    Oh Junnie - my heart goes out to you with all these tests, hospital visits and now the blisters. Big gentle cyber hugs to you.     A busy working weekend for this gal. So much so that I now need a weekend because of my weekend :)))) All good though, house is clean, laundry almost done (I HATE putting it away) and our pantry reno is almost a reality...yay! No cheats this weekend, but did overindulge with some amazing onion rings (paleo) paired with a chicken burger (also paleo). So onwards to business...….

    Vampriella & Inna (godda davida) - I've never really had a craving for seafood n' filet mignon for breakfast, but let me tell ya', after seeing those pics I'm tempted to lick my screen!! Vamp nailed it....food porn! You two chicks put my rotisserie chicken and salad last night to shame! Both pics look soooooo goooood!!

    TwoH - Your self cleaning oven incident brought me flashbacks! I once had a plastic bowl catch fire in the oven....don't even ask why it was there in the first place, I'm an idiot.....and I'm talking BIG flames. I kept the door closed while I ran around in circles waving my hands in the air for a few minutes. I finally grabbed a bowl full of baking soda, yanked the oven open and doused the flames....I was VERY lucky to be able to peel out the plastic in one piece. Another time (yeah....another time ;))) I decided to deep fry. Left the oil to heat and went into another room to watch a news story on TV (Paul Bernardo/Karla Homolka….big news back in the day). It was raining at the time and I thought "oh cool, the sun is coming out" because of the bright reflecting light on a wall.....nope, it was my freaking kitchen on fire!! The pot of oil was belching out a flame 4' high and the cupboard above the oven was starting to catch. I heard my mum's voice in my head....no water on burning oil, suffocate flames. There was no time to reach the extinguisher in the apartment hallway so I tore into my bedroom, got a big heavy quilt and threw it over the flame. Again, I was VERY lucky the whole thing didn't explode into a fiery hell. There was however a 2' layer of black smoke on the ceiling throughout the whole apartment. I ate takeout a lot after that :))))) It took me years to start cooking again, and only really started experimenting with cooking methods when I went Paleo. I also have 2 extinguishers in my kitchen and Smokey the Bear has me listed as a repeat offender :)))))) Seriously though, the smoking method I posted is EASY....you just create a tent over the meat and pinch the edges of the foil....there was no smoke in the house from the oven method. The wok method let a TINY bit of smoke out at first, but ended quickly once the lid was on. Both left a lovely scent in the house! So glad you're back home and on the mend.....what a debacle for you!! Something you def didn't need. Keep us.posted on your progress!!

    JunieBee - Indeed, your plate certainly runneth over....so unfair!! Hang in sweetie, sending a ton of hugs and positives for some improvement and peace coming your way!! I'll be thinking of you this morning....let us know how the MRI goes once you get some rest. More hugs!!!

    My addition to the food porn.....check out the measly bit of stuffing in the pork.....it was full when I rolled it I swear!! I think my Cavedude might have snuck in and helped himself mid-cooking :))))))

    Bacon wrapped pork tenderloin with a mustard onion cream sauce, slaw (with an amazing avocado garlic dressing, will post soon it's awesome) and plain ol' green beans...….

    Egads - That looks absolutely delicious! Must get the recipe from you, especially the mustard sauce. I use to love honey mustard dressing on my salad!

    Vampriella - Thank you! Easy peasy....cut a tenderloin butterfly style and stuff with goat cheese, chopped herbs of choice, garlic (I used tarragon), no salt...the bacon does that for you....and anything else your heart desires. Close her up, wrap in bacon, pop in a 400 deg oven until you get a 165 deg internal temp (35-40 mins).?if the bacon isn't crispy just pop under the broiler for 5 mins...but keep your eye on it! Let it rest 5 minutes before slicing. You can pre-prep.... wrap the whole thing tight in Saran and freeze raw for later (I did this because I got a bunch of tenderloin on sale).

    Mustard sauce...sauté thin purple onion slices (med heat) until limpish, plunk in about 3 tbsps of dijion mustard, whisk, get it just bubbling, take off the heat and whisk full fat cream to sauce consistency...back onto the heat 2 minutes (keep whisking) lil' salt n pepper and you're done. Add more mustard or cream to taste. You could add a touch of honey if you want. All together a 5-7 minute sauce out of my head...not bad, tasty :))

    Will post the avocado garlic dressing tomorrow...cant remember which app it's from :)))) actually can be made mayo thick or thinwith cream or oil for a thinner dressing......awesome for MANY things...gonna use it under a salmon filet tomorrow.

    TWO CENT TUESDAY!!! - Looking for love in all the wrong places!

