    Sas - Me serious and knowledgeable?....look at the burger pic I posted for JunieB, it's supposed to be kale wrapped, that's not kale in the picture!!!! LMAO!!! Oh well, can't win em' all Meh, I think she'll get the general idea.

    Egads - While I started out well today, I did NOT stay on that train. I volunteered today and was very tired this evening, so while I was talking to my sister on the phone I made (Please Don't Shoot!) a quick bowl of pasta with S&P, Garlic and Parmesan, then mixed in some sauteed baby bok choy. At least I got it half right. Unfortunately my tummy feels rather yucky now. But thankfully tomorrow is a new day. YAY!

    What are the little quiche looking thingy's? I think I see bacon!

    I have the fatty liver issue too. So that would be another benefit of this Paleo stuff.

    Junie - I wouldn’t dream of shooting you for the pasta...I’m a firm believer in hanging. Joking!! Like I said in my earlier post, if you cheat/fail/flop, pick up, dust off, carry on, no big deal, no judgement, so yes, tomorrow is another day! Our little paleo group is all about support after all. That yucky feeling you had is a good way to gauge how you react to wheat, that’s the only prodding any of us need lol.

    The little quiche things are called ‘breakfast muffins’ I put the recipe in my post with the pictures above (in the portion responding to Sas). Easy peasy to make, and great with salad/veggies if you get home tired and late.

    Day 1 (yesterday): Did good until dinner time. I had half a cookie DD2 made 24 hours before . Then went back and finished the other half since I already contaminated myself with the sugar and wheat with the first half.

    Day 2 (today): Had chestnut and purple yam for breakfast , but forgot to add a hard boiled egg. So far so good because I haven't eaten yet. Hah!

    Egads, while I was having my breakfast this morning, I was reading your post and got to the part about weigh in. Had to stop eating and run upstairs to weigh and measure myself. Hah! Didn't like my measurements. Could 3 bites of my breakfast prior added a few inches to my midline? Wishful thinking! I too, have mild fatty liver (non-alcoholic). Have cut back on sweets since BC diagnose. Need to make more changes.

    Wait....I don't see rice on the either list. Wheat is probably not as difficult for me to avoid compared to rice.

    Oh never mind. Rice is a grain. Duh. Yikes!

    Loverly - Yes, I love white basmati rice and that is going to be challenging for me too. I especially like it with my baked salmon. But Thursday night I baked some salmon and had it with the first half of the baby bok choy. Pretty darn tasty!

    Egads - Thanks for the encouragement! I had to go back and look real hard to find the recipe for the breakfast dealies. For future, could you possibly type a recipe like a list so it is easier to find? ;0)

    Yesterday a lady I know gave me a small jar of her homemade rubarb/strawberry jam and I just couldn't decline, especially when she went to the effort to make it herself. Not sure what to do with it. Also, I threw out the remainder of the Bisquick I had in the cupboard. Now I need to purge the other non-Paleo items in my cupboard and fridge.

    Ok, I am off to have an adventure in the laundry room. UGH!!!!

    Good luck on your trying on Paleo diet girls! I give up after looking at the allowed items! I can’t do it!! I went through almost 1 1/2 years on gluten free diet to lessen the belly aches, thinking it was due to gluten intolerance, it turned out to abdominal mets! From that point on, i refused to deprive myself of carbs. I love noodles, steamed buns, or any Chinese flour-made pastries. Since I am stage 4, I eat any thing I want to. Fourtunately, I do eat mostly fresh original form offood, rarely any processed food, but I am not giving up on flour or rice related food. I will cheer for you brave girls from the side line!

    Eeyore, I would probably do the same if I were in your situation. It makes sense. Got to pick my battle. It would be a bonus to look like the cave woman Egads posted above while fighting.

    Well I only managed to get 3 loads of laundry done today, but at least my linens & blankets are done. I am ready for a nap now.

    Loveroflife - my hat goes off to you on having the strength to walk away, leaving half the cookie in the first place! I would have inhaled the whole thing right on the spot and have nothing to go back to lol! I laughed when I read you tore off from brekkie to measure and weigh, I've done the same thing after starting to drink my coffee....and yes it can make a difference. One coffee puts me up a pound! I thought I was imagining it until my DH noticed it too. Thought it was the scale, but we have 2 and both register higher weight which is crazy because the coffee AND the cup doesn't weigh a pound! By the way, that lady in the pic was Rachel Welch in the original Planet if the Apes movie...she'll be our poster girl...for now 'cause we're gonna put her to shame with our new looks! Ok, so I'm a wee bit delusional, sue me lol!

    Junie - Sorry about the recipes, I should have listed it properly going forward. A lot of my recipes have become so second nature that I just blather them out like I was brushing my teeth! My bad! As for the jam, it was a gift, freeze it in small portions and use it as a topping (very occasional treat by the tablespoon on days you've been really low carb). Although sugar is a no-no, I really don't think a rare treat is going to kill you. Over time you'll probably find it way to sweet for your liking, paleo is good for that. I can't stand sugar anymore, and I was a sugar hog!! The sloppy joe recipe looks good, make plenty of it for freezing leftovers, it would be great over zucchini noodles or even steamed veggies for quick meals. Your 3 loads of laundry = workout, well done! Also want to high 5 you on getting the cupboards paleo friendly...we all need to do this to keep in track. I donated my non-Paleo foods to a woman’s shelter.

