    Eric's recipe for his Chicken and Jasmine Rice Dinner is on p. 620.  He was kind enough to PM me that information.  I now have a Word document with the recipe.

    Carole, that's great to have an actual page number for a recipe...rather than hunting the proverbial needle! Thanks! :)

    The dinner at Fenway was good....much of it I ate with my eyes...:/, but did enjoy some grilled beef tenderloin, interesting sauteed vegetables, and baby greens salad. The eye food items included sumptuous lobster rolls on toasted buns, Legal Seafood clam chowder, a wonderful cheese tray, and tortellini with a carbonara sauce. Desserts pretty basic except for cheesecake squares with apple crunch on top, which I broke my dairy free status to try after the strong recommendations of my tablemates. Good thing Ibworked out a lot this AM. It was soooo good! It was so weird to be at Fenway with a brightly lit empty field...the Sox are busy losing games in Cleveland. :(

    I snuck out for chinese. Hot and sour soup and Teriyaki beef sticks. 

    Tomorrow I am having a pot luck lunch at my arthritis swim class instructors home. Nice ladies lots if fun. I am taking a spinach salad with grape tomatoes and chicken. I'll make a dressing with a Blood Orange infused olive oil and raspberry balsamic vinegar dressing. It's absolutely delish. I just hate using up my blood orange oil.... LOL selfish I know! But I only have the sample bottle of it right now. I've got to make a trip and load up on that and the lemon infused oil.

    This is my week to meet friends for lunch.  Had Chicken Piccata at a new Italian restaurant yesterday.  Lunch came w/bread & a salad for $11.00.  I'll go back, but not in a huge rush - if that makes sense.  It was good but didn't knock my socks off.  The best part was the build-out.  High ceilings, exposed beams, clerestory windows, slate floors - what I would imaging as an old Italian cottage.

    Going for Italian again tomorrow.  Different friend - different direction.  Houston is a huge place & the first restaurant was South.  Tomorrow I'll head North to Tomball to meet a friend who's driving in from Lake Conroe.  We choose the Italian restaurant because we know we can sit & visit in this place for a long time & no one will get upset.  I've been there before so I'm looking forward to linguine con vongole (clams in white sauce), but may have to switch to shrimp & vegetables in Alfredo sauce.  Or filet of salmon w/creamy tarragon sauce.  Or substitute filet of sole for salmon.  Or listen to this one -

    Sautéed breast of chicken on a bed of spinach with melted cheese,
    roasted Pine-nuts & Alfredo sauce served with fresh green vegetable

    For heaven's sake - it's 11pm and I'm hungry.  Shouldn't have started looking at menus.  Or maybe because tonight was water aerobics again.  I ate at 5pm and went to the pool at 7pm.  Hard work out since I've done nothing in the way of exercise in over a year.  Just had 2 radishes but I don't think that will cut it.  Oh, oh.  I hear chocolate calling.

    Moon, while I rarely have Chinese food, your choices are my two favorites! 

    Your salad sounds perfectly yummy, and what a gift to use your last bit of blood infused olive oil.  Makes it extra special! :)

    Minus, that Italian restaurant sounds like it's THE place for me!  I'm tempted to drive to Houston and meet you for lunch.  Enjoy.  You deserve it.

    Moon, the flavored oils and vinegars are easy to find now with the popularity of the Oil & Vinegar stores.  I have one about 5 min. away.  I'll bet you have one within a few miles, too.  My favorite combination is champagne vinegar and lime-infused olive oil.  It is really delicious, even on the fingertip! 

    Off to the gym this morning with dh.  Then an annual apptment with bc dr.'s NP for an ultrasound of chest and underarms.  Always that tinge of worry.  Then after that I'll take my 91 yr. old mother to her weekly hair apptment for shampoo and set.  Today a trim, too.

    My bathroom scales were so kind this morning after being unkind for days that I'm wondering about the accuracy.  Maybe I should have rotisserie chicken and salad for dinner every night!!

    Carole - keeping you in my thoughts this morning while you have your ULS.  You're right - we'll always have a twinge of worry.  Like that old saying - once bitten, twice shy.  

    Sayings are interesting.  I did have to go look that one up.  Originally related to dog bites.  Now usually ascribed to falling in love.

