    Egads - Your story is absolutely adorable and terrifying all in one. Terrifying because a lot of us have been in little 5 year old Egads shoes and adorable (funny) because I can picture it and see how cute the situation would have come across to a parent. That was pretty brave of you to open up like that and I personally liked it, you showed us another side to you that we may never have imagined you to be like. With your writing style and talking to you I would have guessed you to be quite confident as a speaker.

    JKL - You and Egads have touched on part of the reason I am in therapy! I got one for you - how to change your thinking of needing a purpose or being needed. . . . Happy Birthday - I like the others read it twice and didn't pick up on it either, I don't think my brain functions very well anymore.

    Junie - getting your Thanksgiving recipes ready? How are you feeling hun?

    Inna - how did your first day of Rads go, yesterday I think it was?

    Finally, sunshine, at least for today. The next 3 days promises heavy rain here. I miss the lovely Ontario falls days *sigh*. Onwards....

    JKL - LOVED your reply to Tuesday's ponder! Folks that erode our confidence and toxic relationships that you spoke about struck home with me. I've encountered more than a belly full of that in my lifetime, as we all probably have....and yes, the impact can be great. As I mentioned in my post, it took until my mid 30s and the birth of my son to rise up and rebel.....at least internally. Age and a few other factors helped. Your 'reclaiming' and 'no self doubt' advice was sage. The next time I'm nervously hitting the submit key, I'm going to 'turn that frown upside down' and tell myself this...."I have a right to feel these words, they count"....and as you say use any doubts as a tool to question my words impact rather that fearing the chuckles. Like you, I feel opposition (unless aggressively rude) is key to keeping us grounded and centered on a path of self discovery. If we don't question we get nowhere fast and a free ticket to Narcissism Fest 2018. Ya' know, I've always thought of you as the voice of reason in our little community.....your post once again proved it. Thank you! Btw, please do go on and on, highly doubt there would be any objections!

    Vampriella - LOVED your reply too! I don't think there is a person since the dawn of time that gets out of life unscathed by some type of emotional struggle. I think all of us have our headspace touched in varying degrees. Talking about it helps so much, lets us know that others suffer too and makes us feel a bit more on the 'normal' side. My fight with self confidence (1/2 genetic & 1/2 environment IMHO) was a hard fought battle, and it continues, even though I've come a long way. My 'hard time hitting the submit' and self doubt only crops up occasionally now, but when it does it hits hard. Reading your and JKL's words go a helluva long way in lifting the pressure, thank you! Now, your wrote "how to change your thinking of needing a purpose or being needed"....could you expand on this a little further? I think I know where you're coming from but want to be sure my reply doesn't go off in the wrong direction. I will say now that man-oh-man sweetie, you are sure as shootin' needed here!

    My therapist and I were talking last Wednesday and it got me thinking. She brought to my attention that I had stated the client's I work for need me, so I don't mind doing the places. I got thinking the next day, is it to be needed or a purpose I am looking for. I wonder if part of my depression falls on this. I don't feel like I have a purpose other than the twins.

    Have you tried telling your friend that you would prefer to be introduced as "Egads" and not "Egads my friend who...."? Good luck this am! I got your bail money. 🤪

    Vampeyes & Egads - Thanks for asking! Since returning from Mayo Clinic I've had my Faslodex shots and on Oct. 1st I restarted the Ibrance. My backside is dragging. The fatigue is exacerbated by the insomnia. Also since being put on the blood thinner in June I've not been able to take any anti-inflammatories. Oh how I miss those! The hives are back, but not as severe as before, only on my thighs for now. Just no explanation as to what is causing them. I have been wondering if anyone has ever reported being allergic to the bone cement they injected into my vertebrae. That is the only new thing in my body. Just a thought.

    I do not fix holiday meals since I do not have any family. I do have a half sister that lives in Ohio. She is married with 2 teenage sons. We discovered each other in 2016, and have only had phone conversations so far. Our father was killed in 2000 and he would have been 82 last May. I had hoped to go to Ohio and meet my sister face to face for the first time and visit our father's grave, but that didn't happen. Then my sister turned 50 in August and I would have loved to go meet her then, but I was at the Mayo then.

    Sometimes I will be invited to a friends house to have Thanksgiving / Christmas dinner. I made the choice to stay single and most people have family and that usually takes priority for them. As Inna said, her house is one of those unusual homes that bring home strangers for the holidays. I think if I lived in a house or large apt. and had more energy I'd take that on myself.

