with cheese, black beans, jalapeños, green onion, chicken, salsa and guacamole. I loved it! And so quick and easy. Still need to catch up, am working on it. -
No appetite tonight just picking at stuff. I'm so sick of efin cancer, just lost 2 friends from chat room and one from HS, lung cancer.
-
Sorry, deborye, that is hard.
Michelle,.looking like you were enjoying yourself! K, Laurie, I never watched downton Abbey. I may have go watch it now. Susan, I keep saying.my DH is going up to see his folks, but of course, it only his Dad now. But, I said "his folks" for over 40 years.
I have to tell you all this bit. I was watching The Chew. One of the guests was asked what would she tell people about remaining married, especially in Hollywood. Her answer: " BE WILLING TO HAVE A FEW BAD YEARS!". LOL SO F*CKING TRUE!!!! LOL -
Awww Deb, I'm sorry, that is tough. (((hugs)))
-
Laurie, panko bread crumbs are flaked so the larger surface area makes for a crispier crumb. Also they don't usually include the crust.
-
Thanks Nancy. I bought some today at the store.
I decided to wait until the morning to head back to Lincoln. It was a busy morning with grocery shopping and errands and DS2 needed a nap. I just pulled banana bread out of the oven and am roasting a chicken for dinner. We will have it with mashed potatoes and asparagus.
Deb- So sorry for all the loss you have experienced. It can be so hard.
Tonight I am going to watch my last Downton Abbey. I will be sad that I will have to wait for more new eopisodes.
-
ok- I just tried to google Downton Abbey to see when season 4 starts and spoiled the ending for myself

-
Laurie,
Glad you are liking Downton Abbey! I didn't think it was something I would like but, after I finally got familiar with the characters and understanding that British accent I was hooked!!!
Boo on accidently stumbling onto a spoiler!! I have not seen any of Season 3 yet! I was hoping they would release it on Amazon Prime for free but, no luck! I think I'm going to go ahead and buy the 3rd season because it's getting harder to not hear any spoilers!
Michelle,
Great picture of you and Debra! Glad you got a chance to meet up!
(((((Deborye))))))
It is really hard when we lose people to this nasty disease both in real life and those that we've come to care about here! So sorry! -
(((Deborye))) Sorry it's been such a sad time for you.
Now that April has arrived, who's up for a trip to Pickity Place?
-
(((Deborye))) Sorry it's such a sad time for you.
Now that it's April, who would be up for a trip to Pickity Place?
-
Lol, Moon!! Soooooo true!!
-
I am in for Pickety- do you have a date in mind Michelle?
-
((((Deb)))) Sorry for your losses.
Pickety sounds like fun....despite that meandeing drive into the hills. This year the maple sugar house should be busy given our cooperating cold nite temps and some warm days?
Spent much of the day searching for some papers that I placed in a safe spot last Spring. I have not the vaguest idea where that might be now! I remember nothing from this time last year, post RADS, on Tamox , not sleeping, and working 12 hours a day. Total amesia!
Then, late in the day, DH "discovered" the original competed forms I needed on his computer. Maybe a ruse to get me to clear out a lot of junk during my search. I actually did a lot of organizing and "clearing out" some unnecessary items......yay!
Now, a shower to clean off the dust mites I'm allergic to, then pulling together "jump ups" (love that term) for dinner.
Have a good evening, everyone!
