Came home after the Patriots game was over. Somehow, we hit the SE Expressway at the same time as the Foxborough traffic. Such a nightmare! For dinner, I had some Chinese noodle soup and husband ate Spicy Chicken with bone-in. Enough leftover for lunch tomorrow.

Best to you in this endeavor, Eric. I bet it is NJ/NY also...not a nice way to be introduced to those areas...but it sounds like a lot of people are suffering and need help. They will be fortunate to have you there with your work ethic! Take good care....

Went into roast mode today...brussels sprouts, many colored peppers, carrots, sweet potatoes, onions, beets...and of course tomatoes...but they are not half as good as the
tasty ones from the summer. Fortunately, garlic evoo and balsamic help a lot.... -
Lacey, the roasted veggies sound good. An interesting combination. When do you add the balsamic vinegar?

Deb, that sounds awful! My dad had the same thing happen this summer. Fortunately it only lasted a couple of days, hope yours is over quickly.
Carole, when I roast with balsamic, I put it on at the beginning, bit I suppose you could use it as a dressing too. I'm interested to hear what Lacey does.

I throw my cut up veggies (not the tomatoes....they get individual treatment) in a bag with minced garlic, evoo, and balsamic vinegar, and shake to coat them well, then spread on cookie sheets or large casserole dish and roast at 375 until they are tender. The beets take longer, so I put them in a separate pan. Peppers, onions and small carrots are good together, along with potatoes in small chunks. I also do my brussels sprouts in a separate pan. The oven was loaded yesterday!

Thanks everyone for thinking of my poor stomach. the onc is aware of my issues but not sure what the problem is. Definitely a lower GI problem , not upper. I still think I just cant tolerate meds of any kind, but if history repeats itself, it will go away and not rear its ugly head for another month or so....very random.
Nancy I got that with the taxotere also, but I have been out of chemo for almost two years now. It presents itself more like an IBS, usually a week of the big D. But, enough of bad tummy talk! On to some good food thoughts!
Deb That vertigo can be very debilitating, hope it resolves quickly.
Tonight my Dh must finish the leftovers from our outing last night. Trying not to cook and add to the refridge mess, as we are going away at the end of the week and next will be Thanksgiving. Gonna keep it simple for awhile.

Today, I began planning my Thanksgiving meal. But, there really isn't much planning to be done. My family takes this whole tradition thing seriously, or at least I think that they do. What would happen if I didn't make the family-recipe baked beans? Would the world stop? Would my mother sulk? Would anyone else actually care? I, for one, would drop the stuffing which isn't actually stuffed. I have never cared for it, but others LOVE LOVE LOVE stuffing. As far as I can tell, it is primarily a gravy delivery device, another holiday food I don't actually eat. My creativity can play with the green beans, and appetizers. With only 11 people this year, maybe I will start with a soup.
Feeling totally uninspired for tonight's dinner, so just pulling out some braised short ribs from the freezer and will serve over a soft polenta.

Here's how uninspired I am. Tonight's dinner = sloppy joes. Why? Because if you ask my husband what he wants for dinner (which I rarely do unless it's his birthday or I have no ideas of my own, because I already know the answer) it is:
1) sloppy joes
2) pizza
3) chili
Does he enjoy all the other things I fix? Absolutely. Would he ever request any of those things? Never.

LOL, Nancy, at least he gives you an answer. All I get is whatever you want. DH does cook once in a while, but I usually have to tell him what to cook. He just doesn't seem to want to make the decision himself. He made the jambalaya yesterday, but I had to suggest it to him. I would love to just be surprised to find out what was for dinner one night.
My DD requested spaghetti tonight, so we will be having Trader Joe's brown rice spaghetti. She just likes some EVOO and parmasan cheese on it. DH and I will put some red sauce on it. And I am excited, my boss gave me some striped bass that he just caught yesterday in Cape May, so we'll have that as well. Not sure how we'll cook that yet, but I am sure it will be delish.

I just made a striped bass on the Cape this weekend, and I tried a totally new recipe. Oh my goodness was it delicious! You might try this, but not sure it will pair well with pasta.

I just read Christine's post and am so sorry that you are having to go through all of this! I know you are one tough lady but, geeeez, enough already!! I hope that the WBR does it's thing and that those mets are sent to fry in hell, where they belong and that any side effects are minimal!

Susan - the striper bass recipe sounds absolutely delicious. When we were in Paris we tasted a salted encrusted whole fish that was spectacular. Tonight's dinner is compliments of Christine's sister-in-law. She made a beef and butternut squash chili and I tasted it last night - so good!
I'm looking forward to tomorrow's coq au vin with lots of bacon. My husband and son are going to be spoiled.
I am ever so grateful for all the help, it means the world to me.
And thank you Seaside. Where did you go? I hope it was somewhere wonderful.

I saw that promise of bacon. It made me smile. They may be spoiled, but eventually they will be dying for some of the dishes that have to be cooked a la minute. Braises and soups can actually get tiresome, so I have been told. I hope that you have been able to eat. Sometimes radiation takes away the appetite.

Thanks for that recipe Susan. I didn't have a whole fish, my boss filleted it and gave me a fillet. He said the fish he caught was 49 inches. The fillet he gave me was about an inch and a half thick. I used the the recipe you gave to make a marinade for it, then baked it in the oven. It was good, even DD and DS said so. It was a meaty fish, tasted kind of like chicken to me. I think I prefer flakier fish. Had some roasted broccoli, a salad and some garlic bread with it. A good meal!

