Healthy "Convenience" foods?

I know this forum is supposed to be recipes, but I can't be the only one who doesn't always have time or energy to cook...

Anyone want to contribute to a thread of convenience foods that are still healthy or can be thrown together into a quick recipe?  I'm looking for organic, no additives, no soy, etc.

Today, I found something that I LOVE!  They were doing a demo at a local natural foods market.  Hilary's World's Best Veggie Burgers -- you can pop into the toaster :)   I had one today on organic bread with some barbecue sauce on it. Looking forward to trying it on a salad.

I have had a hard time finding good veggie burgers without soy!  These are made of mostly organic ingredients. NO soy, no gluten, no dairy, no eggs, no yeast, no nuts.  http://www.hilaryseatwell.com/veggieburger.php

I too love veggie burgers and will have to try that brand.  I want to avoid the isolated soy protein or whatever it's called.  Being a vegetarian, there are fewer choices.  I am also trying to avoid the plastic can linings.  I keep Eden Organic brand black beans on hand.  Eden Organic does not use the BPAs in their cans.  I put those between two small tortillas with low-fat cheese for a quesadilla, or put them with brown rice for a rice bowl topped with guacamole, salsa and whatever salad I have on hand (a la Chipotle), or I make a taco salad with a few tortilla chips on the bottom (could be low-fat or baked or optional altogether), lots of romaine or other lettuce, tomatoes, avocado or guacamole, grated cheese, salsa, sour cream, etc.  Any of these are quick to make and enjoyed by those who love Mexican food.  I also keep good frozen vegetables on hand and microwave them in a glass container.  Too fearful of the plastics to steam them in their bags. My goal this week before my surgery is to cook up some quinoa and some tofu and freeze it.  My husband does not know how to cook those things.

I just finished my neoadjuvant chemo and it looks like you're not far behind me.  Congrats!

    Almond Milk -Wheat Grass Drink

Hi! My research here is still not all in, but I have this (okay busted, I lusted after this) magic bullet blender and I throw in 1 cup of unsweetened (tastes naturally sweet to me and yumm) almond milk (40 calories) and 1 scoop of wheat grass powder (35 calories) -that is easier than growing your own and safer as no molds, whip-it-good and amazingly, I LOVE it. 75 calories. I like it a LOT so I worry it must be badder than I'm thinking. But when I've been feeling wiffy, this is stablizing and nourishing for 75 cals.

I found this awesome broccoli slaw salad in a package in the fresh vegetable area of the supermarket.  It has the dressing and the nuts separately packaged and you mix it all together for the best raw salad ever!  Sometimes I add extra shredded carrot.  We have it at least once a week.  It could also be stir fried with shrimp or chicken.

right before rads, after surgery, my body craved slaw. I was really into broccolli slaw -would go to health food salad bar and get asian slaw, broccoli slow, and regular and walnuts and mix it up.  But rads has really messed with my appetite...

So, for now, taking it slow again, and always -still- always, always asking myself the most important question: "What do I feel like eating?" and listening to what my body tells me.        And if it needs carrot cake, I'm going for it!  But mostly, lately, it says stuff like lean protein, hydration, greens, apples, and sometimes (and this is very new to me, I never used to like chocolate, but then my husband brought home this unbelievable chili chocolate that I like a little bit or so of  -yummm-  now and then) : chocolate!!!

truebff,  I'm going to try some almond shakes tomorrow!

I need to find a good source of organic protein to add to shakes that is non-soy, non-dairy, non-gmo, good tasting enough to make a quick delicious on-the-go meal.  Appreciate any suggestions.

Ladies, thanks for some great ideas!  I'm in chemo and I'm always craving some kind of slaw.  I wonder if our bodies are telling us what we need :)  Loving organic cabbage slaw and organic broccoli slaw with asian (non soy of course) dressing.  At least once a day.

this is pricey but doesn't taste too bad at all.  am going to mix it with some frozen berries in a magic bullet type blender to see how that goes.
