Hamburgers well done???
I read that cooking red meat at high temp is no good, so can someone give me why to cook a hamburger that is fully cooked, because I also love well done meat steak, hamburger. Should I broiled it, I not a good cook I am going thru treatment after having a lumpectomy and I am trying to eat healthy.
What is the best way to cook a hamburger to make it fully cooked , I guess no more bbq

A piece of meat is most likely to have the ecoli bacteria on the surface. When the meat is ground to make hamburger the surface of the meat is throughout the chop meat so you need to cook the burger to an internal temp of 165F to kill the bacteria in the center. A roast or steak can safely be cooked to a lower temp re: rare, med rare, med well because the surface of the meat is cooked to a safe temp to kill surface bacteria.
What we should avoid when cooking meat is the char (black, yummy caramelized, bits).
Try slowly cooking the meat to avoid the charring. I hope this helps.

The problem is that high temperature cooking causes chemical changes and creates concerning compounds (heterocyclic amines (HCAs); polyaromatic hydrocarbons (PAHs)) that have been shown to cause cancer in animal models and other bad things.
