My DH and I have been attempting different recipes for the deep dish pizza that we had once when passing through Chicago... It was soooooo good and so different from the NY style and Sicilian style pizza that we are used to. From looking up different recipes we came across Lou Malnati's as a Chicago pizza icon! Hope your pizza was really good!!
Seems the actual recipe that each restaurant uses is a closely guarded secret.... Our current favorite recipe after a few tries is one from America's Test Kitchen.... -
Hi everyone! I don't know if it is the weather changing or what, but I seem to be in a funk? Little motivation yet needing to do so much as always. It was warm yesterday and we spent it outside almost the whole day- park from 10-1 and back out with neighbors from 2-5, we all slept great ;P
This past weekend we went to a menu tasting at Wild Buffalo Wings that is opening in a a town near us and we went with a big group of friends for a free dinner. It was VERY loud and the food was just ok- nothng special but we had a great time chatting and trying the different foods. We had some big hot pretzels with different dipping sauces for an appetizer along with some blue cheese spicy dip with chips (I don't know what it was because i didn't order it but it was good). Had a chicken sandwich wrap which was ok.
Tonight I made stuffed shells and a caesar salad. I was craving it and so it hit the spot! Everyone ate well at dinner and so I have little left over.
Michelle- Your dinner sounds like it was wonderful- I keep trying to figure out how I am going to bring you dinner? I am glad you are being so well taken care of. Enjoy your beautiful view and let others take care of you- you have earned it!! I think of you many times during the day and am sending you lots of love.

Michelle wish I lived closer so I could help with the meals, but kinda glad I don't! Not sure I'd be able to pull off those kinda meals! LOL sounds like Lacey nailed it though.
Eric, hope it doesnt snow while you're out there, it did flurry around here, and its 28 degrees. Guess winter is not far off.
LeeA, that salad sounded like the one I had yesterday, except mine had almonds and raisins. I hope you enjoyed the deep dish pizza, nothing quite like it. Did it have double cheese? If you could see it on top then it did, otherwise the cheese is hidden on the bottom. LOL Seaside glad you enjoyed the trip. Much love to all. -
I'm not much of a cook but luckily DH is. Tonight he made a butternut squash slice with sage, almost crispy kale, fried eggplant and fried green tomatoes. Dessert was pumpkin pie from the jack-o-lantern.

I'm not sure if it had double cheese but there was a lot of it and I just said the heck with it for tonight - meaning, worrying about dairy.
Oh, and I love arugula! Your salad sounds really good as well! We just ran out of it again tonight so tomorrow my hub will have to make an arugula run. I'm also in the throes of my late fall addiction to pomegranate arils. This is the best time of year to find them - at least out here.
As far as the pizza goes - it was delicious. I grew up in a suburb of Chicago and was never a big deep dish fan but the crust on this pizza was really good - especially considering it had traveled in a UPS truck on dry ice a few hours before. We had the vegetable pizza tonight. In the next week or so we'll try the sausage pizza.

Hi everyone! Just got back from a 6 day trip about 3 hours ago and spent the last hour or so catching up on all the posts I missed!
Michelle- First thing I wanted to do was make sure you were doing OK! Sounds like you are being very well cared for with all the wonderful sounding dinners. I hope the WBR is gentle on you but kicks the crap out of those nasty suckers!
Deb- Hope you are feeling better vertigo can take a toll on the body!
Carrie- Hope you get those stomach issues checked out could be somthing serious!
Seaside- You finally got your birthday cruise! Yippe! Better late than never! LOL! Glad you had a good time though.

Laurie-Sorry you are in such a funk it is hard to get out of it once you are in it. You are always so busy and having 2 small children at home can take a lot out of you. Are you still feeling a little sick? Maybe you just need a good rest. We went to a place called buffalo wild wings last week in Portland I wondered if you meant that or was it wild buffalo wings? Our food also was just so-so and the place was loud, I don't like a place you can't talk because it's so loud. Hope you feel better!

