    DH flew out this afternoon so I am on my own for a few days.  I am thinking of letting the boys have pancakes for dinner and making a quiche to go with it.  I am kind of bummed that I won't make a real dinner until Friday.

    Laurie, you are a true kitchen trooper! I used to love slappin' down those pancakes or waffles for the boys when DH was travelling...and there were certainly no complaints from them. Quiche too?? Amazing!

    Lol!  Lacey- quiche is so easy to make.  DS2 and I love it so it will make for a more balanced dinner.

    Joyce :D Thanks!  I actually said to D!  I commented to him, my parents never did cool stuff like this when I was growing up, do you think they know they are lucky?  We both agreed- they have no idea.  But someday they should and we will have lots of memories and good times to laugh about.  They are only young once, soon they will hate us and think we are lame.  Plus, it gets them away from tv and computer screens and enjoying the outside.  US included!!

    Laurie, I've never made a quiche and don't have them at restaurants because they usually include onions that have crunch in them.  How do you make your quiche?  Do you use bought crust?   I wonder if you can make quiche with eggbeaters? 

    We're having fish tacos tonight.  The fish will be catfish fillets seasoned with Paul Prudhomme's salt-free Magic and pan-seared with a minimum of oil.  The slaw will be made of napa cabbage and I'll mix up a sauce of sour cream, mayo, minced jalapeno, and dill relish.  DH may want some chopped sweet onion.  I'll chop up some ripe tomato, too.  The tacos are corn tacos and I'll heat them in an iron skillet.  Garnish of avocado slices.  Lime wedges for squeezing.

    I seldom make desserts but recently I ate a delicious home-made cheesecake.  It was so light and creamy.  So today I bought cream cheese, one fat-free carton and one reduced fat.  And graham crackers to make a crust.  And a pretty stoneware pie plate!  I plan to experiment and see if I can make a cheesecake with less fat and fewer calories that still tastes delicious.  The topping will be fresh fruit and/or berries.

    Sharon's uncle came home from the hospital today...into hospice...and died a little bit ago. Liver cancer....

    Eric - Please give my condolences to Sharon, your DD and Sharon's family.  I hope you get to spend some extra time tonight with her seeing how busy your schedule has been.

    Eric, so sorry to learn about the loss of Sharon's uncle . The timing sounded a lot like my mother's last hours. I think she lasted in her lovely Hospice room for all of seven hours.

    I hope you all have time to grieve together...life has been so hectic for you lately. Caring thoughts being sent your way.

    Lacey:  Thanks for the spag recipe.  Since I usually cook for one, what's the definition of a "large" can?  I can cook from recipes, but I'm not gifted like some of you who throw together wonderful dishes.

    Eric:  Sorry to hear about Sharon's uncle.  You both have my sympathy

    Carole:  I cheat on quiche - but the recipe was my Moms from the days when real men didn't eat quiche.  Guess that dates me.  It's great for college students, newly weds who both work late & us oldtimers who are busy out playing all day (ha ha).  I'll go ahead & share since I expect every one back east is already in bed.

    Mix in blender (recipe actually says Osterizer):3 eggs, 1/2 cup Bisquick, 1/2 cup melted butter, 1-1/2 cups milk, 1/4 tsp salt.
    Pour into greased 9" pie pan.
    Sprinkle 1/2 cup chopped cooked ham & 1 cup shredded cheese on top & push under the liquid.  (Or switch meats, or do veggies or mix cheeses or add spices). 
    Bake 350 degrees for 45 minutes.  Makes it's own crust.

    Carole - there is a product in the freezer section called "pour a quiche" - it's in a carton about the size of a pint of milk.  Thaw it out, shake it up and pour into an unbaked pie shell (like Pillsbury that you find in the refrigerated section of the store), add meat, veggies or whatever you want and pop it in the oven.  Easy-peasy!

    Eric- I am so sorry for your families loss.

    Carol- My quiche is super easy too.  4 eggs, 1 cup of milk, whisk together add what you want for cheese. veggies, meats etc.  Pour into a Pillsbury crust and bake at 425 for 25 minutes and lower oven temp to 325 bake for another 30 minutes.  ( often I forget it at at 425 for too long- no big deal:)  Often I just do ham and cheddar cheese.

