Luv, the small cancer on my cheek is actinic keratosis. I'm scheduled next Wed. to have it removed at a surgery center where a pathologist will be on hand to examine the margins. I will cancel the apptment at the dermatologist's office to have her remove it. I am confident that my former high school student/plastic surgeon will do a better job as far as cosmetic results.
He's a marathon runner and has run the Boston but didn't run it this year. He really likes the New York marathon because the route goes through all the five boroughs.

Welcome! And I agree.. When I was first diagnosed and went through treatment I do think I was a bit like Laura in stepping out of my comfort zone and truly appreciating each moment for what it is. I think as time has gone by, I've fallen back into old habits. I think that even though the show sometimes makes me cry it also serves to remind me of what is important...

Hoping for better weather this weekend than what we had here today! We barely made 50 degrees with a cold drizzle all day! Has been a crazy spring so far... Snow one week, 80 + the following week and now back to the 50's.... Hope this isn't a preview of summer! -

Sharon cooked dinner tonight. She cooked and shredded chicken and then mixed it with BBQ sauce. She spread that on a tortilla shell and covered it with shredded cheese and chopped onions. Then, she baked it at 400F until the cheese melted and the tortilla looked toasted. If she doesn't make it again, I will. :-) Once the chicken was cooked, it took only another 15 minutes to make.

Carole: I do the same thing. I have twice yearly full exams with my dermatologist, but if she finds anything she thinks should be cut instead of just frozen - off I go to the derm plastic surgeon. Most of my derm surgeries have been MOHS - the doc doesn't close the site & keeps sending off samples until the margins are clear. Good luck next Wed.

Last night I invited a friend last minute to enjoy our dinner with us. I did a full Southern thing- fried chicken thighs, sliced tomatoes, steamed green beans, the last of the baked corn, and biscuits. For once, I even made dessert.... little shortbreads with strawberries and ice cream. Oh, and cucumbers and radishes, which are being harvested locally. Delicious!
I am one of those people who has never spent hours in the sun. My Dad was a red-head and we were never allowed outside without tons of sunscreen or between 11-2 in the day. The one time I remember ignoring this rule, I got so burned. I never did that again! I have a team of doctors, dozens of them, but not a dermatoligist in the lot!
My husband, and his whole family, chose no sunscreen, in the South. They are forever having to have little bits and bobs attended to. As you can imagine, my daughter who is as fair as me, was also taught to stay out of the direct sun.

Susan, you were wise to stay out of the sun and use sunscreen. I am fair-skinned and never tanned easily so when I was young, I slathered on oil and lay out in the sun. Admittedly my skin turned a pretty golden tan but I am paying for it now. DH was always an outdoors person and he never wore sunscreen until he got older and started visiting the dermatologist regularly. A few years ago he had the MOHS surgery on his nose and had to go to a PS for reconstruction. The same PS who will be removing my skin cancer.
That southern dinner sounds delicious.
Our Mexican dinner out was very good. This restaurant is a little pricier and more upscale than your average Mexican eatery. It was quiet enough for conversation. I had the chiles rellenos with Spanish rice and re-fried beans. There was ample food on the plate but it wasn't a huge platter with too much food. To my delight I could order a margarita sweetened with agave instead of sugar.
This afternoon I plan to make a big pot of spaghetti sauce for tomorrow's noon dinner at my house. Spaghetti and meat sauce is on the limited list of foods that my niece's three children will eat. Plus it's too hot to use the oven now, and we have to plan a meal that allows me to take my mother to church at 10:30. Winter meals are easy because we can put a pork or beef roast in the oven or crockpot.
Just changed my plans following a phone call. I will play golf at 1 pm and make the sauce this morning.
Our dinner tonight will be ribeye. The carnivore in me is calling for steak!

Susan that sounds like a delicious meal....mmmm fried chicken! On tv this morning the guy did a grilled chicken cordon blue that looked awesome...used chicken thighs pounded flat spred dijon mustard on and then the ham chunks and gouda cheese and bacon bits.

Everyone's dinners sound great as usual.. It was supposed to be sunny and 70 today, but instead it's 55 and rainy. Figures. I had outdoor work planned today. So instead, it's unpacking, laundry and Senate Bean soup with corn cakes for dinner.

Tomorrow is when I'm going to try the aebleskiver pan out. It'll be interesting. I've never tried that before. Liike the waffle iron, it needs a gas stove...Since the kitchen range is electric, I'll be setting up the Coleman stove.