We went to Porltand last Thursday for DH to see a neurologist he is considering having the surgery to remove the tumor since his symptoms are getting much worse he can't drive and is now walking with a cane. I'm using oxygen most the time and we look like quite the pair walking together. LOL! Then we drove to see my dad it was his birthday on Friday had a big party for him, just close family b/c he didn't want to many people around. I hadn't seen him since me and my sister drove down to see him (almost 4 months) he had lost almost 80 pounds his hair was falling out and what was left was grey and he looked so frail and pale. but the good news is he is eating better. He will have a Pet on the 19th to see if there is any cancer any where else. It was good to put my arms around him and give him a big hug I didn't want to let go!
Kind of funny story, When we left porland to drive to see my dad ( about a 5 hour drive) we ran into rain, snow, sleet and hail the traffic was crazy and it was raining so hard I couldn't see, it was dark out and I thought i was getting night blindness. we passed a trucker and he put his lights off and on for me to let me know I could get back over in the lane, I told DH he must be new and not cranky like the old truckers they don't do that anymore. So we are driving along and Im in a panic because I can't see and DH says Honey are your lights on? I checked and they weren't! I had been driving in the bad weather at night with my lights off I can't believe how lucky we were that no one hit us. We have the type car that the lights go on automatically when you drive it, but when we went to the hospital we did valet parking and he must of turned the lights off. Uggh!
I rambled enough and need to go to bed. hugs to everyone!

Eric, take care. I am sure you are homesick, but I hope you get to enjoy the big apple. I am going Dec. 1. How are things there? Does it seem like it's business as usual for most people? I agree they are lucky to have you and your fellow volunteers.
Michelle, your meals sound wonderful. I am with Moon, I wish I lived closer, but then again, I could not keep up with what everyone is making. Lacey, your seafood linguine sounds fantastic.
Laurie, hope you get out of your funk. I am still in a bit of one. We leave for Paris and London on Friday. I think partly I am nervous of getting everything set so we can go. Just heated up Mickey Mouse chicken nuggets for my DD last night, and I had a bagel and some junk. DH had to work overnight so he wasn't home. DS made himself a frozen pizza. And I have all these wonderful veggies from the CSA just sitting in my refrigerator. Gotta shake myself up I guess.

Debbie Didnt know you were travelling. I hope all works out with your husband, thats some scary stuff and sorry you are now attached to the oxygen. My lights are like that in my car also, and have found myself going down the road without them on. i always leave them on auto but when my DH drives my car he cant resist playing with everything and usually has them all screwed up
Welcome Wren44 and LeeA. Last night was salad again for me and DH. Guess i am just in a salad mood. Used a red onion chopped up and usually love it but it was so strong I had to remove it part way through, never had one that strong!
About the Buffalo Wild Wings My son loves that place...I think they have a contest about eating the hottest wings and you get a free t-shirt and he did it...loves them hot.

Last night I made a complete failure. I had this idea in my head, but on the plate it didn't sing. I was at a client office until 5, and was confronted by the alien-looking romanesco. Oh, and for some reason I didn't want pasta. So I sauteed some chicken but was too lazy to pound it. Then sauteed the blanched romanesco in the same pan. Added some garlic and red pepper flakes, wine, lemon juice and water. Served with a few potatoes. Haven't had a fail this big in a long time. The romanesco was too bitter. The chicken was mealy. The sauce never really came together into a cohesive mass. Of course we ate it. It wasn't inedible; it just wasn't any good.
Have no idea what I will make tonight. I am working from home today, so I should be able to come up with something that I can make with more care.

Last week all I wanted to do was cook, this week not so much. Even reading about everyone's wonderful meals just makes me want to eat at your house instead of coming up with something myself. Tonight we will be at my dad's to take him for cataract surgery tomorrow. We'll take him out to a place of his choice for dinner. He knows where all the senior specials are so we'll see what we end up with lol. At least I don't have to cook it.

Can't begin to tell you how much I didn't think that. In fact, I think it is important that people know that experiments can fail. Sometimes they are brilliant and then you wish you could remember what you did. And sometimes, like last night, brilliance escapes.

Kay- I'am so happy for you that you get to go to Paris. Seems like it crept up fast since you talked about going, Im sure you feel overwhelmed with everything, but when you get on that plane all that "funk" will be gone! Mickey mouse nuggets? LOL!
Carrie- We were not going to leave until Friday but last minute on Thursday DH said lets drive up and spend the night so we don't have to get up early and drive to portland so I didn't get a chance to get on line and mention it. Luckily I am only using the oxygen some times not always there are times my lungs close up completely and I can't breathe and other times Iam Ok! I hate lugging those ugly heavy tanks around. I also have been in a salad mood this last week.
Susan- Sorry your dish didn't turn out as you wanted. I have never ate Romenesco before but it beautiful looking, something you would see under sea!
Michelle- It really is quite humorous especially since im in my early 50's and Dh is 61 and I like to think we are still young and hip! ha! I love Maxine! LOL!
Joyce- Been thinking about you too hope you are doing Ok and getting some rest with all the traveling back and forth.
Nancy- Hope things go well with your dads cataract surgery.
Still don't know where we are going to be on Thanksgiving I have a whole menu planned just don't know if it will come together yet. Im craving dressing and sweet potatoes already!! Yum!