    My Cavedude and I have a love of watching documentaries on anything and everything. Not only have we learned a ton over the years, but it is great fodder for discussions…..and even a few arguments :))))) Sadly, I have to admit that on the nights that we want to watch something that doesn't require use of our grey matter,we turn to true crime…..even some of those prison reality shows. Yeah…pitiful eh? I must say we are highly entertained by these shows. Yeah….even more pitiful-er eh? :)))

    The last few weeks have been strenuous so we've had more than our fair share of viewing life in the U.S. penal system. One of the shows followed the saga of an inmate's search for love on the 'outside' brought to him by inmate penpal programs. There are many of these programs in place. Set up like any other dating website, Billy the Bank Robber can post pics, profile info and an introductory statement. Me being me, I couldn't resist the temptation to check out prisonpenpals.com, and spent probably a good hour flipping through profiles. I found each inmate profile included what the inmate was convicted of …but no further details listed. The site recommended never sending an inmate money or personal information, and to google the inmate's crime for details. So I did. I'm a 'why, what, where and when' kinda gal. After a few searches I found that I had a hard time putting "I like long walks on the beach" or "looking for a kind, loyal and gentle woman" together with the heinous nature and details of the inmate's gruesome crimes. Then I stumbled upon one that took my breath away…..cross border sexual sadist Charles Ng…..

    • The profile read: "Because of these and other reasons, I constantly feel misplaced, sad and lonely — like a dolphin caught inside a tuna net."
    • He lists among his interests: origami, spirituality, self-study, writing, reading and drawing. He says he is seeking sincere, meaningful friendships "from this dark hole of humanity."


    Mr. Ng, we can well imagine your pain….being stuck all alone in an 8 X 10 cell….suffering in that "dark hole"…..writing to women….writing your blog (yeah, he has one). Take heart Chuck, it's a bigger piece of real estate than your TWENTY FIVE (known) victims have today….and you may want to delete the word 'humanity' from your profile……doesn't quite reflect you…..missing that certain, je ne sais quoi. Perhaps replace with evil torturer? Much better!

    There are several other high profile inmates on these sites…..Scott Peterson & Richard Ramirez to name two. Charles Manson (now dead) apparently gave his pen and paper a regular workout. Back in the 80s he sent this picture and words in reply to a citizen's letter:....

    "Look down at me, you will see a fool, look up at me, you will see your lord. Look straight at me, and you will see yourself."

    I could look at that picture all day….and read his statement……creepy, thought provoking, like looking into his very sick soul. God complex anyone?

    Ok so on to my point. Should they be allowed? Would denying the inmates these sites/programs be a cruel and unusual punishment? Would lawmakers be taking away possible love, friendship & hope?….is that part of the sentencing? There have been ongoing rumblings about these programs because it is such a contentious subject….many questions involved. It's not an easy opinion to form.

    While I totally see the therapeutic & rehabilitative benefit from forming healthy written relationships, I have to think of the victims first….and their families. In the case of sexual/psychotic/violent offenders I say an emphatic no. Not to punish, but to protect the families of the victim from more pain, the unwitting public that may write them and the prisoners themselves. Why allow them to possibly continue their crimes by word? Who knows what Charles Ng's intentions are when he writes Sally in Arkansas. Con artists fall into the same category for me….too chancy….people have been completely ripped off by these programs (oh yeah, you can send them money). For lesser crimes I don't really have a problem, and do see a number of benefits. Happier inmates make life safer for corrections staff, gives the inmate a purpose to redeem & exposure to living on the straight and narrow. I guess I'd like to see some protocols put into place…..a grading system if you will….in order to weed out the 'dangerously undeserving'. Without even thinking of the possible costs, I'll say no-yes.

    What say y'all?

    ETA: You may wonder what the heck Two Cent Tuesday has to do with a Paleo thread. Paleo is a lifestyle.....not a diet. It includes exploration not just of food & health, but involves mind/body/soul. Shouting out our opinions and even debating them constructively is 110% squeaky clean Paleo living.….yup, good for ya! ;)

    Well, that is quite the topic today. I am not so sure I agree with tax payers paying for inmates to have blogs, let alone a matchmaking site for them. Ah Hello could you imagine Jeremy Molitior or Paul Bernado having a profile or blog? Maybe they do??? Hi, I'm Jeremy, I use to box, won some award, I am in the best shape of my life oh and ah I stabbed my girlfriend 27 times, I am looking for long walks around the yard with someone who is of the opposite sex. I won't be getting out of jail till I am 50ish if I am lucky so I am also looking for someone who is patient and willing to wait for me. I totally get helping the inmates with schooling, counselling, things to help them become better people if it's at all possible, but helping them find love no frickin way!

    Just my two cents of course. Maybe I am waaaay off base on this.


    BONE SCAN - ALL CLEAR!!! Waiting on MRI now.

    Oh my Gosh, I freaking did it AGAIN!!! Forgot to hit "Submit" before changing pages. So here I go and try to remember everything I typed the first time.

    Egads - That pork tenderloin looks amazing and tasty.

    Ok, regarding the MRI yesterday. When I got there I had to wait for IV therapy to come and start my IV since the port incision is still too tender to let them stick me there. My Kirbster was my champ. He sat on the bed right next to me as we waited. So comforting.

