    I would love to have a thread going where we list what we are having or had for dinner. Some nights it may be pizza and some some nights, something healthier, or fancier or more run of the mill.

    Tonight I made steamed shrimp with lemon and kelchner's cocktail sauce, steamed organic broccoli(BJs sells it frozen and it's a great deal!) and a big salad of arugula and romaine. I could live on Kelcher's cocktail sauce! I also made some fried flounder for the non fish lovers in my house.

    I tried a new turkey chili recipe that came out pretty good.

    Hi Pat, I always love making and eating chili. I make vegetarian, turkey, beef, cinicinnati style and a white chicken chili. The turkey style one is a big favorite around here. I usually serve it over brown rice.

    Even though it's warm today, I'm cooking a readington farms whole chicken. I washed & dried it, wiped it down with olive oil and coated it with italian herbs, lots of parsley & rosemary, some garlic salt. We'll have it with leftover salad from yesterday, half of a sweet potato each and some cole slaw made with half plain yogurt instead of all the fatty mayo.

    bay, I make my roast chicken similar to yours.  I stuff it with a quartered lemon and onion and that seems to keep it really moist.

    Tonight I made "unstuffed cabbage" with ground turkey, cabbage, onion, crushed tomatoes, brown sugar and vinegar, served over brown rice.

    Towanda--that sounds delicious! I love stuffed cabbage but it's so much work to make! I will definitely be experimenting this week since I happened to buy a small head of cabbage and turkey meat. What a great idea!

    I suppose you saute the chopped cabbage and onion, add the turkey to brown, then dump in the crushed matos, some brown sugar and vinegar...any paprika or other seasoning? 

    Yes, the chicken comes out so good that way. Very moist and so flavorful--much tastier than the rostisserie ones.

    Hello....Laughing What'd anyone have tonight?

    Lentil soup or leftovers was the plan and then...taking down the trree finally, driving my son to pick up his guitar from repair,stopping at the beach to give the puppy a run and suddenly it was a pizza night--at least we had a nice salad with it, and seltzer

    Tomorrow maybe I'll go with the lentil soup

    bay...I love lentil soup!

    Unfortunately I work long days..8:30am-7:30pm, home after 8pm..so I don't eat dinner on those days.  Sometimes I have a baked potato.  Sorry...boring here.

    Whew that's a long day so boring is ok. If I didn't have teens constantly hunting for food, I'd happily enjoy a baked potato (but I have to have salsa on it) or I'd make lentil soup and eat it for 3 days straight. Ilove it too

    haha...I love salsa on mine too!  I didn't think anyone besides my sister in Arizona and I did that!  I actually put a-1 sauce and parmesian cheese last nt.  Right now..having a cup of tea!

    You're kidding! I love A1 on a potato too, Im not a big steak eater but love A1 ....

    Unstuffed Cabbage

    1 lb ground turkey

    1 onion, chopped

    1 small head cabbage, cut in thin strips

    1 28 oz can crushed tomatoes

    1/4 c brown sugar

    1/4 c white vinegar

    3/4 tsp salt

    First, start cooking some rice. Wink 

    Heat a little oil over medium heat in a dutch oven or stockpot.  Brown the turkey for a few minutes, then add onion and continue cooking until the onion is soft and the turkey is completely browned.  Add cabbage, cover and cook 10 - 15 minutes, until the cabbage is softened.  Add tomatoes, sugar, vinegar and salt and continue to cook, covered, another 10 - 15 minutes.

     ok..it's only 8:56am here..and you ladies have me hungry for dinner!! haha.

    I love stuffed cabbage as well.  Have never tried it with ground turkey.

    I am not cooking tonight...off of work, but my dad invited me and my daughter over for dinner. (my b'day dinner!)  So sweet of him, and lucky for me!

    Bay...sounds like are taste buds are in sync!  I do like steak though.  Don't get to eat it much.  Thanks for the  invite!!

    The unstuffed cabbage recipe sounds yummy .. I'll have to try that sometime. Last night I made baked potato soup (didn't include the cheese or sourcream and substitued diced ham instead of the bacon).  It was very good ... I'll be having a bowl of soup for lunch today.

