    Ingredients
    1/2 cup soy ginger sauce*
    2 large boneless, skinless chicken breast halves, cut into thin strips
    6 to 8 cups assorted fresh winter greens (kale, collards, mustard and/or chard)
    2 tablespoons extra virgin olive oil*
    2/3 cup julienned carrots
    1/2 cup chopped scallions

    Method
    In a small bowl, combine sauce and chicken. Let marinate at least 30 minutes. Wash greens thoroughly, trim and chop roughly. Bring a large pot of water to a boil. Place greens in boiling water and blanch 3 to 4 minutes. Drain and immediately transfer to ice water to stop cooking and retain color. When cool, drain and set aside. In a large sauté pan or wok, heat olive oil over medium high heat and sauté chicken about 5 minutes until well browned. Add carrots, scallions and cooked greens. Sauté another 3 to 5 minutes, tossing to mix ingredients. Serve with additional soy ginger sauce.

    Welcome JudyH! Everyone makes all these recipes sound so easy. I always have such a hard time when I haven't cooked something before.



    Debbie, I meant Ryan Howard, he plays first base for the Phillies. And I was there in my Phillies ski cap because unlike Michelle, my hair is taking soooooo long to grow back. And my head is always freezing because of it, so I have to wear a hat outside, sometimes even inside.



    Had salmon, sweet Potato, Brussels sprouts, Broccoli and a salad for dinner. All was good. Having a cup of decaf right now. Might make chicken parm tomorrow.

    Oh no, I detect hair envy!!!  Kay, I hope the hair gods hear you and you have a growth spurt any time now.  Must be those pre-natal vitamins I take.  Remember how your hair grew during pregnancy?

    We had a great time with the kids at dinner.  I must say that the boneless prime rib was not as good as I expected - very fatty on the inside.  It had a good taste, but I expected better quality considering I bought it at a butcher shop.  Of course, you can't see inside so you get what you get.  The roasted potatoes were very yummy.  I quartered some small red and yukon gold potatoes, added six small shallots cut in half, six cloves of garlic, fresh rosemary branches, olive oil, salt and pepper then roasted them at 375 for about 45 minutes.  DH wanted me to add bacon and cheese.  I guess he thought maybe I'd be making him some Outback cheese fries...LOL!

    Luv, it's the fat in the roast that makes it taste so good.

    Yeah, I know, but this was obscenely fatty, especially in the center where you should have the "heart" of the meat.  I've cooked a rib roast many times before and never had that much fat.  I sent the leftovers home with my daughter.  Her roommate likes to cook and he'll make chili or stew.  I didn't even want to fight the battle to separate the meat from the fat.

    Kay- Thats cool, You know i thought the name sounded familar but couldnt place it, as soon as you said for the phillies i remembered ;-))) Your dinner sounds wonderful, may make salmon and sweet potatoes tomorrow. They had a sale at safeway where i shop salmon was $5.00 each and they were big and still fresh i froze them but thinking thats whats for dinner tomorrow.

    Michelle- I was just ready to tell you to make french dips out of them until i saw you sent it packing with your DD. Thats too bad it was so fatty, i would mention it next time you go there maybe he will give you a deal on the next meat purchase? Can only hope!

    Deb-That recipe looks good, i like to put spinach in mine as well as the kale and swiss chard ummm!

    Thanks to everyone for their kind words about our old pooch....and I loved the other dog stories, execpt, of course that of the missing Akita. I do hope some dog loving family finds him. Smart idea to send the word out to granite staters.



    Michelle, I know how you feel about the dog longing....and your Bailey was adorable! I know (most likely) that we are on our last pooch, which makes it particularly hard to think about that trip to the vet....HOWEVER, MEANWHILE...we had worried about her making this trip, and she has come to life even more than after her little haircut. She is staying up most all day (5% is her usual awake time daily), and following our little active 14 month old grandson everywhere (obviously still alert enough to recognize him as a good additional food source;). We are thrilled to see this amount of life in her, so if she gets more debilitated when we return home at least she will have had this lively interlude with some of her favorite family members! Loved your story, Laurie, about that sweet May/September relationship between your dogs.



