So...whats for dinner?

Susan, ouch.Olivia is adorable.
Im glad for all the good test results.I got one that's not that terrible but Im a bit upset. Well, you know me! If theres a weird complications, ill find it I had cataract sx last year and just went in for a checkup. Yep. An unusual thing in my right eye that cant be helped by the laser tx they thought would work. My eye sees kind of like before the cataract sx. Color changes and sight not as sharp - seems my eye doesn't like the lens and i have a sort of wrinkle in my eye liquid it makes it like a large floater, like a brown band across the field of vision. good news is it wont get worse. Even better news is it might break up a bita bit or move out of my field of vision. Sigh i just noticed the changes last week so this is new out of themillions of cataract patients, i had to be the one. Sigh at least it wont progress and its only one eye. Thats good, right? LOL!
TERIYAKI chicken tacos with pineapple and cucumber salsa yes, from Plated its good.

Yikes, Susan! Hope it gets yellow quickly, then disappears!
I, too, was of the baby oil/iodine generation....and always had June "blister back" after our first of the season foray onto the Jersey beaches. Yesterday, my derm doc let me know that my facial actinic kerotoses that are getting quite ugly, were a result of my years ago cavalier beaching. Since I was not dealing yet in cancers, I shared that it was worth it and she laughed, too. We'll see how long I sing that tune!
Carole, I'm glad your travel North is going well! Hope the trailer is without furry "interlopers" when you arrive. I bet it was a lot easier to get started for this trip! Wishing your mother speedy rehab so she can get home if that is what she can manage.
Nance, I do not envy the task ahead of you, so am glad that at least your dad is content about his new digs. You are such a good daughter!
Today, I rewrote my class social skills lesson on "emotions" for the K kids since I always have to abbreviate my already established lessons to fit into half the time for which I developed them. I sort of feel like I am machine gunning info at the kids. Oh well, I have to remind myself that at keast they are getting "something".
Tonight we chair shopped again, and actually found one to fit the bill. DH loves it! So in a week we can get rid of the striped monster he has been attached to for several years. Coincidentally, a neighbor sent us and a few others an email that they rented a dumpster, which we dan help them fill up! If chairs are dumpster allowable, this one is going there!
After our chair purchasing trip, we came home and ate an assortment of leftovers and some popcorn. OK ...last of the ratatouille, last of the spaghetti squash/kale, some raw cauliflower and hummus, some crusty bread with cherry preserves (really!), and dessert of popcorn. What a "meal"! LOL
IPAD going dead, so submitting without proofing....
Eric, hope you were nowhere near the shootings today!

I was also a serious tanorexic back in the day. My mother's secret to the perfect bronze color was a mixture of olive oil and iodine. I would sit for hours in the summer baking like a chicken. I also used one of those sun reflectors. Oy.
Minus, don't beat yourself up. This was before the connection between sun damage and skin cancer was known, kind of similar to smoking in the 50s. Why is it that the most enjoyable activities (I quit smoking 8 years ago) are the worst for you? Where in CA did you grow up? My husbands family moved to Galveston from Italy when he was 16. DH went to Rice, and loved it. Houston is a great city.
Susan, yikes! The phlebotomist that drew your blood last week needs to go back to school
Not sure what I'll make for dinner tonight. Maybe turkey shepherd's pie or poached salmon. I'll see what appeals to my dad.
-
Hsant - I grew up in Palo Alto before there was such a thing as Silicon Valley. Those hills & valleys were covered with cows. We have some interesting parallels. My son went to Rice. I quit smoking 9 years ago.
Used the 'spiralizer' for the first time last night and made a ton of zucchini noodles. I steamed them lightly & added butter & salt. Yum. After my big Japanese lunch, that's all I ate.