    Friday-Oct. 12th is Kirby's 2nd Birthday, so I ordered him 6 new squeaker tennis balls & 4 packages of his organic grain-free treats. I know it is just another day for him, but I cannot believe it has been 2 years ALREADY! I had thought about baking cupcakes and giving them out to random people to celebrate the day, but I doubt I'll have the Umph to do it. Tomorrow I am volunteering for a few hours, then I am meeting a friend at Costco to do some shopping. Then I'll be ready for a nap. Today I went to a movie with my movie buddy, went to pick up a box of food for Kirby and came home and slept 2.5 hours. Still tired! Geesh!

    Also, Friday evening there is a fundraiser for the organization I volunteer with and Kirby has to have a bath before we go. He's not gonna love that. The speaker is a man named Ron Hall. He and his wife volunteered for the same organization, but in Texas. After his wife died (of breast cancer) he continued to volunteer there and developed a friendship with one of the men from the shelter. They were such unlikely people to be friends. They traveled the country doing speaking engagements until Denver, Ron's friend passed away a few years ago. The story first came out in a book, then it was released last Fall in a movie titled "Same Kind of Different as Me" I saw the movie and I am looking forward to hearing Ron speak on Friday.

    Inna - How are you doing? When I had radiation, I only had 5 high dose treatments and it kicked my behind. The first 2 days were smooth as could be, but by the 3rd day I was cranky and wanting to cry at the same time. I don't know how anyone going through weeks of treatments keeps their sanity. I will pray you do well and can enjoy your holidays.

    Well it is now nearly 1:00 a.m. and the Kirbster has to go out, then I'll try and get some more sleep. Goodnight everyone! I hope you all have a good rest of your week.

    Hello, ladies. Today is my third radiation treatment, and if I want to make it there on time, I better stop typing and get off the toilet seat. But first things first.

    Egads, your friend sounds extremely insensitive. Introduce her with some witty retort, like This is my friend, she used to have brains.

    When do we start accepting ourselves? Great question. My acceptance comes and goes. When I am thinner I like myself better, that’s for sure. But what if not accepting ourselves is our way of pushing us toward self-improvement? Assuming, of course, we don’t dissolve into tears in front of the mirror, a little bit of self-doubt might be beneficial to some people. I know it is to me. Unless we are taking about accepting our fate, which is a totally different ball game.

    Pylera is finished, thank God. It took me down almost like the chemo. Now is the time to face my reflection, assess the damage and get on the diet. So far I have no side effects from the rads, but my doctor told me they will come by week 3. Can’t wait, truly.

    Inna, here's hoping rads is relatively easy. Mine was until the end of week 4, and even after that (week 5-post-week 1) it was manageable.

    Hey Cave Chicks! pardon my tardiness, busy day! Dedicated to our much loved JKL, the inspiration for this post......

    TUTORIAL THURSDAY! - Giving it the ol' Collagen try!

    I'm not a fan of taking supplements but COLLAGEN, the new kid on the block in the world of healthy eating/diet supplement, has grabbed my attention. What is it? Should we be taking it? Why? Considerations? Let us take a peek shall we?

    What is it?

    Collagen is the most abundant protein in the body. 25% of your body's overall protein composition is comprised of collegan, and as much as 80% of the protein in your skin alone….hence why you see collagen included in so many skin/haircare products. The premise of collagen is simple: keep the skin elastic, the hair strong, and connective tissue nice and stretchy. Without it, your muscles, bones, connective tissues, GI tract and even blood cells would suffer. Sound interesting to you TAMOXIFEN/AL gals??

    Should we be taking it? Why?

    :****(many other medical issues can include the symptoms listed below, never assume and self medicate without getting a medical evaluation...this offer is void where prohibited :))))))******

    In order to decide, check out the following signs of a collagen deficiency:

    • Joint pain (hello!)
    • Wrinkles (hello! hello!)
    • Aching muscles (greetings!)
    • Dental/gum issues
    • Hair/nail issues (oh yeah)
    • Excess cellulite
    • Blood pressure problems (Frequent headaches, Chest pain, Dizziness, Fatigue


    Considerations:

