Tonight's dinner was the most creamy and cheesy pasta and cheese I have ever made. Thinking calories since I have lost another two pounds! Took the leftover, huge baked sweet potato and mashed it with some cumin and butter to throw in the oven, and then some brisket from a local BBQ spot. Funny BBQ spot. He is a fine dining chef who does BBQ competitions. The sides suck, the sauces are not much better, but his brisket is fabulous! They now sell the brisket by the pound, so that is what we got. Half pound tonight. The other pound tomorrow. Hospital day doesn't start until 1PM which means I will be coming on in rush hour traffic. Ugh. Great to have a leftover dinner waiting.
I don't think I have mentioned that Olivia will be baptized this weekend. They finally found a church where they are both comfortable. I am throwing an after-baptism luncheon. Looks like only 14 people will join us. My mother and two sisters are not in that count. Baffling to be honest. One sister hasn't seen me since the kids' wedding. I thought she would try to spend a bit more time seeing me. Best to have low expectations. Haven't even begun to try on the dresses in my closet, but I have purchased some new Birkenstocks. I bought some gifts for the two godmothers and the mother. Lovely "charms" with Olivia's name. A friend made me one as a gift, and now I have had her make another three. The two godmothers are very special. No godfather.... for some reason they didn't feel like any of their male friends were the right people for that job. Families and friends are complicated, eh?
Carole, glad that you have made it safely to MN. Stocking a pantry isn't cheap, but gosh the alternative is far more expensive. [Side note: I think that people who are newly approved for food benefits should get a "pantry" as part of the approval. So hard to make decent food without the basics like salt, pepper, a few dried herbs and spices, along with flour.] In my retirement, maybe that should be my life "mission." To provide just that.

In my mom's stuff was the aluminum "looks like cast iron" pan with a glass lid that my grandfather used to make popcorn. I have it here. I have a feeling it will take some experimenting to get the stuff popped without scorching.
I also found a plastic bag of somewhat "frazzled looking" flowers with a piece of paper in the bag. The paper had mom's and dad's wedding date on it. When I was looking at mom and dad's wedding pictures, I realized they were mom's wedding bouquet. Today, Sharon and I went out the veterans' cemetery and I placed those flowers on their markers.
Susan, I think family can be more complicated than friends..but that's my opinion. :-)
We got a call today from DD telling us that just got home from an overnight trip to visit a friend in Flagstaff-- 2-1/2 hours distant and several climate zones cooler. She was pleased with herself and so was I. It brought back a few memories of some of my adventures.
Carole, when I was doing the government job, I was in LA, so I looked up your hometown on the map...I-20 is a long way off....

Susan - I don't understand either why your Mother & sisters wouldn't come to the party. Even if they don't agree with the choice of a church, they could come celebrate with everyone - or come to see YOU. But I agree with Eric - family is MUCH more complicated than friends. It's lovely that you're throwing the party. Hope you're keeping the luncheon fairly easy and that you WILL accept help from the guests.

Eric, I remember that cast aluminum cookware—“Club" Aluminum, I believe it was called. You had to buy it in sets (maybe subscription, hence “Club"). Aircraft-grade aluminum. The idea was something that would heat evenly like regular aluminum but retain heat like cast iron, and not discolor from acid foods like tomatoes (nobody knew back then about any controversy over use of bare aluminum cookware). Of course, it never did develop the low-stick surface for which well-seasoned, long-used cast iron was renowned.

Oh Minus. I had never considered that the choice of church was an issue because, let me assure that it is not. Nope. They just can't devote the extra few hours. "We are doing the service and coffee hour. No time for lunch..." The net result is that I won't have any chance to chat with them. The church is pretty mainstream. An Episcopalian church, the denomination that I was raised in, and raised my daughter in. They chose a very small church with a female minister, who happens to be married to a woman, and doesn't feel too overwhelming for Olivia's dad who was raised in a succession of very odd churches.
Sundress for Olivia is almost done. If I make a dress a day, she will have to get a bigger closet. Will have to come up with other ways to fill my days.

We had a reflective Memorial Day.
My husband slowly grilled pork ribs. I contributed bacon-wrapped mini ears of corn and coleslaw.
Here is my coleslaw recipe:
1 bag coleslaw mix
Enough low fat mayo to make creamy
Celery salt to taste
Jalapeno vinegar to taste
Dry Coleman's mustard (about 1/4 teaspoon)
1 - 2 packets Truvia
Mix well. Refrigerate. Eat and enjoy.