I love all the cute babies, I want to hug them! :-)
OUCH Susan, I agree, they need more schooling! :-(
What a beautiful kitty Pris is and the flowers! I have to admit I noticed Pris first :-)
My mom and I are sitting at her dermatologist now. She has 2 different types of skin cancer on her face and having the worst spot removed. I'm hoping they get it all on the first try. I'm also one of the tanners. I just got my tan from all the horseback riding in a bathing suit I did as a kid. Which was for hours everyday! My sister never tanned, she'd burn then back to white again. All I have to do is step out the door and I get an instant tan. I had my school believing I was half Indian and adopted! They called my mom to get my medical history! Mom asked what I was thinking? I asked her what were the teachers thinking? Their the adults! Mom and I laugh about it still to this day.
I'm not sure what's for dinner yet, probably leftovers.
I hope everyone has a great day!

Just came back from my dermo today--during my routine screening mole-mapping, she found a colorless possible basal or squamous lesion (but she says probably just a seborrheic hyperplasia) on my lower R temple and a probable dysplastic nevus (possible melanoma--highly irregular and asymmetric, variegated pale-tan-and-golden-brown splotch) on my back. She sampled the face lesion (and removed the oil gland) and removed the entire back mole for biopsy. Gotta keep both locations dry for 24 hrs--so will have to “wash” my face with cleansing wipes and the rest of me by sponge-bathing (I’m not that accurate with my handheld shower).
Gotta cook the rest of that salmon--and it looks like grilling weather--so I will saute some ramps and peppers to go with it.
-
Must be derm week. I just got home from a 6 week call back after my regular 6 month full body check. She wanted to check & re-freeze or biopsy several places on my face. Of course she also found several new pre-cancerour lesions. Luckily no biopsies today. Just 12 more frozen places.

Olivia is so adorable......so sweet, you can almost smell that baby powder sweetness.....
Susan so glad your TX is working and I hate the site of your blown vein, I'd wear whatever and dare anybody to say a word.......
Yesterday my left shoe flet too tight. Today my foot is hurting so bad I can hardly walk, so I go the walk in clinic around 1pm and wait my turn, see the doctor, who sends me to radiology, where everyone has gone into a meeting at the same time and patients are stacking up but I am 1 on the list. Some left, but since I had paid my co pay for doc on call, I couldn't just leave. At 4pm he says he doesn't see any cracks, fractures, gout or spur along the outside edge, but the radiologist will read it tomorrow and let me know. I n the meantime, ice, elevate and a steroid since I am allergic to anti-inflams.........I don't have time for this.
So I met a friend for dinner and had grilled salmon , baked potato, garlic green beans and a small hot fudge sundae. Feeling good except for the foot.....HA... My pal looked at me after she ordered water and said YOUR NOT DRINKING?????....why do my friends make me feel like an alkie---I only gave one drink usually when we dine out about every month .or two......They don't know what they are missing........
Everyone have a glorious long weekend and don't forget to thank a vet.
-
Thanks Red, my hubby really appreciates when people thank him for his service to our country!!!!
-
Red, your post made me Lol! I always have 2 glasses of wine when I go out to dinner, or two Grey Goose martinis if I'm not driving. And I agree, your friends don't know what they're missing.;)
Minus, northern CA is beautiful. Rice is a small university. That is a coincidence. Wishing you the best for clean results at the dermo!
I found a roasted tomato soup recipe on this thread from a member who goes by the username, seasidememories. This was posted early on when this thread was first created. I'm going to make this for dinner and grilled Brie sandwiches. Here's the recipe for anyone interested.
Roasted Tomato Soup
Ingredients- 2 1/2 pounds fresh tomatoes (mix of fresh heirlooms, cherry, vine and plum tomatoes) - I used about 6 romas and 1 1/2 pints of grape tomatoes that I had to use up
- 3-4 cloves garlic, peeled
- 1 Large yellow onion, sliced into thick (1/4 -1/2 inch or so) slices and NOT separated into rings
- 1/4 - 1/2 cup extra-virgin olive oil
- Salt and freshly ground black pepper
- 1 quart chicken stock (split use)
- 2 bay leaves
- 4 tablespoons butter
- 1/2 cup chopped fresh basil leaves, optional - I did not use but, have in the past
- 3/4 cup heavy cream, optional (I usually use 1/2 and 1/2 but, milk would work, too)
- Prepared Horseradish, optional
Preheat oven to 425 degrees F.
Wash and cut the larger tomatoes into halves. Any of the smaller tomatoes like, cherry or grape, can be left whole. Put the tomatoes in a large storage bag or bowl and add some the olive oil and toss to coat. Spread the tomatoes out onto a baking tray lined with foil. Repeat with the onion slices and garlic cloves taking care that the onions don't fall apart. You want to keep the slices whole and not individual rings, if you can, because they will burn if separated. I usually use a separate pan for the onions and garlic because they are usually done before the tomatoes and you don't want them to burn. Sprinkle with salt and pepper. Roast for 20 to 30 minutes, or until caramelized.
Remove roasted tomatoes, garlic and onion from the oven and transfer to a large stock pot . Add 3/4 of the chicken stock, bay leaves, and butter. Bring to a boil, reduce heat and simmer for 15 to 20 minutes or until liquid has reduced by a third. (I don't worry about how much it has reduced, I just give it 20 minutes).
Wash and dry basil leaves, if using, and add to the pot. REMOVE the bay leaves (I forgot this step once). Use an immersion blender to puree the soup until smooth. Return soup to low heat, add cream and adjust consistency with remaining chicken stock, if necessary. Season to taste with salt and freshly ground black pepper.
If the soup still needs a little something, add a bit of the prepared horseradish. Not enough to make it spicy but, just enough to give it a little zing.- Edited: to add the part about the horseradish

