So...whats for dinner?

Laurie, sounds like you had a great St. Paddy's Day!.....with such a lovely ending. And congrats on your coaching debut!
Good news on the Celt's tickets....DS2 (our local "sports broker") sold them immediately. So I am about to get into my comfy sweats, and staking out my spot on the couch under the toasty fleece quilt that a friend made me last year when I was working and going through treatment. It continues to bring me (and DH!) such comfort.
-
It snowing so hard I cant see out the window! AAAHHH Lacey pass me that quilt and Nance I will take some of those chocolate irish wiskey soufle tarts!!
Laurie Wow on the culinary treats along your pub crawl. Good job with the coaching, and your right it takes a woman to get the job done!
My DH doesnt like the corned beef dinner either,so we had ruebens with homemade coleslaw.
Lacey I hear ya on adding more meds...I fight it every step of the way.
Tonight will just be salad, trying to clean out fridge before we leave on Thursday for NC.
-
Carrie, I wish I could, then I wouldn't be forced to eat the last one ;-)
-
Well, DH decided he wanted to finish making the lasagna so he cooked the noodles and did the final assembly and we now have a shared project! And he learned a few things! I did a lot today, though. I drove to Nashua to visit my aunt, then grocery shopped for the lasagna, made the meat sauce, and I packed my suitcase earlier for our trip to Phoenix. Looking forward to this meal!
Lacey - sure hope you're feeling better soon. Enjoy the evening lounging and recuperating.
Laurie - the pub crawl sounds like loads of fun!
-
We are having insane weather today! I awoke to DH snow blowing about ten inches of snow in the rain/sleet this morning. Then it turned to snow again, then sleet, then heavy rain and a few minutes ago to driving fluffy snow. The roads are a mess, accidents in many areas......hope everyone stays safe.
DH is at meetings today and tonight, so I will sew instead of cooking....if I can get myself properly motivated to actually get something done....would be very happy to curl up under a blanket and watch a movie, but still have lots of taggies to finish.
Lunch was peanut butter and cherry jam on a piece of matzo. Sometimes (like when matzo is in the stores, and DH buys a lot) that just hits the spot.
Michelle I am really happy for you guys that you head to the airport tomorrow instead of today....and you will REALLY appreciate the AZ weather after today's madness! -
A cold front is supposed to move through Arizona over the next couple of days. It's supposed to cool down from the mid 80F range to the mid to upper 70F range. By the end of week, it's supposed to be back up into the mid 80F range again.
This is the time of year to enjoy Arizona.
Off to the doctor. My mom is getting her deep brain stimulator batteries replaced next Tuesday (if the doctors say it's OK). She has essential tremor and the batteries are just about exhausted. Without the stimulators, she shakes very much. With the stimulators operating, she can thread a needle. It's amazing.
The battery replacement is actually a very simple surgery. What's making it complicated is her 95th birthday next month. She's seeing just about every "ologist" except a urologist and a audiologist. :-)
-
Eric, that is so great that they have that for your Mom's tremors. Does she live near you?
After 2 days my computer dried out and DD's coffee spill seems to have dried out the keyboard and it's working again. Yay!
Everyone sounds like they had a good St Paddy's day.
For dinner defrosted cooked shrimp with cocktail sauce, avacodo, bibb lettuce and clementines. Yummy!
Laurie, you are a wild woman
Michelle so glad you're having fun.
I'm trying to talk a friend into flying to Miami, renting a convertable and driving to Key West and staying a few days. If you open a Hilton credit card you can get 2 nights free, someone told me today. I am so there and tired of this very heavy snow, and no Eric, I don't feel sorry for your cold front lol
Update, scratch the credit card, you have to spend money to get the free rooms! Hmmm Plan B look for cheap hotel
Susan good luck tomorrow!
-
Mom and I live about 3 miles apart.
The doctors gave their tentative OK for the surgery on Tuesday. Monday she gets more lab work and meets with the surgeon. it's the same surgeon that did the initial implant and the battery changes.
I was letting Michelle know that the weather out here is supposed to be somewhere on the very good side of perfect! It should make it easier to celebrate the drop in the marker numbers... :-)
Lacey, hopefully the URI "bugs" go away as fast as possible.
