    Ksuze – So sorry to read about your colleague, my condolences…..32, how heartbreaking! Please tell me it wasn't cancer, but no matter, so very sad. I don't blame you for the cinnamon rolls, whatever it takes. Awesome trek stats & goals….keep er' going, we're right behind you…..not that we can keep up to you!! ;)

    Inna (godda davida) – I was wondering the same when Dee wrote 'dry brushing'…..all I could come up with is using a dry shampoo :)))))) I've never done the Zumba thing, but think I'll give it a whirl. Looks like tons of fun…..pray I don't trip over my own feet!! ;)Is the LE getting any better? Sure hope so!

    Pebbles (Flinstone) – Oh now you gone and done it, you've just christened your cavedude…Bam Bam…it's perfect!! :))))) LOVE the pics…..Bam Bam is not only handsome but looks like a fun/good sport! Hang on to this one, he cooks!!! I have to say the hummus looks delish! Being Paleo/Primal would actually allow me very TINY portion on rare occasions….sad thing is I avoid legumes like the plague because of my GI issues, and of course the carbs & other aspects. Please have some for me!! ;)) I'll eat hummus vicariously through you! Awwww look at Domino give a high 5….smart and cute!

    Pixi(dust) – Great to read your weight is stabalizing! If you were going hard at Shaun T then it's no wonder you were losing body fat. I've done various Shaun vids and it's an AMAZING HIIT regime. Builds strength, core etc… while being one of the best ways to drop body fat….fast!....especially when eating clean in conjunction. Maybe this is why you saw the decline? Have you tried the waist to height along with BMI from my previous post…..and is it showing you underweight? Don't answer that last question if you don't want to…..understandable. Just asking out of concern.Interesting stuff Christmas history is…..thanks for posting yours!During the middle ages (in Britian) Michaelmas was celebrated on Dec. 29th .(celebrating Michael, the archangel that won the war over Satan in heaven). Since relaying this fact to my Cavedude (his first name is Michael) jokingly insists that he should receive presents and a fancy home cooked meal. I told him there would be a Satan like war in our home if I had to drag myself together right after getting over Christmas dinner :))))))

    VampriellaOk, this is getting scarier and scarier….*puts hand up* I cut myself 2 weeks ago on the edge of foil wrap (not the cutter on the box).Big box of reynolds from Costco? If you say yes I'll be convinced we were separated at birth! :)))))) Sorry your ice cream didn't turn out….yes use cream! I'll be sending those avocado ice cream linksin text and posting here soon. Don't forget to add a tbsp of vodka to recipes to keep it from crystalizing. Can't wait to see the nosebleed pics……and glad you and the family had a great time! Did you give our best to your sweetie Dierks? Poor DS!….I remember when my Cavecub used to get sleepy and upset. I took him to see one of the spiderman movies…he was about 8 or 9. Movies as we know are disgustingly expensive (I was a single mum at the time) so didn't want to leave before the end of the movie. He started to cry because he was so tired…..almost had to carry him out to the car. I still wonder how that movie ended….Spiderman is still alive isn't he? :))))

    Egads: Not cancer, but apparently a known genetic risk in her family.

    Tomorrow I'm scheduled to take a walk with some members of my state Camino group. Can you say "rain pants"? Also seeing a friend who managed to get DVTs without Tamoxifen from a long plane trip; we will take a slow, shorter walk.

    hi all!

    Dry brushing is a brushing technique designed to keep the lymph fluid moving. I bought a natural bristle brush with a long handle & I try to do it every day. Always brush towards your heart. I start with my arms & chest, mostly that's all I do on a daily basis, but at least once a week I try to do a whole body brush. Here is a link that explains it better than me.     Introducing the very late………

    FOODIE FRIDAY – EGAD'S TEST KITCHEN – Screwing up so you don't have to!

    The Say Cheese! Edition

    For most of us cheese is a gastronomical dee-light. Hard, soft, old, stinky, mild, rind or no rind….you name it and cheese gots' an option! Is dairy Paleo? Nope…….and a ton of vegan/vegetarian folks will answer the same.It is however part of many diet regimes….take Keto/low carbers for instance. Those folks use blocks of cheese for doorstops. For Paleo/Primals (like myself) it's compliant, but with certain restrictions…..kept to a dull roar, full fat ONLY, never Kraft, never 'cheese food'. No one should touch that stuff.

