Marilyn sounds like a nice side salad! I am into salads right now, does not seem to do much for my weight but they are tasty!! I agree blue skies make us feel better. I am starting to feel better, back to work yuck but glad to be able to! Had a simple supper tonight thin hamburgers on those slim which buns, homemade cucumber and hot pepper pickles, baked beans and home canned apricots, yummy! We have not had a good crop of apricots since 2009 so cleaning up all that is left in anticipation of a bumper year!! Will be glad to get my biopsy results Friday a little nervous but have done pretty good on not dwelling on it all week, being sick may have helped in that regard, haha. Made a lot of versions of different pickles last summer and we found that with the dills we like teh apple cider vinegar. I was smart this time, I wrote on the bottom of the jars, with a CV or WV to identify thevinegar used!!
We can all help each other with encouragement on our weight. I really want a Kindle Fire so have told myself if I can lose 15# I can buy myself one, will see if it works!! Hope all have a nice day.

The scale crept up a few ounces this morning. I had a second helping of borlotti beans cooked in red sauce with pork ribs. Yum. Guilty as charged.

Carolynn79, Happy for ya ... we all know that dance!
Yesterday we went shopping to avoid the rain and cold forecast for the next couple of days. Last night we simply had pork chops and oranges (I ate the few ravioli that I saved from lunch...cooked in a tiny bit of oil in a fry pan until a bit crunchy...yum). Yesterday was draining communications with just about everyone about moving.
However, tonight friends are coming for polenta...you remember, the polenta meals in Dec? Well, it's Jan and time for more. It's a favorite this time of year. A good reason to cook sausage and pork ribs in red sauce to serve with the polenta. Goes well with red wine too.
I'll pay attention to the portions...this is key for my metabolism. My other downfall is bread, even though I eat only the crust. The crust is so good I'll eat two and convince myself that it is only one because it is only the crust!
As I've mentioned before, I need to exercise more.
Best wishes to all as always,
M

Thanks Marilyn and Teka! I have never had polenta but am inspired to try some. I like cornbread, especially made with fresh ground corn. Your meal sounds good! We will have a nice salad for lunch with a small pork chop and play cards in a card club so will have a nice supper there this evening. I agree about portions, last night we had a great plan, we would have soup, salad and split the entry, when the waitress came out with our meal it was huge, the kitchen put full portions on each plate, they said we only had to pay for the one we ordred but to enjoy! We did but of course ate too much. We do a lot of walking when we go to Kauai, no rush no commitments. Trying to work in more exercise at home, but looking forward to a healthy year so can actually work in the garden! If anyone wants some mixed marigold seeds I have extra and could send them to you. Have a great weekend

Teka I watched the Victory Garden today too! I am going to try their method for saving my tomato seeds this year. I usually scoop out and leave on a paper towel but don't get great results their technique looked good. I will try Lidia's Italy, we like Cooks Country too. I agree the potatoes looked great, we love mixing our fresh potatoes, last year we grew teh red, the purple, and yukon golds! No purple this year, they are good, but small and not very many per hill. Our favorite is Yukon gold. Made sauce for lasagna we are going to have tomorrow, I did not have any oregano! I used basil, some mixed herbs, bay leaves and a little tarragon. It is good. A friend gave me some creamy jack cheese with morel mushroom and leeks so I am mixing with mozzerella and romano, will let you know if it is good tomorrow.
Thanks Mandy hope you have a good weekend too

Snow Day! Well actually working from home again, usually go to office 3 days and work form home 2 but looks like 3 home and 2 in office this week! Decided to make some bread, not supposed to but..... I have a sourdough starter that is about 2 months old so made spelt sourdough bread. Will see how it tastes but dough feels really good and it is rising well! Think I will make some tomato soup to go with. I use my canned tomatoes, will print recipe later, I make all the time but don't write it down, today I will!

Carolynn, please do post your tomato soup recipe. And Teka, your granny's macaroni and tomato soup sounds heavenly.
I just ate Marilyn's orange/olive salad for lunch (or at least my version of it)...it was thoroughly delicious. Thanks for that recipe Marilyn.
We have some icy cold weather right now so I am craving all kinds of hearty soups!!!
Have a nice day all!

Tomato Soup
1 qt canned tomatoes or one large 28 oz or so can of diced tomatoes put into blender or mix with immersion blender once added to sauce mix
2 TBLS butter
2 TBLS olive oil or any comnination of fat (have used bacon fat and olive oil too)
1/4 cup finely chopped onions
2 garlic cloves minced fine
3 TBLS flour
1 cup chicken broth
1 cup milk
Basil to taste ( any favorite herb we use basil and summer savory or thyme)
Saute onion in oil, add garlic, remove from heat and stir in flour until smooth, cook 2-3 minutes, slowly wisk in broth and then milk. Add tomatoes I use an immersion blender but like to keep a few chunks, cook until all heated thru, we served with fresh bread and left over saurkraut, yummy.
I have struggled with having homemade tomato soup being too sharp but this recipe make a nice smooth tasting soup. Hope you enjoy.