    Cottage cheese with flax oil and ground flax seeds, fresh kelp roots with soy sauce and horseradish, fermented soy beans and brown rice.  Followed by a healthy dose of dark chocolate.

    We wound up going out to dinner last night so even though I started the unstuffed cabbage, I didn't finish it. Instead I had tilapia with fruit salsa over some kind of caribbean rice. Sounds like the turkey and cabbage will be tonight's supper.

    Calypso everything but the cottage cheese(not a fan of it) sounds great! I wish I knew how to prepare kelp--when I see it and things like it in whole foods or the asian market, I just wish I knew the proper prep. Do you have any sources? Is it easier than it sounds??

    Doreen sounds great! I love potato soup--that's something to keep in mind

    Thank you for starting this thread. My daughter and I had this idea that we would start exchanging dinner menus (we eat very similarly) so as to build up an easy reserve of meal plans.

    I've been tired and meals have been a little haphazard this week, but I am back on track with the planning today, we're having company tonight and the menu is:

    Lentil soup- my recipe- lentils, onion and celery (lots) sauteed in a little canola oil, water or veg stock, chopped organic carrots, chopped organic spinach (frozen), 1 small can organic diced tomatoes, salt and any other desired seasoning to taste. Don't let the simplicity of this fool you- it's delicious.

    Baked sweet potatoes

    Salad- baby organic romaine, roasted beets, grated carrot, raisins. Annie's lowfat Raspberry Vinegrette.

    Whole grain seed bread from the local bakery

    Either pie (fresh from farmstand up the road) and organic vanilla ice cream or oatmeal cookies- depends on my energy level. Our guests love sweets- usually we skip dessert but a treat is nice now and then.

    Right now I am eating a tuna salad (tuna, red onion, kalamata olive, basil, light mayo) sandwich on whole wheat pita with broccoli sprouts. YUM. Isabella (avatar cat) approves 100%.

    I look forward to coming back to this thread for ideas. Allyson

    FYI, That sounds very tasty, but you might want to know that cooking cabbage may lessen its value as an anti-cancer veg. This was found in a study of polish women published about 2 years ago. It still sounds delicious.Beth

    Allyson, I'm 100% with Isabella!--Wow that sounds like my dream meal--has all my favorites--- soup, salad, bread and even a sweet potato! Yum! I'm surprised so many of us love lentil soup. I make mine by sauteing onions and celery, alittle garlic and then adding the lentils, carrots, a spoonful of tomato paste, spinach and of course some water or vegetable broth. My older son loves if I throw in some whole wheat spirals too(and that makes it a complete protein, too)

    Ahh.... dinner tonight, another big favorite (no idea how healthy or not but it makes my happiness meter go off the charts so I feel it compensates for any bad stuff)---I bought a sack of 50 littleneck clams and a small bottle of organic white wine. I'm  going to saute lots of garlic, some shallots in olive oil with a little butter. Then add a couple of cups of the wine and let it cook down about 1/2. Add the clams and cook unti they open. I'll plate the clams, sprinkle a bunch of parsley on them.  I'll have the clams with some broth, spinach orange salad and crusty bread. I also bought some fresh grouper fish that I have to figure out what I'm doing with(any ideas?). Also have a hankering for some green iced tea.

    My wonderful mother is coming over tonight for movie night, so it's takeout Chinese for us! Tonight's movie by the way is the classic, Blazing Saddles. Boy, in reading these posts, you guys sure sound like a healthy bunch. I need to take a lesson from you all!

    I try to eat healthy.  This bunch is very healthy!  I don't buy organic much, too expensive.  Actually I don't cook too often, not like I used too.  I work 10hr days, and it's just me and my teenage daughter, who is hardly ever home.  I miss the family meals!

    I usually buy my lentil soup, Progresso.  I would love your recipe Bay.  If you get a chance, could you jot it down, details etc...haha. Thanks!

