What would Cori eat...for my ysc peeps
I've tweaked my diet here and there, but it still mostly involves Kale and quinoa. and quinoa and kale. together, seperate, at breakfast, lunch and dinner.
I made kale two ways on my recent trip to Indiana and I am happy to report there were no fatalities. Although Tasha looked a little green (with envy I assume) while eating the kale salad. Kale chips were a HUGE hit.

The kale chips were great! I have yet to find it in ohio. The grape leaf concoction is one I'm still talking about lol.

Kale chips, SUPER easy especially if you have a trader joes. Bc trader joes sells bags of kale that are already cut up and washed.
preheat oven to 350. spray a little oil (and when I mean little, I mean a little) on a cookie sheet. cover cookie sheet with kale. spritz kale with a little olive oil. (lightly) and then salt. bake. you are trying to dry them out and make them crunchy. keep trying. if they are limp, well, no one likes anything that is limp yk? put them right back in the oven until they are ready. maybe 10 minutes ish.
yum. don't skimp on salt.
practically fat free and all that yummy kale goodness. without exaggeration I could eat two bags of kale in one sitting like this. even my kids love this.
eat fresh, don't try to bag in baggie, will get soggy and limp. ick.

it's really awesome! swear by it.
I also make canned chickpeas the same way. open, drain and rinse chickpeas. put on cookie sheet and spritz ever so lightly. sprinkle on seasoning of choice, personally I go with salt. my kids like sweet seasonings like a little brown sugar and cinnamon. bake til crunchy.

Try spritzing the kale chips with your favorite spices prior to making.
Suggestions:
Old bay
Lemon juice and pepper
Lemon pepper
Parmesan cheese
Red pepper
Garlic
Sea salt and balsamic vinegar
The possibilities are limited only by imagination.... -
I used to love chickpeas...but read somewhere that they are bad for ER+ cancer...No?

HA! I saw the title of this thread and thought, I don't need a freaking thread for this I know all she would eat is quinoa and kale. Sure enough I open the thread to comment just that and the low and behold, that is exactly what Cori wrote. Oh Lawd!

I had vegan meatloaf at a place in Milwaukee tonight for dinner. Awesome! Ilwukee has tonsof vegan places.
Anyone have a good veigan cupcake recipe.
Been, I read that but then read it debunked. I can't imagine eating enough to worry...

How about vegan brownies? One can beans, puree and mix with brownie mix.
Betting the same recipe will work with cake mix.
For both, add baking powder and / or baking soda to help them rise. -

Heather-what do you juice? I finally settled on two different blends. In the vitamix I do kale/brocolli/cauliflower/one banana/spinach/frozenfruit and some coconut milk. in the juicer I do carrot/apple/spinach. I am thinking about adding something into the juicer mix, but need some inspiration. I am SO ridiculous uncreative. I would rather just know, okay, get up, start putting this stuff in the juicer, no thought, just do. ykwim?

In an effort to vary our vitamix smoothie routine, we tried this and liked it: green tea, cucumbers, apples, frozen lime juice ice cubes, spinach, and a frozen banana or two. Sometimes add avocado. Very refreshing.
Also: peanut or almond butter, frozen banana, (coconut, almond, soy, or regular) milk. Sometimes add a little chocolate veg protein powder for my DS. Sounds icky, tastes delicious, lots of protein.
Going to try those chickpeas right now.

Jenx-oh, I like the vitamix blend. when you say green tea...do you brew some the night before? do you peel the cuc's? and is it fresh lime juice that you freeze? I am going to make that so I need the details!!

You can brew the tea the night before or buy it unsweetened. I usually juice a couple of limes and pour the juice into ice cube trays. I don't peel the cukes, but you could. I use avocado when I want it to be richer and more filling and don't when I want light and refreshing. Just got to play around until the quantities are to your taste.
BTW, my family loved the chickpeas. Thanks for the tip!

Just wanted to report back on my Kale chip experiment. I added too much salt the first time. The second time I got it right. Me and fiance ate the whole bowl in front of the television. Better than popcorn!

Scary story...so I was cleaning my pantry out...way behind the quinoa was this little pie my dh had bought for the kids but they never ate. It was like a little fruit pie in the walmart bakery. Not packaged like hostess. So....I find this pie and I think to myself when did he buy this? I look at the date. Best by february 2 2010. But the scary part, and I will get a picture is it freaking looks like new! I can only imagine the preservatives in it.

I drain the beans, rinse them, and then add water to the top of the can to replace the lost liquid. But I know people who just pour the black beans in with the liquid.
Puree the beans, mix in the brownie mix, and bake.
It's that simple. And they taste good. -

Not only vegan, but healthier....veggies and fiber in lieu of fat and cholesterol. With an added bonus of fewer calories.
How about a ganache? Mix equal parts of vegan cream and dark chocolate. Melt chocolate in cream and pour when slightly cooled.
If you want a glaze, follow any recipe. Replace butter with margarine and milk with soy or almond milk. -

lol. no, I never drink. sometimes, I apparantly don't feel like myself on facebook....hmmmm. I like to start singing old 80's tunes and opening bottles of alcohol that I never drank...even when I DID drink I never drank hard alcohol. ever. I was always a beer and wine drinker.
but no, for the record, I have not had anything alcoholic for over 3 years. I do not intend to drink again. as much as I am sure I would like it.

and more for the record, a big part of why I don't drink is I am such a fanatic about my weight and what I put in my body and alcohol does't have a place in that diet. if I had to choose between alcohol and chocolate. well, I am no way giving up chocolate.lol.

Thought about you last night Cori. Ate kale sauteed with a bit of olive oil, garlic and red pepper mixed with quinoa for dinner. The kale came from my garden so it was, seriously, about 30 minutes from field to plate. Dee-lish!

I had sauteed kale for dinner last night too! Why is kale so good for us? I'm lucky in that I just happen to love vegetables, especially the dark leafy ones. Also, I am loving Trader Joes. I just moved near one. All that cheap, pre-cut, pre-washed produce!