    • Collagen is good for joints. It concentrates where joints meet and in connective issue. If you're a heavy exerciser or are suffering from joint damage/pain, supplementary collagen will improve your resilience. Human studies are finding that giving collagen hydrolysate supplements reduced pain in athletes complaining of joint pain……same pain a large number of tamoxifen/AI users deal with!
      • It balances meat intake. Glycine, the primary amino acid in collagen, is anti-inflammatory. It balances out the muscle meat we eat. In one recent study, people with low glycine levels and high meat intakes were more likely to have diabetes, while heavy meat eaters with higher glycine levels were protected from diabetes. Another study found that low circulating levels of glycine predicted diabetes risk. Indeed, a lack of glycine just may be responsible for the link between meat consumption and various diseases,not the actual meat.
        • Collagen is good for the skin. Take note tamoxifen/ AI users, especially those suffering the pain of vaginal SEs……In one study 6 grams of collagen per day reduced skin cracking and increased serum collagen. Collagen peptides reduced wrinkling in another study, and collagen has also been shown to improve skin elasticity…… Reduced wrinkling? Improved elasticity? Oil of Olay, move over!!! Oh yes ladies, don't be duped by L'Oreal & the Gang….topical application of collagen on skin basically has NO effect. Collegan molecules are larger than our pores, so don't waste your hard earned dough! The cosmetic industry's claims will rob you blind with empty BS promises of 'reversing the clock'. Take your collagen via ingestion for the real deal!
          • It improves sleep quality. Try big mug of homemade bone broth (plain soup stock) about an hour before bed. A great drug free way to get your sleep on! Human studies show that 3 grams of glycine taken before bed increases the quality of your sleep and reduces daytime sleepiness following sleep restriction.
          • It improves wound healing. Makes sense, right? Our collagen requirements increase during wound healing (which involves laying down collagen to build new tissue), so a little extra in the diet can make a big diff. In patients recovering from ulcers, collagen supplementation sped up healing time. Some clinicians are even packing collagen directly into the wound dressing to speed up the healing process. It's for this and the first listed reason that I'll be including a powdered collagen to my diet when suffering my on again, off again vaginal atrophy, or the Big Burn as I like to call it :)))

            So how do we get it?

            The BEST way to get any essential nutrient is from real food sources:

            Eat gelatinous meats. Many meats are low in collagen, but not all. Shanks, necks, feet, cheeks, oxtails, ribs, and all the other cuts that take extra time in the slow cooker to become tender are high in collagen. Favor these meats instead of yet another chicken breast.

            Use powdered gelatin. No, not the stuff of nursing homes. The plain powdered stuff. Great as a thickening agent in soups and sauces…..you can even make 'gummy bears' for a daily dose. Gelatin is not only an amazing source of collagen, but (as they say in the interior decorating world) lends itself to many dishes :))))))

            Drink bone broth (plain soup stock). Bone broth is trendy right now, and for good reason; it's a rich source of collagen. Bone broth is simple to make but takes valuable time. If you can't do it yourself, there are a plethora of suppliers than can provide organic or grass fed options, most in the grocery store. Amazon is another good source.

            Eat skin…Chicken, fish, etc….not Hannibal Lecter's preference. Skin is almost pure collagen. Eat it, and eat the discarded skin from your cavepartner's dinner plate, the way I do :))))).

            Clean your bones. You know those crunchy caps at the end of chicken drumsticks? That's cartilage, a big whopping dose of concentrated collagen. Eat it. (I have eaten those caps since childhood, love the gristly texture lol, I bet a few of you are shuddering now) :)))))) Hey, Grok the caveman left nothing untouched!

            Still want more? Use collagen hydrolysate. A powder you can buy in bulk that can be added to smoothies, coffee or any other liquid. Apparently yummy. Just be sure to get from a reliable source (most paleo websites carry it)….goes without saying, GMO free, organic & from grassfed bovine.

            So there you have it kids There is a ton of info that could have taken this post into encyclopedia format. If anyone wants more detail or links to studies just ask and I'll post or send!

            Egads, thank you for the kind words. I really feel I've found a home here in the cave. I'm still enjoying the visuals of you & your sister at your school programs. I bet you were both super cute! BTW, your friend is just jealous; want us to take our clubs & pay her a midnight visit?