    Carole, the custard for quiche is usually 3 or 4 large eggs to 1 cup milk. The most wonderful custard is made with cream or half and half but I've certainly used skim milk. But usually some combination. If you use store bought crust, try to find Marie Callender's, they're the best, at least around here. Kroger usually carries them. I've never used egg beaters so I'm not sure how they would work with milk. My quiche is usually simple, cheese, broccoli or spinach and a bit of ham or bacon. All your food groups (except chocolate) in one pan lol!

    Last night we did a salad for dinner...our pentance for super bowl food on Sunday. Tonight I am making a chicken pot pie.

    One of our friends had brought a desert type dip for the superbowl party, and she was one of the first to show up so we all dug in to her dip and had desert first!  It was cream cheese on the bottom of a pie dish, covered with caramel sauce and crushed heath bars...slice apples and dip  OHHHH yum! Then there were all of the chicken wings, chicken wing nachos, chicken wing dip, chicken wing pizza and so on....

    Thanks, Minus, Auntie, and Laurie, for the quiche recipes.  Seems easy enough and versatile.  I'll copy and paste all three recipes in a Word document.  And Michelle's "easy-peasy" quiche, too!

    Minus, I think I have an Osterizer!  It belonged to my MIL.  One of these days I will buy one of those super-duper blenders.

    My fish tacos last night were very good and it was an easy meal.  DH seemed to enjoy it, too.  He's not as big a fish fan as I am.  He made the sauce.  If I lived in CA, my fast food restaurant of choice would be the fish taco places.

    Tonight's dinner will be stuffed bell peppers.  The peppers (green) are huge so a portion will probably be half of a pepper.  Deciding whether to use quinoa or brown rice as part of the filling.  Leaning toward brown rice.  The meat will be ground turkey out of the freezer. 

    Yesterday I made a starter (biga) for Tuscan bread, which is almost all whole wheat flour.  I plan to make the bread this afternoon.

    Minus, the large can is 28 oz.

    I ended up using that recipe for the sauce I included in my three lasagnas, and since I have been using the Barilla non-cook lasagna noodles, I found the sauce to be a bit thick...not so with spaghetti and meatballs, sausage, etc.I should have watered it down so that the lasagna would be less dry...the flavor was fine, tho.



    Laurie, I have always put cream in as part of my milk components for quiche, but I must try it your way....cuts down on trips to the store as well as calories....sort of! Thanks!



    I am celebrating shedding another doc. Two weeks ago, I got to say good-bye to my RO (hopefully for good). Today I just had to talk to the rheumatologist I see a few times a year for my OA about the frustrating fact that I suddenly see way to many docs. He nicely complied with my "reduce the docs" diet and offered to become a very low key person in my life....don't have another appt. until next year. Yay! He prescribes my Celebrex, so I don't want to drop him totally, but there is little he can do about my new sharp knuckle pains (I do not want cortisone shot into them), so a year from now to check in is fine.

    Carrie- Your super bowl sounds great!  I have a friend who makes the same desert and it is very good!  Glad you had fun!

    Carol- I need to try to do fish tacos.DH loves them.

    Lacey- Congrats on one less Dr!  It's the little things sometimes that make all the difference.

    I almost hate to jinx myself but I am on day 5 of not having vertigo because of my ears.  I attribute it to switching to a different allergy med.  I go to the ENT on the 11th.  But, because I don't feel like utter crap I have had so much more motivation!  Today I cleaned and rearranged the furniture in both boys rooms and I worked and ran errands.  I feel like a different person. 

    Tonight I am making stuffed shells and the boys are very happy about it.  DH called this morning to check in from his "business trip"- he had just gotten out of the pool.  I asked him if he was nuts, why would he tell me that?  Lol!

    Today was my 18 month mammogram. Word from the radiologist was "everything looks great". Whew! Breathe for another year Nancy . . . (It was a diagnostic due to a very stubborn seroma that I've had since radiation.)



    Tonight is chili that I've made in the crockpot, which I've never done before. We'll see. In celebration I'm treating myself to a very large chocolate cupcake!

