Soy Protein Concentrate in canned soup?

Anyone know why there is soy protein concentrate in canned soup? I had a cup of Campbell's chunky chicken noodle at work the other day, and afterwards I read the label and was surprised to find that the soup has soy protein concentrate in it. Why do they add this? It already has actual chicken in it. Is it just to increase the protein content for the nutritional label?

    They've probably used it as a thickening agent and/or for flavor.

    They put soy in far too many products. I guess that's one reason I try not eat foods that don't require a label. Or at least carefully read the labels. It wouldn't be that hard to make a soup better(in a lot of ways) than Campbell's. The hardest part is the planning ahead.

    Selena, I think you are right. I finally found some information that indicates that in addition to what you suggested, soy protein concentrate is used as an emulsifier (like soy lecithin), to increase protein content, and to make meat retain water (probably keeps the chicken from getting tough). It's very annoying trying to avoid this stuff.

    Coraleliz, I agree, they put soy in way too many products.

    I can't believe how much soy is in food. Just had a lumpectomy yesterday and trying to eat better. I guess this is going to take some time getting use to... Even my vitamins!!!
