So...whats for dinner?
Comments

Celia, if not on it at least with it!
Just got back from a grocery run so have choices for dinner: roast turkey breast, burgers, or taco salad. Need to consult with DH re his preference. If turkey, will roast in air fryer.

Since I've still been allergically housebound, DH has been doing a variety of food procuring trips recently. DS keeps offering to do it for us, but he is in the middle of buying a house in all this craziness, so we are trying to keep some work off his plate.
And I have to say, “DH has come a long way, baby!“ in recent years. I can recall the days when I would be preparing a meal for guests, and discovered (in a panic) something I needed from the store and it would take a few tries before he'd get the correct Item, despite specific product descriptions. Well, yesterday, he decided to do a major shopping trip at Wegman's, where he managed to get everything we might need for the next week or more! He didn't miss one item! I think he is proud to have his new “shopper“ skill recognized...and he really likes to eat! Today, he headed to Traders and finished up with specific Items. I may be delusional, but I believe I heard him say today that he doesn't mind food shopping at all, as long as I make the list. This could be my best Mother's Day gift....even tho I'm beyond the daily mothering role by a bunch of years! 😉So last evening, we had baked salmon that I prepped with Teriyaki sauce, with sides of brussels sprouts, baked butternut Squash, and salad.
Tonight we had grilled chicken breast tenderloins, baked sweet potatoes, huge salad, and sour dough bread with a spread of roasted garlic mashed avocado. Lots of tenderloins are leftover, so tomorrow will likely include them in the menu, unless we decide to get pizza from the shop for whom I'm making masks.
The mask making continues now that everyone in our state needs to wear them. Next we will be outfitting the library staff who start back to work in a week or so. I actually can't wait until the fabric stores open so I can don my mask and cruise the aisles for bright new fabric designs to buy.Happy Mother's and Nurturers Day, everyone!
-
Lacey, your shopping story reminded me of the time our mother sent my brother to the store for a head of lettuce and he came back with a head of cabbage. He truly did not know the difference.
Re fabric for masks, I am using my quilter's stash. Quilting came to a screeching halt due to fuzzy thinking the year before BC diagnosis. Am just this year getting back into it.
-
A big shout out of thanks to those making masks for others!! I can sew on a button, the end. I love hearing about all the giving and aiding others!
Apparently I'm a big liar - I used by final sun dried tomato can tonight and it was edible! Wondering if the yucky ones were due to less expensive tomatoes? Since I use Shipt for groceries (and I used pickup even before the virus, I hate shopping), I ended up with an expensive final can of them as a Shoptmsubstitute.
It is 36 degrees now at midnight, where is May???
-
I brought the tomato plants indoors before sunset. 35 degrees here at 11 pm, with a low of 29 predicted by dawn. Record for the coldest May temp in Chicago is 27, set back in 1983 (that was a pretty nasty and long winter, IIRC). Will take them back outside when the mercury climbs above 40. Lather, rinse, repeat.
Last night Bob brought home food from Greek Islands, near Union Health. They are doing an extremely limited carry-out menu: no moussaka, pastitsio, dandelion greens or avgolemono soup. So we had an Athenian salad, beef stew and grilled shrimp with vegetables (and he had rice too). Tonight we ordered out from Cellars: butternut squash soup, Caesar salad, and shrimp-broccoli linguine in blackened cream sauce for Bob (I ate my leftover duck breast and leg confit from Wed. night). Tomorrow night more Greek leftovers, perhaps supplemented with salmon.
-
Lots of good eating in the midst of pandemic! In rural Louisiana, the noon meal was called dinner and the evening meal was supper.
My fabric supply is very limited and more feminine than masculine. It was purchased for making place mats. A sister-in-law who now lives in OK, a big quilter, is doing booming business selling LSU and SAINTS face masks from her Etsy site.
Our dinner last night was leftover navy beans over fresh-cooked brown rice. Also leftover barbecue pork and a tossed salad with many ingredients. Very satisfactory.
I first had coleslaw on a barbecue pork sandwich at a restaurant. It's definitely a good combo. I have eaten Memphis barbecue at a couple of the famous Memphis restaurants, Rendevous and Corky's, and enjoyed it very much. We once stayed at at the elegant old hotel (searching for the name) with the duck routine. Rendevous was in easy walking distance. The seating would be much too crowded for present health considerations. All the publicity made it very popular with tourists.
I guess there will be dinner tonight but no clue.
