    I'm being wild today and having a "decadent soup"  Broccoli cheese with bread and a glass of white wine.  Ooooooo, I'm bad, Bad to the bone.

    Joyce- lol at the potato chips!  I don't know what I would eat if I had no one else here....I am sure it wouldn't be far off from potato chips :)  Hope you enjoy the quiet tonight, though I am sure you will be missing your DH.

    Michelle- lol at the fried pickles and beer, kind of cracked me up.  Men eat funny.  One time I went to the boardwalk in SC with my mom and I missed having my DH with me.  I wanted to eat a bunch of the bad food but only wanted "bites".  If he would have been there he would have been eating all the  "bad food" the whole time and I would have gotten to have a bite of each.  Did you try the fried pickles?  I rented a home once a long time ago that was built on a slab, wow was it COLD!  What size rug are you looking for?

    I am going to start calling my Dh the early bird.  Last night he was asleep on the couch for 8, tonight he is asleep again and it's not 9 quite yet.  On the upside, he wakes up early because hes not tired anymore and is up when the boys wake up so I can sleep in a bit.  I on the other hand slept for an hour with our 2 year old today and am no where near ready for bed.

    The beef stew was pretty good.  I think Mccoarmick's packet is better though.  It wasn't as thick, I guess I didn't account for the fact that the packet probably has flour in it and I add extra.  I put in about 3 Tbsp of flour, 2 Bat leaves, thyme, parsley, garlic and onion powder, a can of diced tomatoes, beef broth and half a beer.  How's that for random?

    Well tonight we set out to do pizzas at home.... gee... wherever did that idea come from??! lol



    We wanted to do 2.... One that was a traditional, pizza sauce, onion, pepper type and one that was more unusual.... The store only had one ball of dough so we used that for the traditional pie....



    For the unusual one we made a Thai Peanut Chicken one on flour tortillas and it came out really good.... Take however many flour tortillas you need and put them on an oven sheet... Spread with a nice layer of peanut dressing (we used House of Tsang brand Bangkok Padang Peanut Sauce from the asian section of the grocery store).... sprinkle with some finely chopped red onion, diced cooked chicken, shredded cole slaw cabbage from a bag and some shredded mozzarella and
    bake in the middle of a 400 degree oven until the cheese is melted to you liking.....



    I thought it came out sooooo good... Spicey but not crazy so and the tortilla 'crust' had a wonderful cracker-like crispness!!



    Ps... We were out of parchment paper and used the cornmeal suggestion for the regular pizza.
    Worked like a charm, no sticking... Baked the regular pizza at 450 on the second lowest rack until the crust looked brown and the cheese was melty....

    Laurie - I did eat one of the pickles, really yummy with beer!  They are very popular in the midwest but these were so much better.  They were hand cut from a big Claussen pickle.  More pickle, less batter.  The ones I've had before were made from your usual hamburger dill slices.

    We've been watching the Republican debate.  There's so much hot air in that room that Diane Sawyer and George Stephanopolous were dripping in sweat, literally running down their faces!!!

    We have the dill pickle chips here all the time, my girlfriend actually taught one restaurant owner how to make them for us as they didnt have them on their menu.  Its one of our favorite winter time hangouts on Wednesday evenings.  they serve them with ranch dsg for dipping. YUM

    I think if I was alone and didnt have to cook it would be chips or popcorn every night...I am a saltaholic!

    Carrie - I agree with you...salt much more than sweet.  And as I've mentioned many times, popcorn is often the Sunday night supper!

    I love salt.

    For dinner I ate a whole frozen broccoli pizza thin type.  :(

    Im going back to work tomorrow 5 days a week.  I still feel very tired, not sure why. ?left over rads?  surgery? stress?  dragging the glad rags to the laundomat? (kiddiing)   Even before BC I worked 28 hours a week due to other issues.  Does anyone have any suggestions to keep energy up?  Water? Clean one room a day?  Vegetarian crock pot recipes? Teach the cats how to vaccum?  I have to work full time now.

    Bedo - are you anemic?  Are you getting enough protein as a vegetarian?  I know that there is a school of thought that says we typically eat too much protein, but under the circumstances we need more right now.  You might try taking a pre-natal vitamin that has iron and folic acid (I found a good one at Walmart).  Even though I am a carnivore, my iron, protein and red blood counts were all low during chemo.  When I started with the pre-natal, my counts started to improve.  Even though I'm almost at the end of radiation, I'm not overly tired.  But then, I don't work, either, and I'm not chasing little kids around. Maybe a robotic vacuum?

    Good news!  Our landlord said we can extend our lease for as long as we want!  I think that means we'll be staying at the little lake house for a long time.  We bought two 8 x 10 area rugs for the living room today - the Pergo flooring is nice, but it's on a concrete slab and it's downright cold.  Now to get a new renter in our MO house.

