Beautiful photos. Monica! I got wistful reading about your lasagna: I haven't had lasagna in well over a year.
When I went on this diet, the instructions and "suggested foods" list had coconut aminos as a soy sauce or tamari substitute. I've come to use it quite a bit. I also bought a bottle of Red Boat fish sauce and a tub of "Miso Master" white miso (after seeing the taste test on ATK Sat. afternoon). Yesterday I picked up a mahi mahi filet, but had the leftover steak, mushrooms, tuna in Little Gem lettuce "cups" and heirloom cherry tomatoes instead. Wings tonight (this time I made sure to get flourless ones), followed by garlic green beans. Going to make a miso-coconut aminos-sesame blend oil marinade for the mahi-mahi and cook it tomorrow night (if I can't get a ticket for the dinner at Carnivale featuring Watergate prosecutor Jill Wine-Banks as guest speaker).

Your progressive dinner was a courageous undertaking, Moon. That's a lot of people. My favorite "lasagne" these days is made with slices of cooked eggplant and often without any meat. I've never had a seafood version. The photos are great.
Yesterday was a late lunch day. DH surprised me by volunteering to go to Silver Sneakers exercise class at the gym at 11 am. The leader on Mondays is Ed and he does a good class focusing on range of motion and balance. The entire gym is full of older folks, including men. Afterwards we went home to shower and change and got to Pontchartrain Poboys about 1 pm, having remembered on the way that Monday was a holiday. PP was packed even that late but we spotted a couple we know from old tennis days. They had ordered and were waiting for a table. We ordered and joined them.
I had an oyster poboy, dressed. Which means lettuce, tomato, mayo and pickles. It was good but not amazing, as I had anticipated. The oysters were a little overcooked. DH had a catfish and shrimp plate with fries. I shared his fries and the other couple had ordered onion rings and shared them with dh, much to his liking.
Dinner last night was Dot pretzels and chardonnay. The good pretzels from ND that you buy, Minus.

Red Boat fish sauce - my favorite. I use a lot of it. Unfortunately, I have to leave town to buy it. At my last trip to the international market, I snagged a large bottle.
I find Dots pretzels in st. Louis before the holidays and bought a small bag. DH loved them and now keeps asking for more. Added to the list of things I have to leave town to buy.
I slept badly and now am tired today. The realtor is coming to take pics of the newly painted and redecorated bedroom, so we can relist the house. Dinner will be pot roast in the pressure cooker.
Carole or Sandy, have you done chicken wings in the air fryer?

Today is "fake" fish tacos.
I was at the doctor today for my commercial driver license medical exam. I passed, which isn't hard to do. As near as I can tell, the exam merely makes sure I'm actually alive...and that's about it.a

Dot Pretzels - I get them at Total Wine. It is an amazing store.
Off to a meeting at the Cop Shop. This month's presentation is about sex trafficking. Rush dinner was a gin & tonic, two halves of a Thomas Cranberry English muffin and a couple of slices of Monterrey Jack cheese.

i had to comment, ChiSandy. I was in NOLA with my husband years ago. DH group went for poboys. I shocked everyone ordering them with no sauce. LOL. I hate any mayo or sour cream based sauce. I did get shrimp sauce on the side and enjoyed my poboy. LOL My polish parents disowned me. (They couldnt believe any self respecting Polish person would not like sour cream) LOL
DH is still sick, so I didnt bother with cooking. Just had a turkey sandwich. But tomorrow I gave to cook, as ive gok t to use up the hamburget in the fridge, and I have a Home Chef box coming.

In my house it’s a cardinal sin to put ketchup or relish on Brats, I only use mustard only over sauerkraut. My mom always made them that way because of our German heritage, even when my stepdad came into our lives (he’s of German heritage as well).
Anywho, it’s bacon cheeseburger meatloaf, with potatoes and salad tonight

Tonight was crab cakes made with lump crab meat and steamed broccoli with lemon juice and butter. Delicious.
Tomorrow we head to OK to visit my youngest brother.

Hospital food for a late lunch/dinner. Sharon and I took MIL to the hospital for hip (joint) replacement surgery and stayed until she was done with the surgery. All went well and, as expected, MIL is spending the night in the hospital.

Eric - are you still working with large emergency situations? Or did that go away too when you retired? One of our main hospitals now has a "food court" instead of a cafeteria. The choices and the food are much better.

My only retirement was from the "day to day" job at Verizon. I still do "the other stuff".
This hospital also had the food court as well--salad bar, grill, deli and a section with pre-made sandwiches and such. The food was OK..nothing special, just OK. Still, it was better than the MREs I usually eat for the first few days of a deployment. They are OK, but the ones I've had are kind of bland...which is why I keep a quart bottle of Sriracha or Tabasco sauce in my gear.

More snow here (hamster flakes in fact), to be followed by rain, then more snow, then rain again and more snow. Right now it's above freezing and the snow is melting as fast as it falls. Crazy stuff.
Reverse seared thick pork chops with apple cider pan sauce tonight. Since this includes sauteed apples, the only other side will be baby peas.
My friend brought me her air fryer to try and I'm deliberating on what to do first.- onion rings? Shrimp? Cod fillets? Chicken? Decisions decisions.