-
The Peabody. I expect the Ducks are lonely without the audience.
I've only had coleslaw on bbq in the Carolinas where it is delicious especially on whole hog bbq. I'm picky about coleslaw though. Most of it is too sweet for my taste. I (again) like it heavy on the vinegar. I can see that I'm going to have to find a pork butt. I might even have one in the freezer.
We were supposed to have frost last night but I don't think we did. We moved all of the (extremely heavy) potted containers into the garage. They could come back out today but tomorrow night it's also supposed to be in the 30s so I don't know if we should drag them back out or not. They're way too to heavy to do this daily.
But for tonight, dinner is still an unknown.
-
My breakfast companion this morning
-
auntie - so pretty! I too am a vinegar lover and like a tart slaw rather than sweet. Every now and then I also make a ranch based one, but my homemade ranch is spicy and a bit salty.
-
Count me in as liking tart coleslaw as well.
Auntie Nance - Lovely photo. We had 4 goldfinches in our yard yesterday afternoon, which were bright spots in an otherwise dreary weather day.
-
Been to Memphis seven times for Folk Alliance--I adore Rendezvous. Worth the wait for a table for their keto-friendly dry rub ribs--last time I was there they even had lamb ribs. Tried Corky's but all they had was pulled pork. Neely's Interstate was a pleasant surprise--much better than you'd expect a Food Network merchandising-machine to be.
Dinner tonight was Greek leftovers--grilled octopus over Caesar salad, braised beef chunks and veggies.
-
Barbecue must be the thing today. We had apple pork barbecue and boating slaw (a vinigar based slaw also but sweet) and a caprese salad to use up tomatoes almost past their prime. DH specifically picked up basil and a ball of mozzarella, since he loves it.
Auntie, I love the birds! We also have feeders and enjoy watching them over breakfast.
-
The Peabody. Yes! Thanks, Nance. Beautiful birds in your photo. I, too, like vinegary coleslaw. DH likes sweet. I don't make coleslaw often but try for a sweet and tangy dressing.
Dinner last night was minimal. Crispy fried catfish and boiled small red potatoes with butter and sour cream. Dh made his tartar sauce. I had fresh lemon wedges.
Happy Mother's Day to all the mothers, daughters, and son in our group.
-
Echoing Happy Mother's Day to all, whether you are one of only have one.
Dinner plans are fajitas with my favorite sweet chili chicken. Not only that but scored a head of lettuce for half off at the store the other day so am feeling frugal.😃
-
Happy Mother’s Day. I seem to keenly feel the loss of my mom on this day.
I was greatly amused this morning when I opened the lovely card from my DH - a replica of the exact same card he has given me on two previous Mother’s days. He really likes that card 😂
Breakfast was a Dutch baby with fresh strawberries and two slices of bacon. Yum. I don’t know what dinner is but I know that I’m not fixing it. Perhaps Popeyes chicken which will require a 45 minute drive but might possibly be worth it.
-
I'm back. We were invited to a long time friend's house in northern Arizona where it was in the upper 70F degree range for high temperatures and we were up there for several days. They have 40 acres of land, so there is plenty of room for them. It was nice getting out of the 100F heat that we're already having in the Phoenix metro area.
Happy Mother's Day to everyone.
Magari, once things settle back down, I'll bet the courts will be busy with lots of wrangling over who pays for the monetary losses.
I like sour stuff. I love those sour Skittles and I can eat plane ascorbic acid like used to keep cut apples from browning. With that comes the sauerkraut and the rice vinegar-rice-pine-nuts-cilantro-onion chicken dish that I make.
Hi, Together. I sometimes make a baked lasagna that turns out OK. It's one of those that sometimes works out...and sometimes...not... :-) One of these days I'll figure it out so that it is consistently good.
I planted Yellow Pear tomatoes here and I'm getting a couple of dozen per day off of the plants, although they are starting to look a bit overheated. The Serrano peppers and tomatillos will soon be producing so that will be good for a little extra spice.
-
The multi cooker pot came in handy again yesterday. I sauteed round steak strips on the Saute function, then pressured for 15 minutes. Dinner was beef stroganoff and romaine salad.
Nance, I was thinking yesterday that we need a Popeye's fix before we depart.
-
Chinese leftovers tonight--shrimp & chicken with veggies, maybe a teeny bit of fried rice (and a couple of starch blocker tabs). For brunch I had the other half of yesterday's broccoli-cheddar quiche with salad. (Added some grape tomatoes and baby arugula to the salad).