    Once the MRI was complete I left the hospital about 11 a.m. and took Amtrak home. I got here about 3 p.m. and at 3:45 my phone rang. It was my MO's office calling with the results. So unheard of! Anyway, while there is no infection in the bone of my right elbow, there is fluid in the joint space of my elbow and the doctors think it may be an infection related to the recurrent episodes of cellulitis I've had this year. So today I called my Orthopedic Oncologist and spoke to his assistant. She took some info and will have the doctor review the MRI and get back to me about what happens next. Two days before Thanksgiving, so of course I had to go to the Mayo Clinic website to research this topic and I did not like what could be in my future. First, I think they'll have to do a needle aspiration of the joint to check the fluid for what type of bacteria it could be. They better KNOCK me OUT before coming anywhere near me with a big huge needle. If I wasn't living this nightmare I think I'd have a difficult time believing anyone could have this many issues arise one after another over an 11 mos period.

    Also, last Saturday my asthma started acting up and I had to use my inhaler several times, but it didn't help, so I used my Nebulizer to administer a different breathing treatment. By Sunday afternoon I had a sore throat, then early Monday some greenish flem appeared, and today I was feeling much worse so I went to the urgent care for some antibiotics. My SpO2 is at 95%. Geeez!

    Inna - How are you? Getting your Thanksgiving all together?

    I am supposed to be going to the home of some friends of Kirby's trainer for Thanksgiving. There are supposed to be 15-20 people there. I plan on making some Pumpkin Cheesecake cupcakes with a caramel & toasted pecan topping to take to the dinner. Unfortunately though they are totally NOT Paleo friendly. But oh so yummy!

    Well, I will now bid you all a goodnight and go feed Kirby, then off to bed. Later all!

    As my mother would say..."today just went to hell in a hand basket". Whatever a hand basket is.....is there a foot basket? No idea...you get the point! Y'all will probably be pleased that Workout Wednesday had to be cancelled due to my busy schedule :)) Sun is out, lil' cold, but good all round. So on to business.....

    JuneBee - You never cease to amaze me. It would appear from what you wrote that on top of your frustration, constant tests, infection, elbow pain and you still manage to take a train for a total of 6 hours to make your appointments!!!! Lordy woman, you've inspired me never to complain about a 25 minute drive to my hospital appointments. Huge hugs, this is so unfair....please feel free to vent here as much as you like. Each and every one of us chicks have your back. As for the Thanksgiving meal.....you have a 'get out of paleo jail free' card. Enjoy that meal, it's so well deserved!! Kirby....awwwww, he is the SWEETEST lil' fella......and still lookin' all dapper with his latest hair cut. He must be such a comfort! Happy Thanksgiving right back to you....enjoy and come back and post about all the eating....make me pea green with envy :))))))

    Vampriella - CLEAR SCANS YAYYYYYY!!!!! Look at you rock the Imaging Department!!! SO happy...congrats!! the pen pal thing is a business.....I wasn't clear on that, sorry. The tax dollar doesn't pay for it, the inmates do and the prison has nothing to do with most of it......if it was paid for by tax dollars I'm thinking my 2 cents would have been a whole lot different and the same as yours. It's all done by snail mail and corrections Canada/ US only distributes the brochures to the inmates. I LOL'd at your "long walks in the yard" comment. I guess a first date would be dinner off a tray. They could match up Karla Homolka with Dellen Millard.....they seem to like to keep their killings within the family, how heartwarming *eye roll*

    WORKOUT WEDNESDAY - So I lied….sue me :)))))

    Heh Heh….no WAY was I cancelling THE most important post of the week! I'll go easy on y'all and delve into something that many of us either suffer or have suffered with….and may again…….

    PLANTAR FASCITTIS aka "I can't walk because the bottom of my foot is in agony when I take a step"

    It's painful enough trying to spell it correctly, never mind having this painful and sometimes never ending condition. Characterized by a burning sensation around the rim and/or bottom of your heel, and sore or burning foot arch, sensitivity along your arch, the heel is painful to the touch and especially when you put weight on it, a bumpy, lumpy sensation on the bottom of your heel (bone spurs) and general stiffness, tightness, *takes a deep breath* and pain in the foot, arch, Achilles tendon, and calf muscles(*another breath.…….Plantar is a multi faceted character for sure!!)

    "Symptoms are typically worse first thing in the morning or after prolonged periods of sitting or standing. If you have a mild case, you can get some range of motion and blood flow going upon awakening and the pain will typically subside and not compromise your exercise. In advanced stages, you will have a hard time getting mobility going and even walking will be painful. When you do get sufficiently warmed up and into a workout, the burning pain will often continue during and after exercise. The condition can worsen over time until you are sidelined by the lack of mobility and subsequent chronic pain."

    Treatment: Rest, Orthotics, Arch Supports, Arch Taping, Ice, Heat, Electrical Stimulation, Ultrasound, Massage Therapy, Cortisone Injection (OUCH!!!!!) I'm sure there are some that are VERY familiar with all the these treatments….I am, unfortunately.

