So...whats for dinner?
Comments

Eric - so glad Sharon's home. Tell her we love her and prayers for an easy recovery. Glad the nasal problems didn't delay anything. Do you actually have a pollen season in AZ? Rotoruter time again or can you repeat it?
Laurie- we camped - tent camping - as a child but never in the snow. Bet your little one was quick out of that stream. BRRRR. Sounds like you had a wonderful weekend. Great memories. and Happy Birthday! What a thoughful gift from your DH. Your boys are adorable I've been meaning to tell you.
Bedo - I know what I had, a bowl of cereal for dinner last night. Not sure what DH had. BAD WIFEY, twenty lashes for me. Fish sticks and brussel sprouts sounds pretty good to me. Tonight will be stir fried sausage, peppers, onions, 2 leftover squash over spaghetti and a handful of egg noodles found in the pantry. Am on a use it up or throw it out kinda kick.
Carole - I think flank steak is high and went that way with the no carbs diet. It's not something I make.
Minus Two - the recipe I used is from Taste of Home - Honey Barbecued Spareribs. 3lbs ribs, 3T lemon juice, 2 T honey, 2 T canola (I used olive) oil, 1 T soy sauce, 1 T dried minced onion (just sprinkled in some onion powder), 1 t paprika, 1 t salt, 1/2 t dried oregano, 1/8 t garlic powder. Cut ribs in serving size pieces. I put them in oversize lasagna pan, bone side down, covered tightly with foil and baked 350 degrees 1 hour. (original said on rack but I just laid them in pan and did not drain on this 2nd step). Brush combined sauce ingred. on and bake 30-45 min (more like 60-70 min) longer uncovered brushing occasionally with sauce (I did about every 15 min). Makes 4 servings. I will not list the piggie calorie count though for us it made more than 4 servings (I think about 3 ribs each and I had exactly 3 lbs.). DH thought they were dry when warmed up as Lacey's jump-ups but I thought OK. Do watch bottom of pan as they did want to burn towards end, not that you need the junk in the bottom for anything but could be smoky.
What kind of snacks jenjenl - kid friendly, fancy, easy, healthy (not me!)??
-
LuvMyGoats: thanks for the recipe. I'm not a "creative" cook but I can follow the rules - sometimes.
Today I finally picked up some 'Raspberry Enhancement' at Penzeys. So many wonderful recipes. Think I'll start w/a Pork Roast marinade. I get their catalog and clip way to many things to try. If you don't have one in your area, check it out on line.
Tomorrow is Chemo #3. Many of you will remember weird meals around this time. Met a friend for lunch since this was the last chance to see what might have started to taste real. The winners to date during this 3 week period were chocolate cake & french fries. Bedo - you think your meals are weird? The cake was breakfast and the large fries from WhatABurger were dinner. Not much tasted real today - but I've started the pre-chemo steroids so at least I was hungry. Chicken picata, including salad, sauteed spinach, pasta side & lots of focaccia bread w/rosemary. Dinner tonight at 10pm was cold boiled shrimp. I ate 20 medium shrimpies all by myself & that was all. Oh, and a coke. Guess I should have cooked some frozen brussel sprouts. One of my favorites.
Sorry to not answer everyone individually. Love reading the posts & meals & wishing you all well. I've got to load my "go bag" & get to bed. 5am comes early. I'll stay down by the med center since I drive myself & have a Neulasta shot the next day, so I'll be out of touch a couple of days.

Used to grow sunflowers for the seeds.
When I can get a good sale on pork ribs or pork butt I like to do BBQ as a special treat for our Senior Center lunch. I use my own dry rub that includes paprika, salt, sugar, garlic powder, onion powder, chili powder, oregano, thyme, cumin.... The day before I dust the pork well with the rub, pan them, cover and refrigerate overnight. The next morning add 1/4" apple juice to pan and cover tightly with foil, roast 2 hrs at 325. Uncover, drain and brush all sides with bbq sauce and return to oven for 20 min.
-
Yum chabba. I think I could do that. I like the ease of cooking in foil.