    Eeoyre - Sidelines??? No way! Why not join us as a semi-Paleo gal? You're not eating processed foods, and mostly fresh so that makes you very much one of the crew! You can tease us on your rice/flour days and leave us drooly LOL!! We'd love if you'd join us!

    Everyone- Rice substitute:

    1 head of cauliflower (or half if you want)

    Chop into 4-6 pcs

    Blitz in food processor until rice size (might have to do in batches depending on size if cauliflower)

    Heat 1 tbsp olive oil in large pan (med high) and plunk in the cauliflower rice. Cover and steam until tender (5 to 8 mins) stirring often to prevent browning. Uncover and stir until grains are dry-ish (another 5 mins) Add s&p, and any other seasonings/meat or veg additions you would with regular rice.

    Notes:

    1. This is NOT basmati or jasmine, not even close, so get that out of your head lol. It is however a decent and delish substitution especially if you spice it up. Green onion and cilantro. Curried is awesome.

    2. The prep will probably be messy, I try hard every time I make it, but usually end up with cauliflower crumbs all over the place.

    3. You can prep it, flat pack it in zip lock bags and freeze. Grab a pack and cook when ready, just takes a wee bit longer to get the water cooked out of it, so don’t cover, just fry the hell out if it.

    4. If you store in the fridge raw seal tightly, it tends to be stinky....but doesn’t after cooking. I once prepped it and loosely bagged it raw for later. DH asked if I was storing dead bodies in the fridge LOL!

    5. Eat as much if this as you please...by the truck load. It’s great for you, filling and LOW carb.

    Don’t forget to keep moving ladies! Walks, laundry, whatever, just move!

    Do y’all just love my new avatar pic? Puffy prednisone cheeks and a Mohawk! Well the Mohawk is gone now, just a millimeter of stubble all over, and what a relief not to have to worry about hair for a while! No brushes full of hair, handfuls of hair, hair straying into my mouth or eyes - now if I could just lose the Taxotere nose drip! It really interferes with this nasal cannula I’m getting oxygen from!

    Feline, did you find the pages on W&F's regarding posting? A BCO sister taught me long ago. It was blessing. What was written on those pages were from multiple sisters. There is more than one way to skin an avocado. Avoiding the common old term.

    Paleo gals - Okey dokey, so the thread is finally up. I wrote for days on end and came up with WAY TOO MUCH info....think Encyclopedia Britannica. Worrying about turning people off, I tore it all down to a simple (yet still long-ish) thread. I hope it's a good start and am excited to see it evolve....even more excited to see good results for everyone. All are welcome to this thread...even the veggie peeps.     Well we had a scare here in my city last night. There was an emergent alert for cyanotoxins in our water supply and of course everyone was quite freaked out. Every store in town was sold out of bottled water in short order. The 911 dispatchers were apparently overwhelmed by frantic callers as well. There is an algal bloom in the reservoir that supplies this city's water and the toxin levels have increased to above normal safety levels, healthy adults are still able to drink the water, but those who are immune-compromised, the elderly, children under 6 and pets are told not to consume the city water. On the other hand they say that it is ok to bathe, wash dishes and do laundry. Then this morning I see that the "Emergency Alert" was apparently called "Overkill", but the same warnings remain in place for the groups listed. Rather confusing!

    Junie, how awful. Were you able to get out to get water? Odd that the city doesn't have water distribution centers. Are you on the EMS disaster list? Here each county service has to maintain a list of folks that need assistance. I asked Mags to post the info about the Omron. Model number and app info.

    Egads, I'm a very bad student right now. In a non studying mood.

    Sas & Eeyore - I spoke to Shep a week ago and she said that she, DH and Pris are staying in a hotel for now, and that Ellie is at a boarding facility, I believe. She also told me that their whole house will need rebuilding and that could take a few mos. I just left her a message on her cell.

    I just received a text from Shep. She gave me permission to post here for her. She and DH are very busy dealing with the Fire Investigators, insurance adjusters, cleaners and salvage people, so she has been extremely tired from all of it, not to mention the pain she is having in her hip & leg. They are no longer in the hotel, but have been moved to a house very close to their burnt home. They will be staying there until the repairs on their home are complete, which could be several mos. Shep says Hi to all and that she misses everyone.

    While I know all of this is stressful for them, I feel better knowing that Shep is doing Ok.

    Junie, thanks for the update. I’m glad they got into a house. But what an ordeal. Hopefully they get everything settled with insurance and all that quickly so the rebuilding can begin. Give Shep our love and let her know we are all thinking of her.

    Eeyore I said last week I wouldn't be calling Shep b/c I know how these recovery operations are so stressfull with all the coordination. I left it to Shep to call me. Junie and Loverly text with her and each other. I don't have a cell phone, I only talk. :) They are all trying to get me to get a cell. I'm still resisting.

    But,however, Shep called shortly after I posted. I can't add much to what Junie posted. Shep has high praise for all that are involved with them. Ellie is being boarded b/c she fell on Sheps scooter and messed up Shep's bad hip enough that she had difficulty taking her out. Her docs want her to go to Charleston to have the evaluated, but she's not going b/c of the house work. The house they are moving into sounds lovely & very spacious. The insurance company is buying the furnishings.

    Glad to hear Shep is doing as well as possible under such stressful circumstances. Sounds like she is not going to let this particular big bump in life's road get the better of her.