Debbie, you and your dh are youngsters! Sure hope the surgery works miracles if he elects to have it. Hate to think of you needing oxygen. Is there a chance of improvement?
Played golf today. Beautiful weather though it started out cool. You wouldn't believe how warmly some of the women dress for temperatures in the 50's. A couple of women were wearing earmuffs! By noon it was in the 60's and I was comfortable in a long-sleeved cotton shirt and twill jeans.
Picked up the CSA veggies and still haven't managed to cook all of last week's. Tonight we'll have warmed up lentil soup and some roasted veggies including the beautiful Turkish eggplant from last week.
The CSA pickup is at a wonderful kitchen store full of temptations. I bought a chopping board today made of some kind of plastic and the sides fold up so that you can easily empty your chopped veggies into a pot on the stove. DH really liked it when I showed it to him. He was in a good mood when he got home from golf because he had won money!

Apple hasn't been around for a week. I hope she's just busy and not having trouble. I miss her posts and they give me hope.

Apple hasn't posted since Nov 6th. Always concerns me when people with mets disappear. I was noticing her absence just yesterday.
Tonight I made eggplant parmesan. I had bought some eggplants last week to prepare for the 'boy' [the kid's partner,] but somehow that didn't happen so I had these eggplant. They weren't the freshest and nice small ones so, fry'em up! Did a full three level breading with panko. Then made a simple Calabrian tomato sauce. Top with provolone and parmesan [cut with grana padano to save a few pennies] before baking until the top is all nice and bubbly. I serve it with lightly sauced colavita angel hair nests.
Tomorrow is treatment day so I have to start drinking water so they can access that poor remaining vein for my bloodwork. Then a meeting with the trial team, and finally, an endrocrinologist. Long hospital day, but I figure it is best to load all those appointments up and only loose one day.

Carole- My Dr thinks with seeing a pulminologist (sp) I may be able to strengthen my lungs along with some excersies so I hope it works. Your chopping board sounds cool! Yay on DH winning some money!

Susan, I know how those culinary visualizations can be better in the mind than on the plate! Tho including pasta is usually forgiving...you are more of a risk taker than I.
I am dying to make that herb crusted prep you used for your lamb last weekend and would love to have lamb, but a friend who is coming for dinner this weekend can't tolerate lamb.....so my question is.....what other cut of meat would you recommend using that preparation with? I'm not a big roast meat person, so feel a bit indecisive about this. We are having a farro and butternut/ walnut squash side and possibly a beet over arugula salad....thanks for any ideas you or our fellow culinary queens might have!
I hope your marathon day goes well tomorrow. I did one (different kinds of appts) last week, and was wiped when I returned home....and my wallet was wiped out from the parking fee. But yes, one gets to miss another trip to the hospital!
Debbie, so good to hear from you...and that you had some sweet time with your dad....but oh, your adventures on the road! I know that feeling of wondering if the lights are on....and in fact on the way home from Michelle's last evening, there was intermittent rain, and I checked to be sure my lights were on....they were. About 15 minutes later, DH asks me if they are on.....totally sure that they are not...... I reassured him, then realized why I hate to drive with him at night...I now do the night driving....and that it's a good thing that he is having cataract surgery in a few weeks. Maybe I'll be able to share some of the night driving with him once both eyes are "fixed".

I don't cook many beef roasts. Can't say why, to be honest. But I did do some googling for you and looked through some cookbooks. It seems that the TOP level of roast are the expensive cuts we all love so well: Top Sirloin, Tenderloin, Strip Loin, Wing, Prime Rib, Rib Eye. Of those, I would consider the top sirloin and strip loin. But with a marinade for 24-36 hrs, you could server the next tier of roasts: Sirloin Tip, Eye of Round, Outside Round, Inside Round, Rump. I have never had luck with the rump and around here the Sirloin Tips will be cut too small. Beef is so expensive these days so I am a bit anxious to recommend something since I haven't tried it myself.

Thanks Susan! You've given me some good options. I was worried about those second tier meats (and don't want to break the bank for the prime cuts for a casual weekend dinner), but might try one given the long marinade. Hope tomorrow goes well......(((hugs)))