Since I just had my exchange surgery, my friend brought over some delicious veggie soup for us to eat for lunch. I didnt admit that I was well enough to make a lassagna yesterday! Her soup looks delish. I will make some cornbread to go with it.
I wish I could send some California sunshine out to you all. But summer will be here- evantually!! It is still chilly up here in Northern CA, at night, but the daytime has been gorgeous. I am sending cyber-sunshine rays to those in cloudy spots today. -

zero motivation tonight. PB&J for the kids and 1/2 cup pasta with zucchini, onion, tomatoes and shrimp with a splash of heavy cream...i'm out of wine

Oh jenjenl - Out of wine is the pits. I'm never out of wine. I have a giant jug of somebody's sangria under the cabinet. Sangria and sprite yum. Sorry you're in a funk. I remember you said (I think it was you) you'd printed off recipes and then couldn't find them. That is me TO a T!!! I buy stuff for something then can't find the recipe. I've spent the last couple of hours surfing around Taste of Home looking for a BBQ ribs recipe. I bought baby back ribs and thought we could put them on the Weber. I think they need indirect heat and the Weber is too small so into the oven they're about to go. Found several recipes for Root Beer sauced ribs that we will have to try but no root beer. Real beer and cream soda but no root beer. T of Home and Relish are 2 of my favorite places. I'm inspired by pictures. Also like Pioneer Woman - Ree Drummond.
Hope the motivation improves. I like to cook but absolutely hate to clean up.
It poured last night and again early afternoon. We desperately need the rain. The lake that supplies most of our water is 17 feet down.

Update,
DH is on morphine now, doctors say maybe a few weeks, who knows, he will go when he is ready. Rebekah is still here but will go home Thursday then back June 9th till the 16th. Maybe longer if DH decides it's his time to go. This is killing me

My DH's cousin's wife finally joined Apple yesterday after a many year fight with her Stage IV BC. We are heading to NJ for the services which are happening over three days. She was an active educator and administrator in inner city schools in northern NJ, so I suspect they anticipate a crowd. I feel for her DH who is totally depleted after keeping his promise to never leave her alone in the hospital or the hospice. Commuted hours thru city traffic daily to honor this. I worry for him now......he's exhausted and so grief stricken.
Will finally stop in CT to see my stepmother with the frozen food I've been stockpiling for her. She, fortunately, has recovered from her kidney cancer surgery amazingly for an 86 year old.
Eager to see and stay in NJ with DS1, DDIL, and grand babies! It's been too long!
We race back home Wed night in time for me to attend my "retirement" dinner on Thursday. Still thinking what thoughtful but authentic words to choose for my goodbye after the system just pulled a fast one on the person who did such a great job subbing for me this year. Changed the job description to put a local favorite in. So my sub, who was superlative in everyway but self- promotion, can now start a job search!
Our weather is abominable today!! Glad I had to spend the day doing clothes management and packing.
Dinner was a quick heat up of the barbecued pork I had made to bring to NH, which we rolled up in tortillas with melted pepper jack cheese...accompanied by my quick cuke salad and side of kalamata olives.
Please, Mother Nature, turn off your faucet before we head onto the highway....and for everyone trying to enjoy the long weekend. Maybe cold....or rain....but both?!?! It's the end of May! -

Going to the Castle today for their super brunch with mimosas. Having all the kids home has been such a blast, lots of laughter and good times. Making the best of the cold. cold weather.

Last night I made a roasted leek and potato soup with some mushroom stock I had frozen last month. Lovely and light "first course" soup. Served with a grilled piece of steak and some roasted asparagus with parmesan slivers on top. Since I only ate 1 oz of meat, I am mighty hungry this morning!
I have started some foccaccia dough which will be a side for our composed dinner salad. I carmelized 10 lbs of onions a month ago so the foccaccia will be topped with those onions, perhaps some cheese, and fresh thyme. The salad will have lots of lettuces, veggies, more asparagus, locally grown radishes, and a bit of sliced steak. Lunch? It is a mystery.

Nancy, since I like you, I will tell you the secret! Oven!
I carmelize onions in a roasting pan in a 350°F oven. For 10lbs of onions, I throw in about 1/2 stick of butter and some thyme sprigs. Takes between 2 and three hours. I stir them with a wooden spoon every half hour or so. Sometimes, I need to add a bit of water after the first hour if some onions start to brown before the bulk of them truly carmelize.
The results are stellar and have so much less butter than if I do them on the stove top. At the end, I package them up into ziplocks [maybe a half cup per] and freeze flat.