    Then there is the GI/lactose tolerance issue (for any regime). Kids like myself that have a casein sensitivity will virtually live in the bathroom after snapping up more than a light sprinkle of parmesan. Oddly enough full fat cream is the only dairy that doesn't 'get to me'. Old cheddar is my go-to as the aging process negates some of the properties that make my colon itch.

    In an effort to segue around my GI and still be able to enjoy more than a sprinkle I turned to Google. I was delighted at the number and variety of DAIRY FREE cheeses I could make…Paleo compliant, almost any regime compliant actually…YIPPEEEEE!! I rolled up my sleeves yesterday (after the shopping hiccup) and started a new career in cheesemaking…..

    Disclaimer: Cheese making is an art and no matter what, substitute recipes will not replace cheese. They can, however, be delicious and pretty darned close to the real thing in a few aspects…..close enough for those that want to avoid dairy for whatever reason.

    With this in mind I tried a cross section, first up…

    SLICEABLE CASHEW CHEESE (Paleo/AIP/Vegan/Keto/Dairy Free)

    FROM THIS:

    Boil thickener (Agar Agar powder)

    Blitz cashews, spices & thickener…..

    …….and then pour into greased or parchment/plastic wrap lined container. Chill for a few hours….

    TO THIS:

    Note the chunk taken out of the slice.....never leave a hungry Cavedude alone with cheese...even the faked stuff. :)))

    VERDICT: NOT BAD, COULD BE BETTER. DEFINITELY FAST & EASY.

    The texture is a somewhat close to a kraft slice only a bit more moist (spreadable if desired). Flavour was decent, but the texture got in the way of allowing an emphatic 'hey! this is cheese!' to happen….kids might like this. I won't write this one off. Added to recipes and it would make a decent sub (especially with additions…jalapeño, herbs etc..). When hot it make a pretty decent Cheese Sauce, or Cauliflower Mac n' Cheese. Freezes well…..bonus!!!

    I'll be playing with this one…..to get it firmer for eating by the slice, already found another recipe.. will post.

    CASHEW GRATED PARMESAN CHEESE (Paleo/Vegan/Keto/Dairy Free)

    Look! It even clumps a bit like grated parm! (no worries, clumps will not stay clumped when sprinkled)…

    VERDICT: 50/50, EASY & MADE IN MINUTES

    Look & texture is def parm. Taste is good but completely missing that 'stinky' aspect that makes parm so good. This is another I'll be playing with to improve taste, but would absolutely make again. A great condiment and would work well as a sub when sprinkling on zoodles (or pasta if you partake), to top casseroles or steamed veg….had salmon with lemon butter caper sauce last night & tweaked our asparagus with a dash…livened up a clean eating plate…..

    VERDICT: THE WINNER!! Shocking eh?

    Let me start by saying 'don't be afraid', looks can be deceiving. The texture is nothing like mozz. It is sticky but moves in one blob. Getting it cooked down requires constant whisking for 5-7 minutes, so a half point off for that….worth it though! There is tapioca starch in this so there are carbs, however, there is only ¼ cup to make a very big blob, so it shouldn't be an issue. Where it excels is in the taste….so close to real mozz we were shocked. My Cavedude kept asking for another piece and I don't blame him! It was great! I wouldn't try slicing and serving on a cheese tray, BUT it is PERFECT for cooking, specifically pizza or any mozz topped or stuffed baked dish…..oh, just thought of stuffed chicken breasts! Kids would prob be fooled if you made almond flour coated mozz sticks. It's stretchy, melty (doesn't melt down like cheese, but very close) and even browns! I'll be cooking with the blob soon and will post results and impressions. In the meantime…see for yourself…(not my pics but I don't doubt for a sec)……

    The blob can also be made as a cheese sauce….which I've yet to do but will update once I've made and taken it for a test run. I'm hoping it will because the taste, for a non dairy cheese, was impressive!

    Before I close I want to update the on my FUFU caper….remember that? (page 46 Nov. 9 if you don't). Well I put my money where my mouth is this past week and made a couple a' chicken Shepherd's Pie topped with cabbage FUFU …..

    Not bad….def comfort food, low carb, browns nicely for a cool look…freezes nicely too. When you get chewing it loses the cabbage flavour and is a dead ringer for a 'regular' potato topped pie. I like cabbage so the initial taste was good. A nice option I'd bake again.