    So today, after going out to brunch with DS and DIL, where we enjoyed some really tasty butternut squash and lemon blueberry pancakes in addition to our respective eggs benedicts, we rode to a nearby town to see my parents' first house...a place filled with lots of family and neighborhood memories for me. I had not been back since we moved from there in the 50's so it was great to see.



    DIL and I decided to have a cook fest this afternoon, and made a Persian cauliflour kuku (quiche); a barley and lentil salad with goat cheese, (a big hit...from recent Real Simple mag) and a huge roasted vegetable lasagna. We figure we won't need to cook for a couple of days with so much food. It was fun having a cooking partner to be creative with. If I can figure out how to attach some pics, with my IPAD, I will. Deb, yours are great! Make me inspired...and hungry!

    Yesterday I went to a friends for BBQ shrimp.  Yummy w/warm baguettes to wipe up the sauce.  I'll post the recipe since it's soooo easy.  Today I went to a Bach Cantata Vespers service and we treated ourselves to dunch (or linner?) at 3pm before the program.  Rainbow trout on French green lentils with sauteed spinach & pecans on the side.  Wonderful rosemary bread & cranberry walnut bread made on site.  Back to the diet soon.

    re:  Hair & Michelle's comment about PG vitimans - ever since I started to take Wild Alaska Salmon Oil and Vit E capsules last year, my hair & nails are both going crazy.  I think it's the fish oil, but since I started both at the same time I'm not sure.

    Here's the BBQ Shrimp recipe.  Nice & spicy.  No calories as you can see (ha).  Don't forget the baguettes for moping up the sauce

    2-3 lbs fresh shrimp - in shells but headed.  

    2 sticks of butter - melted.

    Combine butter with 1/4 cup Worchestershire, 2 TBLSP black pepper, 1 tsp Tabasco, 1 tsp sea salt, 2 cloves of garlic minced, juice of 1 lemon.

    Put 1/2 cup sauce in bottom of baking dish. Put shrimp on top.  Slice one large lemon and lay slices on top.  Pour sauce over.  Bake 400 for 15-20 minutes for normal size.  For large shrimp may need to increase baking time up to 1/2 hour.  Stir every 10 minutes.

    This thread makes me hungry!  I love shrimp.  I will have to try that barbecue shrimp.

    Thanks for the hair suggestion.  I am already taking 4 fish oils a day, I don't think I can go up any higher!  But my hair is actually a lot better recently (I finished chemo at the end of July, it should be!), and maybe it's due to the fish oil.  I have been doing the 4 fish oils since January.  Don't take any extra vitamin E, but I assume it's in my multi  vitamin.  I don't know if any one here has any joint problems.  I was having terrible joint pain, I think it was from herceptin.  Then I went on tamoxifen and it only got worse.  It is gone now though.  I think it's from getting my vitamin D up.  I took 50,000 iu's for two weeks, now take 2000 per day.  My DH told me he thinks it's more likely the fish oil that helped that, but I think it's getting the vitamin D up.  It was at 11, scarey low, but now 38.

    I did take some chicken out for chicken parm tonight.  My DS will be very happy.

    Guess who is going to try the Cash Hot Potato recipe? if I crisp them up enough, DH just might eat them.  He loved the Roast Garlic ones I made.

    Everyone has been really cooking up a storm lately!! Lots of great looking recipes to try!



    Last night we had salmon with quinoa and some asparagus that I blanched and served cold with a vinaigrette... I used this recipe for the salmon http://www.pink-parsley.com/2010/09/apple-horseradish-glazed-salmon.html. I did have to bake it a bit longer because my portions were a little on the thick side.... I was a little worried about the horseradish maybe being too spicy but, it really wasn't....

    I didn't cook anything yet today, for suppa probably chicken or beef terriaki (sp).  Oh, I did make the sauce for the fruit dish, it smelled nice with the orange juice, ginger and honey, I had to reduce it down to a sauce to pour over the fruit and mix it together.

    Last night I made an arm roast for Hubby but I nibbled some, did not know it could be so good but after weeks of no meaat really, it does taste good if the clean meat is chosen, no hormones and stuff I guess.  That makes a difference.  If I eat this at a restaurant, uck, am glad I am off meat for awhile.