We tent camped for years then bought a used popup. We went every other weekend to Greenfield State Park, Jellystone Park, Bayley's Family Campground in Maine, and Totem Pole Park on Ossipee Lake. I'd come home from work on Friday and get everything ready to go into the car. When DH got home, we quickly loaded up and took off, rain or shine. Many a night we were making camp in the dark. We usually made a campfire and roasted hot dogs on that first night. It was a great time and we never had to convince the kids to come. Actually, we usually had an extra or two. I would love to take the grandkids on one of these trips. But DH is insistent that he's not sleeping on the ground...lol
-
Michelle, I'm with your dh. No sleeping on the ground! We've be rv'ing for the past 15 or more years (I'm not a numbers person, remember!) and I enjoy observing the tent campers. I have never tent camped and it's much too late to start.
I'm off to a surgery center this morning to have a skin cancer on my face removed. No coffee or breakfast. A pathologist will examine the margins of the removed tissue so that I can get this all done before we depart on June 18 for the summer trip north.
DH wasn't home for dinner last night so I made myself a dellcious sandwich with good wheat bread (not the spongy stuff), leftover thin-sliced flank steak, thin slices of asiago off a block of cheese, mayo and mustard. My mouth is watering as I write!
I'm missing a women's golf day event today but am hoping I will be okayed to play golf on Fri.
Eric, that's how I felt after my immediate construction, like an elephant was stepping on my chest. So glad Sharon is doing well. My problem with pain is that I can't take vicodin or any of the codeine products. I have to make do with tylenol. I had morphine in the hospital after my bmx. Couldn't tolerate demarol.
Hugs to Deb and Debbie and anyone else who needs a hug.
-
Carole, that's a great sandwich. Chabba, I love pork butt. Paula deene has a very good recipe for pork butt in the oven using liquid smoke. I finish it off on the grill or under the broiler for some crispy edges.
We used to tent camp regularly. We took our canoe and fished and floated the lovely Missouri rivers. As a younger woman, I was an avid backpacker and hiked and slept on the ground in or out of a tent in many states. No more! I gave up sleeping on the ground years ago. I still travel, but I like my hotel bed and shower too much now. Besides, once I'm on the ground these days, I have a hard time getting up!
No idea what's for dinner. Think I'll cruise the pinterest boards for inspiration. I'm sure food and wine magazine is up to something. -
Minus, good luck with your chemo today. Hope you have minimal side effects.
-
MinusTwo - hoping for an easy chemo #3 for you. I still haven't done anything with Penzey's but you'd think I could at least make it to Arlington. I'll look online for the pork recipe. I think ribs are on sale again this week. Making an early grocery run this am; goaties out of hay and I want to be done b4 storms hit later.
Chabba - That recipe sounds good, too. Nancy - I'll look for Paula Deans's too.
Dinner tonight is leftoever stir fry unless store has something on clearance more interesting.
Carole - know you will be glad to get your "spot" taken care of. One less worry to get off on your trip.
-
Just wanted to let you all know, my DH passed away this moring at 2:15. We spent most of the day with him yesterday, then got the call this morning.
Thank you for all your prayers.

Eric Healing thoughts for Sharons recovery
Minus Good luck with the chemo....is #3 your half way point? Hope for minimal side effects and that you can enjoy some good foods.
Laurie Happy belated birthday!! Love hearing of your adventures with the kids. We were campers also and they were absolutely the best memories with the kids.
Really late night at work, so it was scrambled eggs for dinner. Today I will try to plan a little better and the dinner ready for when I get in. I hate eating that late, but I dont eat at work (no time) and my previous meal is usually breakfast.
I am drooling over the rib recipes!