            Thinking of you, Junie, & sending healing thoughts. You've been dealing so much lately it's no wonder you have hives! (FWIW, one of my doctors told me she experienced stress-related hives & saw them improve when she began eating paleo.) It sounds like you're staying active & engaged, though, & that is a very good thing. Just keep taking naps & taking good care of yourself & your adorable Kirby. How interesting that you, like Egads's DH, found a "new" sibling. (Is there a story there that you plan to share?) I hope you are able to meet eventually. And thanks for the cake & the puppy serenade; they made me smile!

            Inna, you too have been going through a lot. I hope radiation does only good things for you! Expect some fatigue but use it to justify a few long naps!

            Good to see you, Vamp. Sounds like you're working hard on understanding yourself & that is always a good thing. Keep us posted on how things are progressing. Like so many on this site, you've been through a lot lately (including more health concerns & losing your stepfather. BTW, any answers from your latest tests/scans?) It would not be unusual for you to be feeling some depression. And I think most women feel the need for a purpose - just don't neglect yourself while doing things for others!

            Tonight's post-Zumba dinner is organic chicken broth with olive oil, a T of collagen (Great Lakes kosher, unflavored), salt, pepper, dill. Pretty good!

            Egads or anyone who can tell me this. When baking, if I exchange almond flour for the wheat flour is it an equal exchange or do I have to make an adjustment in the almond flour? An example would be chocolate chip cookies, oatmeal cookies or a cupcake, etc.

            Junie - I don't think it's an equal change. I would recommend searching for a Paleo recipe.

            Got an email from the doctor's office, they are going to re-run the blood tests and add in a fecal test. (good times haha) My gyno is going to run the baseline for the thickening and then do biopsies. Going to be a busy month! Next month CT and follow up with RO. Bring on 2019!!

            Instant Pot/Pressure Cookers will cook that "bone" broth in 2-3 hours depending on the recipe you follow.

            JunieBee -Yes you can 1:1 sub almond flour BUT….and this is a big BUT, because of the lack of gluten you will probably have to add extra binders and increase the raising agent the recipe calls for. I've found that straight out 1:1 on wheat flour recipes is a gamble though, and using a paleo blend so much successful. (Blend = 1 cup almond flour + 2 tbsp. coconut flour + 1-2 tbsp. arrowroot or tapioca starch). Bread is a different story, I usually don't sub and find a paleo bread recipe.

            Tips:

            • Make sure you're using almond flour and not almond meal…huge diff in baking between the two. Meal will result in a 'grainy' texture (which actually isn't unpleasant at all). Blanched almond flour is the best 1;1 substitute though.
            • An extra egg or half beaten egg can will give more 'structure' and increase the raising agent slightly can be helpful. (eg: 1 tsp baking soda is now 1.25 or 1.5 tsp).
            • Add a couple of tablespoons of coconut flour (highly adsorbent) to every cup of almond flour. Almond flour is highly fatted, the coconut flour stops baking from becoming too greasy. Add a couple tablespoons of arrowroot or tapioca starch to every cup of almond flour if you're not concerned about the carb count. These will help with rise and binding.
            • Always allow the baked item to sit and cool completely, or you will end up with a mess ofmisshapen cookies if you lift off too soon. The cookies will be crisper, hold their shape better if allowed to cool for a couple of hours (same goes for muffins and cakes)
            • Bake on parchment paper or baking sheets unless you want your product stuck to the pan forever :))
            • Always bake at 25°F lower than you normally would for a longer time. Watch your oven carefully and cover with aluminum foil if it starts to brown too quickly.

            You can also play the safe route ('cause lets face it, almond flour isn't cheap) and look for paleo "already tested' subs for the same recipe. There are 500 gazillion paleo cookie recipes online.

            Looks like we're well into Foodie Friday, and it's nice to see our JunieBee stepping into the baking zone! One thing about paleo baking that cannot be denied, it's delish! Just watch your consumption though, it's hellishly calorie laden....as it is with any type of baking. Big consumption = big butt :))))))

            JunieBee - (re: your post yesterday) Lady, you sure keep a busy schedule going considering all the recent health issues, you're our hero!! All your upcoming events sound wonderful, let us know how it all plays out! Btw, if you're ever my way during the holidays know there will always be an extra setting available for you at my table! Oh, and please give the Kirbster a big hug and tell him Happy Birthday for me!!