So, I am sitting in th Dana Farber Breast Cancer treatment waiting room, and once again, at least 20% of the patients are male. I hadn't mentioned this before, but this is now 15 visits and every time, at least 20%. You can tell which people are patients and which are folks with them since all patients have to wear a bright yellow RSID badge. Fascinating, eh?

One of the ladies on another thread posted this link for "raised waffles". I've never tried waffles w/yeast. Makes me wish I still had a waffle maker.

Susan - when I was doing chemo at Baylor it was about 1/2 & 1/2 men & women. Obviously not restricted to BC patients. Funny tho because you are at a "breast center". I'd be surprised if all those men had BC.
Vicky - thanks for the coleslaw. I don't ever add sugar or sweetener to mine. Last week I tasted a great coleslaw that had jicama & the mix was more chopped than shredded. Maybe water chestnuts too??

I've made lots of waffles with the 100 year old non electric waffle maker..all sourdough, part sourdough and part yeast, baking powder and yeast, baking powder yeast and seltzer water.
The part sourdough and part yeast recipe was my favorite.

Minus, These men all have breast cancer. They do not treat any other diseases on the 9th floor. I suspect that their local hospitals can't manage their care and so they are sent to Dana Farber. For example, at the Beth Israel, right across the street, I never once saw a male patient in the Breast Cancer area. Statistically, it should have been about 5%. So if that 5% goes to the Dana, etc. etc., it begins to make sense.
Dinner was the rest of the brisket, some leftover mac n' cheese and little tiny peas. Strange day at the Dana. I FINISHED EARLY!!! The place was packed. People everywhere. Hard to find parking. And for the first time, I was taken into each bit of my day early and was free to go a full hour before the end of my appointment schedule. Very freaky!

We had a hot dish for dinner last night. I sautéed a finely chopped small onion with 8 oz of turkey Italian sausage. Peeled and sliced 4 sm/med potatoes. Made a chicken stock with herb ox stock mix, thickened with corn starch. Dumped everything with about a cup of frozen peas into crockpot.
I am determined to avoid the canned cream soups and the substitution of thickened chicken stock worked well. The dish was tasty.
Side was a romaine salad with cucumber, avocado, and blue cheese.
There's a new electric stove in the kitchen in the garage. I plan to use it for baking wheat yeast buns. It has a Clean feature and I ran it yesterday.
After some cold and nasty days similar to Louisiana winter, we will have sunshine for several days. Sleeping under a fleece blanket and comforter has been great.
Dh is cooking grits for breakfast

Tonight's dinner was inspired by my pork share. I was given 1/2 a rack of St. Louis style ribs. This is so small that it doesn't justify the whole grill for 6 hours thing. So, I marinated it for three days in a hoisin-soy marinade and then today cooked them in the oven. First covered in foil, and then full bore without the foil. Meanwhile, I had used the bones from that weird sirloin roast in some chicken stock to make a more flavorful stock which turned into hot and sour soup with lily buds and wood ear mushrooms. A bit of rice and that was dinner! We didn't finish either the ribs or the soup, so that will be a light lunch tomorrow. Dinner is a mystery.
My medical team has concerns. My potassium and sodium are not doing well. I am loosing too much weight. I was warned that if these numbers didn't come back, they would take me off Taxol. I managed to get the potassium numbers just [barely] into the normal range and the sodium is almost there. This week I didn't loose weight, but certainly didn't gain any either. My lips are chapped from the amount of salt that I am consuming.... and I love salt. This is hard work folks!
But when I am not worrying about calories, sodium and potassium, I have been investigating my sewing machine. Her Mom has asked for "rompers" so I will go and buy some patterns for that tomorrow, but first I made a cute sundress. I didn't press before taking a picture, but I hope it makes you smile anyhow.

Indeed, Miss Olivia is lucky to have a grandma who sews such cute clothes. Hope your daughter is truly appreciative. I too am sorry about the difficulty with taxol & the weight. Will they consider supplements for potassium &/or sodium? Sometimes it's just easier to swallow a pill. Of course if you sat in a recliner all day and ate banana splits.... But then you'd go nuts. It's hard. We're thinking of you.
I often cook ribs in the oven covered in foil. They are usually very tender.
Carole - I agree - hot dish already? Sounds good though. Kudos for making your own base and not using canned soup.