Pork chops, mashed potatoes and a veggie

Sweet, hsant! I remember seaside memories well. Nice to see her soup recipe again.
Last night I came home late after a marathon clothes shopping event at my favorite store that gives seniors a discount on Thursdays in addition to their already great prices. So I should be set for summer except that my dresses are all a bit snug, which Is not the way I wear clothes. Ugh.
So I will take the least snug one to wear to dinner tonight to meet the parents of DS2's DGF. Guess I won't be eating much!
When I returned home last night, Dh had grilled the chicken I left and actually made a salad, so I enjoyed them around 9PM!
DGF's father is retired military, so I will be sure to thank him for his service!
Have a good long weekend all. We will head up to the lake in the AM in time to make the neighborhood association meeting, and probably stay into Tuesday.
-
Another Friday has arrived! My mother is back down following some meetings in southern NH to visit her great-grandchild. She is clearly finding reasons to be "close" by so she can watch this child grow up. Tonight, after her Olivia-fix, she will come here. I am grilling [well the meat whisperer will do the grilling] lamb chops and I will be making some Saffron rice and steamed asparagus. Again, local asparagus, so a true treat. Depending on how much my mother purchased at the farm, I might make a green salad as well.
My mother knew as early as 1955 that sun caused skin damage that was dangerous. How she knew? I have no idea. We were NEVER allowed to be out in the sun between 11 and 2pm. We were never allowed to play outside without sun screen. I had exactly one burn during my childhood, and I can assure you, as the daughter of a red head, I never had a tan. Even so, I had to have something removed back in college, but nothing since. I hated that my mother didn't allow us to have the baby oil and mirrors and all the stuff that everyone.else.in.the.world had, but now I am grateful.
Lacey, good luck with the other parental units tonight. I bet you will look great even if you feel a little snug. Where are you going to eat? [I am assuming that the kids aren't cooking.]
Special, how is your infection/allergies/surgery recovery coming along? Think of you often.... and still really hope that your career as a frequent flier surgical patient is coming to an end.
Minus, how special that your Japanese place was still good after 10 years. I haven't gotten back to the one here. I understand that there is now a very long wait for a table at both lunch and dinner.
Hsant [boy does spell-correct think that is a problem] How is the soup? I have made more different tomato soups and none of them have made me happy. Funny that something that should be so easy is a mystery.
Red, any relief for your feet?
Mother has arrived.... time to make her the center of attention!

For the roasted tomato soup: I did change this up a bit. I used organic vine tomatoes. Heirlooms are not quite in season here. I roasted the onions, tomatoes and garlic together in a combination of olive
oil and a stick of unsalted butter. I roasted the cloves whole to prevent burning. I also dropped the oven temp to 350 degrees. 425 seems a little high. I used a full cup of heavy cream, i left out the horse radish.