            KSuze - Way to rock the collagen darlin!! Very cool post workout meal...your cartilage will be thanking you :))) Glad you liked the post.....I know its bad form, but I laugh at my own words while typing :)))))

            Vamp - Purpose.....we all need and crave one (or many)…..matter o' fact peeps without a purpose tend to fall into terrible depressions and physical probs. Stating that your clients 'need' you is a good thing.....be proud of the good work you do and how it is needed, 'cause it IS. Finding purpose outside child rearing is difficult, they demand (rightly so) so much of your attention. Mum's tend to get themselves lost in the shuffle. Try making time everyday for YOU, and your outside interests/hobbies, even 15 minutes. Those 15 minutes are purposeful, and good for the soul. Once the kids are older branch out, find something you love and refine it....own it! For me it's writing. While it may not contribute to the good of mankind it sure as shootin' contributes to my peace of mind. Be selfish with yourself for 15 mins a day and you're likely to find a ton of 'purposes'. Oh boy....fecal tests, so fun LOL, at least they aren't painful. Btw, I'm SO glad they're doing it....could account for low blood levels. Some peeps are asymptomatic for stomach & colon ulcers and bleed just enough to lower blood work, but not enough to notice when they...ummmm...potty. Looks like you're in good hands with your doc....keep us posted!

            Inna (godda davida) - Yay the meds are done!! They are ROUGH....hope the tummy clears quickly. I couldn't agree with you more re: not accepting self as a way to improve.....especially on the physical side. When I gained weight I looked in the mirror one day and said "ENOUGH, something HAS to be done...NOW!!" The same applies to my shy side, I got sick of it, got mad at it, and changed it. So yeah, excellent thought. As for the rads, I was tired, but I think it was from the daily slog over to the hospital. Side effects was only skin probs...breast got red and chapped skin. I found rads a walk in the park compared to other treatment. Keep us posted!

            JKL - I roared laughing at your offer of a 'midnight visit' to my bud with the missing mouth filter. So loud that my cavedude wanted in on the laugh. When I read it to him he said "Geeze, you paleo chicks are made of rock" He loved it too! My sister was a gorgeous child, blue eyes, blonde curls. She was so cute that my mother was approached by Gerber to use her for magazine ads (Mum had sent her pic in for some type of contest). Mum refused at the end of the day, afraid it would disrupt my sis's childhood. Me.....well, lol, I was pale, skinny and cried when Happy Bday was sung to me....you know, a real live wire LOL!!! Ahhhh, people, the differences are the stuff life is made of. Btw, I saw you post on another thread that you went to Chik Filet after surgery....which floored me....I went to McDs right after surgery!!.....people think I'm nuts when I tell them. It was the last Big Mac I ever ate....and I'm proud to report I biggie sized the fries :))))))))

            Everyone: My friend with the horrible comments is a very long story. I'm now realizing that more derogatory comments are sliding into the conversation, especially when we're in a group setting. For now I'm just on 'observation mode' and will decide in short time if it's going toxic. If so I'll have a decision to make. As JKL noted earlier, toxic peeps need to be cut out of our lives.....peace of mind isn't just paleo, it's good sense. Ain't no one got time for toxic!

            So on to more FOODIE FRIDAY (yay!) I had something prepared to post about, but we ate it ALL :)))))))) Working on a second batch today and will post later. Have a splendiferous day y'all!!!

            Some of my blood work is back, giving the measure of 12 weeks of keto.

            • ALT is back down, which I figured it would be and my MO wasn't concerned, but my PCP was.
            • LDL is back down.
            • HDL is low.
            • Triglycerides are over 200, which isn't my norm. Where's the part of keto where they're supposed to go *down?*
            • A1C isn't back yet.
            Vamp, I've told my PCP that nobody has ever asked me to do a fecal card. I'm opposed on public health principles to sending shit through the mail, but I'm trying to be diligent about my health monitoring.

            KSuze - wondering out loud here....are you using artificial sweeteners? I know you mentioned you didn't like one type but I know that contrary to popular thought, most do spike insulin levels...which leads to all sorts of probs. Wondered if this might be behind your wonky blood levels. Decreased cardio? Lastly, and I say this with the utmost respect, could it be the high fat intake that keto prescribes? This is where I part ways with keto, I think the fats are too high, carbs too low and protein not emphasized properly. Again, just a ponder.

            I've always though the mail back of the FIT test put postal workers at risk. It's standard here in Canada to receive them every two years after age 50. They won't do 'in office' unless it's for specific reasons. Why the hell they just don't go for colonoscopies is beyond me!

