So...whats for dinner?

You have been through a lot Debbie! I hope everything is clear sailing for you with your reconstruction.
Had flounder, corn on the cob, peas and spinach salad for dinner tonight. Finally finished that bag of spinach salad I bought. It will be time for something else tomorrow.
The grilled pizza sounds good. I will have to try that some time.
Have fun on your camping trip Laurie.
-
kay1963,
One of the helpers offering samples of food in a local store asked a mother if she would like a piece of flounder, which started her young child screaming and crying "you killed flounder". The Little Mermaid. Kids!
-
Thanks Kay, I havnt really been through as much as most of the woman here (knock on wood) Im nervous about any kind of surgery but sure it will go well
Kay- Thats funny, kids say the cutes things! My 2 grand-daughter keep me laughing!
-
We've been getting chives and scallions from the (v) garden, but still waiting on swiss chard. My husband loves to add chopped chives to cottage cheese and scallions are good eating with or without salt. The North Country is having a cold rainy June.
-
kay that is cery cute:)
Our camping trip has been post poned. It is supposed to rain most of the weekend and we figured the kids wouldn't have much fun just sitting in the camper. Well, they might, but we wouldn't!
-
Teka,
LOL the "You killed Flounder"!!! Sometimes the way kids think is just too funny!
Tonight we are going to the VIP dinner for a golf tournament that my husband is on the operations committee for. Each year they put on a Steak and Lobster dinner for the golfers and some of the sponsors! Should be yummy! Now if we can just get the weather to hold! It is soooooo muggy here yesterday and today and now the sky looks like a storm is coming in!
Been a really wet June here in the Southern Tier of NY, too!
-
Laurie,
Sorry about your trip! I think you are right though to re-schedule when it will be more fun for everyone!
The weather here is supposed to be iffy until Sunday. This really hasn't been a very pleasant June! Hoping for much better in July and August!
-
Seaside- I couldn't agree more- it's been a horrible June.
-
Laurie - I remember way too many camping trips where it rained most of the weekend! There will certainly be a better weekend soon! It's chilly and rainy here, and it doesn't look very promising until Saturday at best.
Not sure what we're having for dinner tonight. There is a package of steak tips that needs to be used. But I was nauseous last night and this morning, and I don't know how that will fly. I think I caught the tummy virus that the grandkids were passing around as this does not seem to be chemo-related at all. I'm feeling a lot better now, but I don't know if I am up for something too heavy.
Michelle
-
Laurie- Well that just sucks about your camping trip being canceled, It sure dosnt seem like summer yet does it.
Seasside- Now your making me jelious with your steak and LOSTER Im drooling here, have fun tonight!
Michelle- So sorry to hear you are nauseous, I had to stay away from every one who even had a slight cold during my tx's hope you feel better soon!
Making pork chops and roasted brussel sprouts with bacon and shallots tonght! Tomorrow im making michelle's pot roast cant wait so i can have an excuse to open a bottle of wine LOL!
-
Well, by default, the steak tips were cooked after all. I couldn't think of anything else that I wanted and it would have required a trip to the store. So I threw them in a baggie with some soy sauce, onion, honey and ginger for a few minutes. Hubby cooked them along with some Near East grains with pecans and a salad. I've never had the Near East stuff before - it was actually pretty good. Fortunately, the nausea seems to be gone.
It's been our "tradition" to eat out on Fridays. Time to find a good local restaurant for tomorrow night.

My daughter has been cooking asparagus almost every night since I started this spring picking from an old (75+ years) asparagus bed in a pasture bordering our land. Huge sweet tender spears. So good!
-
Hi All! Tonight was no-cook, eat from the fridge smorgasborg (sp?)- My husband has been in London all week and comes home tomorrow night, so I'll probably cook something worth while then! The kids and I had deli turkey rolled up, deli cheese, hummus with baby carrots and snap peas, strawberries, and watermelon. It was nice not to have pots and pans and a lot of dishes to clean up.
-
We had pizza with mushrooms and broccoli, salad and watermelon here. My daughter also made brownies, but I haven't had any.............at least not yet.
Laurie, sorry about your camping trip. I know how you feel, I took my kids down the sure on Sunday and stayed overnight to Monday. Was planning to go to beach and boardwalk for pizza for dinner before heading home, but it was raining and was supposed to rain all day so we headed home at 11 am. Disappointing to all, but there's nothing worse than being stuck down the shore (or in a campground) and stuck inside because of rain.
Glad you're feeling better Michelle.
-
Teka- You are so lucky!! I wish i had an asperagus bed of spears, I cook it at least 3 times aweek!
I have a funny story to tell you, last saturday i did the cancer walk and at the ceramony they have the survivors come up and they put a red cape on us that had a big huge S on the back, for survivor., And they had tons of pink ballons filled with helium so i brought a bunch home for rememberence of my loved ones who passed away. When we got home i stood outside of my front yard and let the balloons go saying a prayer for them all (not rememberng I had the cape on still) I saw my neighbor who lives across the street looking at me strange, we have never talked, I remember thinking she probably things im nuts, haha! My neighbor who lives (next door) came over for our usual talk and glass of wine, she told me the lady across the street stopped to talk to her while she was outside picking weeds and she asked her if i was "unstable" my friend said, NO, why? She told her about the cape and wondered if I thought i was superman or something! OMG did we ever have a good laugh about that! My neighbor friend didnt know anything about the cape untill today, so she didnt have an answer for her, so needless to say the lady still thinks Im nuts LOL!
-
Debbie - that's a funny story! Now you'll be the talk of the neighborhood...lol! Was this a BC walk? Rather strange that they gave you a red cape. At the BC walks I've done (for about 14 years!), everything for survivors is pink, pink, pink!