The freeways out of town, according to one radio station traffic reporter, "Pack a lunch, dinner and a breakfast for tomorrow. You'll need it."
Some of the roads have 25-30 miles of barely moving traffic. I'm at home where it's nice and quiet, although it did take me over 2 hours to get home from work.
-
Glad I did my traveling last week, and Bob’s working this weekend. Going to friends, who are grilling, on Mon. Stormy tonight--cooking salmon indoors tonight (pan-seared), stir-frying snow peas, asparagus and bell peppers. (Will nuke some “ready rice”--yeah, I know--for Gordy so he can have a starch). Might leave the rest of the rosé in the fridge for Bob and Coravin a good Pinot Noir (considering a Jean Farris, from KY or a Sandhill Crane, from MI).
-
chisandy - hope the skin stuff is nothing serious. At my last six month check they actually carved nothing off of me - a first over the last several years!
DH just had scrambled duck eggs for breakfast - he's a fan.
susan - sorry for the blown arm access, it always annoys me when that happens - particularly when the person causing the problem does this all day long. One would think they would be better at it. Allergic reaction finally under control - turning point was Thurs, had a good second post-op on Fri. I appreciate the thoughts - warms my heart
-
Special - HOORAY for the good 2nd post op. Still - just take it easy & don't over do.
-
minus - thanks! I actually getting really good at doing a minimal amount. Probably didn't hurt that I seriously overdid just before surgery - I actually was tired. Throw in the complications and I have been content to lay low. I have a backlog of magazines that drives my DH crazy so my "job" has been to go through them - I'm ripping out recipes and travel stuff, then make a little pile once I'm done that DH puts in the recycle bin. Everyone is happy!
Dinner last night was a non-event. I did make waffles and sausage this morning, with strawberries for DH and I. DD and her BFF are in Savannah for a girl's weekend. I think they are coming home a day early due to weather and they will either go out on the boat tomorrow or paddle board with DH
-
We had the Memorial Day potluck dinner yesterday afternoon at 4 pm. Turkey roasted on a charcoal grill, baked beans, potato salad, cheesy potatoes, chocolate lasagna. I made a cabbage slaw with napa cabbage, fresh pineapple and apple. All the food was palatable but unremarkable. The Memorial Day weekend weather has been damp, cold and rainy, completely in tune with the disgruntled mood of the majority of the weekenders. The absentee owners of the resort raised the rent and are charging guest fees, which dh and I as the new management are required to collect. It's not easy to run a loose operation and then start running a more business-like operation and expect people to be happy with the change. In the past no one registered guests and no one paid any fees.
Having arrived here with very little in the way of groceries, I went to Walmart on Friday and spent $270 getting the basics and about four days of meat and some veggies. Friday night we had a ribeye steak cooked on the grill and small boiled potatoes. Tonight will be either Nathan's hotdogs or brats and a salad, which could be another slaw or a romaine salad with add ins.