    Anne....I love Chinese!  My fave  is szezchuanne (sp?) chicken. I love to do movie nights too!  I always make popcorn on the stove for that! I know...not as good for you as a hot air popper.  I do use canola oil, popcorn, then I put on butter (I went back to butter instead of low fat margarine after being dx)  and season salt, and Parmesan cheese.  My friends and family love it!  It is the request whenever anyone is over watching movies!

    Not feeling too well today at work...so when I get home at 8pm...I will probably drink a ton of water with lemon and go to bed!

    Lisa--how are you feeling today? I'll get that recipe down for you--never wrote it down so this will be good--I've been wanting to do that anyway! I saved a label from Progresson lentil soup before they changed their recipe(a few years ago) and I kind of follow along the ingredient list. 

    Last night, we ate dinner at Ikea since we were there anyway. my husband and I shared a plate of swedish meatballs with whole red potatoes and lingonberry sauce and a smoked salmon salad.

    Tonight I don't know yet.

    Bay...thanks..I am feeling better! Trying to get going out the door to run...I am procrastinating!  It's very cold out there!  Thanks, I would really love the recipe..and make my own soup!

    I am going out for dinner tonight, with friends...a belated b'day dinner. I think I will have a portabello mushroom salade with vinegrette dressing!  It's really good there.

    Bay...loved your pics on the other thread!  Good to put a face with the name!  I just posted mine last nt...I am a novice at this sort of thing!

    Bay- The ww spirals sound like a good addition! I think lentil soup (ditto black beans) have a major yum factor- there's a Japanese word for this that has been tossed around lately- can't think of it. The clams sound both delicious and healthy. Yum.

    Today I am making a minestrone soup- I have cranberry beans going on the woodstove and I will be using the rest of the bundle of kale in the fridge. If I have time before work I am going to make a 1/2 whole grain cranberry bread with leftover fresh cranberries I have. Hmmm. Had dried cranberries in my oatmeal this morning too- guess it's a cranberry kind of day. Have I mentioned that I like cranberries? Smile 

    I have some energy and some extra time today so it's a nice opportunity to cook ahead. We rarely eat out anymore- trying to save $ since I didn't work during tx- and we are trying to catch up- also find it easier to eat healthy at home- although a little Japanese or carefully chosen Thai or Indian is a nice treat now and then.

    Last night was seared tuna steak with light wasabi mayo and scallion; more sweet potato-leftover, some baked potato-also leftover;more organic greens, beets, carrot, and red pepper. Jim cooked this, which was a nice break. Isabella (avatar cat) had a sliver of tuna. The organics can be expensive but we try to buy on sale and only buy organic for foods on the 10 most contaminated list.

    I started a food log thread where those interested can post their daily eating info and share support for weight loss/and Beck Diet Solution successes/challenges. I do the Weight Watchers core plan (adapted a bit so I am losing slowly which is fine with me) and use the Beck Diet solution (psychological skills for dieting/eating habit change).

    Everything I listed that I ate that day is supposed to fight breast cancer, but not the pan of brownies I devoured the next day!  The cottage cheese/flax diet is famous, and the kelp, which is called "Mekabu" in Japanese is the newest idea in Japan to fight breast cancer. You could probably get it in an asian or japanese food store if you ask for it.

    Thanks Lisa, I have to get back to the pic thread--it's so much fun getting a glimpse into each other's lives! Where did you go out for dinner?

    Allyson--I love black bean soup with a big dollop of plain yogurt in it--have to make that soon.

    I've been a cranberry mood but unfortunatley I've been making cookies(whole wheat, oatmeal, pecan, white chocolate chips and dried cranberries) and eating them. That's got to stop! I barely cooked at all last winter and I think I'm going a bit nuts now. LOL.

    There are certain things that I always buy organic too--one of them being eggs. Most of the 'fresh' organic veggies look wilted in my local store so I either buy frozen or just buy the regular fresh ones.

    I just saw the food log thread--I was using an online food log last summer (Fitday) and it helped immensley with my weight loss. I really need to get back to that habit. As you can tell, I love most every food and it's so easy to overeat. I might just try joining you over there or maybe go back to Fitday--though they need to add more foods to their databank.

    I also never heard of the Beck diet or Calypso's cottage cheese and flax diet!

