I'm teeing a new crockpot recipe today - chicken enchiladas. Ingredients are chicken, sauce, corn, black beans, cheese, onions, peppers and spices. Sounds too easy but it smells wonderful! I'll let you know how it turns out.

Dinner was leftover chili and I made some guacamole since I wanted something different. Homemade chips. Very stuffed!
All the leftovers have been eaten, so will have to cook more food tomorrow.

Thawed a package of chicken that I thought was two chicken legs. Turned out to be a chicken back and two wings! So I quickly thawed out two pork chops which I covered with panko crumbs and sprinkled with seasoning and pan-fried in a small amt. of olive oil. Our side dish was roasted asparagus with a sprinkling of parmasan. Very tasty.
Bought a crock pot for the house kitchen today. It looks awfully big. Seven quarts. But it has more settings than just high and low.

My Dad was just the opposite, maybe it is different with men. He admitted that he could not keep up his home anymore and when my brother brought him to Nashoba Park Assisted Living, my Day picked out his own apartment and made himself at home as soon as we moved him in. There were times in the beginning when I went to visit him he would get up out of his chair and grabbed his walker and said, "my friends are waiting for me to play Cribbage" I just sat there with my mouth open, then smile cuz I felt happy he accepted this as his home. He moved in Sept. 2008 and passed away in his own apartment June 13, 2012. He loved to sing and they had a lot of action going on that involved singing.
Now his is with my Mum.

Happy Anniversary Seaside! Glad your treat was a hit Laurie. And it was healthy to boot. I was wondering if his school requires the birthday treats to be healthy. In 3rd grade, my DD's school started a new rule that you weren't allowed to send in food of any kind to celebrate birthdays. It was in conjunction with President Bush's health initiative for kids. I agree that kids eating healthier is a good priority, but there were 20 kids in my DD's class, and I am sure some of them had summer birthdays. Do they really think a dozen or so cupcakes over the school year was going to make much of a difference. It was suggested to bring in pencils or erasers or such instead. I can tell you, none of the kids liked the idea. You weren't allowed to do fruit or anything like that either. They said they were afraid of allergies.
We had ravioli filled with cheese and spinach for dinner. I put some roasted grape tomatoes, garlic and collard greens with it. It was good! Partly because I have been trying to cut down on pasta, so it's been a while since we had it. It was worth the wait. LOL

Just finished watching the debate. I'm not sure there were any revelations. I guess that's no surprise. We had last night's chicken and the rest of the apple pie for dinner. I was supposed to watch the grandkids but that got canceled so I got to stay home. I did get my suitcase mostly packed today...woohoo!

Michelle- Yay for packing! I am in time delay on the debate. I am not sure if I will be able to stomach it all in one night
Kay- The teachers at his preschool did tell us at the beginning of the year that no children in his class have allergies. Kind of amazing where there are 20 of them. They do have a rule that you can not bring cup cakes etc. It should be a healthy snack. But I have since discovered that banana bread is considered a healthy snack.Your dinner sounded wonderful, I love spinach ravioli's and can not remember the last time I had them.
Dinner was delish tonight- Michelle's sauce recipe is amazing. I let it simmer for a good hour and it was very good. I made a double batch to use when I make lasagna tomorrow for camping weekend.

Beautiful night on Seneca Lake tonight. We took our friend who had lost her husband to cancer out on the lake to "visit his ashes" that she had spread in the lake. We had the most amazing red sunset Jerry smiling down on us. then we boated over to the castle for dinner to celebrate her birthday! Great time with great friends. I had the open faced steak sandwich. Everyone got decadent deserts and passed them around the table.
Glad I missed the debate.

Carrie, that sounds like a perfectly lovely evening. What a sweet thing to do.
The enchiladas turned out really good! Here's the recipe: makes 12
1/2 onion, diced small
1/2 green pepper diced small
1 small jalapeno, diced small
1 can black beans, drained
1 cup frozen corn, thawed
2 tsp chili powder
1 tsp cumin
1 tsp salt
1 1/2 cups shredded jack cheese
2 cups salsa
2 cans enchilada sauce
12 6-8" tortillas
2 cups cooked chicken, pork, hamburger or shredded beef.
Mix onions, peppers, beans, corn, spices, meat and 1/2 cup cheese. Pour 1 can of sauce into bottom of crockpot, spread evenly.
Scoop about 1/3 cup of mixture into tortillas, roll up and nestle in bottom of crockpot until bottom is filled. Pour 1/2 can of enchilada sauce over layer and sprinkle with 1/2 cup of cheese. Repeat process to create second layer. Top with remaining sauce but do NOT top with remaining cheese.
Pour salsa over top of everything. Cook on high 2-4 hours. In the last fifteen minutes of cooking, top with remaining cheese and let melt. Serve.
I halved the recipe for just the two of us and cooked for 4 hours. They sort of fell apart when I took them out so I'm thinking 3 hours might be better for the smaller amount. Could be the tortillas I used (whole grain). Anyway, it was a great way to use leftovers and extremely tasty. -
Oh, and I also used the whole 1 1/2 cups of cheese for half the recipe. We like it cheesy!

