We've been busy preparing for the move. Sometimes I think that we must be crazy to do this at our point in life. Then I get busy writing to clinical trial coordinators and remember why we are doing this. It would be crazy not to move. But I don't mind telling you that we tire quickly and chores take longer to do...so we plan accordingly.

I can't say that the weight is coming off. I took an extra spoon of pasta in red sauce with sausage the other day at lunch...DH said "Don't be surprised when you go to the scale." He's right of course. I hate when that happens...that he's right, I mean.

Pands do you use the tomatoes with creamy coleslaw or vinegar dressing slaw?
I am excited for yourmove Marilyn, I am sure that you have to pace yourselves! I am nto doing too good with diet, yesterday was pizza at lunch, of course I could have declined but.....Last night was appetizers and cards at friends, had a great time with good friends and food so worth it. My son is coming to visit today so we might head to Bad Axe about 25 miles to go to a wine, chocolate, oatmeal and cheese tasting at the local winery. Local food artisans go and you can sample their goodies. A friend makes gourmet oatmeal and she will be there. Hope all have a good weekend, I am starting to gather items for our vacation next month, I am ready to go see teh sun and surf.

You all might be interested in Thefresh20. I bought a "groupon" for a year's membership. It gives me a weekly shopping list of 20 seasonal ingredients to buy to make 5 very healthy dinners. So every Friday, I print the shopping list, prep paper, 5 recipe pages for 5 dinners(I dbl it so it feeds the 5 of us and leaves leftovers for my lunch) it also includes nutritional info like calories and fiber etc. I'm on my 2nd week and love it so far. I paid 25 dollars for the year with the groupon usually it's more. But it was recommended to me by someone else who bought a groupon about a month before that so evidently they are pushing it lately.
(btw--I have no relationship to this--just discovered it for myself and wanted to share!)

Buon giorno!
It's a crisp 30 F. this morning. I'm on my way for cafe with my friends. AND, I broke the pound barrier this morning working on the downside! Yehhh! I'll try to hold it in that direction. Maybe it was the home made vegatable soup we had for dinner last night.

Teka, Newsletters yes, but from the trash collectors? I really like this. That's a topic of conversation that has no room for assumption that people already know how to recycle...or care. I guess I got this because I ordered my green lid trash can.

carollynn79 - about the coleslaw...no dressing at all in it just the veggies and then pour the canned tomatoes over top...almost turns into a soup...but not...lol..have been eating this since i was 4 or 5 years old....so thats been about 45 plus years...

Had a cooking experiment yesterday and it turned out pretty good. We had a large local grown chicken yesterday and lots of left overs so was going to make a cream casserole, but when I looked in the fridge and saw the bowl of cooked sweet potatoes the wheels started rolling. I put a little fat in the bottom of a deep skillet, I sautes onion, celery and mushrooms until just cooked, I then added a little cornstarch and chicken broth. I took the cooked sweet potatoes and added them to the pan mashing them as I stirred them in, added diced cooked chicken and peas and let simmer. I cooled and put into the fridge for supper tonight, Warmed it and added a little romano cheese served it with a salad of romaine and orange with a homemade honeymustard vinegrete.

Subject: Tell the EPA: Immediately suspend the pesticide that's killing bees!
Dear Friend,
A blockbuster study released last week by the European Food Safety Authority (EFSA), has for the first time labeled the pesticide clothianidin as an "unacceptable" danger to bees.
Scientists have long thought that clothianidin is at least partially to blame for the alarming rate that bees have been dying off in the U.S. - nearly 30% of our bee population, per year, has been lost to so-called colony collapse since 2006.
But the EPA has repeatedly ignored scientists' warnings and Americans' urgings to ban its use, citing lack of evidence.
Now, the EFSA study could be a major breakthrough to convince the EPA to take emergency action, and suspend the use of clothianidin to stop the precipitous decline in global honeybee populations.