This noon on the local news the "World Wine Guys" made "comfort food" to go with chardonnay: a tater-tot casserole (featuring ground beef, cream of mushroom soup and Velveeta). Good thing I'd already eaten, because just the sight of it made me lose my appetite for hours. Call me nuts (mmm...nuts...), but I find a normal a1c, painless knees, losing two risk factors, and fitting into smaller clothes much more "comforting."
-
Nance, I like your breakfast companion. We have no feeders out, but do have an increasing number of bird “couples” around, which is enjoyable to see. Nothing too unusual, but our “regulars”.... cardinals, blue jays, chickadees, robins, etc. i do intend to make some hummingbird nectar, in case they are stopping by here on their way further north. Neighbors in our lake community report that they have started to see the hummers, but they had a layer of snow and really cold temps this week. Yikes!
Last night we had steak for dinner...supposed to be grilled, But DH ran into a problem when changing the tank, so I ended up broiling them. I rarely broil anything anymore.... sides were my typical garden salad and a sautéed medley of cherry tomatoes, kale and orzo with garlic for flavor, which it needed. We had gone to DS2’s family earlier in the day. He had set up social distanced chairs in their driveway, which is how we visited with them, keeping the baby (who has suddenly turned into a toddler behind our backs) on a “short leash” every time she tried to toddle over to us on our side of the driveway. Sad as that was, my granny gift was that she started saying “Nana“ this week, and heartily yelled that out when I went to get something from our car. I really worried that she would not know us at all after this distancing. So her “Nana” recognition relieves me.
Tonight I decided to make a faux lo mein to “stretch out” some leftover chicken teriyaki tenders. I used wheat angel hair since my asian noodles had a very old date on them...and had that “old” smell. The angel hair was fine, and I made a sauce from an internet recipe and added onions since we had no scallions, and sprinkled chives on top. It was actually really tasty. Side was, of course, a salad.I was glad that worked out well tonight, since I have been really uninspired about cooking these days...and it keeps needing to be done.....
-
Last night was chicken cordon bleu. I didn't mention that I 'don't do' sides. I may put some berries on the plate is all usually. Rarely I'll have a side like rolls, that is an exception.I should do sides I just don't have sides ideas. This has been my whole life, even when I organized food for a nonprofit, I could always handle making the main but left sides to someone else. Ha!
-
Last night was leftover fried chicken using the reheat function on the air fryer. I was most impressed with the result - crispy and juicy chicken even after refrigeration - way better than the oven. Yay! Another justification for the real estate taken up by the thing.
I need some advice. Do any of you have a recommendation on a garlic press that doesn’t crush the garlic? I have several presses (always searching for the perfect one) that I like for different reasons but they all crush the cloves into mush. I would like one with bigger holes I think. Any thoughts?
Who knows what dinner is tonight, certainly not I.
-
Last night was DH's birthday with his requested menu: burgers with fresh tomato slices, pickles and mustard; corn on the cob; waldorf salad with a surprise individual serving of cheesecake with fresh berries. Cooked the corn in the Instant Pot, worked really well.
Tonight will likely be some selection of leftovers...
-
YUM to all your meals. I think I'm getting hungry for a good hamburger.
Today was a large salad - base was 1/2 of Dole Sunflower Crunch bag of greens with added avocado, cucumber, shoestring beets, turkey cubes, cucumbers, fresh mushrooms, Campari tomatoes, sunflower seeds and bacon crumbles.
Nance - I have an Oxo Good Grips chopper that works OK, but frankly I cheat and buy Goya minced garlic & keep it in the fridge.
Lacey - my niece is 4 and I couldn't get her off the phone Sunday. She speaks well for a four year old, but I still had to work hard to understand everything she was saying. I was really worn out after 20 minutes. Interesting about the noodles. I didn't know they got old.
Eric - good to see you. Your trip sounds like a dream. My brother has a cabin in Mund's Park on the way to Flag. I planted an antique "Mexican Mini" tomato plant. 3 small green tomatoes on the plant so far. They are tiny but sweet. Hope I get some produce before it gets too hot. We've been fortunate that it hasn't been over 90 the last couple of days.
-
I too buy minced garlic that goes in the fridge after being opened.
-
DH uses garlic cloves from a bulb when he cooks his daily mix ups of veg/protein. I use frozen garlic cubes when I cook (obtained from Trader Joe's usually).