Never used air-frying for wings, as I usually either order out or buy them fully-cooked and nuke them.
Last night was my "birthday-eve" dinner at Everest (gourmet Alsatian) in the S. Loop, and opted for the tasting menu. Amuse-bouche was a trio of broccoli emulsion, sunchoke soup, and fried cod over apple-cabbage slaw. First course was cold poached lobster; second was seared foie gras; third was ballotine of pheasant stuffed with foie gras and wrapped in braised cabbage, with a side of root veggies (mostly rainbow carrots) and "fromage blanc" spätzle; cheeses (Prairie Breeze cheddar, Brie, Laura Chenel chêvre, and a terrine of MN blue cheese with walnuts); palate-cleanser of Campari-blood orange sorbet in a grapefruit gelée; dessert of chocolate soufflé with crème Anglaise and a dollop of Ovaltine (!) ice cream; petits-fours and a chocolate mini-terrine for my birthday (I will take a carb blocker before I eat it tonight). The portions were small enough--except for dessert--that I didn't do much carb damage.
Snowing on & off today through Sat.--streets clear for now. Bob is leaving Union Health now and will get home in time for an early dinner. Not sure whether to walk to B'way Cellars or risk driving somewhere--thinking of seafood or tapas. Still can't believe I'm 69--when I was in my 20s, I thought that when Y2K rolled around I'd be too ancient to enjoy it at 49!

Pasta bolognese with a lovely butter lettuce, onion and tomato salad tonight. I also made some chocolate chip bars the other day upon request from DH, so we had a sweet ending to the meal.

We went out tonight to Band of Bohemia--a Michelin-starred brewpub in Ravenswood (2 mi. away). It was awesome (and 1/4 the price of Everest). I started with a walleye pike crudo (with hon shimeji mushrooms, gochujang, sesame, mini lime leaves & egg yolk). Bob had naan with deep-fried eggplant & hummus. My entree was venison loin with leek-horseradish crema, venison demiglace reduction, collards, pureed red beets and tempura golden beets. Bob had a posole-braised pork shank with crispy radishes & hominy. I decided to indulge in dessert: a cloud of coconut-lychee foam enclosing red shiso sorbet. We shared it to "mitigate the metabolic damage," though it was light and not too sweet. Not just that--we parked right out front for free, since the street wasn't even metered.
So Gordy & Leslie gave me a trio of culinary gifts: a wireless BBQ thermometer, a 3-tiered swiveling bamboo salt box, and a mini-smoker (wood chips included). So I think maybe I'll pick up some cod or rockfish tomorrow and have a surf & turf with the leftover venison I brought home tonight.

Went out to dinner tonight for our "date night" and had grilled salmon with a mango-type salsa, scalloped potatoes and asparagus. Very tasty!

Fake fish tacos are made with a "fish like stuff" that tastes, acts and has the texture of real fish.

Never heard of the "fish like stuff" - what is it made of, & where does one find it? Just curious.

I'm assuming it's similar to the fake hamburger stuff?
What confuses me is if you are a hard core vegetarian, why would you want something that tastes like beef? I get it, maybe it's more healthy & likely more environmentally beneficial than eating cows, but... My DIL has been a vegetarian for 25 years my son said the "incredible burgers" made her nauseous.

I'm not a "hard core" vegan. DD talked Sharon into trying it and Sharon likes it...so I'm going along with it. :-)
Once we learned what spices to use, the meals have become quite tasty.
As for the meat substitutes, I agree that it isn't really necessary and almost strange. Having vegan food with the texture and taste of beef, fish or chicken is, to me, like having Chinese food that tastes likeTex-Mex.

I like those Boca burgers but haven't been able to eat them for years as they are soy based.
There was no clear line between lunch and dinner today, but I had a pear, tangerine, tomatoes, carrots, broccoli, mushroom risotto from scratch, a few olives, two cookies and some caffeine free tea.

We’re visiting my youngest brother in Locust Grove, OK. Yesterday we drove a couple of hours to Pawhauska, the little town where the Pioneer Woman has her store and restaurant housed in a handsome old building.
We had a one-hour wait. I did a carb splurge and ordered chicken fried steak with mashed potatoes. I wished I had asked for the white gravy on the side. There was an abundance of gravy which made the meat breading soggy. The food tasted good but not exceptional. I ate about half.
I had an excellent latte upstairs in the coffee and pastry shop.

Dinner was Laurie's Salsa Chicken & black beans. YUM. Because I had leftover mashed potatoes, I served the chicken & sauce over those. No hidden calories right? Later this week I'll have leftover beans & chicken in flour tortillas.
Served with a Sauvignon Blanc from Marlborough, Australia.

No kits. I'm looking for my dad who can no longer do most of his daily activities of living including cooking. Does anyone have experience with a cooked meal delivery service with good customer service, flexible in changing things healthy meals with cooked veggies, good selection, and doesn't cost a ton? TIA

I know Moon had food delivered but I believe it is a kit that you have to cook.
Where your Dad lives, do the grocery stores have ready meals in their delis? Both Kroger and HEB had delicious sounding meals here and all you do is heat. And they both deliver, although I've never used that service.
Edited to add, if you Dad is in CA, I'm pretty sure Safeway has similar options.

Someone mentioned meals on wheels. He may qualify. They don't mention looking at income, only inability to shop or cook yourself. He's 81 and has a caregiver but doesn't cook so no real meals for him.

Artista - It's hard to believe a caregiver wouldn't put a meal in the microwave for him. But I understand shopping could be a problem. As he aged, I 'disconnected' my Dad's stove & got him an electric kettle with auto shut-off and a wide slot toaster, but he still used the microwave at 95. Especially to warm up cherry pie. Please do let us know if you find a good solution.