            KSuze, I'm sorry about the labs and feel just awful for you....all the dedicated hard work you've put into this deserves stellar results. I'm sorry. :(

            No, no artificial sweeteners. I use a little stevia, which is from a plant, and which has blood-sugar lowering properties and is therefore recommended for my diabetes. I do 4 Zumba classes a week at the moment, so over 180 minutes of high cardio plus a fair amount of walking per week. My triglycerides are normally lovely, so yes, I assume it's the keto diet. I've read that the lipid numbers reduce if you stay on keto, but I already have an appointment next week to talk with my PCP about decreasing 4-legged meat and increasing vegetables for the next 3 month block. I'm not opposed to keeping vegetable fats higher, but don't want this much animal fat. I'm not unhappy with these numbers, though the as-yet-unreported a1C is the acid test.

            I had the broth 'n' collagen soup with some cheese and vegetables for lunch today.

            ETA: I got stopped for speeding yesterday and was pleased to note that I now weigh less than the weight on my driver's license.

            It really does seem odd to mail literally shit in the mail? WTF is with that? I picked up my card today, did another set of blood work and checked my most recent. My numbers are dropping - cbc, HG and hematocrit are all low. My B12 is high, iron is on the low side but in the normal range. Damn I am at a loss here. I booked an appointment with the doctor - 3 week wait again. "insert eye roll". (November 6th!) How sad is that just to see my GP?!

            KSuze - are your numbers not good? I don't really know much till I start googling. I know one of mine came across high for the HDL or LDL and was told to cut back on animal fat, so your low numbers made me thing that you were golden till I seen Egads post.

            Egads - I knew you would be along with the correct answer to Junies question, I just figured it would be easier for her to find a Paleo substitute than mess around with converting a recipe. As for the purpose, I don't know what to do to make myself happy. I have hobbies, when I can get myself to do them, but everyday is different on how I feel.

            As for the colonoscopies instead likely a money issue here in Canada.

            The only labs off are high triglycerides and BUN, and low HDL. The former is surely a result of the keto diet, since I never run high. As to HDL, which never typically runs low, Mrs. Google suggests:

            Here are nine healthy ways to raise your "good" HDL cholesterol.

            1. Consume olive oil. Extra virgin olive oil may be more healthful than processed olive oils. [I already do this.]
            2. Follow a low-carb or ketogenic diet. [I already do this.]

            Just a quick drop-in to wish Junie's Kirby a Happy Birthday! (And to confirm something that Egads mentioned about the challenges of paleo baking ... I made chocolate chip cookies last night that were more aptly described as chocolate chip puddles. When they eventually cooled & firmed up they looked one-dimensional! They had to be peeled off the parchment paper like you peel a label off a piece of fruit! Amusing but not particularly edible. I will NOT be posting the recipe.)

            Egads - Thank you so much for the info on Paleo baking. However, it sounds like more work than it's worth, thus taking the enjoyment out of the finished product.

            I just got home from the fundraiser about 45 min ago. It was AWESOME! The author of the book/movie gave an incredible presentation, plus he signed my copy of his first book. I found out tonight that there is a sequel. I need to get reading.

            Last weekend I did some power washing and sweeping outside. My right elbow has been sore since about Wednesday, and now it is hurting a lot more. This the the arm I have lymph edema in and have had Cellulitis in 4 times so far. Two of times I became septic. So now I am a bit concerned that my elbow is so painful. I hope that I can make it until morning before I have to call my MO. I sure don't want another trip to the ER / hospital. Argh!!!!. I am on day 12 of the Ibrance, so that is also another reason to be concerned. That awful neutropenia that comes with the Ibrance.

            On my way to the coag clinic today I was walking past a wall that I've walked, driven or rode past 100's of times in the past 12 years, but not until today did I get the urge to take a pic of it. I think it is rather unique. Check it out!

            Happy Birthday Kirbster!!! What a cutie when he was a puppy - although really aren't they all? Junie that is a cool wall, I like watching the trains go by, sometimes there are some really cool artwork painted on them! Fingers crossed that the elbow turns out to be something simple! xxx

            JKL - we have all had those fails! I remember when I was little I forgot flour once and they would have turned out just like your chocolate chip cookies! Here is a link to a chocolate cookie that taste pretty good - I used almond extract for something different.