    We had grocery store chicken wings and bell peppers and celery with dip for a late lunch while watching football.  And Prosecco...yum!  Popcorn to come later.

    za lovely beef stroganoff tonite.. i wasn't going to cook but everyone worked so hard today building mr. apple's shed... and it's delish,

    Thanks luvrving!  (I was whining about going to work full time starting tomorrow and wondering how I would do it, as I only worked 28 hours before all this due to another issue) and then I erased it because I was ....Whining!  But Luvrving caught me!  I got up at 11:00 today and too a nap at 6:00pm and was looking for any ideas of how to get my energy back.  I think I finished rads early Dec?  Nov?  It's all a blur.  Oct?  Thanks I took a reguar MVI today and think I'm getting blood work this week. Any suggestions on how to conserve energy and still keep the place neat are appreciated.  I use the laundromate and have a crockpot.

    Apple, that is quite impressive! Looks more like you're building a house Han a shed. I can't wait to see the finished product!



    Michelle, do you do microwave popcorn, or air pop or something else? I love microwave popcorn, but I know it's not good nutritionally, or maybe there is a kind that's better?



    Thank you all for the birthday wishes! I had a good day, went to Ruby's Diner for dinner and had chicken tacos. Came home and had some chocolate peanut butter brownies and decaf coffee that DH made. They were good, I am glad there aren't too many left. I guess I like salty AND sweet.

    Kay - no microwave or air popping in my house...lol!  I have a stir-crazy popcorn and I make it with a little oil and yup, I add butter and salt.  If you're gonna do it, might as well do it right.  When I had a gas stove, I made it in a big pot.  But we have a smooth-top electric range and shaking the pan back and forth over the burner would probably scratch up the glass.  So the stir-crazy wins the job.

    Joyce - we are going to try again tomorrow night to have Chinese since we skipped it Friday night in favor of a movie.  Enjoy your peace!

    Hmmm...haven't made beef stroganoff in years.  I need to do that!

    Speaking of popcorn, time to get on that!

    Ah, that's better!  DH and I now have our supper!  

     I have heard that you can use the microwave and a brown lunch bag to make popcorn.  Here's a link with the "how-to"

    My daughter's sister-in-law does this successfully.   It would probably be better for you than the microwave packages.

    Kay:  I couldn't open the ehow site, but Luv is right on about the lunch bag popcorn.  That's all I've used for years.  My micro has a button for popcorn - 3.5min - but depending on how much I put it the bag I may cut back that time.  Just fold the top over twice.  Since this feels so healthy (ha), I load it up with lots of REAL melted butter and salt once it's done, but still don't have the swelling that I have w/pre-made micro popcorn or even potato chips or cheetos.  And if that's all I eat for supper, which is often the case, I don't notice any weight gain the next day.

    Michelle- That does look good!  Are you getting your boost today?  Hope it went ok.

    I think I figured out what went wrong with my pizza.  I used bleached flour, not unbleached.  I am guessing that is my problem.  I am going to buy the right flour and try again this week.   I love pizza so I am determined to figure it out!

    DH called about an hour ago and said he had been in a meeting all day and that they fed them.  He's not hungry for dinner.  Well I AM!  So I am going to make the pulled chicken so I can eat and it will make good left overs, maybe DH will be hungry later.  The kids will be happy that they will get pasta for dinner with butter and cheese.

    i just had some bleu cheese crumbles, cilantro and chopped tomato on my leftover bean soup.

    a new way to serve it.  yum

    Home from #27, had dinner at Outback.  DH said he couldn't remember the last time he had a steak.  I reminded him of the last six times in about three weeks and then it was, I can't remember the last time I had a cheap steak...lol.

    So get this...on Friday they marked my 'open wound' area with a green marker - to get the alignment point.  Stung like hell, but afterwards I got to thinking about it.  I called my friend who teaches Public Health Nursing at Northeastern and asked her if I was being paranoid...do you think they use a new marker every time they write on someone's skin or every time they touch an open wound?  She said they absolutely should and I wasn't being paranoid.  So today I asked the question and definitely got the "deer in the headlights" answer.  "Ummm....sometimes...or we wipe the point in alcohol. " Oh, alcohol on an open wound, now that feels really good.  So they were not allowed to use a marker on me unless they got a new one.  They must not have had one because they got a screen that had the sketch of my boost treatment and lined me up with it.  I'm going to have to talk to the RO about how his techs are cross-contaminating people!

    Michelle- That is just plain scary.  I am so sorry you even have to think of these things let alone keep medical staff in check.  I am sitting here shaking my head.....

    Michelle  glad you were on your toes....not to mention, even if it was a clean one...what does the ink do to an open wound?

    Made fish (talapia) for dinner last night with a green salad.  My DH bulked at the fish...wanted it breaded and fried with tarter sauce.  Trying to get us on a healthier track and he is fighting all the way!!

    btw.. i make a great tartar sauce with crushed capers, finely chopped, mayo and caper juice.. it's awesome, I don't particularly like any of the tilapia recipes I've tried.. if you have a good one, please share.  I am cooking a ham today (10 dollars off the spiral cuts at my Aldi.. I bought 3 whole 1/2 hams for about 3 dollars each.. might as well eat them and enjoy great soups later and sandwiches for the boys.
