    Lacey, we eat the English muffins almost every day. I'm having family visit for 4 or 5 days, so that will use up quite a bit, and I'm taking a loaf to a friend's house for dinner. The pie crusts will be a lemon meringue pie and a quiche. Don't usually bake this much at one time but we've got a lot going on lol

    Wow Michelle. I'm so thrilled....I've got a huge grin on my face right now!  That kind of news is right up there with announcing engagements and new births... :-)

    Michelle - that is truly fantastic news!!!

    Maybe I've mentioned that hubby is a fishing enthusiast...  Anyway, we have a LOT of wild caught salmon, and each year it's a challenge to get it all eaten up.  This year in particular because of moving, etc. we have no way to smoke salmon, which is always our last resort prior to the start of the next season.  Anyway, to make a ridiculously long story slightly shorter - last night I decided to have food that was tasty but really not good for your health, so we had salmon fish and chips - except instead of chips, had onion rings.  I cannot eat wheat except for VERY occasionally, so use rice flour mixed with beer to replace the tempura.  Very tasty and fun - not something we can do very often, but a nice change of pace...  :)  and rice flour get really crunchy which is the way I like fish and chips....

    Seaside, when Mickey was sick, I didn't share much because no one wanted to hear.  No one my age (22) could relate to my fiancee being in hospice and they would "run for the door" when I tried to talk about it.

    It made it much harder for me.  The only reason I rejected suicide was that it would have left her to face "it" alone.

    The whole thing redefined my idea of friend to an almost impossibly high standard. Few make the grade and those that do are family...family by choice.

    Pork day here too.  We all do think alike.  Pork loin roasts 2 for 1 yesterday.  Small just under 3#.  Crockpotting it here shortly (DH doesn't get home until around 10 pm so no hurry to start).  I think it will be like a BBQ which would be quicker if I had any BBQ sauce.  Bought big bag of going soft red/yellow peppers too.  Will stick them in oven with onions and roast.  I see leftover pork, peppers/onions in tortillas.  I figure the bag cost $2 and there are 6 peppers in there.  Even if I lose 1/2 which I don't think I will it was a bargain since they're $1.99 each reg price.

    Nancy/Carole - Glad you got no damage.  We had only rain here though were predicting hail/winds that never came together here.  Sunny yesterday and warming.  Today mid 70s on into 80s by Sunday.  Hope you get some of that.  I still need to try homemade English muffins.  The price in the store is crazy ridiculous.  I haven't looked for the muffin rings I bought years (oh like 18+) ago at a garage sale.  Might not even have them anymore.  I've heard of using tuna cans.  I can smell your baking from here.  Yum.  I cheated and bought 2 of the new no knead bread mixes, excuse was I had coupons.  Might have to make one to keep up with you.

    Michelle - Just read the next page about markers plummeting.  Way to go girl.  Keep up the ice cream diet.  Keep over achieving.

    Eric - What little bit I used to travel and it was just goat shows and 2/year weekend getaways there is nothing like home and your own bed.  Hope your cold that found you is getting better.

    Gardengumby - I would be in heaven with that much salmon.  You sure do get you fish quotient.  You must be eating some for me.

    Lacey/Carberry - I have one patient who lived at home that I promised to visit.  I need to make that a priority soon.  She is 94 after all.  She doesn't live far from Trader Joe's LOL.  Good excuse.  So I hear your pain at leaving your clients even though most of mine did not remember me day to day.

    MinusTwo - Prayers for you fellow Texan.  New DX just Sh$$$y.  Let us know how your tx is going.

    Bedo - So good to hear from you.  How are you doing????

    Carole - You are such a good aunt and sister.  Hope your niece is improving daily.  What stability you provide for your little niece/nephew is bound to be a Godsend.  Bless you.

    Ooohh Seaside, that is quite a vision.  It's a little chilly for naked under the stars...lol.  But I am giving a lot of credit to that ice cream diet!!!

    Does anyone here have any ideas of what I could eat that would put weight on?  I am very limited in the kinds of foods that I can eat!  I have severe, chronic IBS, I am lactose intolerant, I have food allergies, & can not have anything w/ sugar in it! 

    Any suggestions would be much appreciated!

    Sorry - any kind of sugar?  Can you eat fruit?  If you can, I'd recommend dates/figs/and other dried fruit.

    What triggers your IBS and what foods are you allergic to?

    Anything if eaten too much, will add weight - especially of course, the things you can't eat (milk, sugar, etc).  Carbs will probably add more quickly than anything else - but mostly the ones that convert most quickly to sugar - do those cause you problems?  Alcohol will add weight as well - though I wouldn't recommend that one Sealed.

    Linda- Welcome!  I agree with Gardengumby- give us some ideas of your restrictions and I bet a few of us will have some ideas.  We all have different tastes, cooking styles and back grounds.  There is a great group here!