            KSuze - Well there you have it, it's the lack of fish. Do you like canned tuna or salmon, shrimp, crab? I have a few good recipes that go well with those; one is a casserole and you hardly even notice the tuna and salmon in it! Let me know if your interested and I can post some links to the recipes. :) Sooo did you get off with a waning? Must have been driving a mustang!

            Happy Saturday Cavies!

            I didn't mean to scare you off of paleo baking JunieBee, it actually is only a matter of a few additions of what you're already using in a 'normal' recipe and not as much work as it sounds when you're converting from normal to Paleo baking. I think however Vamp's advice is the best. Start with paleo recipes. After a while you'll start to come to the same conclusions most of us 'old timers' come to in the Paleo kitchen. Know this though, Breads, muffins & cookies come together so much faster than the 'normal' method….especially bread & bread items….no kneading, no rising, no waiting. Mix ingredients (most in a food processor), pop in the oven and done. Besides, they taste SO much better than a lot of wheat based product. I've been dabbling in the kitchen long enough to venture into the 'hardcore' recipes....searching for dupes...best to start at the beginning.

            JKL - The Great Cookie Caper is a common one....and danged frustrating! Expensive ingredients for a blah/blech product that is hard to work with, drives me crazy. Like any regular wheat based baking recipe, there are PLENTY of duds online. There are a few websites I've banned from my kitchen over the years. I'll hazard an educated guess on what happened to your cookies. Oil. Did the recipe call for the usual flour and then the addition of coconut, butter or lard? It took me a many cookie/muffin/bread puddles to realize "why in the heck am I adding oil when the flour is nut based?" Nut based flours are very oil laden (try squeezing almond flour between your fingers...yup, oily residue). The resulting product tends to be really soft and greasy in the end. This is why I add a few tbsp. of coconut flour to my bowl to adsorb oil and avoid the mess. I also either drop the addition of oil completely or just add a tiny splash to heavily coconut flour based recipes. The almond flour makes up for the oil addition. Also, after taking the cookies out of the oven let cool for a few minutes and then lift with a fish slice. Completely cooling, as you experienced, makes for a better taste & texture. You could also buy a jack hammer for those 'less than willing to leave' cookies :))))))

            KSuze - I did a quick search last night and found a few interesting articles on how tamoxifen can play out on lipids. A great brand that I have used is here: https://www.amazon.com/Carlson-Finest-Lemon-Norwegian-Omega-3s/dp/B001LF39RO Actually doesn't taste like fish at all (unless you burp an hour later, then you'll be finding Nemo :))) Krill oil is also a great way to get your fish. Btw, congrats on quitting smoking....how long have you been smoke free?

            Vampriella - As I mentioned above, your advice to Junie would be the best. Start with established and move on from there. Not all of us are cut out to cook with crickets :))))) I don't know if I like the cooking, the results, or just the science experiment edge of it better LOL! Your GP must be pretty darned good.....3 weeks is nuts!! I think you may have found another purpose.....chasing after answers.....sheesh!!! Hugs, you'll get there.             Ok, so it looks like Egad's test kitchen is in the weeds, but hang in. I still intend on wrapping up (lol) the great wrap challenge, and have a pastry post coming soon (remember the ravioli?). I've hit some hurdles with results and time is limited. Our business is going through it's busy time of year so I've been juggling too many plates. Speaking of too many plates, I have a crazy idea....what say y'all to making our own Cave Chick Cook Book? Everyone contributing their fav food recipes (like Inna's Kickin Chicken & Ksuze's Addiction in a Cup).....I'd be thrilled to put it together, but everyone has equal say in what's included and format.             Hi again peeps!

            Popping into post a sample of what I was yapping on about this a.m. I whipped up a batch of pumpkin spiced donuts and a few madeline cookies with leftover batter.

            PUMPKIN SPICED DONUTS - Total prep to oven time...5-10 minutes tops!!

            WET INGREDIENTS - Note how I bastardized the original recipe to achieve a soft cake like donut...……

            • 5 large eggs 3 large eggs, 5 is too 'eggy', don't like my baked goods over easy :))))
            • ½ cup coconut milk
            • ½ cup pure maple syrup ¼ cup maple syrup, cutting back the carbs, choice is yours
            • ½ cup pumpkin puree
            • ¼ cup coconut oil Waaaaay too much oil. 1 tbsp.
            • 1 teaspoon vanilla extract

            DRY INGREDIENTS

            • ¾ cup blanched almond flour 1 cup almond flour
            • ½ cup coconut flour
            • 1 teaspoon baking soda
            • ¼ teaspoon xanthan gum (optional, adds texture and structure, can be found online or inbulk food stores)
            • 1 teaspoon ground cinnamon (2 because we're freaks)
            • ½ teaspoon ground nutmeg
            • ½ teaspoon ground ginger
            • ¼ teaspoon ground cloves
            • ¼ teaspoon ground cardamom
            • 1 dash garam masala (yup, not just for savory)
            • ¼ teaspoon sea salt
            • Omit spices and use pumpkin pie spice to your taste if you'd like.


