    Tonight I made my dd's favorite - 4-ingredient, no measuring baked ziti:

    1 box (16 oz) ziti

    1 container (2 cups) cottage cheese, lowfat is fine

    1 jar pasta sauce (24 - 28 oz) such as Newman's Own Marinara

    1 package (2 cups) shredded mozzarella cheese 

    Preheat oven to 350. 

    Boil a pot of water, add ziti, cook for 10 minutes, and drain. 

    Combine ziti with cottage cheese and pasta sauce. 

    Spread mozzarella over top. 

    Bake 15 minutes.

    Enjoy!

    Boy, does that sound good - comfort food for me right now.  I'll bet I could even make and freeze in small single-serve containers.  Thanks for that one.

    Anyone else like the Kikkoman Tofu Miso soup?  Has seaweed in it.  Just add 2/3 cup hot water per serving.  Supposed to be very good for us assuming you're OK with the soy thing.

    Last night- husband made dinner- spinach omelettes (eggs from our chickens), sheeps' milk romano, homefries- organic potatoes, EVOO, and fresh rosemary. Yum

    I love the Kikkoman miso soup- try to avoid soy usually but miso soup does not really pack a heavy dose so I have it occasionally- couple times a month when I have other Japanese food.