    All of you are making me wish I  had a pork loin to pull out for tonights dinner.  Instead we will have stuffed shells.  The weather here has been sleet and freezing rain all day.  Very dreary.  Last night was DS1 open house for parents for his kindergarten.  Crazy!  I fed them before  we left- and I had a grilled cheese with a pickle after they went to bed.

    I can't even imagine going through all of this at such a young age... As a Mom of daughter in that age bracket I know that most of their time and energy tends to revolve around their own problems with an occasional flash of empathy for someone else's situation... And I hear you even when older that maybe we don't share the bad news because we have gotten the impression that others are tired of it and don't want to hear about it.



    I agree that my definition of 'friend' has been forever altered with the bar set really high. Wish there was a 'like' button because I really liked your comment about the ones that are your true friends are family... family by choice... So true!

    Welcome..... I have no idea what diet is required for dealing with IBS. Some lactose intolerant folks can eat yogurts and cheese; others can't. Which one are you? Give us some more information and the collective wisdom might be able to help you.

    Michelle  CONGRATS!!awesome news.  Might I suggest that we all go into an "ice cream trial?"  I can be a very willing participant that will stick to the plan.

    Linda  Maybe some of the gluten free pastas, they are usuually good for people with allergies and maybe good for the IBS.  Are there lactose free cheeses?  I do think there is lactose free ice cream, so you can join the trial with us.

    My DH called to say that my old college roommate dropped into the store today (have only seen her twice since college) and she too, is a BC patient.  He got her number so that we could connect.

    Michelle:  Hooray, HOORAY.  Such great news.

    Thanks everyone for your supportive thoughts.  I'll post over the weekend about the treatment plan.  In the mean time, after I looked at side effects I asked the onc if I would have to give up my glass of wine at night during 6+ months of chemo.  His answer - don't drink on chemo days.  Bring it on!!!  Hope it doesn't turn my stomach.

    Stopped at our "gourmet" store and bought lots of goodies - Pumpernickel bagels (the only place in town I can get them) and smoked salmon spread, a fresh loaf of delicious Flax & Chia Seed bread,  100% Italian Durham wheat pastas - bow tie & spagetti, Rosemary Crostini, Meyer lemon 'puff' cookies, Abdalla's pita bread, macaroons w/the bottoms dipped in dark chocolate.  Hmmm - do you get the feeling I like carbs?  Going to eat bread & butter for dinner with my "Redvolution" Bota Box wine from Costco.

    Luv, the only thing about tuna cans is that you can't cut off the bottom (except for some Italian brands.) A better option is small pineapple cans. Even they are a little deep though. Amazon had the rings for under $6 for four. I have 2 sets.

    Linda, ensure is lactose and gluten free, I know, blech, but I used to drink it when I needed to gain weight. Just drank it down and didn't think about it, kind of like a vitamin.

    Goats, thanks for asking. I will start 2 weeks from today and am not sure how my job will handle disability. I have done this before and am afraid, but with everything all you have gone through I know I can do it.

    Eric, I became my Mother's Power of Attorney when I was 22. She died 2 years later.( My dad died when I was little) No one could relate. I am so grateful for the love and things that she taught me, even though I was in my  early 20's. All you ladies please know how much your kids love you, and your lifelong impact, even if they are brats. Like I was as a teen.

    Nancy - I now having something else to fill out DH's next Amazon order (so he can get free shipping).  If I still have the rings and I think it was only 2, they are buried deep in my storage closet probably never to be seen till we move again whenever that might be.

    Linda - I had patients that would only drink one flavor of Ensure so might be worth your while to taste them all.

    MinusTwo - I like the sound of your gourmet store.  I've spent the last hour or so reading lists of what people buy at Trader Joe's.  Fun reading but not very productive. TJ's and Central Market and Sprouts (which I was not too impressed with) are "gourmet" stores in Ft. Worth.  You know if it's not steak and potatoes (only just kidding WINK WINK) we don't eat it.  Actually World Market has a fair amt. of gourmet stuff.  I think I've posted that Central Mkt, World Mkt (in same center as Central Mkt), TJs,  and Sprouts are within 2 miles in a straight line on westside of FW.  Actually for us out of towners very convenient if expensive.

    Enjoy your box wine.   When the Majestic's closed or changed hands here earlier this year and cleared out their inventories I picked up 2 bottles of Spanish sangria that I just love.  Not one of the commonly seen ones. Wish I had bought the whole shelf full.  Even DH who does not like wine thought it was good.  His tastes run to sweet stuff like Mogen David.

    My pork loin is smelling goooood.  I think I need to thicken up the juices with some cornstarch.  I knew 1 cup of water was too much in a crockpot but did it anyway.  Prob. should have used something more flavorful even chicken stock.

