    We used to make eggplant pizza using eggplant instead of crust. We'd slice the eggplant, add tomato-pizza sauce, then olives, peppers, mushrooms (or any other topping you desire). Top with cheese and bake. Might be an idea for people who can't tolerate gluten.

    Debbie, just a question, have you heard of an oxygen concentrator? For traveling, so you don't have to lug a heave tank? Could one work for you? Just a thought.

    Deb- Glad you are feeling better! Know how you feel i don't like saying to much about me b/c of what others here are going through.

    Lee- I cook my Cauliflower in a-425 degree oven for about 15 minutes turning every so often and then lower the heat to 350 and put some chopped garlic in there and a little lemon juice, about 5 minutes before removing I put parmesan cheese on top. It was good but I think because it had been in my fridge all week it was a little tougher than usual.

    Lacey-Once i realized my lights were not on I didn't have a clue where the switch was lol! I need to take some time and look at all the things on my car so I know where everything is including the flashers.

    Wren- Great idea sounds really good.

    Moon- I have the large concentrator at home and then lots of the tanks
    Are you talking about a compact concentrator? Didn't know it came that way I will have to call Lincare tomorrow and check on that, it would be great for travel. Thanks!!!

    I get tired from dreaming up something to have.  I can't drive now (am not supposed to anyway) - so I'm going to have to plan my trips carefully.

    When I was a kid, my brother who was brain damaged was in special ed and he ate lunch in the cafeteria.  On THursdays we would have Marsetti.. a ground beef, Velveeta cheese and tomato concoction with noodles.  We called it Johnny Marsetti.  Funny, I've never made it for my family but they absolutely loved it.  Got to make enough for the friends.

    To give you an idea of the scope of our servings, I used 5 cans of tomatoes, 6 lbs. of ground beef.  2 inches at least of Velveeta, a couple oinions.  It is gone.  My little girl wouldn't eat so much but she is in two sports and practices everynite.. diving and tae kwon doe.  strong as an ox. the oldest boy eats like a horse because he works out all the time and son#2 is simply a big eater

    Apple, good to hear from you.  We were all worrying about your absence.  That ground beef concoction sounds good to me. 

    Debbie, your health issues are as important as anyone else's.  Don't hesitate to share what's going on with you. 

    My little WW gadget that measures activity got flushed down the toilet last night!  I was wearing it on the waistband of my jeans.  Flushed $40!  Deciding whether to buy another one.  I'm down a total of 10 lbs now.

    Tonight's dinner may be a shrimp and veggie stir fry.  DH likes stir fry with soy sauce.  I'm not keen on it myself but it will be a good way to use some veggies.  And easy.  I may do the stir fry, take my portion and sprinkle some shredded asiago cheese.  Then let him douse the rest with soy sauce. 

    Today is Thurs., my mother's hair apptment day.  We'll go to the apptment at 11:30 and then have lunch at her house.  She lives alone and loves to have someone to eat with.

    Hope everything is going well for Eric, wherever he is.

    Opened up the new Bon Appetit and there was a recipe for Coq au Vin with 12 oz of bacon!  Thought about Lacey and Michelle!

    Wren44  Eggplant pizza sounds like a great idea.  the only thing I can do with eggplant is parmesan.

    Moonflwr  You took the words right outta my mouth about the oxygen concentrator, they are so much smaller these days then I remember.  I saw a woman in the grocery store that had an actual o2 tank that was tiny and she set in in the cart where the child would sit. Still a burden though.

    Last nights steak was yummy, apparently the owner of the bar/restaurant fired her chef and was in the back doing the cooking herself...before the steak was always iffy and it is their Wed night special which is why we go there.

    Today I am going to accompany my sister to radiation as she is having a hard time...makes her very emotional....why do rads do that to us?  We are gonna do some therapeutic shopping!

    Carberry, I am glad your sister had you to call on.

    Carole,.I am so with you on you ww gadget. If you remember a couple of months back, I flushed my $300 dollar car keys down. Not fun. I cried for days. my insides still do weird things, so I am sticking close to the toilet today, at least until chemo rehab. then I hope to make it there and the thru it without needing to change clothes. I hate days like this.