    Thing is, these are simply treatments for the SYMPTOMS…..not a cure! Wanna cure it? Wanna prevent it from coming back? There is a pill free, easy and, EFFECTIVE CURE…..

    CURE/PREVENTATIVE:

    When you address the causes of plantar fasciitis, you'll experience relief from the painful symptoms surprisingly quickly. To correct the cause, you must lengthen your calf muscles, increase mobility throughout the lower extremities, and start walking barefoot at home. Commit to doing the following stretches every single day for just a couple weeks and it's quite likely that even a severe and debilitating long-term case of Plantar will clear up to the extent that you will be pain-free and fully functional in a matter of weeks.

    So how do you lengthen your calves without a medieval stretching rack? Easy….you do:

    EXTENDED WALL STRETCHES…..like so….

    Now that is the long version, which includes some great explanations and info in the beginning. Zip on over to the 2:20 mark and the stretches begin. Highly recommend watching the whole vid if this is an issue for you….worthwhile time spent.

    Here is a short version….

    Don't forget…..HOLD THE STRETCHES FOR A FULL TWO MINUTES, and make sure to do the wall stretches several times per day!

    Your achin' feet will thank you…..See…..that wasn't so bad was it? :))))))))

    Okay, first I'll thank you ladies for the support, but from here in my little corner of the world I don't see myself as this super strong woman you are describing. I will admit that I am stubborn, sometimes not to my benefit. But I am working on that, somewhat. I was raised by a very demanding & unsympathetic German mother who always made me feel her resentment at having to raise me alone. But right now my armor has some serious cracks in it. The stress from everything that is going on has caused me to be on the verge of crying to cussing over some of the most minor things that I would normally not react to. I do not like the fact that I am showing this weakness. But there it is!

    Egads - For clarification, the distance to my MRI appt. was 50 miles one way, but my friend who is a nurse at that hospital picked me up and drove me there on her way to work. Then I took Amtrak & the local transit back home. So it was only and 1.25 hrs there, then 3 hrs. back. Again, I do this because I have a serious dislike for the radiologists here in town ever since they missed the tumor in my spine back in 2014, after 2 visits to the ER, a CT scan, etc. and continuous severe pain for 6 weeks until my vertebrae snapped. The hospital north of me is a teaching hospital and has better technology and more thorough radiologists. Ever since I was a patient at Mayo Clinic in Arizona for my bone cancer in 2000, I am acutely aware of the difference in the quality of care a patient receives at these types of facilities and refuse to accept anything less. So, there is an example of my stubborness/tenacity.

    Oh also, the Ortho Oncologist's office did call today and his assistant said that he had reviewed my MRI and since there is no tumor (say what?) in my elbow, he is referring me to the upper extremity orthopedist. That doctor is however booked at least 3 weeks out, so that puts any appt. with him out into mid-December. Probably a good thing I'm on the antibiotics for the respiratory thingy.

    Now another confession: I didn't make the cupcakes. Felt too yucky today, so I just passed on it. I doubt anyone will even notice.

    One nice thing about tomorrow being Thanksgiving is that I DON"T have ANY APPOINTMENTS!!! None even on Friday or until the 27th. Whoo Hooo! I do still have some laundry to do, but that can wait until Saturday I believe.

    Okay, again Happy Thanksgiving to all of you and your families.

    Egads - thanks for the non day off of exercises!!! lol You lie better than I do!

    Going to try working today, but only one job so I think it should be ok.

    Asked my doctor's office for a copy of my CT and bone scan, now usually they will load it up to this secure doctor site and I can get the results by loging in, this time they told me I had to wait till my appointment next month. Hummm I thought it was a good scan???? Well it's only a two week wait I can do this. I just don't trust very easily and want to see for myself it's all good!

    Anyone doing the black Friday shopping? I am hoping to get all my kids shopping done tomorrow! :)

    TUTORIAL TURKEY DAY – Get yo' gobble on!

    Canadian Cavies celebrated TGday last month, but I'm still thankful.......thankful I don't have to cook a ginormous meal today for 42 people and wake up on Black Friday with mashed potatoes ground into my rug :))))

    IMHO Thanksgiving is one tough day for the cave cooks.....tougher than Christmas meal prep. Thanksgiving doesn't include the gifts, people coming and going all day, a few spiked egg nogs under the belt making everyone a little brighter....in other words, nothing to distract anyone from something like, say, burnt gravy. People are understanding at Christmas when you screw up. They realize you've had weeks on end of so many food/gift/family/party preparations for the day. Not Thanksgiving, na-ha. My sister still talks about the 'Burnt Gravy Affair'....like it's a story to be told after gathering small children together in a circle.....cracking open a big dusty book titled "The Egads that Stole Thanksgiving with Burnt Gravy".....the kiddies gasping, wide eyed with fear at the thought of dry mashed potatoes and, god forbid, nothing to top the turkey slices on their plate. This story has become a family classic told over most of our family's Thanksgiving tables. I don't mind. It was my first attempt at hosting a family meal back in the late 80s…..something was bound to go wrong and it's given us a few guffaws since, so all good. I'm thankful for another thing….thankful I can now make gravy without offending :)))

