One good thing about cool weather in Florida..it doesn't last long! We were all set to take a drive over to the beach for lunch today when the rain and wind blew in...wasn't expecting that! Tomorrow should be better so hope ya'll enjoy your trip.

Wow....all this talk about healthy food plans has me impressed with your discipline and left me wondering when I am going to start a lower intake plan. I really do eat healthy foods, but probably too much, and love to have that sweet almost daily. I suppose if I were to try the no sugar /no starch plan, that sugar craving would abate. I'm really impressed Laurie, that you could lose a significant amount of weight while being home with two children. I found that during my kids' younger years, I felt like I was in th kitchen so much, and making/eating foods that appealed to them.....and as I can best recall, experienced some of my chunkier years.
Since I am concerned about the diet related factors re:recurrence, I am meeting with an oncology nutritionist later this week. I'd started to talk about those concerns with RO last week, and she referred me to the nutritionist since she couldn't answer many of my questions. Will be interesting to see what she has to say.

Had leftover broccoli quiche and leftover lentil/squash soup with kale salad (with carrots, red onions and cranberries in a light vinaigrette dressing) tonight.....and DH polished off the last of the egg foo yung (sp?) for Sunday night easy dinner. Also made a large pot of tomato-based kale soup with cannelini beans for quick dinners this week.

Lacey- Let us know what the nutritionist says, I'm interested! I go the opposite way with food and the kids. I am so sick of getting food for someone every five minutes I never want anything. I also think years of working in the food industry taught me to never just put food in my mouth when cooking etc. I spent so many years cooking for others and now my kids that I never "taste". Now if only I could stop wiping my hands on my butt and thighs or buy a damn apron!
Apple- do you do that? After working in a restaurant I never use a towel, just wipe my hands on myself as if I still have the apron on?

I'm chuckling at the hands on butt (hiney?) issue....maybe we can find you an apron at Pickety Place...if they have a gift shop....don't know why but it just looks like a place that would have a cute country gift shop. -

Laurie- Im the same way have always wiped my hands on my butt even when i worked in the restaurant with an apron i never used it i wore black tux type pants with a little black apron and the back of my pants were always dirty- My dads wife bought me an apron not long ago i wore it one night because i still didnt use it LOL!

Kaara, you could try rye bread. My mother and brother bake their own, and it is not that hard. But otherwise, many supermarkets carry German, sliced pumpernickel.

Momine: My boyfriend is allergic to wheat, rye, and a number of other grains, so really, bread is out for us. Once in a while we will cheat and have a white roll..like the garlic rolls at the italian restaurant, but most of the time, nothing. Thanks for the tip though...I never baked bread in my life, so it would be a challenge.

Laurie...Yes, I wore an apron or 3, daily while cooking. I kept towels about, but my hands were always slurped up and my aprons were absolutely filthy. I cut my hair SUPER short and would simply wash it with Dawn before leaving the restaurant.. a really messy job. I rarely wear an apron now... i just have 'work' clothes while in cooking mode and don't get that dirty anymore. I remember when my towel hanging from the apron strings caught on fire once.. I literally had to take off my chef coat.. eek... in public!
Kaara. my sis with celiac disease, the noncook, actually makes a pretty darn good, gluten-free bread out of a gluten free mix. It's really good as toast and she just makes it in the processor.

Kaara, I see, so rye doesn't work either obviously. Recently I got some buckwheat flour from the health food store. I don't if that would be ok for you guys, but I made pancakes with it and they were good.

Momine: Buckwheat is not on the list for his allergies, so it might be worth a try. I love buckwheat pancakes! What a treat that would be! I'll have him ask the holistic doctor we see if it's ok.

Yes, and buckwheat is supposed to be OK for ER+ as well. I made the batter with eco-eggs and low-fat kefir. It was nice treat.

It's by King Arthur Flour.. my local grocer has it, and i bought it at Whole Foods myself.. it did not come out as great as hers. of course she measures and stuff.
It was great tho and didn't need all that kneading.

Hi everyone! I had a great day today, although it was super windy and I had to leave the beach because I was being sandblasted. I sat by the pool, read my book on my Kindle (oh how I love that gadget!), had a nice lunch and then our friends came by for cocktail hour(s) and dinner. All in all, a very successful first day!