Brunch was a dozen cold boiled shrimp before I rushed off to meet my SIL at the eye doc. She had surgery last week for retinal detachment.
I was in charge of registration for the first water aerobics class tonight. By the time I got home from the medical center & ran up to the pool, dinner did not happen. Supper at 8pm was some boiled red potatoes & green peas with butter. Too late to even make a white sauce.

Dashed out in the middle of packing (doing the pills is the biggest PITA) to bring home dinner and the wine I ordered last Thurs. The wine wasn’t ready, and they’d run out of the fish & chips I’d wanted. So I brought home the lobster-tail & chickpea salad, tempura Brussels sprouts and SW hanger steak with green beans & chorizo hash. Meanwhile, the Keurig is leaking and now so is the icemaker-water dispenser in the fridge drawer, and the toilet keeps running because my guys keep ignoring my advice to flush completely and then pull the handle all the way up. Bob took out garbage yesterday but Gordy hasn’t done squat (not even taking care of the cats). Constantly cleaning up and bending over to feed the cats and clean the litter boxes. Been running in place to stand still all week, and it’s gonna be 5 more weeks like this. Almost looking forward to airport hell.

I had cold boiled red potatoes. I had hard boiled eggs. I had green onions. Voila - potato salad. I marinated the potatoes & onion in a bit of tarragon vinegar first. I like the sour cream & mayo variety. No celery on hand so I cheated with celery salt and added some minced pieces of English Cucumber for mild crunch. Yummy.
Tomorrow afternoon we are playing dominoes but only doing "light snacks" since the husband of our friend who died in March wants us all to go out to dinner after the game. I'm taking a raw veggie platter w/dip. Carrots, radishes, cucumber, mushrooms, mini San Marzano tomatoes, cauliflower, black olives.

Rough day of travel--left house by 9:30am, started out okay, but got to Midway only to find our fave spot there (a branch of Harry Caray's) pulled out two weeks ago and was replaced by the White Sox sports bar. Smaller menu, slow service. Menu had breakfast stuff on one (top) side....mmm....lemon ricotta pancakes....At 11 am they abruptly stopped serving breakfast. So it was either overpriced weird sandwiches ("Chicago Banh MI," sans paté, "Chicago Cubano" made with salumi (pepperoni, capicolla) w/o cheese--both on a brioche burger bun), salads or quesadilla--which was shrimp & chorizo. At least it was topped with 1/4 avocado. Shared it with Bob, who had a shrimp & kale salad drowning in ranch dressing. Had seltzer, peanuts & pretzels on the plane--with turbulence for dessert. Then we had to sit out on the tarmac & be towed to the gate. Insanely long restroom lines. And LGA's bag claim has one carousel per airline, and the belts moved like glaciers.
Collected our bags only to find out we had to go up a take a bus to a distant small terminal to pick up another bus to the rental cars. The sign indicating that did not mention that the particular shuttle was up on the departure level. Shuttle drivers were surly, didn't help with bags. Got to Hertz, and the board mentioning my name said to proceed to a particular row and choose any car in it. The attendant followed behind. "No, that's an SUV. No, that's premium." I had reserved a standard full-size with GPS & XM radio--and all the cars in the row had one or the other or neither. Finally picked a Camry in an adjacent row, which had GPS, and the attendant said that'd be fine. I said I wanted the fee for XM taken off my bill, and he said the exit booth attendant could do that. So drove to the exit (after three attempts to pair my phone) only to find out there was a "hold" on that car and a manager would have to come out to the booth and remove the hold. Took half an hour to get out of the airport and on to the Grand Central Pky; and another hour along it (becoming the L.I.E.) to reach the hotel...at 6:45pm. LaGuardia truly is the seventh circle of Hell.
No valet in sight, so we emptied the car of baggage, Bob put them on a luggage cart and I circled futilely to find a spot that wasn't either HC or for electric cars (saw 4 Teslas on the highway--guess they're more popular out here) until someone pulled out of a spot and I grabbed it. Hiked back to the front entrance and the desk clerk told me that Bob had already checked in and found a bellhop and that since I was their 1000th VIP rewards member I could choose a bottle of wine, a free breakfast for two, 2000 points or concierge-lounge access. Well, duh. I took the latter. We had pulled pork quesadillas (the hot dish du jour), hummus, crudités, cheeses, crackers, pita chips, berries and beverages: free cappuccino but had to pay for wine (I had a split of Mumm Napa Brut Prestige). As the lounge was about to close at 7:30, the attendant announced that dessert was served: mini-cannoli, eclairs, cream puffs, cheesecakes, cookies and Napoleon slices. Had a cannoli and mini-eclair, a decaf cappuccino, and brought a cookie upstairs. Bob decided to go back down to dinner at 9:30. I demurred--I'm stuffed.
Our room is a long winding walk from the elevators. Between that, the airports and the walk from the far end of the hotel parking lot, you'd think I at least got my Fitbit steps. Nope--woke this morning to find the battery dead, after fully charging & syncing it last night just before putting it back on my wrist. So I am wearing my cheap Timex (couldn't find the good Seiko). Tomorrow we have to meet friends for lunch at a deli near Penn Station (hope the hotel shuttle can get us to the nearest LIRR station and pick us back up at night--NOT driving into Manhattan on a Friday, certainly not paying a king's ransom to park). So Sat. morning I'll have to go over to the Apple Store at Walt Whitman Mall and buy an Apple Watch--adios, Fitbit. (The Surge's rubber band gave me a rash and second-degree burns, and the Blaze's battery stinks--and never easily synced when changing time zones). The Apple Watch will do everything the Fitbit does, and look better doing it.