-
Deb I am so sorry that you had to go through all that. I'm glad that you have friends and family that can help you and be with you. I hope that things get easier.
Minus 2 I hope for you an easy chemo. Chocolate cake, yum Shrimp cocktail with cocktail sauce eaten all by myself and bought already cooked, one of my favorite dinners with either virgin mary, ginger ale or coke. No sense eating something you don't enjoy, right?
Today's mission. YUCK ALERT don't read if you are feeling nauseaus! Find and destroy "mystery cat pee smell spot" I know, yuck.
-
So sorry Deb.
DH is off tonight so I am going to be eating some gooooood seafood, my favorite!
-
minus 2- I hope chemo was gentle and effective.
Carol- I hope everything went weel with getting the "spot" removed.
Bedo- Hope you found the pee stain!!!
-
minustwo -- hope you are having some yummy homemade vanilla custard right now!
carole, I think you should also pamper yourself. You have had a stressful day.
Working day and night here. Dinner: pasta with cheese and tomato sauce for the kids, probably. Little sandwiches for me. A raw veg juice before that.
Have you tried the breakfast smoothie on the bco website? I just tried it this morning -- it's really good. xxx
-
Hello all - been MIA so have been catching up for many pages! All the dinners sound so good!
Reading over the pages have brought laughter and tears both - to all who need a hug - I send as many as you require.
Deb - I can't imagine what you are feeling right now, know I am thinking of you.
-
Arrived at the surgery center at 8:45 and didn't get back home until almost 2 pm. The "spot" had actually grown into a "bump" and was growing fast. It was a squamous cell, my first. The other skin cancers have been basal cell. The margins of the first incision were ok. I can take the bandage off in 48 hrs and go to the PS's office next Tues. The incision comes close to the bottom eyelid.
Deb, I'm sorry for your loss. I wish you healing grace.
-
carol- Glad things went ok.
Tonights dinner is meatloaf mashed potatoes and zucchini. I need to go grocery shopping tomorrow but am going to wait and have some of the kids friends over for a play date instead. Today was a quiet day with no outdoor time due to the rain. We met a friend of mine for lunch I renewed my license. Lots of laundry etc. Tomorrow is supposed to be hot so we need to get outdoor time in!

First of all, (((((((((DEB))))))))).
Catching up on this thread after our busy, sad trip to NJ.....lighter moments spent with the grandbabies since we stayed there for the four days...but what handfuls! Makes me wonder how that 60 something woman in Italy who had a baby is doing! You really forget how much energy the active little ones take. So much fun, tho, and best sleeping aid ever!
The relative's funeral was so sad....and with record crowds since she and husband were well known/ respected educators in north Jersey. She was a person who had "sparkle" and will be so missed... not a dry eye in the church at the end of the service.
We returned home last night to find town construction on our sidewalk, right next to our driveway. Need to get the car out of the driveway before I am paved in, since I have to
pick up a dress being hemmed to wear to my retirement dinner tonight. I am way too tired to deal with the public works guys and their steam rollers.....Oy!
Way too much Italian pasta and persian rice in NJ. Back to smoothies and exercise today.
Hope everyone stays cool at the start of our heat wave.... -
lacey - sorry about the reason for your visit, but glad you were able to get in some grandbaby time. I hope you enjoy your retirement festivities tonight! The ceremony and parties surrounding my DH's retirement from the military were one of the highlights of my life.
-
Special K, I am picturing your handsome military DH!
Lacey, Deb, so sorry for your sorrows. I can only hope you are making yourself some yummy comfort foods. Like mashed potatoes with cheese melted over it.I have been liking these tiny tapas sandwiches DLLP makes for me when I teach late. Little toasted rolls, open-faced, with mayonnaise, avocado slices, and roasted peppers. And sriracha. And then there are vegan 'beef' ones with caramelized onions (susan!), mayo, sriracha. A lot of little open-faced sandwiches on a plate. And... a beer.
Vegan mac and cheese in the oven right now. Amy's. Workin' from home today.