Dinner was leftover monster meatballs in tomato sauce with fresh-cooked pasta. And roasted brussel sprouts, which were delish. Split them in half, tossed them with olive oil and s &p. Cooked them on sheetpan at 350 for 30 min. Tossed and stirred them halfway through cooking. I put a little home-made vinaigrette on my serving. DH poured a little balsamic vinegar on his. Dessert was leftover strawberry shortcake.
I enjoy all the conversation but am not good at all the individual replies, like some are.

carole: Love roasted brussel sprouts...so much better than when my grandma used to serve them boiled to mush! I used to gag trying to get one down so I could leave the table. Sometimes I roast some little baby carrots with them.
I had a late app't to get my hair cut and a mani/pedi, so when I got home I did a stir fry of broccoli, asparagus, carrots and shrimp with some ginger garlic sauce. Delicious! Fruit and nuts for dessert.

Am happy to take nutrition notes for any and all when I see her this Thursday. Am taking that list I keep referring to for "good and bad" food for er+ and Tamoxifen users to see what idea she has about it, since it seems so restrictive to me.
Hear ye ....hear ye....a rare and exciting evening in this house. I came home from work, and food shopping and smelled the most wonderful aroma....DINNER COOKING!!!! Please appreciate how rare this is......DH had purchased a sort of "kit" from a local healthy eating store, followed the directions, and prepared us a lovely shrimp with spiced tomato sauce and feta over orzo. He forgot to make the accompanying broccoli, but I was delerious that we even had a main course on the table when I came home. Points for my sweet kitchen challenged DH! And there was enough leftover that I can take it to school for lunch tomorrow.
DS#1 called tonight to let us know that their second child will be a girl. It will be fun to have some variety the family, which has been laden with testosterone, except for me and dogter, Lacey.
Laurie, we're headed to that gift shop for your apron!!

Hi everyone, thanks for all the info on healthy eating....geting inspired. I had given up white bread long ago, preferring the whole grains. Need to find a good pasta though that is healthier, have tried the wheat ones and not really impressed.
I made a kind of lasagna rolls the other night. Took the ricotta and mixed with spinach and garlic with other italian spices and placed in lasagna noodle and rolled up, lined them all up in pan and covered with sauce and cheese and baked. My Dh said it was "girlie" lasagna and wanted some meat in his. Oh well I liked it...and I am the cook!

Lacey Congrats on getting a girl grand baby....love all the cute clothes.What a dear husband to go that extra mile and make dinner. those are the small things that matter...if they only knew how simple we are.

KIaara, your stir fry sounds delicious. Stir-fry is one cooking method that I have never mastered. When I have tried it, it seems Ito require too much oil, whch means a lot of calories. I really like the oven-roasted veggies but the weather will soon be too hot for oven cooking.

Carberry, your lasagne rolls sound tasty to me. And what an original idea!
It was so nice this morning not to have to hop out of bed and get dressed to go somewhere. Soon I'll go out to our "gym" and do some weights and a session on the stairclimber, which really gets my heartbeat up fast. I can walk 3 miles on the street and never get out of breath because I'm so used to fast walking but the stairclimber has me huffing and puffing. We have a tv to watch, which makes the exercise more enjoyable.

Made smoothies for breakfast this morning...romaine, spinach, zuccini, apple, strawberries, pineapple and protein powder. Put greens in blender first, add 1 cup of water, blend on high, then begin adding the rest of the ingredients and blend until smooth. Just imagine the vitamins and antioxidants you're getting. I then add my vitamin C powder and MSM powder to it and gives it a slight tart taste which I like.
This was done in a 64 oz Vita Mix blender, and there is enough for about 4 glasses. It will keep for 24 hours. This was one of the best investments we've ever made on a kitchen appliance!
carberry: Girlie or not...those lasagna rolls sound great to me! I found a gluten free spagetti that is pretty good. I really can't tell the difference..you just have to cook it a little longer. Also the quinoa pastas are good as well.

Carole: A little tip on the stir fry...instead of adding more oil, add a little water so it steams the veggies and helps them to cook. Just add a little at a time until you get what you want. I wait and add the sauce at the last minute so it doesn't burn.

carole: Thanks...I feel I have to do something to prevent a recurrence since I didn't do chemo or rads, and this new plan is as good as it gets. It helps that my boyfriend is on it as well for his MS. He just went off his weekly injections and is hoping the new diet will keep the disease in remission. It also is recommended for my eye issues. It's a bit of an adjustment, but once you're into it, it's very easy to follow, and you lose your cravings for the bad stuff...almost:)

Lacey CONGRATS!!! What wonderful news! There is alot of testosterone going on my house too. My brother and his girlfriend have decided to try for a baby, I have my fingers crossed they will have a girl so I can buy her clothes and get my girlie fix:D
Kaara- I am super impressed as well, you eat so healthy!! I really should make more of an effort...hmmm.
Carol- I don't do a very good job with getting to everyone either, it is such a busy thread its hard.
So we ended up with chinese food Sunday night as we spent way too long at the neighbors house. Last night was eggplant parm and tonight is Debbie's Belgian Chicken.