    So that ends another episode of Egads Test Kitchen. I'll be taking this further…….I've got cream cheese (herbed and plain), almond feta and a smoked jack on my radar. Yep, I'll be posting.

    I am pretty sure I could like a cashew cheese. I gave up dairy initially and then added back cheese, then yogurt, and sometimes even whole milk in a latte, so I can’t claim to be dairy free at all now. I find dairy to be a refreshing change if I am sick of meat. Like today I was going to have eggs for breakfast but this called my name instead. Plain yogurt, Naked smoothie, walnuts, frozen blueberries.

    Well sewing didn't happen yesterday, lets hope for today. I did go for a walk with my boys and oh my was that a workout! Walking through snow - deep in some parts, we were all ready for a nap when we got back!

    Spent my day in the kitchen, made a cinnamon "cake" for desert - two of us liked it, two of us not so much. I made two kinds of pizza crust - one was bacon - it was ok and the other was from gnom gnom - it was awful! We threw it out. I will state that if I don't find a good pizza crust pizza is going to be part of my 20% Vegas days! Need to do some research for other breakfast ideas for the boys, they may get bored of eggs and we seem to be going through quite a bit of them lately!

    Egads - I am way too lazy to put that kind of effort into cheese plus I love real cheese and refuse to give it up unless they can absolutely tell me 100% it was the reason I got cancer. So cheese will also be a big part of my 20%. :) I can't imagine the cost to make cashew cheese either, just to buy a bag of raw dear god nearly puts me in the poor house. :) Yes I believe my tin foil is from Costco, but it's not the super large one, I just bought the 3 pack of smaller ones that was on sale one day. I am so glad to know I am not alone in this. You know what we need to invent and patent?! Gloves that fit, well like a glove. Ones that protect our delicate skin, yet allow us to do what we need to do. We should talk about this soon.

    GG27 - I believe that chocolate cake sounds heavenly.

    InnaB, I was born in Canada, but my grandparents emigrated from Ukraine. I have visited Ukraine twice on dance tours and have some relatives in Lviv. I love the city and the people.

    No Vegas Blues for this girl, the clean eating streak continues and I'm enjoying the benefits…feeling good, even with the switch up to the AI. I'm still waiting for some horrible SE to drop from the sky on my head…so far, so good. I've had minor issues…eyes are a tad dry upon waking, the expected nausea, ill once, tummy loose, lil' draggy, but that was all last week….getting smoother. I hit the 2 week point yesterday, so time will tell. Remaining positive.

    I have to hand it to the Gulf of Mexico for being consistent….slammed us hard yesterday with another storm. We were lucky as most of it came down in a torrential downpour accompanied by 100 km/hr (60 miles/hr) wind gusts. I'm grateful it wasn't snow….just north of us was hit hard by a ton of snow & ice. My workout today includes picking up branches and debris from my front lawn. The winds are still up so I'm hoping not to land in Kansas.... isn't that just 2 measly states over from Nevada? Could make lunch interesting. :))))))

    Enough of my chatter, on to business…..

    TwoH – This isn't the first time you've posted an awesome looking breakfast, looks delish!!…and couldn't agree more that eggs can get monotonous. When I get bored I usually drag out dinner leftovers. I'm going to have to get my butt in gear and work on Paleo yogurt. I've started the almond feta and hope to get to the cream cheese soon. I love dairy but it hates me. Hopefully my experiment works and I can try to recreate your work of art!

    Dee(Gee Dee)Thank you for posting the dry brushing link. I think I'm going to give it a shot the next time the LE over my ribs pops up….looks interesting! WOW….your Kalonji looks FAB!! Would you mind sharing the recipe? I've got a jar of black cumin hanging around waiting to make it's debut......this looks like a perfect start! The chocolate cake…sounds like a yummy way to fly to Vegas! My MIL's bday is on Thursday, you're putting choc thoughts in my head, thank you! :))))

    Inna (godda davida) – Not sure if you saw my greeting over on the 11 word thread, so I'll repeat, great to see you there!!! I love that thread….makes me use brain muscle….squeaks a little but whatever ;))

    Vampriella – The 'cheese'….. I spent about 25 minutes putting all three together….the first two taking under 10 minutes….a breeze, VERY fast.. Cost for all three came in at about $7.25

    Here is a comparison to just the cheapest 'junk' cheese (No Frills regular Ontario price):

    Paleo Sliceable - $2.50 for same size of Kraft Cheddar ..$5.99

    Paleo Grated Parm - $1.25 for same size Kraft brand $5.99

    Mozz – $3.50 for same size Cracker Barrel bar $5.99 - Shredded $7.99/bag

    I get my organic raw cashews at Superstore in a 1 kg (2.2 lb) bag for $19.00…the first two recipes calls for just one cup. (Same price/size for almonds and sunflower seeds too). Costco carries a smaller bag for $19 too....not bad if used sparingly for baking.

