I've decided to join the drinkers, as I've been hitting the celebratory cocktails pretty hard lately. Laid off for many years, as I am an all or nothing kinda gal. Have recently decided to be an all girl. Screw it. Went to a benefit last weekend. Bid on an item and won. I thought it was a tattoo, but it's a piercing. Shoulda read the items before I starting drinking. Looking forward to having many cocktails with you all. I'm jumping in here, 'cause I'm just too lazy to read up on all the posts.

Good afternoon, Loungettes! I've been working away at mowing the yard with the electric push mower since the riding mower doesn't want to start. Got the battery recharging, that should help it be ready to go on Thursday, I hope! Beautiful day out there, but I is getting TIRED and seriously in need of a pool with a swim up bar!

Greek Lamb and Olive Burgers with Garlic

The incredible texture of this juicy, flavorful burger comes from a mix of lamb, chopped kalamata olives and feta cheese. The garlic "sauce"-a simple combination of yogurt and minced garlic-makes it look as if you've spent some time in the kitchen, when you're really in and out in a flash. You can double or triple this recipe easily when serving a crowd at a barbeque.
Print Ingredients
1 Pound Ground Lamb 1/3 Cup Kalamata Olives (Chopped) 3 Tablespoon Dried Bread Crumbs, preferably panko 2 Tablespoon Onion (Finely Chopped) 1 Tablespoon Scallions (Chopped) ¼ Teaspoon Kosher Salt, 1/8 Teaspoon Fresh Oregano (Chopped) 2 Tablespoon Feta Cheese (Crumbled) ¼ Cup Plain Yogurt 2 Garlic Cloves (Minced) 4 Onion Hamburger Rolls (Split and toasted) 4 Lettuce Leaves (Washed and dried) 4 Tomato Slices 4 Cucumber Slices (optional) 4 Slices Red Onion (optional) Instructions
If you'd like the sauce to be thick, strain the yogurt through cheesecloth for 30 minutes and discard the liquid before adding the garlic, or use a fine-mesh strainer set over a bowl or a cup.
With your hands or a wooden spoon, mix the lamb, olives, bread crumbs, onion, scallions, salt, pepper, oregano and feta until all the ingredients are evenly distributed. Shape the meat mixture into four 1/2 inch thick patties.
Preheat a grill or grill pan. Grill the meat patties over medium-hot coals or pan-grill over medium-high heat for 5 minutes per side. The burgers should no longer be pink in the center.
While the burgers cook, stir together the yogurt and garlic.
Place each burger on the bottom of a roll, spoon on a little garlic sauce, and top with lettuce, tomato, cucumber and onion, if desired. Cover with the top half of the roll and serve. -