    Grain choice for the eve is quinoa with celery and garlic, then organic tomato juice to fluff, and to brighten it, a little lemon.  Think it will have some mor eof the arm roast.  It never did get into beef andnoodles, he ate sandwiches w garlic mustard and butter on the multigrain bread.

    DIL and I at it again with the help of the guys tonight. DH and I decided we'd prefer making faux Greek food at home instead of getting take-out, so grandson could keep to his little bedtime schedule.So we're having Greek dressing marinated grilled chicken breasts, (thank you DH and DS for grilling same), grilled veggies, quinoa with sauteed red peppers, oregano and scallions, and kale salad with feta....couldn't resist buying a cherry pie for dessert on President's Day! :)

    Tonight we had grilled chicken in mustard and garlic with quinoa salad.  The quinoa salad was with romaine lettuce, cucumbers, tomatoes, celery and quinoa.  It was delicious and very healthy (I hope!!).

    We did Chuck E. Cheese for dinner with the grandkids.  They've been here since about 2, we took them to the Build Station at the mall, then Chuck E's.  When we got home we settled them down with a couple episodes of Kung Fu Panda and now they are all tucked into bed.  We were going to have just the boys, but the granddaughter wanted to stay, too.  You just cant say no to an adorable 4-year-old, so we have the whole gang!  I promised them pancakes and bacon for breakfast.  It would be nice if they slept past 7, but I won't be holding my breath.

    Minustwo- Your Thanks for sharing your shrimp recipe anytime i can use bread to sop up the sauce is a good thing!

    Apple-YUMMM is all i can say, now i have to go buy potatoes.

    Kay-50,000 iuds sounds like a lot, but glad whatever it was helped with the bone pain. I had really bad bone pain with the tamoxifen so quit taking it and now i dont have that bone pain anymore,

    deb-Your too funny, your salad looks good enough to eat!

    Seaside-Yay on Koda being found, nice to have a happy ending with that!! The salmon recipe sounds great i love horsradish on my fish, i even put it on my potatoes so im sure this will taste pretty good.

    Michelle- I havnt been to a chuckee cheese in forever i used to take my GD's there all the time, loved that place dont think we have anything close to us though. Pancakes and bacon for breakfast yummm! I'll be there in the morning LOL!

    Everyones greek and quinoa dinners sound deliscous!

    The salmon did get a thumbs up from DH and both kids.... I could see even using the same recipe and swapping out apple jelly for an orange marmalade, peach or apricot one.... I may give one of those a try to mix things up next time! But it was really good as written....

    Michelle, at 7AM tomorrow, I'll be smiling through my yawns thinking of you as I feed our little grandson his breakfast...definitely not as fun a menu as your crew will be having: scrambled eggs and cheerios, with a side of baby yogurt (not a chance he'll eat all of that!).

    Uggg, I was at work at 5pm and couldn't resist the pizza in the break room!!  I ate 2 1/2 pieces!  Which is definitely not on my diet.  So I didn't have anything for dinner.  Any suggestions on how to turn this down or strengthen willpower  so I won't eat junk lying around work? I have a really hard time resisting it! I don't keep this in my home and I  had a hard boiled egg and an apple with me, but... guess who won!

    everyone has been so busy!  And it sounds like I have to buy some quinoa and red potatoes:D

    I never got to try my egg rolls- hopefully this week and I hope they are wonderful and I can share the recipe.  Last night was pulled pork and tonight my kid demand- tacos.  Neither hit the spot with me inthe end but were good none the less.

    Lacey how old is your grandson?

    Michelle have a blast with your brood of wonderful grandkids, I know you will!

    Yesterday, my BF's cousin who has stage III BC did a little talk at a local restaurant on a book she wrote of her journey.  She has done all sorts of crazy things from working in an orphanage in Africa, hiking Mt Kilimanjaro, going to Egypt etc.  She did a great job and read the first two chapters of her book, so well written.  I got a little choked up at times.  She spoke of her journey with BC, which reminded me of mine, which I try very hard to block at times.  Of my BF's mother and little sister who passed from BC, sooooo horrible.  But I had some laughs too and I had my BF on face time through the i touch so she could hear it all from St John Virgin Islands.  It was a crazy wonderful emotional day.  Which ended with a very yummy Margarita :)