I am sitting here with feet burning. I have officially overdone for three days in a row. When will I learn?
On Thursday, seven hours at IKEA and much of what we need to start a bed and breakfast has been sourced. I paid to have much of it delivered. My car can hold quite a bit, but not that extra 222 lbs of furniture flat-packs. Can't even remember what we had for dinner that night. Yesterday, my mother came to visit. Somehow, when she is in the house, I have to move quickly lots. No offer to help with setting the table, or getting the water, or carrying the serving dishes to the dining room. Just doesn't occur to her! And then she eats and smiles and say "It is so easy for you!" Umm.... only cause you didn't notice how F*CKING hard I was working! That dinner was excellent. Grilled lamb chops, fresh local asparagus, and saffron rice with a freshly opened container of Saffron I brought home from Spain last year. Today I made some ciabatta, roasted a ton of vegetables, braised some lentils and made a large fennel and orange salad. The whole shebang, plus fresh mozzarella cheese, pesto, and a fresh tomato were stashed into a bag. Then I delivered it to the other new mom I know. This is my second delivery to her, and my last. Her baby is also fussy at 5pm, is a bit suckle challenged, and adorable! I didn't get to hold her since she was trying to feed and crying at the same time.
I have poured myself an adult beverage. My feet are on strike. Hope everyone is enjoying their long weekend.
*susan*
-
Carole - Glad you got there safely. Sorry you are having to be the 'bad guys'. What in the world is chocolate lasagna?
Susan - sorry about your feet but YAY for the adult beveredge.
Went back to Laurenzos with another friend. Excellent Castle Rock Pinot Noir from Oregon. Spinach & Arichoke dip for appetizers. She had breaded pork chops with sweet potato fries and the waiter ask "two or three" chops. Good heavens, two almost required 2 plates. I had the prime rib french dip again with a side of fresh asparagus. Even better than last time. Both of us are taking 1/2 home for tomorrow. Even though we were stufffed, we couldn't resist ordering a slice of fresh strawberry pie with white chocolate ganache split to go. It didn't even make it into my fridge in spite of how full I am. Yummy.
-
Special, it's nice for you to remain productive in a quiet way! It is good to be able to clear out those magazines without worrying about what else you should be doing!
Carole, it must be extra hard to be the newly annointed "enforcer, especially on a rainy long weekend. Oh dear... I hope the weather clears soon for your own enjoyment!
Minus, that dessert sounded binge worthy, for sure.
Susan, I'm sure your mother enjoys your wonderful nurturance as much as seeing her great granddaughter....you may have a frequent B and B guest! ;/
We are at the lake....have not been "in" it, but lots of neighbors were yesterday since it was 94 degrees!
We had our beach association meeting, right after we arrived here, then an appetizer beach party to re-connect. It was fun, tho food was pretty unremarkable 'cept for the wonderful sausage stuffed jalapenos wrapped in bacon and grilled which the couple across the street makes. His teen daughter obviously remembers that I am a fan so she sought me out as the supply was getting low so I could enjoy one. Oh my! Love that family! After the beach gathering we actually went out for dinner! I had a lobster roll and garlicy (sp) broccoli as a side instead of fries. Yay! Both good. Then our friends and DH and I both ordered molten chocolate cake to share. My dresses will not be getting any looser!
Today much cooler, still humid...not a beach day! Good for walking tho.
We made a trip to the grocery store to get some salad fixings and a dessert since we were planning to have dinner with our same friends down the street and that was what I was bringing. I decided to try to replicate the wonderful salad that we enjoyed at the wedding last week. What made it unique was added avocado and crabmeat to the lettuce, cuke slices, carrot shavings, scallions, and heirloom tomatoes. I was able to score a wonderful red leaf lettuce, which was just like I had at the wedding, and I made a horseradish vinaigrette, which was perfect with it. I placed it on a large platter instead of a bowl, so it was pretty, too. Our friends made grilled chicken, and we also brought Florida corn that was wonderfully sweet! For dessert we bought store made eclairs and Talenti gelato. I'm hoping the salad cancels out those othercalories!
We did go to dinner with DGF's parents at Ocean Prime on Friday evening, and while I do not like the concept of such overpriced restaurants (same as Morton's), we enjoyed ourselves. I had four (not very large) sea scallops over risotto. DH had grouper and really liked it. The funniest thing tho was that after dinner while none of us ordered dessert, the waiter came over with a large piece of carrot cake with a chocolate medallion on it inscribed with "Congratulations!" He obviously knew that parents were both meeting for the first time, and assumed that which I guess happens there often enough! It was more humorous than embarrassing, and we all made sure that DS2 checked it out!! That said, we still do not know who is most wanting to be in the "holding pattern" in which these two remain.
