After googling recipes for cabbage casserole, cabbage casseroles with meat, I gave up and put together my own, incorporating ideas from the search. I browned the ground chuck with onions, garlic, diced yellow bell pepper and diced poblano. Next I sauteed sliced cabbage, put everything together with a can of mushroom soup. Considered addition of cheese and decided against. Heated in oven in casserole dish.

Side was large tossed salad. The casserole was a bit bland. I will add cheese and/or spice to leftovers meal.

I had a "computer episode" during the recipe search. One site I clicked on locked up my computer. Windows took over the screen and a voice warned me against turning off the computer. I suspected a scam and turned the computer off with the button after reading about the scam with my cell phone.

I hate people who are smart enough to inflict techie dangers and use it all for evil instead of good.

The "stewed" tomatoes were canned. We love canned tomatoes; it is difficult to find any good tomatoes, especially this time of year. I opened a can of San Marzano (sp?) and was quite disappointed with what came out of that can. Trader Joes actually looked better--and cheaper. Too bad it is a 3 hour round trip to get to a TJ or a Target.

We had the mac and cheese leftovers yesterday. Today I will make a barramundi. I'll use the leftover tomatoes to make a mexican rice side and maybe serve some broccoli.

I hate that kind of software. Unfortunately it's not hard to do, nor does it require that the site you visited to be compromised.

MIL's house is sanitized and, tonight, I'm putting out the two "beyond hope" recliner chairs to the curb to be picked up by the trash crews. The pickup crews know to be careful and I made sure to NOT clean the chairs beyond soaking the soiled areas with pool shock liquid chlorine. I'm hoping the severely bleached/nearly rotted material will discourage "the pickers" that drive through the neighborhoods.

MIL's kitty is over at our house and is getting very comfortable. Sharon woke up this morning to Duffy laying on top of her. The "not quite so old" dog was on the bed as well and "very old dog" was laying on the dog bed. I think their attitude is, "If you humans need more room to sleep, there is plenty of room on the floor". :-)

Sharon and I are considering a Swiss Potato-Leek soup https://wordpress.com/read/feeds/34903964/posts/3703890601 that I found while "cruising the internet".

Tonight is a recipe from the new Mediterranean cookbook. A spice rubbed pork tenderloin with leeks, onion, tomato and Brussels sprouts replacing artichokes and tri colored quinoa. This is a good one for sure.

Eric - speaking of computer jinks... I clicked on the link to see your Potato/Leek soup & it wanted me to sign in with my user name & password. So I tried to go back a page to BCO. No such luck. Finally had to sign out entirely and sign back in to BCO. If the recipe works, please do share.

Mae - really does look delicious.

Dinner here was individual Naan pizzas. Selection of the day was Rao's marinara, black olives, fresh mushroom slices, slivers of sweet onion (think 1015 or Videlia) and Mozzarella cheese. Delicious with a Cab from the Columbia Valley in Washington.

Tomorrow will either be spinach omelette or fried rice. I'm going to go have wine with an old friend who now lives in independent living at 3pm so it depends on my energy level after I get home.

Brunch was a keto (2 gm net) sesame bagel with cream cheese, lox, tomato, Vidalia onion, cucumber, dill & capers.

Dinner at Regalia: Wagyu carpaccio with bone marrow, arugula, parm-regg and caramelized balsamic onion. (Bob had grilled shrimp over polenta--and we both had a little of the housemade rosemary foccaccia with olive oil & cannelini bean puree). Our entrees were Faroe Island salmon cioppino with Manila clams & mussels, with tomato broth. Dessert was almond semifreddo with chocolate chips--when flambeed the chips melted to make a fudge sauce. (Housemade limoncello too). I hope this place gets an online presence soon. It's still walk-ins only--turns over fully (twice) on Fri, & Sat. nights but slow on weeknights. A bit pricy for the neighborhood, so word needs to get out for people from more upscale areas to come out. Hoping a reviewer can make it--that would definitely spread the word.

    Try this link.

I checked the box so the link opens in a different browser window, so the BCO page should be there, but in a different window/tab.

We had a heavy lunch, takeout hamburgers and fries, much enjoyed by me. I could have skipped dinner but skipping a meal isn't in dh's DNA. We had small helpings of pork piccata and quinoa and a smaller tossed salad than usual.

Tonight is the Woodworkers Guild's Christmas dinner at an event place. Last year it was cancelled so the buffet dinner won't be quite so familiar. The meats are always baked ham and a roast beef cut in slivers by the attendant server. The sides are usually good and calorie laden. It won't be a huge group and will be mostly senior citizen and, hopefully, triple vaccinated as are we.

Sharon's mom is getting out of hospital today and will be staying at our house for a few days. We're getting a cheap shower curtain and some Chux pads...which hopefully will be wasted.