I'll be thinking of you tomorrow Susan.
Sharon wants me to look over an answer key for a physics test... :-)
Eric
-
I can't wait to walk off that plane in Phoenix and not see snow!!!
-
Wow! This thread just flies when you miss a couple of days...hard to catch up! Getting ready to head back to the mountains at the end of the month, so trying to eat what is left in the freezer which is always a challenge. I made cornish hens on Monday, then leftover spagetti and sauce last night. Tonight will be the leftover hens with a side dish. Still have some shrimp and fish that I must use up.
This weekend I'm having my family get together for Easter since we will be gone on that day. I think I'm going to do a pork roast in the crock pot and then shred it for pork sliders and serve with potato salad, cole slaw and beans. DD is bringing a pineapple upside down cake for dessert. I'll have baskets and an egg hunt for the little ones like I did last year, and try to get photos of them in their pretty dresses. It will be hectic but fun!
-
Haven't been on lately... For St Paddy's day I made corn beef and cabbage with small red potatoes, but I had already (before I realized it was St Paddy's day) thawed out some short ribs, so I also made them, and some potato salad, as hubby had a hankering for it. I cooked for about 4 hours, but ended up with enough food to last for most of the week, which was fortunate, as I came down with that stinking cold/flu that's been going around and missed the next two days of work.
We sold our house so are no longer home owners.... at least until we figure out where on earth we are going to land. I'm retiring this fall, so we'll rent until then, at least. I crave warmth, so have been pushing for Hawaii, Southern California or the Gulf Coast. Hubby LOVES to salmon fish, so he really wants to stay here in the NW. He says that we'll leave every winter, but I say let's move somewhere warm, and then go back to the NW every summer for him to fish.... Health insurance will be about $200 a month less for the 2 of us if we stay in Washington, but I am SO done with being cold!!!
-
Garden, have you considered Southeast or Central Arizona? At retirement (if not sooner), we're going to bolt to either of those two areas. Phoenix is OK.....the summer heat doesn't bother me, but the crowds are something I've never liked. Central and SE Airzona have 4 seasons without being overly frigid and are not crowded, but not totally isolated (like the part of Arizona north of the Grand Canyon)....
I'm taking this week and next week off for two spring breaks. This week DD is off (she's at track practice right now) and next week Sharon is off. Next week I'll be alternating between Sharon and my 95 year old mom (getting some minor surgery to replace battery packs).
Dinner tonight...I've decided it will involve pork chops...but that's as far as I've managed to get! :-)
-
We checked out Arizona a few years ago - and decided against it. We are both native northwesterners and neither of us have spent any significant time far from salt water. I did live in Arizona for about 6 months in my twenties and HATED it. My allergies just about killed me - but when we were reconsidering it we went down to Tucson/Benson area to check things out - again my allergies were horrendous. So that one is out.
We both have terrible allergies and obviously some fairly important health issues, so have to take that stuff into consideration as well.
Knowing us - we'll probably end up here in the NW and travel to warmer climes during the winter months, but I've got to admit that I'd prefer the other way 'round... If we do stay here I'll have to buy a spa or something to warm me up...
-
I can totally understand the allergy issue. I spent 7 years receiving allergy shots. They worked. I'm not totally "sniff free", but...instead of 12 months of problems, it's only a week or so.....
I wonder if Michelle has made it here yet..... I hop so.
I saw the typo and after thinking of her avatar..left it... :-)
-
Eric- LOL! Good luck to your mother too, science can be amazing. I am glad it helps her so much! Hope things go smoothly.
Gardengumby- Congrats on the sale of your home! And I hope you and your DH come up with the perfect solution to where you will live next and how.
Michelle- I hope you made it safe and sound and are enjoying being away from this snow while you are gone. Have fun relaxing in the sun.
Kaara- your pre Easter weekend sounds fun, have a great time and I think your menu sounds wonderful.
Bedo- Yay on your computer working again! I hope your Miami trip pans out and you get to go.
