FLwarrior - here you go! I added a bit more powdered sugar to the filling/frosting because once I put the pumpkin in it seemed too runny. I was actually surprised how it firmed up with the addition of the Cool Whip. Definitely refrigerate it to keep it cold-ish and I would put the caramel and pecans on just before serving.

You can use a long serrated knife to cut the layers in half, or use a long piece of dental floss. Here is a youtube video of how to do it with the floss: -

lee7 - I heard she started a crochet group with the inmates, but those are some dull hooks, lol! She taught them to make ponchos, and wore hers when she was released - here is a pic of her. I don't know if they let her cook!

Glad I wasn't around you all. I was exposed to my coworker's Shingles. Told her I figured that's what she had. Finally convinced her to be seen, that she needed clearance to be around her Mother with lung cancer before going there this week. Nope, she can't go. Prayers I don't get it either since I was helping her check it out and put stuff on it to clear it up. She convinced herself it was bug bites. Not hardly. Washed hands and sanitized them lots and lots. -

You won't catch shingles from another person, but you can catch chicken pox from someone with shingles if you've never had chicken pox. Everybody who has ever had chicken pox is in danger of getting shingles. The virus is lying dormant in your body, and can get active, especially if your immune system is compromised. -

My sister developed shingles last year at this time! DH & I had flown cross country to join the big family Thanksgiving dinner hosted by her, and she cancelled it because her doctor told her it could be dangerous to the young children. We did a lot of online research to discover it isn't that easy to pass to someone else as long as it's kept covered and hands washed well. She turned out to have a mild case -- painful mostly a couple of days -- and it slowly cleared and hasn't come back (but could at any time, especially with high stress or low immunity). She and I had chickenpox at the same time, when she was 5 and I was 6. So, I'm thinking Yikes, after all my low immunity during treatment, we had the same pox!
Galsal, you are probably just fine, shingles-wise! Sorry all to miss the get-together. I am going to study that pumpkin cake recipe to think about making it, but know I can't live up to the culinary talent of Martha Stewart and SpecialK! I suppose the next meet-up will be in the new year. -
annalive - you are too kind! The cake is not a difficult recipe, you should try it! If you didn't want to cut the layers in half horizontally you could just make half the frosting, but you would have leftover pumpkin and whipped topping. -
Neither she nor I are of an age to take the vaccine. Hers showed from stress about her Mom no longer going to pursue any treatment for the lung cancer. That, and the second anniversary of her Father's death right at Thanksgiving.
Yes, she kept it covered and I was diligent as she about cleanliness dealing with it all. -
Thanks Special K! I looked at some in Publix that said NO SOY on the label. Didn't get it, will check out Vitamin place in Palm Harbor where Fl Warrior goes. -
Two years ago on Nov 18th was the first Mammogram that started the odyssey of BC for me. I'd never have thought that two years later surgeries still wouldn't be over yet. I'm thankful things weren't as worse as they could have been and that I'm here to meet you all. -
SpecialK, I watched that utube video...what a simple and easy way to cut cake layers evenly. I will try that sometime! Thanks!

Galsal, makes me itch just thinking about chicken pox and shingles. You are a good co-worker to help her out like that. Congrats on passing another "milestone" date. -
You guys crack me up. I had a great time at Firework's house and misses every one of you who could not attend, especially Lee7 who is our founder and planner of our first meeting.
Galsal, two years? Three years here. Don't get your hopes up. What a crock they sell us about one rough year! Whatever you have left, I and all the others here will be there with you through it. And you can get the Shingles vaccine now. I had one because of high risk during chemo. Bet you can still get one. Play the C card. You should get something out of it, at least.
And yes, SpecialK is the BEST cook ever. I have a room for her in my house. I will repaint the walls and redecorate. What is your favorite color SK? -

Monday's child....who me? the founder? I only remember mentioning we should maybe do a Tampa area group since Florida (Florida people where are U?) covered such a huge area. That and I really did want us to get together more often than once a year! You have all been so wonderful and I treasure the friendship and the support.
Ladies, I'm still under the weather, and I know its because I overdo it at times. This flu going around is a nasty bug. Hope you can avoid it ! All this talk of the shingles too. Yikes, We really do have to take better care of ourselves. -