Tonight is the music jam. Three couples, plus the 90 year old father-in-law/father of one couple and, sometimes, Sharon's 84 year old mom. We usually have some "pre jam" food. Sharon makes her potato salad, I make the cheese-garlic biscuits and, sometimes, the onion bread, the couple (and dad), from Wisconsin, brings their best cheese and the last couple brings their home made pepper stuffed olives and a chicken or beef (or both) dish.

Eric, I am moved by your tender care of your MIL. How fortunate she is...your family is. (I had to google Chux)

I really enjoyed the barramundi last night. Have waaaay too much mexican rice so I'll pan fry some eggs to go with some of it, along with the leftover broccoli. I bought some Pete and Gerry's eggs and will use those and see how special they are.

Indulged in a large salad of chopped tomatoes/cucumbers (DH de-seeds & chops so they are on hand), portabella mushrooms, avocado (a whole one, chopped), grilled chicken. Lots of veggie goodness!

Kudos to you Eric for being such a good son-in-law. Music jam sounds like a good time - enjoy!

Tonight is sautéed shrimp, asparagus and yellow squash in a light coating of garlic, butter, white wine and half & half with whole wheat penne and a seafood counter pre-made crab cake.

Grilling a grass-fed ribeye and shishito peppers; sauteed mushrooms; nuked asparagus & jarred hollandaise sauce, plus a sweet potato seasoned with salt, pepper and cinnamon. (Bob is late as usual so not putting the steak on the grill yet--it's chilly out but not too cold to grill).

Was not overly impressed with the "specialness" of the eggs but at least I can feel good that the chickens are happier.

I made unstuffed cabbage with the leftover rice, adding some sausage to the mix and topping it with cheese. What doesn't taste good with cheese! Repeats tonight.

Foodie question....Has anyone tasted authentic Carolina Gold rice? If yes, can you describe it to me. I watched a youtube about it and am dying to try it...but OUCH on the shipping. Want to hear comments about it before/if I fork over that kind of $.

Wally - sorry, no - but I just spent a pretty penny to buy some black rice. Looking forward to trying that during the holidays.

Bob was late getting home last night. Had a slab of Niman Ranch BBQ ribs in the freezer, so I thawed them, pan-seared Brussels sprouts (salt, pepper, garlic, olive oil, and balsamic), and also air-fried him a couple of frozen potato latkes with applesauce. He's on his way home--we may walk over to Regalia after I feed the kitties. Will probably go for the branzino or roast half-chicken. (Maybe sneak a few bites of cacio e pepe).

My gas grill's igniter had stopped working. Went on YouTube and found out it's battery-operated. D'OH! Unscrewed the button housing, swapped out a fresh AA and it's clicking away merrily again.

Wild and woolly weather here last night. Ate dinner in the basement between tornado sirens. Thankfully no damage here but lots of it 20 miles from here. Scary stuff.

I bought Carolina gold rice in Charleston. It was delicious and I haven't had it since. At that time, it wasn't very expensive. Now it's a luxury item.

Eric, I do hope your MIL shakes the C-diff. It's a trial.

Tonight was turkey noodle soup made with the Thanksgiving turkey carcass from the freezer.

DH wanted to watch a Christmas movie tonight so we settled on Die Hard. Yippee kai-yay.

Cold front moved through here last night/this morning so tonight was potato soup. Need to finish it off in the next couple of days since forecast is for much warmer weather by midweek. This weather is so unpredictable, a major tornado in December? The destruction and loss of life is terrible. Lots of prayers for all of those who have been impacted.

Talk about cold front. 86 yesterday. Supposedly 39 tonight. And 80 again by Tuesday. WTH - heater or air conditioner? Baby Doll short sleeve PJ's or electric blanket? Houston often has warm weather at Christmas but I don't remember these dramatic ups & downs.

Yesterday I had steeled myself for the possibility of stopping at Hoosier Mama for a consolation slice of pie in case my mammo led to an ultrasound. Instead, they turned me loose and said to expect the results in my portal today. By the time I got to the car, it had begun to rain, harder and harder as I crossed the city line from Evanston back into Chicago--so regardless of result, pie would have been moot. Amazingly, by mid-evening the mammo results showed up in my portal: bilateral BIRADS 2, "see you next year." Whew!

I keep switching between scrubs and long sleeve PJs these days. Really weird weather. We made it up to 58 last night before the bottom dropped out--it drizzled a bit overnight but by the time the temp got down near freezing it was windy but dry. The threatened snow showers didn't materialize. We may get snow by the 20th, but the ground will be too warm for it to stick. There were a couple of small twisters that hit just across the state line in IN. Not part of that massive tornado that stretched >225 mi. all the way from southeast MO to AR to Memphis, through eastern KY, and into Edwardsville, IL (where an Amazon warehouse collapsed). Jackie (IllinoisLady) lives in Centralia, which is further north and not in the tornado's path. I hope CeliaC, in the KY suburbs of Cincinnati, also escaped it.