    Tonight is spaghetti and meatballs. Meatballs already made and frozen. Easy.

    Have a few minutes before I leave for the apptment. 

    Had a flash of inspiration.  I'll make Eric's Chicken With Jasmine Rice dish with the leftover rotisserie chicken.  As usual, DH and I ate the legs and wings and back and the breast was untouched!  I have a bag of brown jasmine rice I bought a while ago and have not cooked any of it. 

    Nancy, isn't it nice to have those home-made meatballs in the freezer?

    Yes it is Carole! I usually have the sauce made too, but I've gone through it lately. Still have two big cans of San marzano tomatoe so that will replenish my stock some.

    Lacey- Yay on your DS stopping by with his girlfriend.  I nice distraction for your nerves.  You will figure it all out- you are one smart cookie.

    Joyce- Welcome back!  I have missed you.  It sounds as though your hands are full taking care of your parents.  Remember to take time for yourself.  Glad you are keeping in touch with Michelle's DH.

    If I saw one of those snakes I think I would poop my pants- I don't even like seeing garden snakes!  The conversation of weird food that everyone has eaten was fun to read- Carol I think wins for eating the most critters!

    Ds slammed the lap top screen the other day when told to get off the computer and trashed the screen.  I hooked the lap top up to a different screen finally so I have a computer again.  I will have to shop for a new lap top.  Last night must have been meatloaf night because that is what we had too.  I love meatloaf.  Tonight we were supposed to be going to DS2's baseball game but he is having some tummy issues so we are home for dinner.  I am thinking maybe steak, salad and baby red potatoes.  We will see what DH feels like when he gets home.

    My SIL is back in NH for the summer with her son who is 21.  They have rented a very small cabin right on lake Winni for the next two months.  The view is amazing and it is steps from the lake.  We spent last Sunday there all day.  A friend of ours is taking advantage of a free dock space and has left his boat there.  Bonus for us as we get to use it when we go up.  I think we are planning to spend this Sunday there as well.  This is just what she needs after going through so much with her mothers passing.  It is very peaceful there and close to all of us- about a 40 minute drive.

    I hope everyone is doing well and I plan on trying to keep up from now on!

    I had to laugh that the salsa chicken recipe is alive and kicking!

    My apptment couldn't have gone any better.  No problems detected! 

    The chicken and rice dish was delicious.  Thank you, Eric!  When I was in the kitchen tonight making the dish, I said, "We're having Eric's chicken and rice dish."  DH said, "Who?"  LOL!  The toasted pine nuts add a wonderful taste.  So does the cilantro.  A couple of changes.  I forgot about sautéing the onions to cook with the rice.  Also, dh had chopped green onions as a garnish on his helping.  I had black grapes in the refrigerator so I used those.  This will enter the menu rotation.  I think you could throw in chopped celery, grated carrots, grated Italian cheese. 

    Tomorrow night we eat out for dh's birthday dinner no. 1.  Yay!!

    Minus radishes should be pounded into a pulp and then covered with chocolate

    I haven't been really "cooking' but stocking up and making brown rice and cooking dried black beans so that I have frozen bags of them for recipes Many. So much better than the canned ones with all the salt and weird ingredients

    I have also bought a lot of whole grain pasta and pizza so that I can top it with my vegetables

    Here is my little senorita pizza head who loves my concoctions

    Laurue. Ah yes. The computer not letting go. Many times. I'd say it gets better, but my DDIL tells me he still plays too long! LOL

    Carol glad your tests were ok. 

    My port flush and mag test were ok..2nd time now so 3 months without Mag infusion! Yay. Still on 4 mag pills a day though. Will have to wait a while to stop those. LOL BP was 110 over 59. I let them take it on my R arm because my leg was not giving good ones any more. And they won't be able to use it anymore anyway with a knee replacement. 

    Everyone loved the salad. There was a lot of food at our Arthritis Aqua class Pot luck at the Teachers house. All of it was good. One of the hits was simple. Grape dipped on the bottom in melted white choc with peanuts and set up. Yum! Way better than it sounds!

    Laurie, just to prove you were right in outing me for night owl habits, here I am posting when I should be snoring! 