I watched the debate, too. No revelations for me, either. I agree that Romney "performed" better. Louisiana is a solid red state so my vote for Obama won't count for anything except the popular vote count. The big topics of conversation this morning on the news channels is the uproar about killing Big Bird and the criticism of Jim Lehrer.
I printed out a recipe on beef short ribs in the slow cooker. I'll break in the new Crock Pot I bought yesterday.

Thanks for the recipe auntienance! It looks good. I am also looking for ways to use my crock pot. I am definitely going to give it a try. I've never used enchilada sauce. Does it make any difference what brand you use, or are they all pretty much the same. I have my favorite salsa brands, but I know if it's not there, I can go with any brand. What is enchilada sauce like any way? Is it cheesey or tomatoey or something else? I'm getting myself hungry. LOL
I agree on the debates. I'm in PA. We used to be considered a swing state. We have the city of Phila and Pittsburgh which are always highly democratic, but then the more rural parts of the state, which is basically the rest of the state other than the suburbs of the two cities and Harrisburg, which are highly republican. It used to be close, but the last two elections were blue comfortably enough that we're no longer considered a swing state. Still not 100% sure which way I will vote, but I will vote regardless of it meaning any thing in my state just like you Carol. No matter which way you vote, it is not only a right, but an obligation IMO. I want to see everyone vote whether they agree with me or not. With all the medical crap I went through in the last two years, I am leaning to Obama, because I strongly think everyone regardless of ability to pay should have medical insurance. And I also agree with him, that those that can afford to pay, should be forced to buy insurance, because they will use the medical system if they get sick whether they admit it when they're healthy or not. You can't wait until you're sick and then want to get into the pool. It's the only issue that is really in my heart right now. I am sure people who are unemployed are listening more to the economic topics right now.

Lovetocook, enchilada sauce generally comes in a can under several brands (most stores seem to carry old el paso brand). It comes in green and red varieties and different levels of hotness. Red sauce is tomato based and easily made. Green is made from tomatillos and probably a little more complicated (did I read recently about Susan making her own?) I like green, my husband likes red so I usually have a can of each on hand in the cupboard. I'm quite sure homemade would make the dish even better but then you lose the convenience factor of course.
I loved the green and red sauces in new Mexico. They always ask if you want green or red. I always order "Christmas" (both). -

I got a ton done today. Took the boys to the dentist, grocery shopped, made a lasagna for camping, brownies and put dinner together in the crock pot. I also packed for camping did laundry etc. I never thought I would get through all that I did. Dinner tonight is pot roast.
So- the dentist appointment did not go well. Some of you may remember that awhile back they told me they were concerned that my 2 1/2 year old may lose his front teeth because of decay. Well, they are removing both of his teeth next week. I am devastated. I know they say it just happens, it's not my fault, but it sure feels like it is. I know I brushed his teeth twice a day since they came in, flossed limited juices and sweets, took him to the dentist since he was 1 1/2 and it somehow still happened. Augh. The only up side is I talked to him about it and he is ok with it. I told him the dentist needs to take them out so they won't hurt later. He asked if the tooth fairy would come and I told him she would. So he said it's ok.
My older son was more concerned then the one it is going to happen to.
On that note- sick or not sick- antibiotics or not- cheers

My day in the kitchen involved thinly slicing 8 litres of green tomatoes and 7 litres of onions to start the relish cure. That is a lot of slicing. Five hours to be exact. Then began the cure for some haddock I picked up. I love smoked Haddock so when it is running by the coast, I smoke some.
So, asked my husband to pick up some take-out from one of our near-by Vietnamese restaurants. I had Pho Viet while he went with the spicy country pad thai with crispy chicken. We each only ate half our meals so lunch tomorrow is already done!
I am just about ready to have all this "putting up for the winter" chores done. Good thing I wasn't born 150 years ago!

Thanks to all for the anniversary wishes! We went to a party at my husband's work. It wasn't a party for us though...lol. Good food, good wine and great people! It was fun!

I'm doing OK. October 2 was my last day of rads 3 years ago and is the day that I celebrate (if you can really call it that) as my cancerversary. For some reason it hit me really hard this year and was a very emotional day. Although the deleted post had nothing to do with that... lol.
In the post I talked a lot about how my husband and I met. I tend to be a very private person and when I went back and read my post I thought it had more details than I felt comfortable with on a public forum. Tried to edit it and there really wasn't much left to it other than I married my best friend and am so grateful to be celebrating 25 years with him...So hit the delete button... On the post, not on him....lol!!
Tonight It's just me here so... Leftover Cod Florentine w/ a little rice pilaf!