DH cooked a big pot of lentil soup today. We had the soup for dinner with a slaw made of napa cabbage and cucumber. My yellow bell pepper was bad.
I found American lamb chops on sale today.

I had an apt in Milwaukee today, and ran into rush hour traffic. (That's my story and I am sticking with it) So rather than drive in that, I stopped at Cheesecake factory for dinner. It was before 5 so I got the lunch menu. Had a small arugula salad with almond, and golden raisens with the lemon and olive oil dresssing and the small portion of pasta with sundried tomatoes and ricotta and parmesan cheese. And ate only half of it. You all would be so proud of me. I DIDN'T eat a cheesecake! Of course I bought one piece to take home! LOL

Moonflower That sounds like a well deserved special treat. That was the only eay I got through the every day drive to radiation (an hour away) was to give myself permission to shop or eat in that town that I dont travel to very often.
We did chicken salad last night, my Dh had his leftover burger with his. I had some cranberry stilton cheese crumbled on top that made it yummy.
Michelle sounds like you are getting some awesome cuisine! Enjoy and hope you are doing well, think of you every day:)

We have cool crisp weather this morning. I have a 10:30 hair apptment and should go walk. But I got a smart phone yesterday and have been fooling around with it. I also got another gadget, a tiny little monitor that keeps track of all your movements and exercise and computes WW points. Another reason to go walk! My gadgets are fighting each other!
Dinner tonight will be steak. Probably baked small sweet potatoes from the CSA. And chopped salad. The blanched cauliflower and broccoli need to be eaten. I have a ribeye and two flat iron steaks in the freezer, both from SD. I think I'll thaw the flat iron steaks.

I'm resting. They put us in the Hilton across the street from the WTC. Tomorrow or later tonight I'll be in tents (heated) and cots. There is a lot of planning work for the responders to work in the field..that is what was happening today.

We were in the Caribbean on a cruise of the southern islands and, yes, it was wonderful! It was a trip to celebrate our 25th Anniversary, my 50th birthday and just life in general! First time we have left our kids, young adults really, home alone... So far I haven't heard any complaints from the neighbors so, I think they were good...
Actually, I have you in a way to thank for it.... About the time I was enjoying reading of your adventures in Paris and wishing I could be there too, I got an e-mail from a travel company about a Mediterranean cruise for a great price... Problem was the airfare put it out of our budget..... But I had already been bitten by the travel bug! Found a cruise that fit our budget and the rest is history.... And we did visit St Maarten and they do have a french side...lol!

Bless you and all that have come to help those areas devastated by Sandy. The night we left for our cruise we ate at an Applebee's on our way out of town and there was a caravan of 10-15 utility trucks from Michigan and the guys were all heading to NJ...
Having lived through 2 major floods in our area within 5 years, I can say they will need all the help they can get....
Hope tonight finds everyone well! Still struggling to get caught up on laundry, groceries, etc! Dinner tonight is Spaghetti and Meatballs... Should be good but, I sure do miss eating out every night on the cruise... sniffle..... -
So first of all, I must say a big thank you to Lacey and her DH for delivering a fantastic dinner. Coq au vin (chicken with a beautiful rich brown sauce infused with mushrooms, carrots and other delicious flavors then baked with bacon. It was so good, as was the stuffed mushrooms, wild rice, salad with dijon vinaigrette and pumpkin bars for dessert. We loved every morsel and luckily there is enogh for lunch for me tomorrow!
Did you stop and get the shrimp at Shyers? I hope it lived up to expectations.
Seaside - we went to St. Maarten about 20 years ago (on my husband's company) and stayed on the French side...it was a feast for my hubby's eyes!!!

We're having something completely different for dinner...
Two of my husband's co-workers in Chicago (we're in the Los Angeles area) sent two deep dish pizzas from a place called Lou Malnati's. They were packed in dry ice and were packaged as part of a Taste of Chicago promotion so he's heating up one of those and we'll have our favorite salad along with it (Arugula/Extra Virgin Olive Oil/Lemon Juice/Sea Salt/Ground Pepper/ Shaved Parmigiano-Reggiano).
I've been passing on the parmigiano-reggiano but it's good with or without the cheese. It's also good with a few Stacy's pita chips crumbled on top (the pita chips work well with the lemon juice).

Michelle....so glad that you enjoyed the meal! I really enjoyed making it for you....and as I said today, I have not used that recipe since the 70's, but recalled that bacon was the base for flavoring, so knew it would be appealing to you....French comfort food!
It was great to visit today, and see for real the famous recliner with the water/ nature views....so peaceful! Yes we stopped at Shyers and got some steamers and extra large shrimp. The steamers were so tasty, and we had the shrimp with linguini, garlic, artichokes, peppers and parmesan ( inspired by the many Italian restaurants we passed on the way to Shyers!) Yummmmm.....happily stuffed. And by the way your spontaneous directions to Shyers were spot on!! That should mean something.It was wonderful to see you looking so good, Michelle!
Eric, I'm sure you are missing your girls, (and vice versa) but how lucky the Sandy survivors are to have your attentive care and talent. Thank you! Hope you can get some good NYC eats while there, not just "military type cuisine".