    Very busy day with a few events with my volunteer grp and my former school colleagues. Way too much relational stimulation for me!! Managed not to eat myself silly, (food at both places was pretty unremarkable) ! So hopefully my MO appt this afternoon will reflect the same record loss I saw today on the scale. (Carole, of course you should trust your scale when it's kind!)  So, I'm thinking, wouldn't it be great if MO says, "Of course you are fine to stay off meds since you are removing so many fat cells" Hahahahaha! 

    I love that Laurie's salsa chicken is still making the rounds!  And it is great that you can hang out at the lakefront cottage....with boat, ta boot! Cool! Now you just need some serious sunshine to warm up that water!

    Carole, yay on the US results!

    Moon, knew they'd love that salad!

    I'd better get to sleep since I need to have at least a partial brain to deal 1) with the  functional meds clinician who has me dairy deprived and I plan to change that, and 2) the MO who will try her hardest to convince me to take the AI (yay for you Carole, your AI time is almost up, isn't it? Hope you don't need the ten year protocol!) and I plan to stay rogue, despite the fact that I think she is a wonderful, sensible doc.

    I dropped my wallet last night and didn't notice that until I got home...20 minutes...

    2 fraudulent charges were made on the company credit card in those 20 minutes.

    They did not even hesitate a moment before using the cards.

    Is it OK to wish BC on the person who did that?

    eric. I hope that was the only credit card in there. Because we already know they are using them. Dang. Now you got to change your credit cards, your med cards, put a hold on your bank stuff. Oh boy. Good luck. Some people suck.

    Eric, what a bummer.  We hate to realize we're living in a world with dishonest people all around us. 

    Played golf at 8:10 and got soaking wet with perspiration.  Had lunch afterwards with my women golfer friends and ordered a grilled blackened salmon sandwich.  It was so tasty, the salmon cooked just right.  Not overcooked.

    Tonight we're having dinner at the same club, different dining room.  DH gets a free entrée because June is his birthday month.  We're meeting another couple and the man will also be using his free birthday entrée.  Nice not to have to cook tonight.

    eric - why not?  But I think I'm meaner than most of you.  Or I've just haven't re-gained my patience with idiots since treatment.  Wonder if I'll become 'kinder & gentler' again?

    My friend has grown 6 kinds of tomatoes so I got 9 or 10 samples today.  I'm supposed to report back like a food critic.  I'm so excited - tomatoes for breakfast, lunch & dinner.  Our weather is so hot that the fruit production will be finished in another two weeks.

    Minus Tomatoes! I love them. Have 4 kinds in the garden. Also tried fresh eggs, what a difference.

    I cut the cable cord. kind of. Verizon finally admitted that they had a $14/month plan with NBC, ABC, CBS Fox and about 10 other channels Whoo Hoo.

    So I celebrated by buying some really cute clothes.

    Just in time. I have a date this weekend. Don't get too excited, I'm kind of like being single as well as being part of a couple. I know, big weirdo. We'll see.  

    And am walking 2 miles a day.

    I can't wait to make gazpacho. I love it.

    For dinner, I think homemade hummus and Triscuits, (sp?) the tomato and basil ones. And a glass of cool water with spearmint leaves from the garden.

    Bedo - so glad that you're back.  Walking 2 miles a day is wonderful.  I like the dill Triscuits.  Good luck w/the date.  I'm going to a concert w/my SIL.  I'll be interested to hear how the "new" Verizon TV plan works out.  I cut the cable cord some time ago & never replaced, so it's been news on line for me.

    Tonight's dinner was one tomato, a bowl of leftover green peas, one King's roll w/leftover chicken salad w/cranberries.  Dessert will be popcorn in a couple of hours.

    Hello all,

    I am asking for all of your prayers please. My SO's son who is 15 has been hospitalized all week. Went in with a high fever and very bad sinus infection that had turned into Ocular Celulitis complicated by Meningitis. Had Surgery to drain sinus and eye, had begun to look and feel better except for headache.Original Ct SCAN showed an area of concern behind frontal sinus and it was hoped that antib's would resolve. Follow up MRI revealed that area is infection that spread behind the frontal sinus and has created a brain abscess, still same size as CT scan showed. It is encapsulated, but he may now requires brain surgery. They are adding a 4th antibiotic in the hope that it may still resolve. Surgery is going to be Sunday or Monday if no signs of resolution.
