Prophylactic mastectomy and SNB

I'm probably going to have a pro-mx in August.  I had a uni-mx 2 years ago (wish I'd had the "healthy" breast removed at that time too.).  I've had a mammo, US and MRI recently and nothing can be seen and none of the doctors feel anything suspicious so there is no reason to think I have cancer in my remaining breast.  I forgot to ask my surgeon about this, but I assume they will not do a SNB since I don't have any indication of cancer?  What if they don't do it but then discover cancer?  Also, now that I have insurance approval and am getting ready to make an appt, I'm feeling nervous.  Not so much about losing my breast, but about going through surgery again.  Any thoughts would be appreciated.  Thanks!