    My neighbors to the south amaze me at this time of year…..and I scratch my head wondering how y'all pull it off. First Thanksgiving, then Black Friday launches the very next morn….after which Christmas prep starts. December brings gatherings, parties etc. A few short weeks later and they are celebrating Christmas and preparing yet another meal on the same scale as Thanksgiving….don't forget New Years coming 6 days later. IMHO January 1st should kick off an American all expenses paid week in the Bahamas to recover! So yeah, I'm thankful the Canadian Thanksgiving has just enough time before Christmas to prevent me from ending up in the local psych ward! I hear the gravy is boxed there, no fear of being burnt :)))))

    As our American friends prepare to tuck into their meal, surrounded by folks near and dear, my wish for them is for a house smelling gloriously of roasting food, visiting with those they don't often get a chance to sit and catch up with, laughs and that amazing relaxed feeling of belonging. Oh yeah, and a silky & delish gravy that comes through completely unscathed.

    This is my fellow Canadian Vamp & I dressed as turkeys and doing a little soft shoe act for our American Cavies, in honour of the day.....Happy Thanksgiving!!

    Vampriella - As you know I had TONS of different types of imaging done during and after diagnosis. Every single solitary time there was something wonky going on I got a call back almost immediately.....some the same day. If they are having you wait, chances are it's a routine call back to review. Now, this is no guarantee of course, but honestly, and knowing how OHIP runs it's more a chance to bill for another appointment. I had a one month wait to get results once only to have the doc tell me all was good....that after calling several times for results. He was aware of my calls (never returned) and said "if there was something wrong I would have called you".....nice eh? In your shoes I'd call back and ask to speak to the doctor.....or call your GP, he'll have the results, and so will your MO, they all share the results. Advocate....2 weeks is too long if they have results.

    JunieBee - Sweetie, I hear ya. I was raised by a Scottish mother, and while she wasn't unsympathetic, she was def stoic and demanding....to the max. Showing fear was akin to weakness....and as for whining more than 2 minutes, well lets just say it wasn't put up with.....it got you a slap and a sound telling off. At the same time she was there for you when something serious took place (like cancer). I'm grateful for her stoicism....I think it's what got me through the mind blowing effects of diagnosis and treatment. Like you, I keep a lot suppressed, show a brave face, only to have it come tumbling out when things get to be 'too much'. Doing so feels completely out of my comfort zone....feels like I am showing weakness.....somewhat humiliated. Honestly, showing emotional 'weakness' is a much healthier way to go....especially here among those that COMPLETELY understand. I think it's unhealthy when we let it rule our lives though, as unhealthy as supressing. With the cards you've had dealt I'm surprised you haven't burst at the seams in here, and that is where my admiration for your strength comes into play. I have never doubted you must be suffering internally, no one could be that strong, BUT you continually strive to keep it in 'it's' place and stay positive. That my dear takes the strength of steel. So yes, you are strong, very strong....while all the while being completely human. So go forth and vent if you'd like....ain't one of us thinking you're whiny or weak. You have our hearts...100%!!!

    Egads - I am amazed at how well we were soft toeing in those costumes! We rocked it!

    As for the results, I just want a copy of the Bone, CT and MRI (once they get it). I know the results no mets they say, but I am not very trusting and just want to read the report myself. Pretty sure they don't have the MRI results yet, only been a week.

    Inna, please tell me that you didn’t cook our paleo pals! BTW, your turkey looks amazing! Mine wasn’t as pretty, but it sure was tasty!!!!

    Egads, I’ve been lurking lately - my computer died (RIP, old & slow computer) & it was too tedious to post much using my phone. DH surprised me with a new IPad Pro a few days ago so now all is good.

    Junie, you may not feel strong but you are a serious warrior! And don’t ever feel that you are showing weakness; you have earned the right to every single emotion that you want to express. You have been through a lot, especially lately. Vent away, girl! We are here to listen & to support you (& maybe it will make you feel better).

    Vamp, great news on your bone scan. I’m keeping good thoughts that your MRI will also be clear. How are you feeling? Have you made any decisions about what you want to do, career-wise? (I graduated from law school a few months before my 40th birthday & I think it was actually easier to do it as an “older” student. I went from dabbling in custom stained glass to litigating!) When I think about the discipline you’ve shown with your diet & exercise, I can’t help but believe that you’ll be a great student, whatever you choose to study. PS, I’ll be joining you in Black Friday shopping (but on the internet, only. There is no way I’d go into any mall around here on that particular day! Black Friday shopping is a blood sport in Northern VA).

