    Happy half-birthday, Ilona! Looks delicious.

    I made the pan-seared salmon steaks tonight. Never again. Oh, they came out perfectly, but the prep work was a nightmare. You get what you pay for: there’s a reason Whole Foods had them on special. Had to remove the central spine, the pin bones—and then discovered the skin hadn’t even been well-scaled. Went through half a roll of paper towels, three different knives and kitchen shears before I finally got them rolled, seasoned, tied and into the pan. Next time, fillets. (Even then, WF doesn’t de-bone—maybe will have to pay through the nose and go to the fish market). Sides were grilled zucchini “planks” (got over a pound remaining from Teenage Mutant Ninja Zucchini—even after making zoodles Alfredo last night) and a tomato salad.

    ayesterday, my DH and I got a craving for Italian. Since we both worked on projects all day, we went out for it. I had cheese cannoli, he had spaghetti and meatballs. I ate 2 of the 3 cannoli, they were pretty good. But, ay yi yi. His noodles were overdone and he never noticed. He had me taste it, I told him it tasted good, but the noodles seemed a bit soft, he said, really? They're good. So I said nothing else. You'd think an italian place would get angel hair right. LOL. I had the leftover cannola?cannoli? For super with a big salad. I could gave used another cannolli or 2. LOL. But it was good.

    It truly has the heart shape in the center. Its just how it blossomed.

    Making the lasagna now for dinner tonight because I don't feel like having the house at a million degrees later today.

    Wow. Some of the HIGH-SCHOOLS here are forbidding the students from being outside during the eclipse.

    The kids can be trusted to safely drive/bike/walk to school, but not to be outside and observe the "Don't stare at the sun warnings".

    Sigh.

    The pre-school through 8th grade school that DD attended...the science teacher was a NASA astronaut....the whole school will be outside with the special glasses.... All the teachers and an additional 25-30 adults will be out "patrolling", but the kids will get to see it first hand.

    It's cloudy here this morning. We awoke to gentle rain. Such a nice sound in the camper. I am doing some laundry, using the washer and dryer in the campground laundry room.

    Last night's dinner was store-made brats steamed in chicken broth and browned in the skillet. An impromptu version of baked beans with home-cooked pinto beans from the freezer, addition of tomato paste and Splenda brown sugar blend. Pretty good but a bit too sweet for me. I had a can of Bush baked beans, which dh likes a lot, but the calories and WW points are daunting.

    Tonight will be roasted chicken thighs, bone in and skin on. The side could be fresh white squash (flying saucer shape) steamed with Rotel tomatoes and sprinkled with grated romano. Hmm. Sounds good. I also have fresh dug large white potatoes that are delicious. We had them large diced and steamed with fresh green beans on Saturday night along with stuffed orange bell peppers. All the fresh veggies from a farmer's stand.

    Moon, it's good to have you join in. Same with Bedo. Great to hear that your dad is hanging in there, Nance. Enjoy that fresh seafood in MS!!!

    I spoke with my mother this morning. She had no complaints. My sister Michelle was bringing her an oyster sandwich for lunch.

    Since I'm just hanging around today, I decided to cook the lb of black beans I bought recently. They're in the pot undergoing a quick soak. I'll freeze the cooked beans in portions.

    Dinner last night was steamed veggies from the farmstand, with grilled ribeyes.

    It's getting dark here, sun was bright, how is cloudy. People are outside in our cul-de-sac with lawn chairs and glasses. I"m just outside Charlotte NC. Scheduled to be at 245est. I may join them. DH got glasses a month ago. He works in Uptown (our name for our Downtown) He says there are lots of folks out waiting.

    Dinner tonight is homemade veggie pizza. I'm trying Martha Stewart's crust and method. She uses a pizza stone and bakes it at close to 500 degrees. We'll see.

    Moon - glad to see you and what an interesting flower pic - love the little heart shape in the middle. Glad you have answers re the kidneys, hope things remain stable.

