Minus, I got the recipe I like best from Epicurious.com so I copied/pasted it below. Not sure why it posted with ingredients after instructions but anyway, you can sub any meat for the beef and any type of steak as well, not just flank steak. You can find lo-mein noodles online at Amazon or you can use thin spaghetti or spaghetini. Also, you can add any veggies YOU personally enjoy. I use broccoli and cabbage in mine if I have some.
- Cook noodles in a medium pot of boiling salted water according to package directions. Drain and rinse with cool water; set aside.
- Meanwhile, whisk oyster sauce, soy sauce, vinegar, and honey together in a medium bowl.
- Slice beef against the grain as thinly as possible. Transfer to a medium bowl and toss with 1/2 tsp. salt and 1/2 tsp. pepper.
- Heat 2 Tbsp. oil in a large wok or skillet over high. Add beef and cook, tossing often, until medium-rare, about 3 minutes. Transfer to a plate.
- Heat remaining 1 tsp. oil in same skillet over high. Cook garlic, ginger, and half of the scallions, stirring, for 30 seconds. Add peas and bell pepper and cook until vegetables are softened, about 1 minute. Add oyster sauce mixture and reserved noodles and cook, tossing with tongs, until everything is coated and sauce thickens slightly, 1–2 minutes more. Add beef and stir to combine.
- Divide among plates and top with remaining scallions and black pepper.
- 8 ounces lo mein noodles or spaghetti
- 1/2 teaspoon kosher salt, plus more
- 1/2 cup oyster sauce
- 1/4 cup low-sodium soy sauce
- 1/4 cup rice wine vinegar
- 3 tablespoons honey
- 1 1/2 pounds flank steak, chilled
- 1/2 teaspoon freshly ground black pepper, plus more
- 2 tablespoons plus 1 teaspoon toasted sesame oil, divided
- 2 large garlic cloves, pressed with a garlic press or finely chopped
- 1 1/2 teaspoons finely grated ginger
- 3 scallions, thinly sliced, divided
- 8 ounces snow peas
- 1 medium red bell pepper, cut into 1/4"-thick strips

Lacey, do you think all those cookies will be eaten? I'm visualizing a crowd of fit, thin young people who eat vegan or that other popular diet that doesn't come to mind. The one SpecialK's daughter has adopted.
My meal rotation has shrunk again. What's for dinner? has become a challenge each day. I have some 8 oz. packages of ground lamb that I need to cook. I'll do some googling of recipes in search of an appetizing and non-fattening preparation.
Much of yesterday was spent at the hospital where dh had a scheduled leg stent procedure and had to lie flat on his back for hours afterwards. I went to the local Piggly Wiggly with limited selection at higher cost but fast in and out and bought a package of chicken legs. I breaded them with Italian bread crumbs and roasted them on a pan with a rack until they were very brown. The side was the saute-and-brown-in-butter diced yellow squash dish I described recently. The meal served the purpose of dinner but wasn't memorable. SpecialK's "uninspired" was a fit label!
It's storming here today. The radar is a thing of wonder.

Laurie, Moon, April, Joyce !!! So glad to see you all. Thanks for the Lo Mein recipe & the chicken enchiladas. I thought the idea of pouring the latex paint on newspapers to dry was a good one. Joyce is your DH still golfing with Michelle's DH? How is their family doing? Laurie - hard to believe your boys are so "old". Great that you're working at the school so you can be on the same time schedule. Are you still camping? Lacey - when is this famous shower? I hope Carole isn't right and all the sweet young things gorge themselves on your treats. Moon - was your DH planning on retiring before the accident? Hope he is totally recovered. Sorry I don't do Facebook but I'll look for you here once a month. Illimae - I loved hearing about your vacation on one of the other threads. Even with a cold, your Cod dinner looked good.
I got hit with another darn cold so my meals for the last couple of days have been soup & more soup. I might try to vary it today with eggs. Or noodles w/butter. Think of the excitement!! Somehow I can't bring myself to eat green salad or crispy veggies when I have a sore throat.

My Google search took me to Epicurious where I found a recipe for Shepherd Pie that sounded good. It's all ready for a session in the oven when it's closer to dinner time. I also have the romaine washed and spun in preparation for a salad.
Eric, something really odd happened with my computer. After using Chrome for months, all of a sudden it wouldn't open. I downloaded it repeatedly and finally just gave up and started using Microsoft Edge. Today all of a sudden Chrome opened up. Very mysterious.
It's almost five o'clock. I hear wonderful sounds in the kitchen. DH making drinks.

