Tonight was chicken enchiladas - DH's had flour tortillas and cheddar, mine had gluten-free tomato wraps and non-dairy pepper jack - actually very good. Also had some sautéed yellow squash with purple onion and red bell pepper. DH had an experimental dessert of vanilla Oikos Triple Zero vanilla Greek yogurt with PB2 powder mixed in until incorporated, a teaspoon of peanut butter chips and a teaspoon of mini choc chips, topped with sugar free chocolate syrup, then frozen. I used him as a guinea pig to try this out for a friend that I am personal chef-ing for Mon-Fri., she was wanting something fairly low-cal as a dessert.

Was too beat from the first day of the new chemo treatment for my recurrence that hubby stopped and got cheeseburgers and fries for dinner so I wouldn't have to stand up and cook.

Yesterday I cooked a lb. of dried pintos with onion and garlic. Used some of the cooked beans to make chili with grass fed ground beef and seasonings. I spooned my chili generously over a long hot dog (Hebrew National) on a home-made wheat hot dog bun. DH ate his hot dog without the chili and had his chili in a bowl with sprinkled Mexican cheese blend from a bag.
The remainder of the cooked pintos went into the freezer in two portions for future chili making.
Tonight will probably be chicken tacos.
Mommy, hope the chemo does the job.

Mommy - I don't remember you talking about a recurrence, but I'm sure sorry you have to go through this again. Will you do just chemo or eventually have surgery &/or rads? Thinking of you. Glad your DH is picking up dinner. Remember to put yourself first on those challenging days.

Yeah, it sucked big time for a recurrence to happen when I was doing so well. So far it looks like they are leaning to just chemo as that is all they have in the plan.
Have no clue about what to do for dinner.

Little different. Taxol every week and every three weeks it gets mixed with Herceptin and Perjeta. Taxol only for 12 weeks! Last time I was on Taxotere.

Last night was coq au vin from the hot bar at WF, with one of my tomatoes & basil and steamed corn on the cob. Mochi balls for dessert (black sesame). Had the small bagel & lox for brunch at noon. (Bob got the mega-bagel). “Linner” was the leftover third of the tomato I used for the bagels, plus basil leaves and a tablespoon of tuna salad, and a small piece of low-carb toast with guacamole. Snacked on seltzer & nuts so not ready for full dinner yet. Probably will grill the zuke & eggplant—just steam-cleaned my grill grates with my new grill brush (stainless-steel spirals rather than bristles). Gotta use up some berries & yogurt, so that’ll be dessert with a little raw honey.
The “weed tree” that sprouted up amid my berry canes & grapevines, which I decided not to cut down because I thought it was a mulberry tree, has turned out to be a fig tree! In Chicago, no less. No fruit yet, but keeping an eye out. Hope the winter doesn’t kill it. No idea where it came from, other than a neighbor across the alley a few houses down has one, and some seeds may have become airborne.

I am so sorry that you are back in the club. I just hate hate hate this. As you probably know, I am now on Taxol as well. If you have any concerns, or want to determine if a "side effect" is within my normal, feel free to ask. Of course, my version of Taxol is a bit different since I have no end date, and get a break every three weeks. Since you do have an end date, let your husband do these extra things to take some of the stress of maintaining a normal life of your plate whenever possible.

Tonight I took care of a craving for fish. Blackened Gulf Red Snapper with Texmati Royal Blend Rice and Asparagus. It was delicious.

A little mishmash tonight. Had unsweetened fro-yo with berries & nuts after my workout. When I got home, the last of the cherry tomatoes with basil, and a handful of pistachios & almonds. For dinner, a mini-cauliflower-crust pizza (they stick to the pan or rack and stay mushy on the bottom, alas), melted provolone on bran whole wheat matzo, a thin slice of jamon Serrano and a can of unsweetened cherry seltzer.

Didn't really feel like eating a lot last night. Hubby ate the leftover meatballs with some pasta that we had frozen and I ate aCup of Ramen noodle soup and a ham and cheese sandwich.

Yesterday I was invited to a Surprise 70th birthday party for a friend. It was all family except for me and another lady and her daughter. My friend had 6 siblings, who all had children, who all had children, etc.
They had fried chicken, homemade chicken & noodles, corn, green beans, pizza, nacho fixings, baked beans, ham with pineapple slices, Hawaiian bread rolls, romaine salad, veggies and three kinds of dips, a huge bowl of berries and melons, deviled eggs, and spice cake and white and chocolate cupcakes. It was really good. Being an only child with family few and far away, I had no experience for being in a big family. The little kids were so well behaved. One of the Dad's whistled for attention and everyone settled and grace was said, and they all lined up to eat and nobody spilled and these kids just amazed me. My friend is truly blessed with this family (she is single). And I was blessed to be an "honorary Stengel" for the day. Ev ery single one hugged her when she came in and hugged her when they left.

Sunday Lunch (early dinner, DH likes this as was the norm in UK) - wild caught shrimp creole made with organic riced cauliflower & baby sweet peas - dashes of Tabasco to taste. Enough for leftovers, which will likely taste even better.
Dessert for me will be a little later in the day - Gelato Fiasco Dark Chocolate Caramel Sea Salt gelato - worth every calorie in a 4 oz serving!
Mommy - Adding my healing thoughts to the mix. Recurrence truly sucks.

Has anyone here tried to make paella with riced cauliflower? Can you get a good crunchy "soccarat" on the bottom?

chisandy - all the paella recipes I have seen using riced cauliflower don't seem to mention drying out the ground up cauliflower, but I don't think you will get any bottom crispiness unless you do. I think you would have to microwave the raw riced cauliflower, let it cool, wrin it out in a kitchen towel, then par bake it to dry it out.

Sounds right, SpecialK. I was thinking of upending the traditional recipe by cooking the other stuff in one pan, pan-searing the dried-out cauliflower in a little saffron-infused oil to develop a crust, and then putting the veg & proteins on top for serving.

MOmmyof2, I made a fairly quick chicken, frozen corn, broccoli florets, salsa from a jar dish.
It has lime juice, also from a jar, and it's kind of tart..so liking tart flavors is a must for this recipe.
If you're interested..let me know.