-
Michelle- It was a walk put on by the american cancer society, it was at a high school and the walk was around the track it went for 3 days non stop some people walked for the whol 3 days and had tents set up on the field they did have pink ballons but the capes and shirts were red, I walked for about 2 hours and then my grand-daughter got tired so we didnt stay long plus it was pouring raining out that day, last year they didnt give us capes, kind of silly really LOL!
I made my pot roast today, wont have it untill tomorrow as we always go out on friday nights have dinner and drinks, will let you know how good it is, it smells so good cooking right now!
-
Debbie - I'll bet your pot roast will be even better tomorrow, just like beef stew is always better the next day.
We have been unpacking stuff for a couple of hours and all of a sudden I told DH that I needed to eat. So I came downstairs to make a whole wheat pizza (bought the dough at the market today) and read the directions...it needs to come to room temp. So it's sitting on the oven which is preheating, and I grabbed a snack. I hope this turns out good - I got some good fresh mozzarella, and a jar of pizza sauce that looked like it would be good, and we have pepperoni, sausage, salami, peppers and mushrooms. In our house, it's not pizza without the pepperoni! I haven't made a pizza in many years so this should be interesting!
And hubby found the parts to the tv stand, so assembly can begin. Progress! And his office is almost together, which will get him out of the living room on conference calls all day...more progress! Now if I can get him to purge some clothes so I can have some closet hanging space...lol! Tomorrow's challenge

Teka: Your asparagus bed sounds wonderful! I would love to have one. Yum.
debbie6122: I make roast a lot in the winter, I do love how it makes your house smell.
But, since it is super hot where I live (100+), I am making pasta with pesto and sun-dried tomatoes. One of my daughter's favorites. And lots of fruit with dinner.
Michelle: Your pizza sounds great, I love fresh mozzarella. That reminds me, my favorite pizza place sells pizza dough, I need to pick up a bag.
-
Ok so the pizza was good, but next time I'm getting regular pizza dough, not the ww stuff. It might be healthier, but it doesn't taste the same. And there are some things about pizza that are sacred! I have a pretty big pizza stone, but the crust could have been thinner. I like it thin and crispy, so more lessons learned for next time.
Geez, I am trying to finish my Michelob Ultra but I could easily lean over and go to sleep. Must be the effect of the 4:30 a.m. duck quacking outside our bedroom window! Lake living at its finest...lol!!! It has rained since Wednesday and I guess it was too much for the ducks. They swam across the pond and took shelter on the neighbor's swimming raft, quacking the whole way!

Lynn- It does make the house smell good i put it back on to cook some more today it wasnt quite done enough yesterday bacause we were going out last night and didnt want it on while gone as michelle said it tastes better the next day. Your pasta sounds good, 100% oh wow that is hot, you must live in arizonia?
Michelle- I agree with you, if your gonna have pizza, forget about healhy I like the white vs the ww dough. Sorry yours didnt turn out the way you wanted it. Thats funny about the ducks quacking and waking you up, I have a fan next to my bed even in the winter because it drowns out all the noise, when we lived in hawaii we lived on a main drag that was noisy so we had to have a fan for that reason now i cant sleep with out it and bought a travel one so i can put it in my suitcase.it really makes a difference. Im a coors light girl myself LOL! in fact i drank to many of em last night and not feeling my best! LOL!
-
Debbie - you got it! Some thing are not worth compromising, and pizza is now on the list!
Tonight's dinner was grilled swordfish (yes, finally, decent enough to grill!) with a cucumber dill relish, grilled aparagus basted with olive oil and balsamic vinegar, and coleslaw.
Here's the link to the cucumber dill relish, which was easy and very good. I made it without the mint, I guess it would add a little more complexity. But it was still delish! And I used a regular cuke that I knew didn't have big seeds. Didn't bother scraping them away.

DH did a good job with the grilling and especially basting the asparagus!
Hope everyone is having a good weekend!

it is with the saddest heart that I must pass on the following news:
Please join me in remembering a great icon of the entertainment community.
The Pillsbury Doughboy died yesterday of a yeast infection and complications from repeated pokes in the belly.
He was 71.
Doughboy was buried in a lightly greased coffin.
Dozens of celebrities turned out to pay their respects, including Mrs. Butterworth, Hungry Jack, the California Raisins, Betty Crocker, the Hostess
Twinkies and Captain Crunch. The grave site was piled high with flours.
Aunt Jemima delivered the eulogy and lovingly described Doughboy as a man who never knew how much he was kneaded.
Doughboy rose quickly in show business, but his later life was filled with turnovers. He was not considered a very smart cookie, wasting much of his dough on half-baked schemes.
Despite being a little flaky at times, he still, as a crusty old man, was considered a roll model for millions.
Doughboy is survived by his wife, Play Dough; two children John Dough and Jane Dough; plus they had one in the oven.
He is also survived by his elderly father Pop Tart.
The funeral was held at 3:50 for about 20 minutes.
I thought since this is a dinner thread it would be appropiate! LOL!
-
Now that was funny!!
You are creative!!!!!
-
Michelle- Thanks for the link to the cucumber relish, i have everything to make it, I dont have the english cucumbers but i think it would still taste ok with the reg cucs. I read your blog, and yes you should diff milk it LOL!
-
I am so happy to have found this thread!!!! I have been here since March and don't know how I've missed this. I would love to jump in because I love to cook and am obsessed with finding/exchanging recipes.
My admission recipe is a twist on simple pancakes. Tried this for breakfast today for the first time. Instead of cooking them on the griddle, I melted butter on the bottom of a pie pan, covered it with a chopped green apple, topped with cinnamon, chopped pecans, and butter pecan syrup. Mixed up some Bisquick ( I know, not healthy) and poured it over the ingredients. Baked at I think 350 for about a half an hour. Delicious, and didn't have to clean a griddle (which I hate).
Again, hope it's ok to hop on in the middle and look forward to all the delicious dinner ideas! I've started reading at the beginning but haven't gotten far-----but looks like there are some good cooks here!
-
Hi Beinghopefull, and welcome, Your pancakes sounds really good i make a baked pancake that is similar i use krustez but im sure its the same result will have to try yours with the apples next time thanks!
Up late cant sleep i should just stay up so i dont miss breakfast!
-
Hi Beinghopefull! Glad you could join us! Your baked apple pancake is similar to mine, which resembles one served at Bickford's Restaurant here in New England.
2 apples, peeled, cored and sliced
2 tablespoons butter
3/4 teaspoon cinnamon
1/3 cup flour
4 eggs
2/3 cup milk
1/2 teaspoon salt
Preheat oven to 400 degrees
Melt the butter in a large ovenproof skillet. Combine 3 tablespoons of the sugar (brown sugar works great in this recipe) and cinnamon, and sprinkle over the butter. Add the apples and saute for 3-4 minutes. Remove from heat while you make the batter.
Blend the eggs, milk, remaining sugar and salt until smooth. Pour evenly over the apples. Bake until brown and puffy, about 15 minutes. Serve at once!
This is my hubby's favorite breakfast, and I think he was hoping he'd get it this morning. But alas, we have no flour...lol! I buy a small bag and keep it in the freezer because I don't use it very often and it keeps the little buggies away. I guess when he packed up the house, he gave the neighbors the stuff like that. I do have some pancake batter and I might just try to use that and see how it goes.
Debbie - that story is hilarious! I've already copied, pasted and emailed to my daughters! Hope you get some rest sometime today! And yes, I used a regular cuke, just a thin one with small seeds. You could scoop out the seeds if yours is too fat.
Happy Sunday, ladies!!!

Hi everyone! Welcome Beinghopeful! I like the sound of both of those pancake recipes. Will have to try it. Debbie, I love that story!
Went out to celebrate DH's 50th B-Day last night (it's not until 4th of July, but my son has to go back to school on Tuesday in Minneapolis). Had a great dinner at Ruth Chris Steak House. I think it may be a chain? Had crab cakes, not steak, but did taste my DH's steak and they were both wonderful. They used Basset ice cream there and my DD had some. I tasted it, and it was delicious, maybe the best ice cream I ever had. My MIL said she's had it before and it is known to be really good. I never heard of it. But it was good!
