So...whats for dinner?

Dinner tonight was my first foray into this month's Cookbook of the Month, Smoke & Pickles. Did a braised lamb shoulder with the most unusual ingredient list ever! Here goes: salt, pepper, lamb shoulder, oil. onions, carrots, celery, minced garlic, button mushrooms, serano pepper, bourbon, ketchip, soy sauce, balsamic vinegar, sorghum, black bean paste, bittersweet chocolate, and chicken stock. See? Anyhow, served over polenta it was on the edge of too sweet. But we have oodles more, so we will be eating it for days to come!

LovinMyMom,
I am truly heartbroken, I don't know what to say, my heart breaks from the sad news.
It's not fair, friggin cancer. Took my mother away from us when she was only 64.
-
Lacey, we are on our way home to Louisiana. We arrived in Duluth, MN, on Tues. The next day DH wasn't feeling well, complaining of pressure and discomfort in his upper chest. With his history of heart disease (3 stents), we both were worried. When he still didn't feel well on Thur., we went to the ER at St. Luke's Hospital. He stayed overnight and underwent testing and monitoring. The diagnosis was angina. He was discharged with a couple of prescriptions and instructions to follow up with an apptment with his dr. when we got back home.
So we cancelled the family visits in IL and MI and are returning home.
Tonight's dinner was a garden salad with a scoop of tuna salad on top of it.
I hope Michelle has a good trip to Marco.
-
Oh man, carberry's DH is falling off stuff and carole's DH has chest pain - not good! I too am picturing Michelle on a lounge chair at Marco Island, taking in the sun. I am hoping it is not raining on her though! The weather here has been a bit dicey! Dinner tonight was stuffed shells with turkey smoked sausage, marinara and mozzarella, accompanied by spinach.
bedo - I used to make my kids the initial pancakes all the time when they were little, and sometimes not so little - you have to make the initial backwards though because when you flip the pancake it is facing the other way - no problem with my DD because her initial is A - same coming and going. DS is a G though, and I always had to concentrate to do it right. Sometimes I cheated and just did happy faces!
-
Carole, Thoughts are with you and DH. I am impressed that he was willing to head to the hospital. So many men-folk refuse.
Nancy, Daisy Cooks is a PBS show featuring Puerto Rican and general Latin food. I bought her cookbook from that show before we went to Puerto Rico. Her rice recipes are quite good. This week I did a total riff since I didn't want meat in the rice. So I sauteed the sofrito, toasted the rice, and then added the water/stock. But, this is great with some chicken thighs and sausage.

Wow...Carole.....Good that he got things checked out and that it's OK to continue home.
Disaster dinner tonight here... Decided to BBQ the chicken... For whatever reason, the last 5 minutes of propane in the tank...and the flame goes to "Saturn 5 rocket" high. If I'd have had another 20 minutes of propane left things would have been OK
Even the dogs weren't interested in the lump of chicken flavored charcoal.
So, I went and got another chicken, but it won't be ready until about 9:30pm..So it's left overs tonight.

DH went to urgent care yesterday...diagnosis is muscle spasms? they did not xray? said if anything was broken they prob wouldnt see it anyways. lots of muscle relaxants, pain meds, ice and heat. i am not convinced this is a good diagnosis...he walked on a broken ankle once for three days and never complained of pain, and now he cant even lay down or get in any comfortable position without screaming out in pain. Thinks he is going to work today..ha ha.
Susan was liking the sound of that recipe till you got to the chocolate. i know that Cincinnati skyline chili calls for chocolate also, but I still dont like it in a savory recipe, and there isnt too much I wouldnt eat with chocolate.
I made lemon pepper marinated chicken on the grill...DH would not eat dinner...I think the meds making him not hungry...or the pain. So we will have chicken leftovers for awhile....will make a good chicken salad.
-
Carrie- That is awful!!!! It sounds like you need a second opinion. I feel so badly for your DH.
-
Yikes, Carrie! An x-ray wouldn't show them any breaks?? Maybe they could ask a radiologist to look at it! ;/. I would be especially frustrated with that kind of (non) care after convincing DH to go. (((((HUGS))))) to you both as you get through the day.
-
Carrie, I don't have a lot of faith in urgent care places after I went to one worried about a possible blood clot in my foot. The guy took x-rays and said "no blood clot". (Why he thought he could diagnose a blood clot with an x-ray escapes me...) A month later, guess what - I had a blood clot from my foot to my groin. If you can get hubby to go again - please try to get him in to your regular GP.
-
Susan, I'm familiar with Daisy's rice with pigeon peas. Will have to check out her other rice recipes.
Carole and Carrie, all I can say is yikes! Carrie, I agree a second opinion is called for. -
I have no idea what dinner is tonight. I'm leaning toward pizzas on the grill. It's supposed to be 100 here today.
-
Chilly 63º here. Summer is winding down quickly.
I have never been to an Urgent Care place. They are fairly new around here, and to be honest, I get so much medical care during regular office hours, I avoid it at other times. [tongue firmly in cheek] Sounds like their quality can vary wildly.

It being the weekend is why we went to urgent care, also a lot less expensive than the ER. they have all the x-ray equip right there. I know the doc that saw him, works in orthopedics and has a good reputation. I have worked with him for a long time. I even suggested an x-ray, without trying to tell him his job, but he said it was not needed. My husband does not even have a primary as he has not been to a Dr. in approx the 37 years i have been with him. The sad thing is we were supposed to leave for NC on Thurs....now I have to cancel everything...oh well...s%^*t happens.
Funky weather...we are only about 65 deg here today but tomorrow and wed supposed to be in the 90's. Nance, your heat wave is coming this way!
-
Carole, im glad it wasnt worse for your DH.
Carrie, maybe try a chiropractor? I had a horrible problem with my back during chemo. My doc just gave me muscle relaxers and pain meds. I went to the chiro. I was able to walk out of there. It came back the next day,Saturday. He came back in and helped again it lasted for four more days and then I went twice a week till it got better. About a month. It might he worth trying. Oh. They took xrays first at the chiro. Much love -
Thx Joyce for keeping us informed. I can just picture Michelle smiling in the sun.
-
Thermometer reading 103. Dh has requested burgers on the grill. I'll grill some corn to go with it and the homemade dill pickles. Might as well act like it's summer.
-
Carol and Carrie hope your DH's are ok. SO scary!
Joyce, thanks so much for the update. It is nice to know what is going on with Michelle.
Dinner tonight is pork chops and apple sauce, some egg noodles and zucchini. Nothing fancy, it has been a lazy day today with extra snuggles for DS2.
-
Carole, I hope things are improving with your DH. How close are you to home? I know how scary cardiac issues are, so I'm sure you will feel relieved to be home.
Joyce, thanks for your update. as others have said, I can just see Michelle relaxing in the sun's goodness!
,
Tonight I decided to make ratatouille, which I haven't made in ages (forgot how many veggies I needed to dice) to have with the leftover kale and roasted tomato pizza. Also had my usual cuke salad with the addition of Trader's hot and sweet cherry peppers and some feta. Nice healthy meal.....
Waiting to be hit with that midwest heat by Wednesday....which I am sort of happy about since we are attending an event to which I'd like to wear a summer dress, for the last time, most likely. Today I was bundled up for our late afternoon walk. -
I came here a couple of nights ago and wrote out a long post only to lose it. Dang! I was to tired to rewrite it that night so I will attempt to remember what I read.
I will try to keep it short this time, I wanted to say how sad I am about Michelle. Christine please tell her how much we all love her. I wasn't one of the lucky ones to meet her in person, but I feel like I know her and I love her to pieces, She is so very special and I hold her close to my heart. I love you Michelle- I hope you are having a nice time on your vacation and the sun makes you feel a little better.
Joyce- I have been thinking about you to, I know how much you adore Michelle and know this is hard on you, and on everyone else for that matter. Thanks for the update too.
Carrie- Hope your DH's back feels better tomorrow. Sounds like quite a fall, I would go to the ER, I am surprised you were told an xray does not show anything broken, why would everyone get things xrayed for broken bones if that was not the case. I like garden do not put much faith in urgent care.
Carole- Hope your DH is going to be OK too.
Chabba- Happy belated Birthday! Sorry it had to be so emotional for you. (((hugs)))
When I am able to I will start posting some recipes things are still so hard for me right now although I havn't cooked anything good lately mostly junk food and processed foods since I have no desire to be in the kitchen cooking at this point and I have gained about 25 pounds ugh!! I would just love it if Susan could come to my house and cook some healthy delicious meals, I always love your meals cooked from scratch Susan, they sound so good.
A week ago last Sunday we did a Celebration of Life for my dad at our family's restaurant it went OK! Minus a few outburst from My dads wife and her daughter sometime I will tell you about it. She is a Witch with a capital B. Then the next day (labor day) a lot of family drove up to Mount Shasta and put my dad and my sister's ashes there, normally it has lots of snow but it was bare and beautiful. Very emotional but glad we went there where my mom and my other sister's ashes were.
You are all on my mind and in my heart every day even if I don't mention everyone. Hugs and love to you all.
-
Debbie so glad to hear from you. That sounds like such a beautiful place for your sister and Dad, hope this will bring some peace in your life. I think of you and your husband and all of the challenges you have gone through all the time. I would also like Susan to come to my house and cook for me, or Nance, or anyone for that matter!
Leftover chicken last night at 9 pm. Gotta expand on some make ahead recipes for my late night work schedule. My apple tree is loaded so I need to make something, but was holding off cause we were going away...but I guess now I can do it.