I had an appointment late today to get back in to PT with all my back, rib peck issues. Tonight's dinner will be grilled chicken sandwiches. We are skipping Easter with family this year as well. We are going to spend a week - off and on- about an hour from home in the mountains. It is a condo and has an indoor pool/hot tub and Dh has a bunch of free ski tickets to take the boys skiing. The mountain has an Easter egg hunt the boys can do and all sorts of activities for Easter day. My brother and his girlfriend will join us for some of the time. It will be nice to get away and do something different. Where it has a full kitchen etc it will be easy to manage with the boys and all of their eating and snacking, as well as keeping costs down and not having to eat out all the time. The family is a little disappointed that we won't be around. My boys are the main attraction but it is a lot of work to manage them in church for two hours and then to deal with the sugar hight through egg hunts and dinner with everyone. When DH suggested it I did not hesitate- YES!!!
-
WOW Laurie! Heaven on Earth
For dinner, well I already ate my dinner and breakfast for lunch at work, cheese sandwhich, yogurt with fruit and salad shrimp with avacado, bibb lettuce and french dressing. 2 cans of seltzer water.
Still living with 2 cats and one dog full time. DD promised to only leave one doggie at a time. I am a sucker.
Susan I hope you are doing well
Gardengumby Congratulations on your free and easy lifestyle! Is it like being a kid again?? All the choices!
-
We have the opposite...two dogs and one HUGE cat. They all get along quite well, but it's obvious the cat rules the roost.
Check in when you can Susan. You, too, Michelle....
Laurie, I don't know if I want to imagine a church full of "sugar buzzed" kids! Wow.... :-)
I was out with DD today and time got away from us, so i didn't get a chance to get very fancy with the pork chops. I've got them marinating in a mustard, honey, garlic and pepper mix in a plastic bag.... A fruit salad, some more of the really simple soda bread and I think that may be it.
-
Laurie, love the sound of the Easter mountain visit! The boys will love the indoor pool, and with our generous snow supply, skiing should be great! And hopefully you can have some relax time for yourself!
GG, congratulations on the house sale. I admire that you pulled that off. I really have to start sorting and clearing our house "stuff of 34 years" at some point soon, so we can start planning a downsize...but my energy and organizational abilities are at an all time low since starting Tamoxifen last year....so very little is getting done. I will hold you up as a role model!
Still feeling crappy from this virus, even though I have been sleeping well while off the Tamox. My poor mouth has been riddled with cankers, sore throat and sensitive taste buds. Makes it not exciting to cook or eat. So tonight I just threw together a soup with kale, onions, sausage, carrots, sweet potatoes and some diced tomatoes. I added basil, bay leaves, and hung some fennel in it for more flavor. Was pretty good, or so said DH.
I hope I wake up feeling closer to "normal" tomorrow...whatever that is these days! ;/ -
Lacey, I finally followed your advice and introduced "healthy" smoothies into my diet. I went to Fresh Market and stocked up on frozen berries. Bought some kale and mangoes and greek yogurt and also a container of chia seeds. Made a delicious smoothie with my old blender and had it for lunch yesterday.
I've been reading about the chia seeds and their nutritional value. I know they're trendy but I didn't discover any bad SEs.
Sorry you're not feeling good. Maybe you should talk to your dr. about trying an AI med instead of Tamoxifen.
Eric, your pork chops marinade sounds good.
We had leftovers for dinner last night. Mushroom risotto and pork medallions in a lemony sauce. Also salad with a dressing of fresh-squeezed Meyer lemon and mayo. A neighbor gave me a basket full of grapefruit and Meyer lemons from their trees. I even put the lemon juice in my smoothie.
Our trees are all green with leaves and the azaleas are blooming. It's a little cooler than normal for spring but that's fine with me. Cool is better than humid and hot. The pollen is causing the usual allergic reactions.
Hi to everyone.
-
Last nights dinner was lasagna rolls with only some Rosemary olive bread for accompaniment.