carole - I go straight to Greek with lamb - I love a gyro with the lamb, cucumbers, tomato, green pepper, red onion and feta in a pita, with tzatziki on the side. The other option would be all of those ingredients stuffed into peppers.
I am resting after oral surgery this morning. They drew blood and spun it to separate the platelets and plasma which were injected in my jaw before the anchor was placed. Easy, peasy with a local - drove myself to and from. Tried to eat some grits a minute ago - didn't go well, lol! I'm better off with yogurt. Also cut up a banana into small dice and ate it with the yogurt. Have to be on antibiotics so the yogurt is dual purpose. Had a big steak last night in prep for this, lol! I will make something tonight - which happens to be Keto - that I used to make but haven't in a while. Flattened chicken breast stuffed with a cream cheese and scallion combo and rolled up and wrapped with bacon and baked. One of DH's faves. I am going to try baking medallions of zucchini that are topped with marinara and cheese. Will prob also do a salad since I have ripe avocado that needs to be used. I will be eating none of it - ha!
minus - bummer onthe cold - I will be joining you in the soup consumption.

special - hope the recovery is easy. You've really had a time. Did you have to stop the Prolia shots ahead of time? Or was that why the special blood injections? Did you have to have the bone graft 'powder'?

minus - my MO had stopped Prolia in March of 2018 because I had been on it for 6 years and he wanted to see what would happen if I went off. This problem was discovered late last fall, right about the time I would have gotten the next injection. I had an appt with my MO when the need for extraction arose to check in with him and he removed me from letrozole as well. This was to optimize the bone health from the extraction and yes, the bone graft powder stuff, lol! I had a DEXA in Jan and had lost no density, but being off letrozole prob helped. Had an appt with the surgeon a couple of weeks ago, bone graft worked great so we went ahead with today’s implantation. The bone death issue was not caused by either drug thank goidnesd - this was an old, old crown/root canal done when I was in high school! So, things look good and I will have the new crown put on the post in about 6 months. Long process but I love the oral surgeon - he is such a happy guy! The PRP injection is to speed healing and reduce inflammation at the surgery site - he does it for everyone.

HI Minustwo, thanks for thinking of me. I'm doing ok, fighting arthritis, but working with treatments and herbs for pain.
I must say I lurk a lot....I love all the ideas for meals.
When I was traveling before my dx in Europe, I ate my way through some wonderful countries. I look forward to doing that again.

Val - glad you have found some treatments for the arthritis and hope the herbs are helping too. Nice to see you. The increasing side effects of age are a continuing revelation to me. All of them have happened fairly directly after cancer, so I'll never be able to tell if they might be the result BC and treatment or just aging. Oh well, I'm just not 25 anymore, or 50 for that matter. But I resent the fact that my body often won't do what I want anymore. (so much for crewing on a sailboat in the Carribean)
Breakfast was Auntie Chun's "Japanese-Style Udon Soup Bowl". It's non GMO & Vegan but sometimes I add chicken or shrimp or shiitake mushrooms. I do like her products.

I came back from Vietnam and stayed a bit at home for 4 days then went to work in Boston for a few weeks then took my daughter and grandson to New Orleans for a three day vacation last weekend and went back to work.
I am so tired I can't thing straight and still have to finish this job 4 days a week for three weeks
I am thinking of going to Portugal, Scotland with the Isle of Skye, or Mongolia to ride a horse through the country with the Nomads and sleep under the stars in a gurt. You just never know, do you?
I am glad that everyone is doing well.

I made a delicious Rosa sauce for dunch. I smushed a pound of Campari tomatoes that needed to be eaten, added garlic & onions and simmered to reduce. Then added heavy cream. I was going to add shrimp, but couldn't get motivated to find them in the garage freezer, so I added mushrooms instead. Quite tasty over penne pasta.

Sorry I haven’t posted for awhile (except in the Drinking thread), but I’ve been unable to post photos on BCO lately due to iOS saving them as HEIC files and not giving me a way to convert them to JPEG. (If you try to post an HEIC photo here, you get a white box with “true” in the lower left corner). So once I’m home with my actual computer (and over this rotten cold I caught in a crowded market in Jerusalem), I will try to describe as many dinners & post as many pix as I can. (Stopped photographing food & drink since the file format problem began).
I’d do it now in my Tel Aviv hotel room, but I feel lousy and have to check out in half an hour. Most of the day to kill, as my flight back to JFK isn’t till midnight. Will take a free city tour offered by the hotel (and the diamond center). Then a very light supper and crash in the lobby before I retrieve my bags and head to the airport.