-
So Carrie, even tho you will need to stay home, your house will now be filled with aromas of apple treats. Hope that's a sweet consolation!
Debbie, so happy to see your long post....and to learn that the ritual for your sister and dad went well in such a beautiful spot. This has been such a difficult time for you. Sending you strength and (((((HUGS))))). -
It has not been raining here - I think it is because Michelle is nearby and needs to soak up some sun! I am so happy that she seems to be invigorated - I hope she has some lovely family time while in Florida.
Thinking of you all - especially the ones who need some extra strength to deal with dificulty!
laurie - I love pork chops and applesauce! I can't have a pork chop without! Well, I could, just don't want to!
-
debbie, Thank you for your kind thoughts. I have been thinking about you and hope you are doing better. We will always miss the loved ones that have gone before us but the pain does get easier to bear.
I wasn't able to go to Virginia for my Brother's memorial. My SIL recently sent me a DVD of the service which I haven't as yet watched. I will one day soon.
On Sept 28 a few of us are meeting in Olympia for lunch. If anyone is interested you will find us on the topic Northwest Ladies.
-
Carrie,
I hope your husband is better. That is the stupidest thing I have ever heard of. Xrays won't show a fracture? Possible it "might" miss it. MRI wouldn't and would show other problems too. Hate "Doc in the Boxes"
Can you call and talk to your doc?
If he goes to the ER they have all the stuff there. I hope he gets relief.
For dinner. Out with friends!
-
The stars are aligned for me today. The "conversation" about puerto rican rice, a recipe in today's St. Louis newspaper, and the fact that I amazingly have all the ingredients (including recaito!) convinced me to make pernil, a puerto rican pork roast. I think there's some controversy over whether true pernil is ham or pork shoulder, the recipe I'm using calls for pork shoulder. It's going to be 97 here today, so probably not the best day for heating up the oven. It's supposed to be in the 70's toward the weekend but my desire for immediate gratification wouldn't let me wait. The only thing I can't lay my hands on are pigeon peas for rice and peas. They are scarce in my neck of the woods. However, I will be near a small latin market tomorrow and will try there, although it will be too late for tonight's dinner. I'll try Daisy's yellow rice instead. I don't know how the pernil will turn out, but the marinade aroma and taste is amazing.
I think we all need a hug (((((EVERYONE)))). Got some tough news last night that a nephew is facing a colon cancer diagnosis. He's very young (39) and I hate that he and my niece have to deal with this horrible disease. Hope I don't offend anyone when I say F*U Cancer and the horse you rode in on!
-
Has anyone heard from bobo? Hope she's doing ok.
-
Nance, I agree, F*U cancer. Although the poor horse cant be blamed..... LOL
-
(((((Debbie)))))
Carol and Carrie- I hope your DH's are feeling better and things are going ok.
Nancy- I agree FU cancer
So sorry.I too hope Michelle is soaking up the sunshine and feeling relaxed.
Yesterday DH was talking with his mother on the phone and asked why she was coughing so much, she said she swallowed a vitamin wrong on the morning and has had a tickle. Pretty sure it is the lung mets. She is doing no treatment. SO sad- I said nothing.
So dinner tonight will be a chicken parm- no sauce on the chicken. The kids prefer it that way. I can't seem to get used to the new schedule...I need to learn to go to bed at night! Lacey- I know you know what I mean...you're usually up even later than me!
-
Laurie, You're only into it a week. You'll adapt....and maybe even alter your late night habit to a new earlier routine. 😉I was better about at least getting to bed before midnight when I had a demanding daily work schedule, but my current lack of structure is brutal. I am a total night owl now! I think the fact that I can't sleep well on this Tamoxifen makes it harder to even want to go to bed until I am exhausted....not a good thing. But I hate the thought of waking up even more times throughout a longer night. Oy! My guess is that you will get into a better sleep pattern as your new schedule gets to really be a routine. I hope so since you have a lot on your plate from sun up to sun down, so you must need some recharging! Good luck fellow night owl.....:)
So sorry, Nance, to hear that news.....
Froze in the house today and will be dealing with high humidity and the 90's tomorrow. Craziness! I am actually not too disappointed to have hot temps so I can wear a summer dress to an event we are attending tomorrow evening at the JFK Library. I would have frozen had the event been tonight.
DH was at dinner tonight with our Parisien friend. So I took the opportunity to make myself a big bowl of oatmeal with raisins and walnuts. I used to love to eat that for breakfast sometimes, but since my daily breakfast smoothie routine of this last year, I rarely eat oatmeal. Really enjoyed it! Kind of makes me want to make oatmeal cookies, too, ...but I think I'll wait until the heat passes.