I am hoping that everyone who is experiencing the bad rain storms we keep seeing reported on TV is safe!
-
susan - sorry your mom is blind to all that you do, that is hard and not fair, and makes one's feet hurt. Glad you are enjoying an adult beverage - hope it does the trick.
-
Perfect weather today. Friends grilled today rather than tomorrow. They provided ribeye from Costco, grilled mid-rare over hickory chunk charcoal, and simply grilled corn on the cob. (Good call on my part not to make elotes). Another friend brought deli potato and macaroni salads. I made an insalata Caprese, with vine ripened tomatoes (store-bought, since my Early Girl plant isn’t bearing yet), basil from my garden, and mozzarella “pearls.” dressed simply with sea salt, pepper, a drizzle of aged Balsamico and a mild Genoa-style domestic EVOO. Then a fennel slaw: one bulb thinly sliced fennel, mixed with a few handfuls of finely chopped fronds; two thin slices each from a large red and Walla Walla sweet onion. I then zested a Cara Cara navel orange, peeled & sectioned it, coarsely chopped the sections and threw them in along with the juices that ran off. Added some grapefruit balsamic vinegar to bring up the brightness, then blood orange olive oil, sprinkled with Sicilian orange sea salt and a couple pinches of cayenne. Dessert, made from scratch by our hosts, was classic strawberry shortcake: a giant biscuit split and cut into wedges, hand-whipped cream, and fresh strawberries tossed with a little sugar.
-
Have a lovely Memorial Day
-
The weather here today is about as perfect as possible. Friday I took some stuff out of the freezer and will probably grill it.
Yesterday Sharon and I duplicated our first date--driving from Prescott, AZ to Crown King, AZ along the Senator Highway. Highway is somewhat of a misnomer though. :-)
Susan, that's too bad about your mom not recognizing the effort you put forth. I hope that she acknowledges other successes of yours.
Special, that sounds like a good way to still get something done, not go nuts and still relax.
-
eric/lacey - yes, I am clearing out the magazine pile, slowly but surely! I also binge-watched some stuff on my DVR - the Rx antihistamines meant I was not very motivated to do much, so did not develop cabin fever until the last couple of days.
auntie - beautiful pie!!! I want it!
-
Nance...cherry, rhubarb? Whatever....gorgeous!! And I'm sure soooo delicious!
We are supposed to be getting rain but Mother Nature has bestowed on mid NH lake country the most perfect of days, sunny, warm, dry, and breezy. We took a nice walk to the local store to get some deet, then to the marina guy to set up a June date for our boat to be summerized and "launched"....a task DH has decided to contract out after so many years. Now relaxing on the deck before heading into town to check out a screen door replacement. Second homes are a privilege and a pain. We are not setting up our outdoor spaces yet since the pollen deluge comes in a bit later here.
Did I mention that I saw a hummer hovering near our deck yesterday....announcing their arrival, obviously! So I immediately made some food and we hung one feeder out ....but he has yet to return. Waiting patiently....
Saw some nice flatiron steaks at the store, so will pick one up to grill for dinner, along with a nice salad with the lovely lettuces I bought yesterday. Posting a pic of the salad I enjoyed recreating from what I remembered from the reception dinner. Obviously those were on individual salad plates, but this one for our dinner last night was on a humongo platter since I transported it down the block.
Special, good thing that the antihistimine took away some of your boundless energy. Sounds like it did the job of "encouraging" you to relax!
-
Cherry. Sadly, I've run out of sour cherries so it's the last of its it's kind until I get to Amish country. I'm having a problem with my crust crawling in this particular pie plate so it's not as pretty as I'd like.
Beautiful salad Lacey!
Typical bbq fare today -- ribs, grilled burgers, baked beans, deviled eggs, coleslaw, watermelon and of course, cherry pie with homemade ice cream. All shared with a couple of friends.
Lacey, it has taken quite a while for our hummer numbers to increase. They've been slow to arrive for some reason this year so don't be discouraged!
Got some (more) bad news about dad -- apparently he has congestive heart failure. Sigh. Not surprising, but definitely a setback. I'm not even sure what it means for the supportive living placement. We'll see what his cardiologist says next week.
Susan, take care of those feet! DS and DDIL are much the same way as your mother. They very much enjoy the service (they refer to our house as Chez Nancy) but it never occurs to them to offer help. I finally just started giving them assignnents. DH hasn't gotten to that point, so continues to get frustrated.
Carole, good luck with the new job. Hope it doesn't interfere too much with your summer.