We walked to Regalia again. I brought them the last little nub of my white truffle (I was afraid that I'd break my nails or scrape my knuckles on the slicer). I had intended for them to use it for "family dinner" (the staff meal before or after service); instead, the chef made a risotto, brought it to our table, and grated the truffle over it. They did enjoy some in the kitchen, thank goodness. We shared the fried artichokes (Bob also had meatballs & polenta), house salad, linguine cacio e pepe, and branzino poached in tomato water with heirloom cherry tomatoes and a side of sauteed spinach. The owner was so thankful for the truffle that he sent over tonight's special dessert: light-as-air mocha cheesecake with a couple of mocha meringue macarons. Well, for the next few days I'll have to live on dead animals & leaves to make up for tonight's carbs. We got there about 7:30, and the place was packed. Word got out, at least in the neighborhood. I only hope that they can get online soon enough for it to be busy on weekdays too. We can't afford to let another neighborhood gem go under.

Bob has a haircut downtown (900 N. Mich.) tomorrow afternoon--we'll walk to Hugo's Frog Bar afterwards and I'll go for something light--maybe raw oysters and a shrimp cocktail with salad. And leftover branzino for late supper while we watch the slo-mo disaster that will be the Bears in Green Bay.

We're experiencing the same yo-yo weather described by Minus. I would be happy with less hot and more cold/cool.

We had leftovers last night and may have a take out pizza tonight.

I have begun reading through my remaining (still rather large) collection of cook books, many of which have some sentimental associations. My MIL gave me the Silver Palate and also Gatherings many years ago. I am making a stack to donate to Friends of the Library for their book store. This group may turn out to be a volunteering opportunity.

Thanks for thinking of me, Sandy. All OK here in N Ky - just some ferocious winds & rain. Not so for western KY - decimated a candle factory (over 100 folks inside, heavy death toll) & a lot of the town of Mayfield, also bad in Bowling Green & a few other western KY spots.

Made a flatbread pizza last night - pesto as base, shrooms, chicken sausage & shredded mozzarella. Have not had one in quite awhile. For today: two potato latkes, topped by two sunny side up eggs, chopped avocado drizzled with balsamic on the side.

Hope everyone has an enjoyable Sunday.

Today's meal was a 3 egg omelette with sauteed onions, mushrooms & spinach. Since I was virtuous and completed my 6 mile walk first, I added one English muffin.

Tomorrow I'll get my hair trimmed. Then my meal will be fried rice with more onions & mushrooms, either celery or water chestnuts, the rest of the spinach and some rotisserie chicken.

I decided to focus on one absent friend each day last week and email them about the benefits their friendship has brought to my life. A couple more to go this week.

We went downtown for Bob's haircut but didn't feel like walking to Hugo's--especially with 3 hours of free parking with a $10 purchase in the building. So we went to the Four Seasons Hotel adjacent to (actually attached to) the building. We were not dressed for the "festive tea party" section, and the restaurant (considerably reduced in size from years past) was not serving its dinner menu till 6. The host said all they had were "appetizers," which was fine with us. Turned out to be a decent-sized lunch. Shared a half-dozen Kumamoto oysters, a cheese platter with accompaniments (Bob had the carby ones), and a Little Gem Caesar salad. We had our own desserts--Bob's was vanilla gelato, mine lychee-peach sorbet.

Dinner tonight will be last night's leftover branzino & veg, and leftover cheese & nibbles. Maybe nuke a little broccolini too.

Regalia's website & phone are up & running--it's finally possible to make a reservation, rather than walk through the cold & take our chances we can get in.

Oddly, I'm finding that if I allow myself a modest restaurant "cheat," I have no desire to carb-load late at night, not even with supposedly keto-friendly versions of candies, etc. And my weight is holding, though I'd like to lose at least a couple of lbs. before my weigh-in on the 29th.

Frozen 'za with a side of leftover slaw. I got my booster this morning and planned on getting ill again; so far, so good. The first two were Moderna (100ml) and YOW on the reactions I had. I had read that switching the vaccine garnered higher antibodies/better immunity, so opted for the Pfizer this time (both would have been 50ml). The lady freaked out when I asked for for a thigh jab, so back to my left arm. Hopefully not nearly the node swelling this time.

Wally - it took lots of phone calls & negotiations before I could get the shot(s) in my thigh. Sorry you didn't have such luck. But glad the side effects seem less stringent.

Seconding Eric's sentiments - glad it looks like no one had serious tornado damage. Nance - I have a full color picture of you having dinner in the basement.

Dinner was indeed fried rice. Tomorrow I'll meet my ex-DH and his wife for a mega-steak dinner at Perry's in River Oaks. He's treating!! I see him fairly regularly but haven't seen her since 2019 - before Covid. Funny to consider that I was married to him for 20 years and she has now been married to him for 27. TIme flies...
