Cooking with Alcohol

I understand why it's important to avoid drinking alcholic beverages due to the increased cancer risk, but what about cooking with alcohol?  Everyone says the alcohol cooks out, but does any of the carcinogenic effect from the alcohol remain in the food?  Does cooking change alcohol to make it less of a risk...or more of a risk?
