What would Cori eat...for my ysc peeps

Beeb-I love the prewashed cut kale at TJ's! I think the thing with kale started bc it is one of the vegetables thought to be most effective against cancer. So, I err on the side of caution and eat it twice a day.
Ratbait-well, right now I am at a 19. The lowest I ever was was a 18. which is underweight. BUT to be fair that was when I was breastless. So surely that would have been a pound or two right? I have no clue what the rack weighs in at now.lol. So, basically when I got to a weight that I felt was good, I weigh myself everyday. and if I start to inch up, I know there is a reason, yk? in my case, usually trader joe dark chocolate with sea salt. but my point on alcohol is, I eat quite a bit. and if I don't eat that much I am hungry, yk? So, if I drink alcohol or soda, or caloried drinks of any sort, to not gain weight I would have to either run 3 extra miles a day (so not happening) or cut food consumption. again, not happening. so, in my case, I choose to not drink anything with calories. I don't drink diet either, so it's water or tea or coffee in the am. honestly, not the biggest fan of water so this is quite the sacrafice to me. like I am stuck in freaking lent or something.lol. penance for my 5 years of undergraduateness in college. (the five years part should be a hint of what I am doing penance for...)
that said I am a fanatic bc I have an unproven theory. here it goes. we know that fat stores toxins. we know this from fish and other animals. lean is good. so, I want as little toxin storage units as possible.
now, that said, I honestly believe yoyo dieting was part of my down fall. I believe that when we loose weight, our fat cells shrink, we don't actually loose cells, they shrink. well, they have to shrink by getting something right? sometimes I suppose that is the mythical 'water weight' we hear about. and then I suppose other times we shed toxins. so. I determined that after I lost the weight I would absolutely NOT gain it back bc I know I would be compelled to loose it AGAIN. vicious cycle. toxins constantly stored/released then stored/released. if I was loosing weight again, I would investigate cleansing herbs and supplements to try to get rid of the stuff.
again, just one of my many unproven ideas.lol. probably right up there with my idea that chronic constipation due to lack of fiber due to processed foods is literally keeping shit in us, keeping toxins in and causing health problems.

Cori, can you move in with me for a month and force me to eat only what you eat?
I am back to being "so hungry" all of the time and crap is creeping in. And I am fat. So depressing.

patty-you just have to start. say, okay, this is it. and do it. You are type A, you can do it!!
I have been making homemade spring rolls. omg I am in love.

this is a thread after my own heart! I am a pyschopath about my diet. No meat, no dairy, no sugar, very little caffeine (that one's hard!).
here is my question - esp for Cori - do you ever cheat? Like have birthday cake and such? i'm very strict, but do enjoy a homemade dessert on special occasions. (Of course, after a life of no sugar, dessert usually puts me in a diabetic coma!) Thoughts?

I love this thread!
Are certain types of kale better than others? This year I grew some russian kale (blue kale?) in my garden and don't love it as much when sauted... maybe I could use it for chips?
I ate kale and collard greens my whole life and still got BC, but no reason to stop eating it:)
-
ahhh sweetbean, this brings me to a very good rule of thumb. I will cheat if it's homemade. and I don't mean homemade from a box.
so, cake from walmart bakery? no.
cake from a real bakery that uses flour, sugar, eggs, yes.
cookies that someone made from scratch? yes.
cookies that were from slice and bake? no.
in question, I pass. the amazing thing is, once I truly cleaned up my diet, I don't care for and can spot in an instant, any not 'real' desserts.
I had heard and read soooo many times that the artificial stuff is why we overeat, we don't feel satisfied. I never believed it. EVER. But then when I cleaned up my diet, I was like, wow, they actually knew what they were talking about.lol. I could eat a package of chips ahoy back in the day, now if I have a real cookie, a 'normal' sized cookie, not some monster from starbucks that is actually five freaking cookies posing as one, if I eat one or maybe two real cookies, I cool. I never would have believed it.
I think all kale is good kale.lol.

Hi Cori et. al.,
What do you eat for breakfast?
-
Oh, Cori, if I didn't know better, I'd think we were the same person! LOL! I feel the same way about homemade. I won't eat any processed foods, but will have my mother's cake. It is super delicious. I also bought a vegan baking cookbook from Babycakes NYC. I figure that it reduces or eliminates the processed sugar, white flour, and dairy, so it is at least a bit better. And honestly, the recipes are delicious. The vegan chocolate chip cookies are amazing! I generally won't eat meat anymore, but I am planning on having turkey at Thanksgiving. I'm going to buy a big, organic turkey, though!
My sister is recovering from mono, so I made her make some modifications to her diet, which basically included a smoothie in the morning with protein mix, soy milk, and berries, and a green drink in the afternoon, made of kale, broccoli, chard, celery, tomato, and apple. She was eating this way for a while and was feeling really good, so she went back to her old ways of cereal, etc. Then she started feeling crappy again, so she switched back. Her facebook status yesterday was "OK FINE. kalejuicemakesmefeelbetter. THERE!" I felt so vindicated! LOL
Anyway, it's nice to know that we can cheat now and again if it's worth it. Plus, I like that I can eat guacamole like it's going out of style!

Also, I really agree with you about the processed foods making us overeat. My energy levels are better, and even were during chemo, because I don't have any crap in my system. My blood sugar levels aren't all over the place, so I rarely get really hungry. And because I am not eating a lot of crap, I also don't get that heavy, I-ate-too-much feeling.
-
beeb-quinoa. quinoa is the best breakfast. I cook it on the stove, one cup quinoa to two cups water. will make two to three breakfasts. I eat it like oatmeal. I top it with freshly ground flaxseeds (I bought a small electric coffee grinder at goodwill that I have as a dedicated flax grinder), berries and almond milk. YUM and easy.
sweetbean-that smoothie sounds great! good for you getting your sister to change! and bravo for her being willing to try! what do you use as a protein powder? I haven't used one. I hate that heavy ate to much feeling!

For my protein mix, I generally use Lifetime Life's Basic Plant Protein. I also use Bluebonnet Whey protein sometimes, although I tend to choose the vegan protein more. This morning I had soy milk, blueberries, bee pollen, protein mix, and 1 scoop of the ORAC Amazing Grass. It was pretty good! And I even got my dad to try my juice this evening when we were at my sister's. I told him I would help him find a good juicer. Does anyone have a favorite?

This is what Cori should be eating.
My friend has this amazing cookbook, Vegan Scatter Sweets, it's vegan and gluten free. Right now she has it available on her website as a free download or a hard copy for just $10. You will love the recipes. Here is the link:
