Welcome back! Where in San Juan did you stay?
We were just there last November for a 1 night pre-cruise stay.
Stayed in Old San Juan at the Villa Herencia ( a small boutique hotel owned by the same people that own Hotel El Convento)... No beaches in Old San Juan but it was the perfect location to do a self-guided walking tour with notes from the internet and dinner at Cafe La Princesa... The Mofongo there was amazing as was the conversation with our waiter who told us of much of the history of Old San Juan!
The taxi drivers on the other hand..... Ay yiyi... THAT was nerve-wracking! One hand on the wheel and one hand on the horn... They fly through those streets and beep at EVERYTHING...lol! I kept thinking just get us to our hotel and the ship! If you want to kill us, wait till the return trip! -
Oh... Nancy, that was me that asked for the zucchini fritter recipe! Thanks for posting it... I grow zucchini in the summer and we always have an ear or two of corn left over so this recipe is perfect! Huge bonus that it calls for 4 cups of zucchini! Most bread recipes and such call for a mere 2 cups...ha... No match for a zucchini plant!

Bedo...our lady lab retreiver and little flat coat retreiver mix both like the cat box chow better than even raw chicken.......
As far as cooking, I started off knowing how to do bacon, eggs, hamburger and microwave oven (Nuked) potatoes. And, I hated cooking; mostly because I wasn't any good at it. As the cooking skills improved (lots of practice), the kitchen became a place of refuge from all the pre-med and engineering school hassles. Just enjoy the time....it's what I do.
Michelle, I too was wondering. I'm glad and relieved it was sun tan time and not something "else". Here's hoping the chemo continues to drop the CA 27 numbers as dramatically as it has so far.

The news from here...It's Sharon's birthday...and today, the plastic surgeon set the exchange surgery date for May 29. -

Speaking of San Juan...we didn't venture far away from the hotel except for one night when we took a taxi to Old Town and had a good dinner. I'm not that big on Spanish/Mexican cuisine and it seemed that everything we ate had the undertones. Walking in Old Town was a little challenging because the sidewalks were stone and a bit uneven. We stayed at the Marriott right on the beach and our room was oceanfront so we had a beautiful view. But for $325 a night plus resort fees of $44 and a tax in excess of 10%, we expected better service. We came back to our room one evening and the maid had propped the door open and left it that way. And we had to have our keys exchanged 3 or 4 times. We played every night in the casino located in the hotel. I didn't have much luck but my sister ended up winning a couple of jackpots and left with all her money plus her cash expenses all covered. We both spent several hours every day lounging by the pool and we have fabulous tans.
And I discovered that I really like frozen mud slides! They didn't have any ice cream in them, so they weren't too fattening, not that I'm worried about gaining a few pounds.
DH just made breakfast sandwiches so I need to eat while it's hot.

Michelle Glad you had such a nice trip. I loved it there as well..even though our tour guide explained that it was best to stay close to the hotel and not venture out alone at night. Gorgeous botanical gardens there.
And I was upset when my dog brought a clump of hard grass from under the lawn mower and expected to bring it in the house. Funny on your pets diet choices.
Enchilada for dinner last night, just so so When my DH doest think he will like something, he pulls out the jarred spaghetti sauce and douses the meal with it...sauce can fix anything.

Michelle, when we stayed in San Juan we felt the same way about the service at our hotel, which was also mighty expensive. Next time we go, I won't pay a lot for a hotel, and spend that money on eating out at some good restaurants instead.
Last night we met up with two close friends for dinner at a Turkish restaurant. It was delicious and very Turkish. Slow service which allowed us to spend 2 1/2 hrs chatting and catching up. Really nice meal with great company.
Yesterday, I broke down one of the legs of lamb from our 2011 lamb. Pulled the really nice muscles aside and will make kebabs for dinner tonight. The rest I trimmed and seasoned for merguez sausage. Later today, I will grind and stuff. I do love this Moroccan sausage! Seems ridiculous that we are taking a pricy cut of meat to make sausages, but we simply cannot eat 5 lbs of roasted leg of lamb. The leftovers are not great and we are only two people after all. I also have too much whole milk, so I need to make some ricotta cheese. The question is, then what? The challenges of running a wasteless house!

Carrie - There is a jarred sauce called Sofrito made by Goya. I used it in white chicken chili at Christmas. It fits the bill of your DH's spaghetti sauce. Sofrito I think is Pueto Rican and usually homemade but I just love this stuff and just bought another jar.
Carole - Was it you that uses the Frontera enchilada sauce? Ft Worth has a new absolutely huge new liquor/gourmet store and I bought a jar there but have not used it yet.
Think my DD lives off pasta/sauce at home though she eats a decent lunch in company cafeteria. Believe she has only used her oven to make frozen pizza. And she's almost 26. Doubt she even owns a cookbook, well maybe 1001 Ways to Use Ramen Noodles.
Laurie - Missing you. Hope you and kids are well and just out enjoying improved weather.

I still don't know if I'll need to leave or not...I got more info last night and my area of interest is the Red River in ND and MN...and the weather service/US Army Corps of Engineers is reducing the predictions for the severity of the flooding.
I'm the "head techno nerd" for one of several USPHS portable hospital emergency departments. We (stuff and staff) are sent to areas that need extra medical capacity due to disasters, terrorist attacks or planned events. Within a couple of hours of getting there we're set up and are seeing people....in tents, if needed....
We're only gone for a few weeks at a time, so it isn't that bad. The only downside is that the warning times for leaving can range from none to a day or two.
Normally I work for Verizon Wireless and sometimes drive a school bus. The military leave laws cover my being gone so I don't have to worry about being fired. Verizon goes above and beyond and continues to pay the salary difference between the two jobs while i'm out..so they aren't too worried... :-)

Carbery: My 43 year old son puts hot chili pepper sauce on EVERYTHING. Well, I haven't seen him put in on ice cream yet, but that would be the only exception. Imagine making a good chicken pasta and he drenches it with hot peppers. Or a nice roast beef !!
Luv: Is the Sofrito sauce a tomato base? Wondering because of the "white" chicken chili.

Minus, the Tobasco plant in south LA has a peppery ice cream to sample when you visit there. Your son would probably love it!

I am on that sofrito sauce...gonna search the stores for it. Also wrote down the fritter recipe, love having something dif to do with zucchini. Like someone else said, when the zucchini starts coming on in the garden, you need to get creative.
Dinner out last night at marina restaurant that just opened for the season. Sooo good to see the staff and owners after a long winter. Had a strawberry goat cheese salad. they were serving fried chicken wings, free, to all the tables. Yummy but totally unnecessary in my diet. the men ate most of them, thank goodness!
Making chicken corn chowder for the days meal, anything else my husband wants will have to be made by him....ha ha like that will happen.

Last night's Greek-fest was delicious. I have never pulled the special muscles from a leg to make kebabs before, but this will not be the last time! Oh my. So delicious! Served with grilled onions, taramasalata, hummus, tzaikis, and some grilled pita. Oh, and spanikopita. There is enough leftover for two more meals, so no cooking today!
The lamb sausage was also very good. Will freeze those since our food plans for the next several days are set.

Hi everyone! All week I have been trying to get caught up on the posts so I could respond to everything that is going on with you! I have not succeeded so I give up and will just post instead. I hope everyone who is dealing with treatment is feeling well and healing from surgeries. I also hope that EVERYONE has had a great week.
This past week was school vacation week and the weather was amazing for just about the whole week. We spent lots of time outside and had lots of play dates. We went to a total of three parks and took endless bike rides with and with out friends. One day we actually spent a total of over 8 hours outdoors and I even got a little sunburned. Dumb mommy protects the kids and forgets herself!
I have kept dinners fairly simple this week. Chicken Caesars one night, meatloaf one day when the weather was cool and last night home made fish and chips which turned out amazing thanks to DH. The man can fry a fish! Tonight neighbors are coming over and we will have a bon fire and do hamburgers and hot dogs with pasta salad and cole slaw. Super easy.
It was nice having my older son home for the week. I snuck in a lot of extra snuggles with him and we were lazy in the mornings watching cartoons and making pancakes. It was nice to not have to be up and out of the house and I think he really enjoyed it too. We would be lazy until 10 and then be up and out! I even got the pleasure of taking a nap with BOTH boys one day- all three of us snuggled in my bed. I won't have many of those left and I thoroughly enjoyed it

Laurie - Sounds like an absolutely delightful week. My DD is almost 26 and I will still snuggle some when she's around. Spent the morning trimming goat hooves and pulling weeds. Sitting with TV on watching Out of Africa again. Have had a peanut butter/jelly sammie and a banana.
Carrie - Like Susan posted there are 2 flavors of the sauce. I still have part of the green one; not found as many places to use it. Yes, the white chicken chili had both red and green sauces, though just 1 TBS of each. I'm a wimpy Texan, can't take the hot stuff but neither are very hot. We have Mexican markets here but the last jar I bought was at WalMart.
The stuffed roasted chicken was OK. I'm not so much used to waiting almost 2 hours for chicken to cook. It looked beautiful coming out of the oven, nicely browned and much nicer looking than most turkeys I've made. Thanks Nancy, I did manage to truss it and the stuffing stayed in. Way too much for the 4# chick and recipe called for 3#er. I think I'll attempt Nancy's spatchcock method next with Maple BBQ seasoning unless I can talk DH into really BBQing it.
Today we are having Lacey's jump-ups. NASCAR on at 6 and I'm planting my hiney on the couch shortly with a stack of old magazines.

I'm glad it was vacation that was keeping you from posting.....and that the weather was good.
I have the same problem keeping up, so don't feel bad. I do read all the posts, but don't always get to respond to them all.
Tobasco flavored ice cream. Hmm. I like peppers and hot stuff, but I've never liked the sweet and hot combination like the different pepper jellys and, I suppose, spicey hot ice cream.
So far it looks like the flooding is going to be able to be contained and I won't have to go "up there". I hope so. Some of the first predictions were that the river water levels would rise above the dikes, but now it looks like they will have a foot or two to spare...if the weather cooperates...
Michelle, I'm guessing you're getting quite the sun tan! Carefree, AZ and then Puerto Rico..... You picked great weather times for both places. :-)
This morning a friend called and asked if I could help him take down an old TV antenna tower at a very elderly (even by my standards) man's house. The man was a long time friend of my friend. I guess he had moved "out into the country" and needed a big TV antenna (and the tower) to get TV reception. The city grew up around him, and that brought cable TV, so the tower was no longer needed. The elderly man was selling his house to move into an assisted living place and thought the tower would be an eyesore. My friend and I have the gear and training to do this kind of stuff, which is how I ended up 50 feet in the air on a Saturday morning. The tower was perfectly maintained, so it only took us about 2 hours to take it all down.
My friend asked me about my cast iron cleaning and the man must have heard that because when I came down, he said he had put some stuff in the back of my truck. He went on to say he was needing to downsize a bit and would appreciate it if I'd help him out. I had to look up the first one..an Aebleskiver pan (never heard of it before) and the other was a stove top cast iron waffle maker.
So I guess I have two more things to clean... :-)

I always wanted an aebleskiver pan! I see them all the time in antique shops. you'll have to make some aebleskivers Eric and let us know how they are.

Laurie, you have so much energy! You way outshine me, even when I was your age. You're kids are so lucky! And hubby too, of course!
I made Hummus!
1/4C tahini, 1/4 C or less lemon juice, 1/2 clove garlic, minced, 2 TBS olive oil 1/2 tsp cumin and salt each, 1 16 oz can chickpeas, drained. Puree each 2 things for a minute a piece before adding the next add 2 or three tsp water or chickpea drained water if needed to thin. Then I put in a plate and added olive oil, paprika and red pepper flakes to top. So pretty and so much cheaper that stores. Next time might add olives (any type) sliced on top.
Success! Will serve with Pita bread. DD grew up in Ga and also puts hot sauce or red pepper flakes on everything.
Second, I forgot to buy couscous! (Banging head on coffee table)

I'm sure I'm not even in the first billion people that thought of that....
I guess i'll have to figure out how to use the pan. It looks like it was made for a gas stove. My stove is electric, but I'm sure the grill would work OK.

Eric... If no one has aebleskiver (Danish pancakes by the way) recipes there's plenty on Pinterest. Hopefully, you'll be staying at home. Love the pun about couscous.
Meals have been jump-ups (clean out pantry/fridge/freezer kind of things). No word from DD all week, didn't think she was coming home this weekend. Just got angry text that of course she is (it's never a given), she doesn't eat red meat so I need to check the options to figure out dinner and breakfast. And, oh yeah, she'll be here in about an hour, probably expecting her dinner on the table whenever she shows up, that's NOT gonna happen! -
Snagged some veal the other day so tonight it's veal parmigiana, risotto and an Italian chopped salad.
Looking very forward to some unrainy weather. -
I just got a Facebook message from Debbie and she says "hi" and promises to be back soon. Chuck is using a walker but is still in a lot of pain. She's trying to be strong for him and her dad, while finding moments to grieve.
I had a great birthday at my DD's house. The grandkids made cards - so cute!
