Happy Easter to ME!

Options

Good morning,

Today is the final day for my Jackson-Pratts. I had bi-lateral mastectomy on March 16th. I missed St.Patrick's day and Easter dinner.

Well, I was prepared for St Pat's and was wearing a holiday button on my JP drain neck gear. But I really did miss Easter dinner because I couldn't cook.

Today I'm shopping for a lovely ham and making a white cake with 7 minute boiled frosting. All you foodie/chefs know that means 7 minutes of beaters on top of a double boiler - I hope my lymph node area holds out. I may even tint some coconut green and pour some melted white chocolate chips on it. I wonder if anyone has any jelly beans left? I bet the dollar store has some!

I refuse to continue to feel as if I've missed something and will treat myself and my neighbors (2 old men who don't cook and eat a lot of TV dinners) to a fine holiday meal.

I did manage to surprise the guys with and egg like this but it wasn't much of a holiday.

And that is how I'm coping today.