    Apple, I grew up making that casserole! In probably the same amounts or more. I cooked for my family with 7 siblings a lot, as my mother had some health issues and the bigger kids were gone a lot. But there were usually about six of us for dinner when I cooked. So your amounts seem right on. I have four kids, who were all very busy with dance and sports, so I cooked like that again for my family of 6 . Now that it is only me, I find it hard to cook for one. And it's cheaper to go out more because I usually get two meals out of one dinner.

    Eric I hope you are comfortable. 

    I'm scheduled for another ultrasound guided needle core biopsy on Monday and I hope I won't be too sore since the kids are home for a whole week for Thanksgiving next week. And hopefully I will get the results back before Tgiving. 

    Last night I went out with some girlfriends and had a steak salad with blue cheese on romaine, yum! Tonight I'm thinking burritos.

    We went to our favorite quickie Chinese restaurant last night (Panda) and I had a vegetable bowl with orange chicken.  First time eating out since surgery.  Then we went for yogurt and I had the apricot/mango non-dairy...hub had the butterscotch.

    I'm thawing a container of pasta sauce I made a few months ago for tonight's dinner.  The pasta = Casarecce (from a package - not homemade).  Arugula salad.  That's probably it.  

    I'll probably have pomegranate arils for dessert.  I'm addicted to those things and they're plentiful this time of year.  My husband never eats them.  Different tastes... he likes figs - I don't.

    LeeA - Yay for going out to eat!  Hope you are feeling well!

    Debbie- Crazy driving!!  Be careful!  I hope you find some solutions to the oxygen situation, hope Chuck is doing ok too.  Your description of your Dad broke my heart...but I am glad he is able to eat more and regain strength- huge hugs to you.

    Carrie- I am sos orry your sister is having a hard time,  hope your retail therapy helped!

    Eric- Hope you are well!

    Michelle- Hope things are going ok, lots of love.

    Today was another busy day, the whole week has been busy!  This morning we went for a play date at a friends house.  Her son has club feet and just had his final surgery and is in two leg casts for 6 weeks and can't walk at all.  I bought some craft projects for the kids to do and the kid is just amazing!  He was crawling and dragging himself all over the place and not skipping a beat.  They all had a great time like nothing was different.  Then we came home and had nap time and played with the neighbors until a few minutes ago.  I put a chicken in the oven around 5 and we will have that with mashed potatoes, gravy and butternut squash.

    I know I am missing people!  Be back again later ;P

    Have been reading all your posts - too many to respond individually.   (((hugs))) to all going through a crap time and (((hugs))) as well to everyone.

    Finally I am finished rads - woo hoo!   Spending a nice day indoors just because I can. 

    DH & I went out for a meal last night in celebration.  Little Italian restaurant here which looks nothing from the outside and very basic inside...but the food is to die for.

    Tonight having steak and loaded potatoes with a salad.

    Laurie, I'm feeling pretty good 8.5 days out.  

    Sounds like you had a busy day.  Re: your son's friend - it's amazing (and inspiring) how adaptable kids can be.  Not long ago I saw a human interest story on the news about a young boy who had overcome so many physical problems in order to play football.   

    For what it's worth - about 15 minutes ago I sent your opening post to my husband because I love the last line so much.  When I see it at the top of the page it makes me smile: 

    Every night my husband comes home and says "whats for dinner?"  no matter what I say he always says "sounds good!"  even if I say it's a 'fend for yourself night'. :)

    Yeah Tazzy - finished is great!

    We went to Polcari's in Salem for lunch today.  Tomorrow my daughter is taking me wig shopping.  She wants something like my current hair style so it should be interesting and fun.

    She also helped me with getting some paperwork together for my mom's annuity and insurance policies.  I never thought something so easy would be so difficult.  I'll be glad when my brain comes home to roost!

    Tazzy, it's great that you've finished rads.  You certainly eat well.  All your meals sound good.

    Laurie, hang in there.  I guess most moms with two small boys are busy.

    Neomom, sure hope the needle biopsy results are good.

    I do eat well.. too well sometimes.  Would love to lose about 20lbs, but I love food.  Even on chemo I ate pretty good.

    Just found out I don't have to cook for the husband tonight, he has a staff meeting, so I'm making myself some alfredo with broccoli which he doesn't like. Just thought you all should know this so you can sleep soundly tonight Tongue Out 

    Seriously this time of day, when you are a stay at home mom is kind of tortorous. Homework, dinner, bedtime and no other adult around can make a person cuckoo. 