    Tonight I'm making pork chops with sautéed apples and onions, sweet potatoes, and a layered salad my mom used to make - iceberg, very thin layer of mayo, thinly sliced red onion sprinkled with a little sugar or stevia, layer of petite green peas - repeated twice more. I made the salad this morning, it needs time to make its own dressing as the sugared onions weep onto the layer of mayo, which coats the lettuce. When my mom made this salad she added a layer of julienned Swiss cheese on top of each layer of peas, but I left it off - didn't want dairy

    Val - good to see you.

    Central Market here has a Hatch Chili fest once a year. I picked up several goodies - Gouda cheese w/Hatch chili, Hatch chili tortilla chips, chocolate chip cookies w/Hatch chili, and my favorite - fresh Hatch chili scones from the bakery. I froze a dozen scones on a cookie sheet & just finished wrapping them individually in Press N Seal and then aluminum foil before bagging them for the garage freezer. They would last a year, but I doubt I can ration them that far.

    Central Market is an hour round trip. But it's the only place in town I can find pumpernickel bagels, and only then if you're happen on one of the few days they bake. I ordered 6 ahead of time and did the same freeze/wrap/freeze procedure with them. I haven't frozen bagels before but I hope it will work.

    Totally ridiculous and decadent purchase from the deli - a ready to heat & eat twice baked potato with Hatch chili.

    Cloud cover here & rain drops so no real view of even a partial sun eclipse view.

    minus - I freeze bagels all the time, works well. Almost all of our bread products, pancakes, waffles are frozen because I don't eat them, andDH can't eat them fast enough before they go bad. I did the freeze and wrap you described with Key Lime pie slices - worked great!

    Took the day off from office. Experienced 91% eclipse totality w/DH. Only a thin, semi-circular sliver of sun visible at the height! More than we thought. Great experience. Dinner tonight will be chopped tomatoes, cucumber, avocado & chicken tossed w/dijon vinaigrette. Consumed enough rose coolers while watching eclipse, so no adult beverages for dinner.

    Tonight DH had to interview a potential employee over Skype, so dinner was late - I just did tomato basil soup and made grilled cheese for him, and he had a slice of Key Lime pie for dessert - I behaved, lol!

    I was a bad girl last night—ate the last slice of steak bruschetta, and then made tostones out of half the plaintain in the paper bag (it did its job ripening all but the littlest, hardest greenest ‘mater). Shallow-fried them in coconut oil, drained them and then sprinkled with flake sea salt. Mmmmm…..

    Here’s the avocado toast I made for brunch: image

    Mashed 1/4 avocado, a tsp. of mayo, a wedge’s worth of lime juice, garlic powder & salt. Added minced shallot, cilantro and a dusting of cayenne, then topped with half a sliced tomato, lime olive oil, basil, and an olive-oil fried “faux-over-easy” egg. (Instead of flipping it and possibly breaking the yolk, I just turn off the heat and cover the pan for 30 sec).

    Tonight I’ll see if the whitefish fillet I pulled from the freezer has thawed. If so, I will nuke it in parchment with veggies & herbs Mediterranean style; otherwise I’ll probably have some zoodles mixed with linguine, with a salsa fresca of tomato, basil, mushroom, banana pepper, parsley & olive oil.

    Tonight was sirloins, red skinned mashed potatoes, and green beans with dill. Not exciting, but easy. I was tired from scrubbing both the kitchen floor and the dog, lol!

    Whitefish nuked in parchment, with fresh herbs, peppers and tomatoes. Side of whole wheat spaghetti with the rest of the tomato, basil, olive oil & Pecorino.

    Thanks Joyce. I'm about to go out & secure the garden furniture, potted plants and things like garbage cans. It may not be necessary but I'd rather do it before the rain starts. I think the worst problem will be training rain & flooding, but one can never tell. Just bought a ton of stuff at Costco and Central Market & my freezer is stuffed. I sure hope we don't lose power.

    Thanks Sandy. I do not like the words "category 3" or "rapid intensification" being thrown around right now. It looks to be mostly a big rain maker for us, I just hope people use common sense and adhere to warning signs and barricades. I would be involved in clean up efforts behind the scenes at work, which is a pain, fingers crossed Harvey just waters the lawn real good.

    I stopped at the grocery after rads for a few odds and ends and it's a madhouse out there!