    TwoH, how is your recovery coming? And Ksuze, how’s that bee sting? I sat on a wasp once (back in the mini-skirt era) & still remember how uncomfortable that was. (And I too love your vacation plan. That is definitely a walk worth taking!)

    Egads, the best advice I received for my plantar fasciitis was to wear Oofoes recovery shoes instead of going barefoot. (I was born in Texas & don’t think I owned a pair of shoes - except for my church shoes - until I started elementary school!) I do most of the stretches you posted & also wear custom orthotics in my workout shoes but I think the Oofoes have made a big difference in my comfort level.

    And we should compare Thanksgiving horror stories, Egads. I had to make stuffing twice one year when someone broke a glass into the bowl of stuffing I was making. It was ridiculously early in the morning & I had no more bread so I had to knock on doors & call friends to come up with enough bread to make that second batch. Then there was the year we arrived at a friend’s home to find all the doors & windows open & black smoke billowing out of the house. My friend had accidentally basted the bottom of the oven instead of the turkey & the oven (& the turkey!) had caught fire. The cook (& I use that term loosely) then compensated for the time lost to the fire by turning up the temperature on the oven so the turkey would “cook faster”. I’m certain you can imagine how that turned out! Ahh, the Thanksgiving memories!

    Tomorrow it’s back to the gym & then home to put up my Christmas tree. Anyone want to join me?

    Good day Peepers!!

    Well....I was stoooopid enough to try it.........and it ended as I imagined it would. I actually took a hairbrained cruise on over to the 'shopping zone' (said in a dark brown voice).....managed to get 6 kms (approx. 4 miles) within parking distance. That was enough for me....ain't no sale worth a 2 hour idle on the highway, another 3 hours trying to find a spot and then chance being trampled to death by peeps desperately seeking a 1/2 price instant pot! Turned around and went to the grocery store for some Yu Choy. The parking lot was a zoo......Black Friday is EVERYWHERE!!! Even in the produce department. 10 lbs of potatoes 59 cents. I almost got side swiped by a lil' old lady with a suped up cart.....she was out for blood I tell ya!! I grabbed my Yu Choy and got out of there fast. Guess it's the high price of low cost :)))))) Ok, so on to business...….

    Inna (godda davida) - I ROARED laughing at your post!!! RIP indeed, you sure cooked our goose! I think that must be Vamp......she tans better than I! You got some seriously gorgeous colour going on that turkey.....secret? Pray do tell! Your turkey must have been amazing....all that colour and not an inkling of dryness! We need to know the secret!!!

    Vampriella - Maybe we should hit broadway running.....we DID rock that dance! Practice for Xmas dance starts Tuesdays at 9 :)))

    JKL - Howdy girlfriend!! Great to see ya' back and so happy your Cavehubs hooked you up with a working platform! I agree...posting from an iPhone is like being skinned and rolled in salt....painful!! Loved the TG cooking stories.....the broken glass in the stuffing....man I bet the expletives were flying all ova' da' place when it happened! I once made PERFECT....no I mean NIRVANA ribs......taking the dish out of the oven and I heard **CLICK**, then the glass dish literally exploded in my hands! Thankfully it was still at leg level so I only suffered a few glass shrapnel cuts on my thighs (wearing shorts this was summer)....but my gorgeous ribs were all over the floor covered in pulverized glass. I used the 'ef' word a number of times, grabbed a glass o' red and called out for pizza. Man....I can still smell those ribs!! :)))))) Cooking warrior stories are so much fun!! Oh, and you were missed girly girl!! :))

    FOODIE FRIDAY - Egads Test Kitchen - To dream the impossible dream!

    Dedicated to Inna (godda davida) our perfect turkey cookin' kosher gal!!!

    So I got all experimental a few days ago…..our lovely Inna (godda davida) mentioned that she wanted to keep her cave kosher, but still would have liked a bite of bacon wrapped pork tenderloin. My kitchen was challenged and I spent a wee bit of time burning up Google in search of a healthy but tasty alternative.

    Fasten your seatbelts, it's a bumpy ride!

    Substituting the pork was a no brainer…..chicken breasts….nuff said', so I made up a stuffing mix of sauteed mushroom, onion, lil garlic, dried chervil and thyme….lined the butterflied breast with spinach, then stuffing, topped it with goat cheese mozzerella……

    Here's the fun part…..Bacon Substitute = EGGPLANT. Yup, eggplant. It's all over the 'net. Thin slices of eggplant (chinese or regular) soaked quickly in a smokey maple oil ….so I made them up and carefully wrapped the breast with them…secured with a few toothpicks.....

    sliced and cooled off, this is left overs, cheese no longer melted, but it was)……

    VERDICT: Does it sub the tenderloin? Not on your life!

    Eggplant 'bacon' only looks like bacon…it does not taste like bacon…it tastes like smoky eggplant.