    Tazzy= a fully loaded baked potato is my fave thing in the whole world.

    Tazzy, Congratulations on finishing!

    Treatment day here, so I refuse to cook. We went out to the Independent tonight. This is a local bar/pub right at the bottom of the hill. We have lived here for over 9 years and this is the first time we have been. We split an onion soup which was perfectly fine but not particularly creative. There was WAY too much cheese for the amount of broth, and at $10.00 not a great value. We ordered a burger and a chicken sandwich. Mr. 02143 got 2/3 of the burger and 1/2 of the chicken sandwich. The chicken sandwich was fine, but again, a bit pedestrian. The burger was the winner. Very delicious, and the house ketchup was actually good! So often house ketchups are just nasty.

    Can't believe that it took us 9 years to go here. The room was nice. The chairs were comfortable. The noise level was tolerable. And Mr. 02143 was delighted to see his Puerto Rico Invitation basketball game showing on three huge TV's. And it is right in our neighborhood.

    Tomorrow night I won't get home until about 6:30 from a client visit so we will have the leftover eggplant. Will just make some fresh pasta and a salad.

    My dad's cataract procedure went fine today. We had to get up at 4:30 am to get him there so it will be a miracle if I can make it to the evening news tonight. Last night he took us to a VERY loud beer and burger joint. The place is known for it's cheap food -- 99 cents for a 1/2 pound burger, and large beer selection. My dad's favorite menu item is chick on a stick, a spicy grilled skewer of chicken wings that was very tasty with hand cut fries. All 3 of us ate for $13. Beer was extra :-)



    I started a batch of crusty bread for tomorrow to go with French onion soup that I plan to make. I've got quite a few beef bones accumulated in my freezer that I need to make stock with. Right now all I can think about is sleep. Yawn!

    We've been making popcorn in paper bags in the microwave for about the last 8 months or so - then we top it with extra virgin olive oil and either pink himalayan salt or sea salt.  I think I might make some later tonight!

    Congratulations, Tazzy! Isn't it weird/nice to drop the rigid daily routine?! I totally appreciate your wish to stay at home.

    Susan, sounds like dinner was a bit of a serendipity for you and Mr. 02143. Nice! I was convinced by the store butcher today to go with the pork loin roast. We'll see how it turns out on Saturday.

    Neomom, good luck with the tests....and results...and redirecting DS's exuberant connections afterwards.



    Laurie, good to hear from you!! Remember, even faux moms worry! ;) Sounds like life is busy and full!



    Michelle, you making popcorn is definitely a turn towards normalcy! Enjoy the wig shopping excursion! :) We had our coq au vin tonight since we were both home....really good after relaxing in the fridge a couple of days! Had the wild and brown rice as well as a salad.

    Carrie, that is nice that you can be there for your sister. When I was going thru tx, I felt badly that I was usually by myself. A lot of the other patients were older and retired and had their spouses or friends or other relatives with them. And there were some younger patients who had their parents with them. My DH and sisters and friends all worked, so I was alone for the most part. I am sure it means a lot to her to have you there.

    Auntie, can you share your onion soup recipe? I really want to try to make that.

    Kay, have a wonderful trip! Maybe you can post some photos when you return....love those cities!



    And yes, Carrie, it is wonderful for your sister that you are able to accompany her to rads, especially if she is needing the support now. I do recall seeing most people with relatives waiting for them for the daily sessions, but I didn't let it phase me since I had my rads at the very end of a long, packed work day, and just dealt with it as my new daily routine. It was probably useful that I was preoccupied with work while going through that, and it did help a lot that my rad techs were unbelievably kind, caring and efficient....and tolerated me partially napping on the table many afternoons! I did appreciate DH coming to most of my weekly RO appts....and she was a character, so it was always a good session for us both.

    Apple, that recipe sounds like it must sure stick to yer ribs!

    Speaking of which I have to say that most mornings I make a vegetable/fruit/walnut smoothie, and find that it is unbelievably sustaining for hours. If I have oatmeal in the morning instead, I find myself really hungry way before lunch time. Interesting.....

    Well, I think I might just get myself some sleep now.