Listen to this, I get a call at work for the pre-questions for the MRI that I am having on Tuesday and after that was over, she asked if I received my lab orders. I said for what, she said for the MRI contrast you have to have your kidney function checked. I never had to have that done B4 I told her and I have had severel MRI's. She said it is because you are 60 yo. UGH, I just laughed and said, I'll be 61 Saturday. She said HAPPY BIRTHDAY. I have to have the labs done Saturday. JEEZ.

The last couple of times that I've had an MRI I've had to have the creatinine clearance test... They drew my blood day of while they hooked up the IV for the contrast and ran the tests while I did the first part of the scan that was without contrast. It is apparently the protocal for my hospital.... I just turned 50 so not sure if age is a factor or if it's some new requirement for all having an MRI.... -
It was store bought. I have not made a Lasagne in years. My Mom used to make a delish Lasagne, instead of all Ricotta cheese within the layers of the noodles and meat, she would mix half Ricotta and half cottage cheese. Maybe that was to save money years ago, but it was goooood.

Laurie, for sure don't do any self flagellating for DS2 having soft teeth. I would just be asking the dentist what the chances are that his permanent ones will be affected in the same way, and if so what you can do to toughen them up! What a brave little soldier! I'm sure the tooth fairy will be more than generous.
We have six adults here tonight along with the two grandbabies, and DDIL had wanted to make a shrimp scampi for dinner, but I guessed that the house would be in chaos when her parents returned from being away for a week, so suggested that we just order pizza. DH and I like to check out pizzas from other locales and NJ is a good bet...so after much discussion we did order a couple. Good thing. The toddler was beside himself at bedtime, and took his mommy over an hour to settle him, as he invoked all of our names with pathetic pleas to rescue him from his crib....just could not tolerate being removed from the scene with all of the people he loves. When his maternal grandparents left last week, it was before he awoke in the AM, so we suspect he was expecting the same....poor baby. So TG (!), the pizza was delivered and everyone ate.....we would just be finishing the scampi if DDIL went through with plan A.
Tomorrow we head to NH (it will be our turn to cry as we anticipate missing these darling children) for the weekend. Supposed to have a beach lobster fest on Sunday but the weather looks so bad that I may ask for "take away"!
Susan, I am so impressed with your "winterizing".
It will be fun to share crockpot recipes this winter.....mine is grossly underutilized. -
Well Deb Saturday is going to be a Happy Birthday to you...here is a needle poke. I guess better to do the protocol, as they must have a reason for it, sucks though.
Another gorgeous day...went for a sunset cruise with friends..gforgeous sunset then the moon cmae up orange on the other side of the lake. I had prepared a pot roast in the crockpot, but we ended up going to eat with our friends, I had a salad that was a seafood cobb salad, could only eat half, it was so big. the dressing was a wasabi vinegrette had ahi tuna, shrimp and crab on it. I guess the pot roast will be another night.

It is so hard when, despite our best effort, things don't go as planned especially when it comes to our children.... The dentist and who does/doesn't have teeth issues seems to be just so hit or miss...
For many years (and to some degree still) I had a real phobia of dentists. So after many years of not going I sucked it up and went! Other than a little tartar build up all was fine! No cavities... On the other side... My DH who is religious about his dental appointments has periodontal disease (which can be hereditary)...
You are a very good Mom! As hard as it is please don't beat yourself up over what in all likelyhood was out of your hands! Just do what you're doing in re-assuring him that it's all going to be OK... And maybe the tooth fairy might be extra generous!
Geez.... Has anyone else noticed the posts are reeeeeeaaaaaly slow in posting tonight? -
Michelle- When do you leave for Hawaii I couldn't remember? I always take to much to Hawaii with me, basically all you need it a bathing suit ha!
Laurie- Oh I am so sorry your DS has to have both his teeth pulled. Of course it's not your fault!! Things just happen. I took very good care of my teeth and still had to get lower dentures (which I hate) Glad you got all your stuff done, Last week you worried you couldn't do it all now look at you, you did it! yay!!!
Nancy- I will have to try the echaladas in the crock pot never have before sounds good.
Kay- It's funny to me that you never had enchalada sauce before, kind of like Laurie never having Bq ribs I would think those 2 things every one has tried, probably because I love them both. I use La Victoria and mix both red and green together seems to mellow it out.
Seaside- Aww so sorry you had a bad day! It is a very emotional time I understand. Glad you didn't delete the DH haha! I have also deleted things or changed it after reading it later thinking, well that was dumb! But you know you can share anything here with us here on the dinner thread but I get it! Glad you got to enjoy a nice dinner even if it wasn't for you! ha!