Chicken enchiladas and overcooked yellow rice last night. I almost always make (perfect) brown rice in the pressure cooker but it seems I haven't figured out the correct formula for other colors.
It finally feels and looks like spring here. 75° and buds popping out on trees and bushes. The bird song is loud. Wonderful.
In spite of the warm weather we're having ham and beans tonight mainly because I want cornbread.

thought Id check in today, as DH is up at the farm and its quiet. LOL. This was a busy weekend though. On Friday, DH went bike riding fir the first time since he broke his neck. I held my breath the whole time.
Yesterday, DH went fishing on Lake Michigan with a friend. Mind you, it was 45 degrees on land. On the lake he wore,: boots with wool socks, lined pants, down coat, wool sweater , avitor cap and gloves. He said he was "chilled" id have been frozen stiff. However, it led to supper last night after he came home with 2 lovely filets of lake trout. Cooked it much less than normal as it was hours fresh, and he couldnt stop raving. Served it simply with butter, and a squeeze of lemon accompanied by a baked (nuked) potato and peas. Took about 15 minutes to pull it together. LOL. It was good! He also caught a 38 in muskie, but had to toss it back, no license for it yet! LOL.
Then today we went to our DD2 church as the 4k class was singing. So cute. Went to a chinese buffet nearby for lunch.
Then, he went up to the farm. Found out that someone had gotten in, so had to deal with all that. Changing locks on both houses, and trying to get keys to everyone before Turkey hunting in 10 days. Since everyone got the same week for hunting, theres going to be 8 people for turkey hunting, almost as many as deer hunting. LOL. I would have gone up with him this week, but Im still covering the arthritis water exercise class on Monday mornings for my friend who had hip surgery. Ive been doing it for 3 months now. She is doing better and soon I wont be commited to every week, and can go back to enjoying them instead of leading them, although i enjoy it. But covering Monday beats covering both Thursday and Monday, as I did for 3 weeks when the other leader went to visit DGkids in Tennessee.
Supper tonight was leftover rice from Friday, leftover peas from yesterday and onions. I snitched the steak strips that were meant for lunch tomorrow as well . LOL.
Went shopping yesterday, and noticed all the Kosher for passover food is out. All the ads on FB too. Between that and Easter things, its interesting reading. Of course, last week, it was Solstice. LOL

Sandy, sorry about the cold. Not welcome at any time but especially not during travel.
Last night's dinner was thin chicken breast fillets, sauteed cabbage and romaine salad with many additions. A quick dinner preparation.
Tonight will be a meal at Crabby Shack, which has $8 a dozen raw oysters on Monday.
We're back into Rainy Season. The outdoors is a giant greenhouse.

Ah, Nance, I was hoping I could help with the yellow rice recipe but my Instant Pot guide to rice cooking only talks about brown, basmati, and jasmine. Hope you find the answer. I love cooking a batch of rice in the IP, makes enough for all when there are 7 of us at table or wonderful leftovers when there is just we two.

The shower did seem like an “unshower" at the new “industrial style environment" brewery....clearly a party for all the young families who are DS2 and DDIL's friends and co-workers. We knew most of these young folks growing up and it was a fun “baby parade" for us oldies! There were dogs at the place, too. Hilarious! Fortunately, our party was in a separate section so no pooch vs toddler issues to contend with. DH and I are so out of the “new" social convention loop...our heads were spinning!
I must now get back into my regular schedule and clear out my “baking stuff laden" kitchen and dining room, since a friend is coming to visit tomorrow. Then we need to clear out DS2's former bedroom (of mainly my storage!) since he's coming over on Saturday to set up a crib and make the space baby friendly. Guess we will really know what it's like to finally have a “local" grandchild.
Here is a pic of the dessert table. The only item I never got to baking was one of my favorites, Mexican chocolate cookies. But amazingly everything else got done. I had to squeeze it all onto the one small table they provided.
Cutting up pieces of licorice worked well for the caterpillar “hairs", feet, etc. Monica, this could be a cute project for a birthday party for your grands. The kids all loved it.
I have absolutely no clue what we will do for dinner tonight. Hope something without freezer burn lurks in the freezer

Wow Lacey. You did a magnificent job. I thought there was some time yet before the baby is due? What's the rush with getting the room cleaned out? Anyway it's not like they're likely to leave the little one overnight with you for the first month or so.
Moon - so glad to hear all your news. DH has had an amazing recovery.
Brunch was a pumpernickel bagel. Only one more left in the freezer. Dunch was open faced grilled cheese - Haravti on sourdough - and a bowl of Brussels sprouts, along with an ice cold, tasty Portillo Savignon Blanc from Australia. I took out a frozen dish of Laurie's Mexican Chicken for tomorrow.

Nothing exciting here either. Leftover ham and beans and a new batch of cornbread as DH and I both were dissatisfied with last night's effort. I made cornbread sticks in an antique mold that was my dad's. Too shallow and produced an inferior product so tonight it was back to my cast iron skillet. Old reliable. DH has a "man cold", which as you all know, is ten times worse than the ones you and I get (I bet Eric doesn't get them.) So he was happy enough for the "soupiness". I did promise him sloppy Jim's (aka sloppy Joe's) tomorrow night because he's sick.
Lacey the spread is adorable, especially the caterpillar. Great job!