            INSTRUCTIONS

            • Preheat oven to 350.
            • Put all wet ingredients into a food processor and process until frothy (30 sec-1 minute)
            • Add all dry ingredients into the processor with the wet.
            • Process until smooth pourable batter forms. (scrape sides if necessary) Batter too thick? thin with coconut milk until pourable.
            • Pour batter into WELL GREASED (or baking sprayed) donut, muffin pan ( or use paper liners) or cookie molds until 2/3 full.
            • Bake at 350 for 20-25 minutes (15 for cookies) Toothpick test first!. Cool in pan 5 minutes, remove and completely cool on cooling rack. That's it, simple eh?

            Eat plain or glazed.

            Easy glaze

            • ½ cup swerve confection sugar (one of the rare occasions I use….I find it just tolerable)
            • 2-8 tbsp of coconut milk (to get as thin or thick as you prefer)
            • Pinch of salt.

            Whisk until completely smooth (1 minute). Dip completely cooled baked goods in glaze, add any toppers you like. My topper, pumpkin spice/coconut sugar blend (1 tsp pumpkin pie spice & 1 tbsp coconut sugar), pumpkin seeds and orange zest.

            Best stored glazed or unglazed in the fridge 3-4 days (if they last...best on day 2)

            Photographic evidence :)))) I glazed and topped one of the madelines to give you an idea of the finished result. Taste....ummmm...awesome!!!

            Morning, all.

            Junie, are you wearing a compression sleeve when you exert yourself? I find it reduces elbow pain when I exercise.

            Egads, thanks for the info. I'm looking forward to reading it. I've been on Tamoxifen for over 3 years (1,138 pills and counting) so Occam's Razor suggests that any sudden changes in my labs are likely to be from the intervening 3 months of keto (& see below for more labs).

            I do take a fish oil supplement, and I do choke down fish once or twice a week, though my mother's doctors are telling her it's useless because it can't be metabolized. I have canned, soy-free, tuna around, as well as smoked wild Alaska salmon (low sugar). I can usually get my lovely wife to cook salmon or Dover sole a few times a month. I'd rather have shrimp or scallops, but I have to be in the right mood even for them. Just not a fan of sea creatures. I love you, but the idea of a fish casserole makes my gorge rise.

            I was never more than a social smoker ("Hey, try these fancy-ass cigarillos I bought in France!") and have smoked under the 50 cigarettes that are the limit for "did you ever smoke?" It's been at least 15 years since I've had one. My parents were both 2-2.5 pack a day smokers, so I already know it's not good for my breathing.

            As to speeding: Alas, no, though it was a first traffic offense in 25 years (and at all in this time zone), I received a hefty fine. But you know that we middle-aged Nissan hatchback drivers are maniacs.

            More reports came back.

            • Vitamin D: In normal range but lower than my MO likes, so I'll increase the dosage and try to get more sun on my arms, though we are into rainy season now.
            • BUN: High, probably from so much meat. I'll increase fluids (already high, but it look like it will help).
            • A1c: 5.4! Woohoo! That's down from 6.4 (3 months ago) and represents a decrease in estimated average glucose from 137 to 107 (107 not even considered to be "in the diabetic range").


            I see my PCP Monday. At the moment, my weight is down 14.5# from 3 months ago. 11# to go first BMI goal; 18.5# to target.


            I added a small amount of wheat back in last night (about 1 oz of crackers) since I have events between mid-October and mid-December where I get little control over what foods are available and I do not want the first re-introduction of a grain or legume to be at 30,000' in the air lest they provoke a deleterious gastric event. I anticipate around 2-3 months of higher complex carbohydrate intake, then we'll see those lab results and adjust from there. My body adjusts rapidly to change, so I need to keep shifting the metabolic challenge to keep it from resetting and starting to pack on weight again. Fun with macros!
