For the Slaw
3 cups very thinly sliced green cabbage
1/4 cup coarsely chopped fresh cilantro
1/4 c mayo
2 tablespoons fresh lime juice
1 teaspoon sugar (optional)
1 teaspoon canned chipotle chile in adobo, minced (I keep a can of this in the freezer)
1/2 teaspoon kosher salt
If I'm in a hurry, sometimes I just use a bit of chipotle dressing in bagged cole slaw mix along with a little mayo. Serve on top of the fish tacos. -
The poor puppy!!!

carole: heres my taco recipe. Mind you the Costco one that auntie mentioned sounds really good too.
- White fish.. I generally use tilapia
- Imitation crab meat
- 1 tsp olive oil
- 1 small onion, chopped
- 4 garlic cloves, finely minced
- 2 jalapeño peppers, chopped (seeds removed for less heat - I keep mine in)
- 1 cup diced tomatoes
- 1 cup corn (fresh or tinned)
- 1/4 cup fresh cilantro, chopped
- 3 tbsp lime juice
- salt and pepper to taste
- 1 medium avocado, sliced
- lime wedges and cilantro for garnish
Heat olive oil in skillet. Saute onion until translucent then add garlic and mix well. Place tilapia and crab meat in skillet and cook until the fish flesh starts to flake. Add jalapeno’s, tomatoes, corn, cilantro and lime juice. Saute over a medium high heat for about 5 mins. Break up the fish and mix up well. Season with salt and pepper.
For the tortillas – to get crunchy shells I bunch up some aluminium foil a bit bigger than my fist. Lay the tortillas over the top and spray with Pam – then put in the oven at 375 for about 10 minutes… or until they are browning slightly on the edges. Remove from oven, turn over and voila!
Spoon fish taco mix into the tortillas and garnish with sliced avocado and cilantro and lime wedges.
Tonight is bbq chicken, DH wants fries with his... so do I actually - cant remember the last time I had fries.

Debbie, please accept my love and condolances. May you find the same comfort in the love and support of our brother and sisters here on BCO that I did when I lost my beloved Brother last summer. May you and your family find peace and solace.

Tonight we're having Oysters Mosca (Italian baked oysters) and napa cabbage slaw.

It's a day right out of Winnie The Poo and the Blustery Day here today. The wind is just howling and is shaking the house when it gusts as a very strong cold front moves through. We live on a hilltop which really doesn't help!
Homemade cream of chicken soup is what we're having tonight! I had all the ingredients and it sounded good today.
Debbie,
Just wanted to say that I am thinking of you tonight and sending you the hugs that I wish I could deliver in person.... -
Carole, set a place for me!

Debbie- Thinking of you.
I have nothing planned for dinner. I went grocery shopping yesterday but did not plan a lot of meals as my DH is going to be gone next week for work. The kids have been so picky lately that anything I make gets me eye rolls and rude comments and them sent to their rooms. Even last night I made spaghetti and meatballs!! So, last night I told DH lets see what they say when I DON"T make dinner. Little buggers!
DH and I were planning a trip to Florida. We have not done a family vacation like that ever. I could not believe how fast the costs were racking up. So I suggested instead to use that money to go towards a new (to us) camper. Ours was a starter camper and now that we know we love it, it might be time for a bigger one with a little more comfort. He agreed. So I have been looking around and we are going to look at one for a steal of a price on Saturday. It is not the time of year to buy one, but thats kind of the point. The person selling obviously wants money now to try to sell in winter and we are hoping to get it for cheap money. It is one of the models we really want so maybe it is meant to be. Then we will see ours in the spring to offset the cost of this purchase. We shall see....
Hope everyone had a good day.

laurie - sounds like a great investment - the trailer sounds like a fun thing you can take many trips in rather than a one-time trip to FL.