    Okay--dinner tonight was grilled organic chicken breast(brushed with ollive oil and herbs) (sliced), grilled onions, scallion and green pepper folded in a whole wheat burrito with a sprinkle of low fat cheddar. Lots of fresh made salsa(from the produce department-not homemade but so tasty and healthy ingreds) mixed with black beans and organic blue tortilla chips(I only had 3--I was good)

    Seems I am often 'on the wagon/off the wagon'. If only my hubby and I, but with kids, they balk if I go too far.....ugh!!! Frustrating!! I have slowly tried to make changes over years for them, but there are still certain things I cannot get them to eat. I need dinner solutions too!!!!! And it is hard when our schedule gets busy....I probably just need to 'cook ahead' for days like that. You girls are inspiring me to jump back on my wagon!!!!!

    Your dinner sounds wonderful!! Yummm...we have allot of the same tastes!

    I made 2 meat loafs...and froze them, but I didn't use the ground turkey...I am not a turkey fan at all.  But I have them for my daughter for when I am not able to move after my surgery.  She loves chicken breasts, grilled, and the simpler the better! Just some seasonings, olive oil..and grill.  She loves baked potatoes, so we do that allot too. Fresh asparagus with balsamic vinegar and a bit of garlic and salt and pepper another favorite!

    I went to a local restaurant that night with friends..called the Galaxy..very good food!  I had a portabello mushroom salad with vinaigrette dressing!! Of course my friends ordered nachos...and theirs are soo good...guac/blue chips etc.. Then we shared a piece of carrot cake to celebrate my b/day!! I  made sure I ran the next morning..haha.

    Hey Annie, glad you are here--it's definitely not just healthy food that we want to hear about--I don't think we should judge each other too much. Look back and see I still have pizza nights. I love pizza--but what food don't I love?, lol! Just generally curious about what everyone else eats--nosy, I guess--so feel free to jump in whenever you want!

    Hi Lisa! I checked out your pics--love them and you are so pretty! I love good meatloaf esp cold on bread with ketchup the next day! Someone once gave me a good turkey recipe that even my beef loving husband liked--it included spicy Monterey jack cheese in the center.

    I made lentil soup today with whole wheat cranberry walnut yeast bread. I did my best trying to write down the way I cook it but may have forgotten something. It's okay tho--this soup, like most are very forgiving!

    I see Progresso changed their ingredients yet again! On my old label that I have glued in my recipe book, these are the ingredients:water, lentils, celery, spinach, tomato paste, dehydrated onions, salt, soybean oil,  olive oil, natural flavor. It was our favorite canned soup back then. Then about 3 years ago, they changed it completely and among other questionable ingredients they added Mono-sodium Glutamate!  I wrote back and forth to them and they basically treated me like an idiot. I checked and see they changed it again, not back to the original recipe. Here's the new ingredients: Water, lentils, celery tomato paste, modified corn starch, spinach,salt, soybean oil, onion powder, sugar, natural flavor(what does that mean?? Well, I figure it's garlic-lol)

    No idea why they keep tweaking it but homemade is easy and you can tweak to suit you.

    Lentil soup

    1 Cup onion chopped(about 1 medium sweet onion)

    1&1/2 cup celery chopped(including the leafy tops)

    About 2 tsp olive oil

    1/8-1/4 tsp powdered garlic or to taste

    Approx 1/2 can of tomato paste--start with a scant 1/2 can and later add more if desired to taste.

    1-2 tsp or more to taste of Organic vegetable boullion(I use organic 'better than boullion')

    8-11 cups water, start with 8 and add more as needed.

    Or instead of bouillon, use vegetable stock 

    16 oz lentils, rinsed and picked over 

    Approx 2 cups frozen chopped spinach

    1 cup carrots sliced--optional 

    Saute onion with a celery in olive oil. When it's softened, add  garlic powder. Add tomato paste. Add bouillon, lentils and water (or lentils and broth if using broth). Bring to a boil and add spinach and carrots and simmer until lentils are soft and soup thickens. Add water as necessary. Adjust seasonings as you desire.

    If you want to add the pasta spirals, cook them separately before you add them to the soup at the end.