    Was it a bad dish? Not in the least!! We enjoyed it very much with an mushroom gravy not shown and oven roast carrots & brussells….nice way to get a healthier smoke flavoured roll. You can also bake the strips in the oven until dry for a vegetarian bacon....or bake until soft to make a wonderful smoky baba ganoush base.

    If anyone is looking to sub the tenderloin I'd recommend using the chicken breast, adding a little smoked paprika to the stuffing and wrapping in chicken or turkey bacon…..all good, all kosher!

    Egads, thanks for the recipe! I might try it. Have to run it by my cavemen first. Immensely flattered to have most of the post dedicated to my own humble self! Here’s something in return:

    The secret of my turkey is simple: BUTTER!

    Ok, there’s more than that, of course. I dry-brine it for 2 days in a mixture of herbs, smoked paprika and kosher salt. Make sure you’ll make pockets between skin and meat and put some mixture there. The day of cooking it I massage generous pats of butter underneath the skin of the breast and thighs. I also brush it with avocado oil all over, cover it loosely with foil and stick into the oven. About 40 min before it’s done, I take the foil off and start basting it with its own juices from the pan or with chicken broth every 15 min until done. It’s the juiciest turkey you’ll ever eat in your life. The breast meat will melt in your mouth.

    JKL - I will go with you to the gym, as for the tree that's not till December 1st in this house. DH does not like it up even that early. lol Thanks for asking, I am actually feeling better pain wise, whether it's the pills, exercises, trying to correct the posture, combination of all it seems to be better than it was. I definitely have to watch my posture, just leaning over to type is causing a weird feeling in my back. As for a career, I have nothing and nothing interested me for school. Unfortunately I lack confidence in myself. That is amazing that you went from custom stained glass to a lawyer! So now I know if I am ever arrested who to call! :) As for the diet, it's not going as well as I would like, kszue is our star there. I am trying, but struggling some days...like in social settings or when I feel nauseous and you want ginger ale or toast. I will keep trying and with my kids wanting to do it, it may make it easier. A note they made up for daddy...lol he is going to divorce me!!!

    Black Friday shopping - Egads that is too funny, I would never brave the stores, I don't even like the stores on a regular day let alone the busiest day of the year. I did my shopping from the comfort of my home in my pj's drinking coffee:

    Inna - I want to make a turkey now and I make turkeys once a year! Unfortunately the guy in my freezer is a cook from frozen, so he will not be looking as pretty as yours. Your turkey is so beautiful I could quilt it! Here is the apple I did in a class this week, it's not complete yet:

    Eggplant - no matter how good you make it look Egads, that stuff is not welcome in my house. Don't matter that you are tempting me with how yummy it looks and sounds, nope not happening. That purple plant is banned just like the purple dinosaur.

    I am pretty sure we could have our own Chicken Soup for the Soul - Holiday Horror Stories. :)

    Junie, I love that Kirby got to go with you. He is looking mighty sharp. I totally understand you. Everyone says we are so strong but the truth is, I am much weaker now. Things that did not bother me make me fall apart now and I cant cope with small thingsgoing wrong I am sure it is common because my oncologist finished my sentence as I was telling her this one time.

    I never shop Black Friday since showing up at Best Buy 10 years ago at 8:30 to find there wasnt a single parking space. I dont want or need anything that badly that I might get trampled for or lately, shot. I spent a grand total of $30 online on my skincare that was on sale. I am not pumping up the economy much, except the healthcare economy!

    We are having our Thanksgiving today. Wednesday I told family I cant do Thanksgiving-we should think about what you want to eat. Agreed we didnt need it and we had our favorite breakfast food for dinner (including non Paleo biscuits with cinnamon honey butter). Watching the New Orleans football game that night and they highlighted Emerill’s Thanksgiving creations that just made our mouth water. Friday DH hit the grocery store for a fresh turkey so we have turkey in the oven right now. Bread stuffing for my son and sausage, mushroom , zucchini, pecan stuffing for us. Will probably have some mashed potatos and gravy but forgoeing the pumpkin pie and cranberries.

    I think turkey bacon would be the appropriate substitute, or just cover it in that gravy. I never buy turkey bacon but my son pointed out that the salad and sandwich place we frequent serves no pork - its turkey ham. turkey bacon. I paid attention to the turkey bacon on my favorite broccoli salad and it was actually quite good so maybe I changed my mind.

    Hello, cavepeeps. I hope you all had a great Thanksgiving (or some high quality Canadian time). I went slightly off-diet to accommodate being with family and eating a holiday meal plus restaurants that had to work for a variety of preferences. I had some stuffing, a pita, and the equivalent of a slice of pecan chocolate pie, plus a bit of sweet potato. So nothing too extreme, but I'm looking forward to eating on my own terms again, and spending some time on the treadmill.


    Christmas has its own gustatory challenges, but fewer people will be staying with us, and they're a quieter bunch.

    If you're wondering where I am for the next several weeks, the answer is "grading and meeting with students."