-
Dinner tonight was a chicken Caesar salad for DH, and leftover tortilla soup with added chicken, cheese and crushed tortilla chips for me. DH had a beer with lunch - a previously unrealized benefit of working from home, lol! The beer was in celebration of his negative COVID test (yay!), although he said if it was positive he would have also had a beer. So, he has a run of the mill sinus infection but his antibiotic is not working as well as hoped, so he may need another or an extension of this one. He is staying home for the rest of the week and WFH. Our pool is finally refilled and looks beautiful with the new resurfacing. We went with a white coating so the water looks like the Caribbean, and is surprisingly clear already. Can't wait for that water bill from the city...
auntie - I have this one, linked. I also sometimes use a microplane grater with larger holes but find that a lot of garlic gets left behind on the grater itself.
-
I use a Kuhn Rikon garlic press that opens all the way so that it can be fully rinsed out, eliminating the need to dig around and extract the "dregs." Unlike the old Susi I used to have (aluminum, with a separate plastic cleaning tool that I constantly misplaced), it's stainless steel with a plastic overlay on the handles. But half the time, I just take a chef's knife and smash the clove before mincing it.
Dinner was a second night of Chinese leftovers from the place around the corner. This time Bob asked for the sauces on the side--good thing, because they were gloppy & brown, with one too sweet and the other too salty. I mixed the chicken & veg with the seafood (only the surimi remained) & veg in a large skillet, with the delicately seasoned broth from the seafood. I further seasoned it with a dash or two of five-spice powder, garlic-ginger oil and a capful of Chinese rice wine--no salt or soy sauce. I did cheat and have some of the freebie chicken fried rice. We have half a large container plus a small one each of white & brown rice, which I will freeze in anticipation of the coming famine that will turn us all into carb-loading vegans...just kidding...maybe.
-
Dinner was a chicken breast cut into strips and a yellow bell pepper cut into strips. Both cooked in my version of "stir fry" in a large skillet. Added cooked soba noodles and a homemade sweet spicy sauce that is one of my two "Asian" sauces.
Side was salad greens with a vinaigrette.
Tonight will probably be hot dogs.
Usually I make a pricey grocery shopping trip when we arrive in MN for the summer to stock up on all the staples. This year I am buying the staples in advance so that when we arrive, I will need to buy meat and dairy only.
SpecialK, glad to hear that your dh's test was negative. I am waiting for the opportunity to take a test for antibodies. I am one of those people who had a flu like illness at the end of January with fever and cough. It was not flu, according to the test at my dr.'s office. I was ill for a couple of weeks. Whatever I had, quite a few people had the same illness.
-
ChiSandy - Good one about us turning into carb loading vegans, maybe.
Tried to tell DH about smashing with chef's knife first, but he does his own thing in re: how he chops garlic. He eats about 2 cloves daily - his way of self medicating, along with a shot glass of lemon juice, instead of being on a statin scrip.
SpecialK - Glad to hear of the good results on your DH's test. Your pool sounds lovely. Must be about time to start enjoying?
Carole - Good idea about taking staples with you.
There is testing available in our area for those who do not have symptoms, but we are not signing up.
-
Thanks for the good wishes about DH's test - he was very relieved and so was I. DD was quietly worrying and we did not tell our out-of-state DS, didn't want to worry him unless we had to and he has been lecturing us (how's that for turnabout?) about going out, etc., and I have to keep reassuring him that I haven't left the house.
I am curious too about the antibody test - DD was sick at the end of Feb with fever, body aches, dry unproductive cough and burning lungs - she needs to take one. I was sick with the same in Nov last year, but if I had it I was patient zero, lol!
celia - we don't usually heat the pool, so the water doesn't warm up enough for swimming (by DH and dog) until the ambient temps are hot consistently for a while. I am less about the pool and more about the spa - usually at night, and our house is L-shaped with the back all glass, so the pool is visible from everywhere. The spa is built-in and spills over into the pool so when the doors are open it sounds like a fountain, which I really enjoy. The entire pool is screened in so if it isn't too hot we can open the doors up, it is really nice. We have to wait to use the pool/spa until the chemicals do their thing and there is still cleaning of the tile with acid, which I won't be doing, or in proximity of - just the dust from removal of the old surface and acid wash of the new surface caused some breathing difficulty for me, along with usual allergies of the season, lol!