    I basically blew the prices out of the water, especially if I went for a higher quality cheese selection…that would have left store prices behind in my dust! That said, you're right, 'normal' cheese isn't something I'm going to give up either. I love cheese too (Balderson's 5 year aged)….I just wish that my tummy did :))) As I said in the post this ain't going to replace, but they can be used as a healthier alternative especially in casserole/baking recipes. The one big pro it has: Freezes and defrosts with the same texture, unlike real cheese. The store bought is generally full of junk (some shown to have not so good properties for cancer folks). For the GI sensitive that want to have something that kinda sorta subs cheese on a regular basis, and without making their colons sneeze, it's a good way to go most of the time.

    I'm going to make a paleo mac n' cheese….will let you know how it goes…..not holding out a lot of hope that I'll dupe it without my eyes closed while eating :))))) Gloves that fit like a glove or whatever, we should talk soon!! ;)

    Fast food wasn't avoidable this weekend while traveling, so I didn't get bent out of shape by it. Now waiting for my PCP so we can talk about this quarter's diet.

    Wow - I was only 'off' for the weekend and there's been lots of activity! Hubby and I went to see 'Wicked' by the way and it was wicked good!

    First of all, THANK YOU EGADS FOR POSTING ABOUT HOW TO MAKE DAIRY FREE CHEESE!!! OMG, the one thing I have felt really deprived on is not being able to eat cheese, we are absolutely going to try out some of these recipes this weekend. And will have to be particularly wary about leaving it around the husband LOL. I've found substitutes for pizza, and my dairy-free sugar-free gluten-free pumpkin pie and I enjoy eating sushi so that's been great, but cheese... I love cheese! And I haven't allowed myself any. I can't wait to try these recipes!!

    GG27 - that Kalonji chicken looks DELICIOUS.

    Vamps - we have CPK (California Pizza Kitchen) out here that makes really delicious gluten-free pizzas with cauliflower crust. I had some this weekend, not sure it counts as Vegas or not since it's still gluten-free and mostly dairy-free and all that. Not sure if CPK is elsewhere outside of CA but it's right now my pizza substitute option for when I get that craving!

    So here's the weird thing about my waist to height ratio. If I suck my tummy in, my waist to height ratio puts me at totally normal range, and when I measured before with my husband's straight tape measure, it added an extra inch vs. when I re-measured once I found my bendable tape measure. So... my weight is fine? Or I need to lose another 10-15 lbs like the BMI calculator says? Aaaaah which is it?

    Egads - good luck with the AI and good to hear that SEs are minor anyways these first 2 weeks. I'm day 5 on Tamoxifen, had a bit of nausea day 2 when I did the dance-a-thon right after taking it without eating. I've since switched to working out prior to taking it and then eating dinner with tamoxifen and so far no more nausea. No other discernable SEs but I'm also late on that time of month but I read that totally happens, so trying not to be worried about it, but I also used to be very regular on my cycle. So I guess we will see on that one.

    VEGAS - like Vamps with cheese, I still have to have my fried chicken, the skin is the best! And I had some today. Yum yum. Staying within my calorie count but still eating it! I also ate an orange and organic chopped salad and green tea so hopefully that makes up for it all.

    Sitting in a dimly lit and rather aged hallway waiting for my BMD scan. The sights, smells and sounds....ugggggggg. I hate hospitals more than the damned tests!!!


    ETA: should have had lunch...they just parked a food trolley in front of me. You know you're hungry when you're ready to pilfer hospital food :)))))

    ETA again...I’m sitting across from the OR recovery room....door open...someone’s breathing sounds like a death rattle...GET ME OUTTA HERE!!!!!

    hi all!

    Went to the "big smoke" aka as "Vegas"?? (do I have that right?) for labs yesterday, so hubby & I went to one of the local brew pubs for lunch. Probably not very diet friendly what with a craft beer & their fantastic in house made bread slathered with butter & the seafood chowder, oh well what can a girl do?? It was our 38th anniversary. Holey moley, how did that happen???? I really was just a child.