    So how was your weekend? Hopefully our American Cavies pulled through their turkey hangovers! The weekend in my cave saw the spice reorganization reno project almost come to a close and I hope to be posting pics in the next day or two. I'm proud of the hard work my Cavedude has put into this venture and I see an extended back rub coming his way. Did I venture into Vegas? No way….Christmas is coming and I'm making sure I leave room for a few treats during the holidays. Last night we had hot dogs & fries…..all paleo and purdy darned good if you ask me…healthiest 'junk' meal we've had in a while.

    So on to business…..

    Inna (godda davida) – Thank you for sharing your turkey secrets! The Christmas before last I wet brined a turkey, and it was really good, but I've never tried the dry brine......and am assuming it leads to the colour and juicy factor your turkey had……can't wait to try at Christmas!! I'm taking your directions but applying it to a goose this year (we are not fans of turkey, and since goose hit our table we've been honking with joy :)))))) I doubt I can achieve the perfection your turkey has, but I'm gonna try!! I'll post pics! How you feeling now? Things getting back to normal physically & emotionally? How is your Cavehubs doing?….you two took a lot of 'hits' recently.

    Vampriella – Did you ever try the ginger Kombucha? It's a great ginger ale replacement (and my go-to for upset tummy or GI issues. Ya' know, I think your Cavehubs and myself have a lot in common. First the 'sleep in' issue (from a few months back….still laugh at the gif you posted of the woman bashing pots together) and now Christmas trees. If I had my way Christmas decorations would be a wreath on the door and maybe a candle on the table…..put up Dec. 24th and taken down Dec. 26th:))))) That said, in the last few years I've started getting into the whole seasonal décor thing…..probably because I'm semi-retired….whatever that means! LOVED the gifs….the lady in curlers could have been me!! Your apple quilt work is gorgeous….I so wish I could do that!! Keep posting as you progress please!! Eggplant….I hated it untill I tried the chinese type, but even then it has to be cooked in something. On it's own it squeaks on the teeth *shudder*.It was fine on the chicken, but as bacon….nope. Turkey or chicken bacon is the best sub. Macros….we should gab soon.

    JKL – I forgot to reply your invitation to join you in putting up the ol' Tannenbaum. Tradition in our cave dictates that trees don't go up until December 16th. ….partly because we always have a real tree…putting up in November would ensure a Charlie Brown Christmas tree by the 25th:)))))), but most importantly, my son was born on the 15th. Tough being a Christmas baby, so I wanted to make sure his his Bday felt unencumbered by any other celebration. Lemme' tell ya', it's always a mad dash on the 16th of December….tearing around getting the decos up…..and probably why I feel what I posted to Vamp. The older he gets the closer we get to decorating on the 1st. Baby steps :)))I'm also considering an upside down installation this year…..like this…….

    When I saw this set up I said "OH I HAVE TO HAVE THAT!!!"…..seems so different, modern & funky! My Cavedude is shuddering at the logistics :))))) Turns out this is neither modern nor funky…..stems from eastern European tradition….representing the shape of Christ on the cross. Rumour has it that Prince Albert & Queen Victoria regularly hungtheir tree upside down (Bertie brought not only the tradition of dragging a tree in the house and plastering it with shiny stuff, but the upside down thing, from Bavaria). So this year we will be attempting to flip the tree skywards whilst I comment "We are not amused" in my best Queen Vic accent :)))))))) If it works, pics are DEF being posted!

    KsuzeYay!! You're still with us! Looks like you were purdy darned good during the Thanksgiving holiday….that deserves a gold star! Your busy schedule is our loss….you've been missed! Try not to work too hard on the grading & student meetings….although I know that's probably not possible….save room for us on occasion….we're keeping a seat reserved for you as always! :))

    TwoH – Sounds like you're recovering nicely and you had a perfectly compliant and delish meal happening the last time you posted.I have to give you full points for forgoing the dessert….not an easy task especially in cooler weather seasons. Cold & carbs are best buddies :))))I'm kicking myself now that I didn't check out skin care deals online during the black Friday madness. Geeze….I'll have a new instant pot, some kitchen gadgets and wrinkles :))))))))

    ………..and with that Cavies, I'm off to the gym and will be putting a dent into my Christmas baking this afternoon to round up my personal challenge. Oh it's gonna be so much fun (she writes sarcastically), BUT interesting. On the baking menu today?     Know I'm thinking of you even if I'm not on the site. I have final papers for three classes plus another paper for one, so I expect I'll re-emerge the 15th-20th in time to put up the tree and prep food for our in-law Xmas visit. I've asked for no candy or cookies in my stocking or gifts this year, just nuts, tea, or spirits. The lovely wife will quietly provide me with one bar of marzipan to be eaten on the sly over several days, and there will be GF DF EF oatmeal raisin cookies that everyone enjoys unless one points out they're allergen-free, in which case some of the guests decide they don't like them :). I have no Xmas traditions, so it doesn't matter to me what we do as long as we're together.