Forgive me a little activism...Let's help out our bees! I heard a report this week from the Devos Economic Summit that Activism is in the driver seat and that corps and governments responded directly to their efforts. I guess social networks work support that effort.
We've been nuts getting ready for this move.
The leftovers sounded great Carolynn79. I happen to be skilled in that area as well...at least that is what my mother always told me.
Yesterday, however, I made pea soup using the end chunk piece of brochutto, carrots, onion, celery. Boy was it yummy.
Stopped at the butcher today and picked up a free range chicken. Probably cook that tomorrow.

ok ...i know this is fattening..but it is vegetarian...except for the butter...and whipping cream
Pot of Borscht...Doukhobor Style
1 cup chopped onion 2 tbsp salt
1 cup butter 1 small beet
5 cups canned tomatoes 1 1/2 cups cubed potatoes
1/4 cup water 1 stalk celery diced
5 cups chopped cabbage 1 1/2 cups whipping cream
3/4 cup diced carrot 3 green onions chopped
3 quarts water 1 small green pepper chopped
3 halved potatoes (1 1/2cups mashed) 2 Tbsp dill chopped
black pepper to taste
See my notes at the end....
Saute onions in 1/4 cup butter until clear,add canned tomatoes. Cook and stir to keep from burning. Melt 1/4 cup butter with 1/4 cup water in another pan, and add cabbage and carrots. Add some of the cooked tomatoes to this. Cook about 10 minutes. Let stand.
In a large soup pot, boil 3 quarts of water, add 3 halved potatoes (to make 1 1/2 cups mashed potato),1 small beet and 1 tbsp salt. remove potatoes when cooked, mash with 1/2 cup butter. Meantime put 1 1/2 cups cubed potatoes into beet pot, boil for about 2-3 minutes then add celery.
To mashed potatoes, add black pepper to taste, whipping cream and about 2 cups cooked tomatoes. Then add potato mixture and remaining tomatoes into pot. When it comes to a boil, add the cabbage mixture and 1 tbsp salt. return to boil. (you can remove and discard beet at this point but its my fave and i leave it in to eat later with salt and pepper) .
Take off stove and sprikle with green onion, green pepper and dill...LET STAND ABOUT 1/2 HOUR BEFORE MIXING EVERYTHING
Sorry girls you do ue a lot of pots for this...but yummy with fresh baked bread...ps.. since i make this so often i do use less butter than asked for...but the whipping cream stays the same...i also find you might have to salt to taste a little more and feel free to add more dill ...dried works better for flavor after..

Thanks panda, this looks good, I am thinking I could use canned tomatoes and canned beets? If not it would make a good summer soup when the fresh veggies are in the garden

carollynn - use the canned tomatoes but not canned beets use a fresh one..its acutally for color..makes the soup pink...not read like german beet borscht...

We have a few friends who are bee keepers and all have said their production has been down, but 2012 was much better than 2011 and 2010. We love honey and pure maple syrup and use it in many products now. I am going to can pickledbeets using pure maple syrup as my flavor agent, made a dish last fall and they are good, no real maple flavorcomes thru the it has a mild flavor that is good.
Marily, they have good local honey in oregon, in fact I think there are several diffrent kinds, here most is clover or goldenrod but we have friends who have bees and they had their hive by the raspberries and they say it has a raspberry flavor to it. I love northwestern wildflower honey too! See with me it always goes back to the food.

Potato Cake
2 cups mashed potatoes 1/2 cup whipping cream
1 tsp salt 1 1/2 tsp baking powder
6 eggs separated
Beat egg whites until stiff but not dry. Set aside. Beat egg youls and salt until thick add cream and mix. Add the mashed potatoe to eggyolk mix and beat with egg beater until mixed. 3-5 minutes.
Fold in the egg whites. Sprinkle with baking powder and slowly stir in. Pour into a greased 8x8 pan and bake at 400 degrees for 30 minutes or until light brown in color. Serve immediately with melted butter.

That potato cake sounds amazingly good, but since I have cut dairy fat and eggs (on femara) and carbs (to keep blood sugar stable) it is unfortunately a no-go for me. -