    Here is a link to the Kalonji chicken recipe that I use as a starting point. I don't worry about using ghee, I use whatever combo of butter/oil you happen to like, but it is important because the spices must be sauteed in fat to bring out the flavour. I also use chicken thighs, they don't dry out & can be easily reheated. And I don't use real tomatoes & paste. I buy sieved tomatoes in a glass jar, they are less watery & just the right consistency for curry.

    Egads - well isn't that lovely of them to place you in a dark hallway where you can listen to the death rattle. I would have freaked out, it would have reminded me of my step dad at the end. I am so sorry your hospital is not thoughtful of patients! According to our hospital we are just customers.... "NOW SERVING CUSTOMER 336". Drives me nuts when I wait to register and hear that come over the pa! Hope you are feeling better today. Cyber HUGS!!! xxx

    GG27 - thank you for the chicken recipe! Might have to try it!

    InnaB - I may have to introduce cheese back into y diet too or try Egads’ dairy free recipes. Brie and crackers are my favorites.

    Husband and I have started a new awesome I hope it holds up tradition of working out together in the evenings right after work. Tucker and Domino love the kick-off dance-a-thon we do to get moving! Tucker gets a huge grin and follows us around and it signals playtime to Domino.

    QUESTION: Anyone who has changed their diet notice any cramping, nausea, digestive issues, mood (emotional) and tired? I am 3 weeks in now and this week has been awful. I am pretty sure it's not the so called "carb" flu as I am not Keto, not the flu as it's not constant. NOTE: I was feeling pretty awful this am, was out at Costco shopping, decided I should try something to eat. Well my body needs a re-set once in awhile, I ordered a chicken sandwich with good intentions to throw the bread away; something stopped me, I ate it and I felt immediately better. I think I am just going to have to have a cheat day every couple weeks - which makes my family extrememly happy. :)

    ETA: Is it ok to use artificial vanilla? The cost of pure is becoming out of my price range!

    Hi Vamps - I did have some headaches when I switched from coffee (with lots of sugar) to tea with honey but I think it was just the caffeine and sugar withdrawal and I was fine after a few days. Have not had any of the other issues you mentioned and I pretty drastically changed from processed to fresh and organic and cut red meat, bread and dairy, but I kept eating fruit and protein and didn't deprive myself of food so much as just made better choices so the transition was very smooth for me.

    It's good that you're better with the chicken sandwich and it might just be your body adjusting to less carbs and sugar. Maybe a more gradual shift and keeping fruit and fiber (healthy granola, Whole wheat bread) in your diet will help? And the meat of course! Chicken, fish etc. I never deprived myself of, always felt fine, better actually with the diet changes.

    It amazes me that I'm always willingly taking stairs and wanting to park further now so I can walk vs 6 months ago I always took elevators and parked as close as possible. It's the little things!

    Egads - worried about you as we haven't heard from you since you were in for scans. Is everything OK?0

    Fluff pups!

    I'm well into my second day of only low-grain Mediterranean Diet. I need to keep increasing my olive oil and even more greens, but having the time to cook the last two days helps a lot. Lunch today and tomorrow includes lentil soup with lots of mushrooms, and dinner tonight is shredded chicken with cucumbers and just a little mango and cashews in a chili-lime-lemon-mirin dressing.

    I'm over 100 miles into my fake Camino walk. I tried some walking shoes but they pushed my knees in an un-useful direction, so for now I'll stick with low hiking boots (when I'm not on the treadmill). With a holiday gift card and running myself into a little "in house" debt (by going over my "allowance" for the month, I got a new ground pad and pump, 2 pairs of quick-dry pants, 2 quick-dry tees, a pretty quick-dry 3/4 sleeve button-up, shorts, a new travel wallet, and a hat I saw people wearing in Galapagos that seem like it meets my needs. All of these will be useful for other trips, and the button-up and the black pants are nice enough that I can use them as professional wear when I'm at conferences or out-of-town events. I need maybe two pairs of medium-weight wool walking socks in the same color and maybe a pair of silk or nylon boxers to sleep in, but other than that, I probably have all the clothes I'll need for a real Camino. On to identifying the right trekking poles and perfect stuff sacks!

    I talked to Egads today, she should hopefully be posting soon. She's got a lot going on at home and hasn't had a chance to get on the forum.