    My grocery had tomato basil cornbread yesterday.  I found several recipes; will have to try it.  Hockey, baseball and Nationwide race all on tonight.  You'll find me planted on the couch.

    Eric... Reading your post brought back memories, i can kind of relate. Back in the '70's when I was still in college, my BF/fiancé (cant remember which we were at that time) was dx'ed with testicular cancer. He didn't have family, I was it. Cancer treatment so different then. Stage IV with kidney cancer. I remember my roommates/friends couldn't relate or understand - my roommates actually kicked me out of our apt because "he was a downer" when he was around and I secretly believe they had a fear they would catch cancer from him. Moved in with him to take care of him till I couldn't any more, I always felt that I had grown up way too quickly and being in love took on a different meaning for me. Took me years to get over him, that's why I didn't marry till 37.



    Back to the topic, big family get-together (part 1, part 2 tomorrow) so didn't make dinner tonite. Appreciate the break.

    Yesterdays baking marathon involved some recipes I hadn't tried before, i.e. onion rolls and tartine sourdough bread. The onion rolls were delicious and I believe the sourdough is the best I've ever made. The sourdough is labor intensive though, requiring attention every 30 minutes for the first few hours. The whole thing is a 10 hour process. Probably won't be making that a lot.



    Today is something a little easier -- my all time favorite chicken dish, Rao's Lemon Chicken with a side of angel hair pasta and a salad.



    In other news, the sun is shining!

    Nancy.  I've done "regular" sourdough and that didn't take a lot of "babysitting".  What did you have to do to the sourdough every 30 minutes?

    Eric, there was no leavening other than the starter and you have to fold the dough over onto itself every 30 minutes to facilitate the rise. It was a very interesting dough and I will make it again, but probably on one of those days I'm housebound because of a snow storm or something lol.

    Am all set for dinner gathering tonight....turns out it will just be our friends from the lake and us.....so pretty relaxed. The biggest problem I just discovered is that I really need to get some new tablecloths. Have been using the same ones for many many years! Built in hutches grow "dry goods" I think....need to clear out the old and get one or two refreshing new tablecloths to go with the gazillion napkins I have collected over the years. Jeeze, give me a place to stuff things, and stuff and forget them I will! This is not the functional style of someone who has to clear out so we can move some day. Oy!



    It's really nice to see some sun today. I need to get out and walk.....

    the stretch and fold method. does take some "babysitting" to be sure. Makes a very nice and soft crumb however.

    (Garden) & (Laurie)  Where do I begin?  I can not have any sugars; no fruit; I swell up!  Other sugars like in desserts I just can not digest.  Sometimes stress can trigger an IBS attack, or foods, & sometimes I just don't know.  I'm allergic to: fruit, corn, eggs, dairy, chocolate, tomatoes, nuts, & I have to limit red meat intake as well.  I eat a lot of turkey & chicken!

    (Susan)  No, I can not eat yogurt or cheese because of being lactose intolerant.

    (Carberry)  I've tried the gulten free pastas but I have to use my lactose free margarine on it & sometimes it just doesn't appeal to me.  I wish I could eat ice cream! & I know there is lactose free but I can't eat it because of the sugar content.  I've tried sliced lactose free cheese but it isn't that good:(  

    (bedo)  Believe me, I would drink Ensure or Boost but can't because of the sugar content.  I haven't found any nutritional drinks that are BOTH sugar free & lactose free:( 

    I weigh only 90lbs. & take anti spasmatic drugs for my stomach & a pancreatic enzyme to help me digest foods.  I need to build up some strength & energy  because I am starting radiation soon. 

    Help!  Any suggestions??  Thanks,

    Linda,  hi.  I'm not to familiar with what foods contain at this level of detail....so I'll appologize in advance for any "I should know that" questions

    How about pork or lamb?  Rice? Are some nuts or all nuts are bad?  Is there a sugar limit...in that small amounts are OK, but too much, whatever that might be, causes issues?  Sour..like vinegars in salad dressing? Oils, like olive oil and such?

    To everyone, thanks for the support, it was sad, but good, as 90 years old, going in his sleep to join his wife of 63 years on his farm where he was born was as good as it gets.

    To those with teen troubles, they do grow up and admit that they were even thankful for some of the rules! LOL my 30 year old DD told me that one!

    Eric, my DH hates traveling, I.love it, he does it a lot, I don't, hmmm, LOL.

    I haven't forgotten everyone else, but this thread moves so fast. Still working on eating my freezer meals up, starting on the second half of the batch. Italian Medallions next! Hey, don't blame, I didn't name them! LOL.

    Also, enough with the weather, we had snow on the ground today, Aaaarrrrhggghhhg!