Dinner last night was two large walleye fillets, a gift from Greg and Denise, new resort folks. They're "full-timers" newly retired. They sold their house and are living in their large camper. They will winter in FL.
I seasoned and panfried the fillets in a small amount of EVOO and a pat of butter. Made a tartar sauce of mayo, dill relish and horseradish sauce. Side was small boiled white potatoes with butter and sour cream. The walleye had a few bones and must have been a large fish. Not the best we've had.

Whew, it has heated up to high 80's today. I'm sitting out on the deck under the awning sipping iced tea. Fortunately a breeze is blowing.
A large chicken breast is thawing. It will be turned into fillets for dinner. I may use the burner on the grill to steam yellow squash for a side and pan fry the fillets in an iron skillet. There will also be a romaine salad with additions.
Susan, sewing little clothes for a small girl seems like such fun. I would enjoy that, too.
I will purchase a few kitchen items. A stock pot and a cookie sheet or two for baking buns. I was gifted a turkey carcass last weekend. Actually I saved it from being thrown away. It 's in the freezer. My largest pot is 6 qts.
We took our boat out on the lake this morning and enjoyed nature sightings: a large eagle, a deer on the shore, several loons. We anchored and wet our fishing lines. I caught a "bullhead" which resembles a catfish. He was happy to be released.

This is always the problem with the "simple" dress patterns– no real "fit." However, she loves fluffing the skirt. Too cold today to wear alone, so she wore it over her shirt and leggings. Dinner tonight is burgers with, you guessed it, sweet potatoes!
Met the kid for lunch yesterday and enjoyed an excellent Thai meal. Just the right amount of spicy. They have added an affordable lunch menu, so I might find an excuse to head to the 'burbs more regularly at lunch time.

I had a long post and lost it. I had endovenous laser on my left leg on Wed - incompetent veins had been making my ankle and foot swell. I had two bad veins and one varicosity treated. Awake for the procedure, local anesthetic, wrapped in gauze and a tight ace from hip to toe and have to elevate, so no cooking. This was the last thing on the list of "maintenance" items I had put off during all of the recon surgeries. I will do the right leg in the fall. I'm in compression tights now, and can move around well. Still waiting to hear on the MOHS scheduling.

Susan - she is absolutely the queen of everything. Look at that regal look!!! And I love the dress. It's been many years since I got out my sewing machine. In fact with the CIPN (chemo induced peripheral neuropathy) in my fingers, I can't thread needles or sew on buttons anymore. Most annoying to have to take little everyday repairs to a tailor.

I went to my first water aerobics class of the season. The sun was out, the water was tolerable and we were soon working way too hard to be cold. So now I have Silver Sneakers exercise two days a week & water aerobics 3 days a week. Good for me if I can keep up!! Leftover lunch followed: one ear of corn, one boiled egg, 7 bites of potato salad, one LARGE Cherokee Purple heirloom tomato. I have no idea about dinner.

No supper tonight...late Linner with my mom and cousin after cousin and I walked about 3.5 miles this morning...she lives about an hour away so it was great walking and visiting- she did most of the talking then as she is in shape and I am working on that.