    Yay for you for dropping yet one more doctor's appointment from your calendar! I used to complain about all the routine doctor's appointments pre-BC. Never did I imagine how many hours I would spend testing, waiting, meeting, treating and endlessly following-up with my Merry Band Of Doctor's but here I am... I 'graduated' from my RO last year and my BS dropped my yearly MRI since I had 3 clean ones... Not sure yet how I feel about that.. ILC is just so sneaky...

    So while I'm listening to The Chew as I work in the kitchen, I hear Michael Symon talking about making his fried chicken WITH BACON! It looked scrumptious, and I'm not even a fried chicken person! Immediately thought of you, Michelle. Check it out if you didn't see it, and I hope you can enjoy some of that soon!



    Not sure if I mentioned that I have recently recruited the woman I met and spent most of that Western MAss weekend with, to do chef detail with me for the dinner I will make (hopefully in Sept), since she also likes to cook. So we should have some fun with planning and executing this. We were simultaneously already coming up with ideas for an interesting amuse bouche. I had to laugh at how our minds run together. Of course if we are already talking amuse bouche, I suspect that we won't be going the spaghetti and meatballs route, which I thought could be an option. Oh well....it will be an adventure...and is far off! ;)



    Two days before we get socked with snow here.....

    Oh I am so excited that we are leaving early tomorrow morning and will miss this snowstorm.  If we are lucky most of it will melt away before we get home. 

    I had my last carboplatin treatment...it isn't working at all.  Tumor markers have risen above 1000 so we are discussing Gemzar and Abraxane as the next protocol.  Ugh, it would be nice if one of these showed some promise.  Dr. Walsh will discuss our idea with Dr. Chen (at Dana Farber) and then we'll go forward on 2/20.  I'll have a CAT scan on 2/21 or 2/22 - setting another baseline. 

    I'm looking forward to lots of fresh fish, fruits and veggies...and a few umbrella drinks mixed in for good measure.  We are declaring a "no cancer" zone for the trip - we need a good break.

    Lacey - we got home a little bit ago and I now have The Chew on.  Fried chicken with bacon??? Fascinating!

    Michelle - I have Fox News on and weather is on. 2 feet of snow in Boston on Friday???  So glad you're getting away b4 it hits.  Shepard Smith says he wants to go upstate Friday night and weatherlady Janice Dean says no way is he gonna get to go.  Have some good food and umbrella drinks.  We splurged with key lime pie martinis for the Super Bowl. Hope your docs have a new plan all ready for you to go get those buggers when you get back.  Do you watch the bacon cooking shows?  I don't but know they're on.

    Michelle- Have a wonderful trip!  Post pics and keep us posted if you can, I will live vicariously through you!!  I like your idea in your blog about trying certain chemos on the cancer cells to see what pisses them off the most.  The rest and sunshine will be great for you.  I hope you come back feeling great and energized to fight those buggers.

    Lacey- Yay for having a partner in crime for your dinner in September!  Did they fry the chicken in bacon grease or fry it with bacon?  Sounds evil and good!

    I am on the tail end of DH being gone.  Tonight is the last night.  With the snow coming in on Friday I am guessing I will be snowed in with the boys.  SO I decided to beg for a break;)  Boys will go visit with my in laws for the morning tomorrow.  I can hit the grocery store and get a few things done on my own.  Like buy new sunglasses as DS2 snapped mine in half about an hour ago :/  Also want to hit J C Penny as I have a ten dollar coupon and their down light weight comforters are on clearance.  Which means I can get a new comforter for our bed in the camper for about 25 dollars!

    I am going a little stir crazy- dinner is going to be what ever we fell like eating.  I will probaby have left over shells.  I need to go on a diet....

    Michelle  have a great trip, will be thinking of you basking in the sun and drinking those pretty little drinks. Like Laurie said, rest up so you can fight those damn cancer cells and show them who is boss!

    Tonight is "hump" night or better known as wine Wednesday. I know my DH doesnt want to go out, overwhelmed at work since his brother (partner) is on vacation for a week, but we will probably be snowed in for the weekend so I would really like to get out and see friends....like you Laurie, I need to get ready for the cabin fever.