I made a Costco run yesterday so tonight I'm making thick cut pork chops and dressing. I also picked up some beautiful asparagus (far too much for two people) so I'll roast some of that too. We love asparagus but I do run out of ideas when I have such an abundance. I think penne and asparagus with vodka cream sauce is in my future though. Maybe primavera too. -
Lacey - don't hold me up as a model... we didn't get rid of NEARLY enough stuff beforehand, so have to do it now. We went from a 3500 sq ft home to a 1100 sq ft townhouse and two storage units. We need to pare down to one SMALL storage unit (POD) that will be used 'til we figure out where we are actually going to land!!
And whoever said it - yes, in many ways it does feel like being a kid again - with all kinds of possibilities in front of us. Granted, if we make a bad mistake now, there is no recovery time available, but the very worst thing that can happen is that we wind up in a condo somewhere - and to be honest - that doesn't feel all that bad to me at the moment. Like I say, though, I surely do want it to be somewhere warm!
-
When Sharon and I married in 1989, we had been living on our own for at least 10 years. So, we had to combine two households' stuff into one home. After 24 years, the process is still not done! :-)
Lacey, hopefully the sleep did some good for you.
I'm off to get a new battery for my truck. I can't get the picture to post, but here's the link.
http://www.thefcconnection.com/eric_lawson_fc-170.htm
It needs a 6 volt battery..... Cars/trucks needing 6 volt batteries haven't been made since the late 1950s, yet just about every auto parts store around here has at least one in stock and those that don't can get one in a couple of hours.
-
We had an uneventful flight to Phoenix and spent the night at a hotel with shuttle service from the airport. Rick is off fetching the rental car and then we'll head to the Carefree Resort. Right now we have filtered sunshine so it's not that warm, but it's coming!
Gardengumby - that's quite the down-sizing! We went from 2700 to 1100 and no storage pod. I didn't want to pay for stuff that I'd probably never really need. It was a good decision for us.
-
The clouds should go away soon and it will get *really* nice outside. This is the nice time of year...cool sweater weather at night and warm shorts/T-shirt weather during the day.
Eric.
-
Carol- I can't wait to have leaves coming in and flowers coming up! You painted a beautiful picture for me, thank you!
Lacey- Are the mouth sores from the respiratory infection? Sounds awful. I hope you are feeling better today.
My day has been a nutty day. We went and met some friends at the indoor play center to burn some energy off the boys. It was not busy at all which was great. We were there less than an hour when the boys complained a little girl would not let them into a certain area. We told them to just say excuse me and walk past her. The next thing I know this little girl kicks my son in the stomach! My son strikes a ninja pose and is ready to fight. I yelled excuse me and go over and explain how we keep our hands and feet to ourselves and this is not ok etc. (I was PISSED!) The little girl was rude to me and rolled her eyes. I got her to focus and agree to keep her hands and feet to herself. SO I walk back to my girlfriend utterly amazed that the girls mother has still not noticed anything when this woman comes out of no where and asks in a not nice way if "there is a problem". I thought she was going to kick my butt! My friend said " yha- your daughter kicked her boy!" then she runs away, lol! The little girls mom promptly apologized and thanked me for handling everything etc. Whew! An hour later a woman asks me if my son is wearing a striped shirt. I wanted to say no. But DS2 was wearing one. She told me he was in the ladies room. I find him putting squares of toilet paper over a huge puddle of urine next to the toilet. I asked him" whats up?" He says- " My Pants are still dry!" So proud I just told him good job and next time I should help so it goes in the toilet. He says ok and takes off as I clean up the puddle of pee. OY!!!!
So that was part of my day- tonight is cubed steak awith mushrooms and gravy. Quick and easy with some zucchini.
-
Laurie.... I'm sitting here laughing...my mom says your DS2 sounds *like me* when I was little..... :-)
Eric
-
Garden, was me! I thought I would stay in Quito Ecuador for a year or 6 months but looked up the US consulate advisory yesterday and no way! Have to re-group, maybe Costa Rica? Panama? I love moving, have lived in NY state, Denver, Boston, Atlanta, Providence and Barrow, AK. And some other smaller places. 6 years ago I rented out my 3/2 and moved to a small apt then a cabin. Have 1 storage unit in Ga. I love not being tied down, and all those antiques my DD can have. Plus, (usually haha) no financial stress about the mortgage.
For dinner.... For dinner..... Canned peaches, cold from the fridge. I was bad, had Four pieces of pizza at work. Maybe bibb lettuce, and cottage cheese with the peaches and artichoke hearts from can. I'm all about cans while there's no fresh stuff.
Laurie, you're funny. You should have said, "I know, my son told me your daughter peed on the floor, he went to clean it up"
-
Michelle I'll be so glad when we get rid of more stuff! I had planned to have a big moving sale but because of the chaos of the house sale - well things didn't quite happen as planned! I'm certain that most things will end up given away, but however they go, go they will. We will keep some things on storage for awhile, though, as some things truly are not replaceable.
Bedo, it sounds like you've had a grand life. I want to be a vagabond for at least awhile. We'll see how long it lasts! -
Wow! That was an eventful trip to the indoor playground, Laurie! I'm glad the mother of the girl apologized....the ninja pose made me laugh....cleaning up the ladies room floor not so much. Reminds me of the stories DH came home from NJ with this weekend. Little DGS is now running around with the cutest big boy underpants, (He is being strongly encouraged to get trained by his school since they want him to move up to the older kids class. He is only 2 years 3 months and bright enough that he'll train himself with no problem on his own body's little timetable, but the school wants the kids in that class.....ages 2 1/2 to 5.....to be trained)so as I saw him running around in his little big boy underwear, I thought, great, he's enjoying being a toilet tinkler. Not so fast....DH said that there were a few puddles in unspecified places all over the house, which his other grandfather was busy cleaning up all afternoon. This little guy is way too busy to pay close attention to his body signals! Oh well, if it's not pooches, it's kids leaving their marks on the house!

My URI feels a lot better today, except for this dry mouth business, which I have a zillion remedies for (thank you internet!)...and it seems a bit better. Also struggling with stomach pains, a rarity for me....so I hope that goes away soon. I did sleep really well last night which was great....not looking forward to resuming the sleep stealing Tamox next week...or any other estrogen antagonist for that matter!
Carole, so glad you hopped on the smoothie bandwagon. I see that you have already discovered that you can pretty much put anything in them that you like....the basic formula, lots of green veggies, blended with fruit to mask the taste and sweeten. I also add walnuts and some flax seed. Also if you want the smoothie to be a gorgeous color
(and like beets) pop a raw beet in and it is lovely! I'll be interested to hear if you find that they "hold you". I drink mine in the AM and am never hungry until mid afternoon.
Tonight we had a chicken dish with asparagus and grape tomatoes, with a garlic lemon sauce, sweet potatoes ( purely for ease in the microwave) and a nice garden salad.
I probably wouldn't make this again....but maybe I was just turned off to the lemon sauce given the sore tummy.
We're having the prettiest large flake snow 'floats' right now....apparently a bit more accumulation tonight....then I think we are clear for a while.
Garden, you are still my role model.Tonight on the news they did a piece on the low inventory of homes to buy. I always grit my teeth awaiting for DH to say....what are we waiting for? He didn't.
But when he stopped in to watch some hoops with DS2 at Jerry Remys in Southie late this afternoon several of DS2's co workers were there, and one of them is looking to buy a house in our town....DS2 pipes up, "Why don't you just buy HIS!", pointing to DH. I think DH was shocked, showing me that he is no more ready to clear this place out than I am.
Michelle, sounds like your trek southwest has good karma so far. Enjoy!
Have an enjoyable evening everyone! -
I was released from the hospital this morning, thank goodness. My "roommate" had just had a double mast but I said nothing. We just smiled vaguely as she passed my bed to use the bathroom. For dinner, we ate leftovers from Tuesday's meal at a Chinese restaurant. We over ordered so that Mr. 02143 would have lunch on Wednesday. But he was too anxious to eat so those two lovely Lions Head Meatballs in stock with cabbage could be tonight's meal. I had two cups of Chinese chicken-pork stock in the fridge. So I added the stock to the leftovers along with a bunch of napa cabbage. Perfect recovery food.
Family begins to arrive starting tomorrow. The idea is that they will take care of me. I will believe it when I witness it.
