So...whats for dinner?
Comments
-
auntie - I am getting in the car and driving to your house for applesauce. I will get there in time for filet, twice baked potato and a very delicious sounding cake! Not sure how you will explain to your DH why I am there but you'll think of something. Lol!
-
No idea about dinner. Today is DH’s birthday and he was thinking Outback but is now feeling ill from some ginseng tea at the local Asian market. I had a hunk of cheddar, some almonds and a snack size bag of popcorn, now I wait and see if he’s up to going out later or not.
-
Nance - I can probably make it by tomorrow too. Oh my that dinner sounds delicious. I'll even give up a share of the meat if there will be enough of the twice baked potato and of course the cake. Hope he's appreciative.
Illiemae - sorry your DH is queasy. Maybe you can celebrate tomorrow. BTW - my ex-DH is treating me to Hughies tomorrow. I'm trying to decide whether to try the vermicelli bowl or have a bahn mi. Thanks so much for the introduction.
Dinner was cod sprinkled with Foxpoint seasoning and rolled in Panko - then baked. YUM. The side was yellow squash with onion & garlic and some leftover broccoli that I tossed in with the squash towards the end.
-
Minus and Special - you would all be welcome!
-
Lacey, my mushrooms were stuffed with green onions, bread crumbs &cheese
-
A frozen Frontera Taco al Pastor bowl (Nat'l Taco Day, after all), to which I added some rice, corn kernels and red beans since like most frozen meals there's more sauce than anything else.
Gonna turn in early--Bob's down in Oak Lawn and I have my first back PT session at (ugh) 9:30 am.
-
Count me in on your dh's birthday dinner, Nance!
Tonight will be either chicken breast or catfish fillets. Haven't decided. I may just pack for the trip to Nance's house in MO!!!
-
I went back to Hughies today for more Vietnamese food (thank you Illimae). This time I tried the Vermicelli bowl with grilled chicken. The chicken breasts were pounded very thin and then grilled with lovely light spices - but I couldn't identify what those were. Even cutting back on the delicious Vietnamese egg rolls, I still have enough leftovers for a full meal.
-
minus, great! I was hoping you’d pick the bowl, so I could hear how it was. I take it XDH enjoyed Hughie’s too?
-
Illimae Great news! And before a three day weekend!
Lacey and Minus you have been bad and now you have to make it up. I just came back from Martha's Vineyard with DD and Grandson- he is 17 months now. I ate lots for fried things and now have a fit bit!
Carol and Auntie I miss lobster too. My daughter is deathly allergic to it so I feel uncomfortable eating it in front of her. Auntie, I thought you were having beef Lips I thought "eww"
Patsy that looks good
Chi hope your PT goes well.
Had an US yesterday and sat around thinking about it today-I'm scheduled for a bx tuesday. I thought, "Waaiiiiiit a minute...I know what that looks like...." MD said "Could be fibroadenoma" when I called him. I said, "Nope, it had arms and legs" Finally got him to say if it was positive, would likely be no more than another lumpectomy and radiation. I can do that. Still working but only in Ma or RI and 2 days a week. Here's a rare pic of me and the grand. I'll take it down in a bit. DD would kill me.
Enchiladas and beer for dinner-don't get excited, I keep frozen pepper, onions and cheese in the freezer and make them in the microwave.
MOmmy From what I remember, you have outdone yourself!
-
Well crap Bedo, that just sucks. Hoping for the very best scenario. ((Hugs)) love love love the picture❤❤
-
PT agrees with sportsmedicine ortho and my MO that my backache isn't mets, even though the episodes are getting more frequent: the pain isn't in the bone, can be repeatedly reproduced by stressing certain muscles and tendons; and the fact that I have scoliosis, spinal spurs and squished discs (all visualized on X-rays), bursitis, and weak quads, abs, hip flexors, psoas, leg length/hip height discrepancy, and flat pronated feet all scream "musculoskeletal." I've booked my first 6 sessions, plus getting a podiatrist referral for new orthotics.
Probably will reheat the rest of the steak from Wed. night (unless Bob wants to go to Eataly and the movies), plus broccolini and roasted carrots.
-
illimae - yay for good news! So happy!
How fun would it be to be at auntie's DH's birthday dinner!
bedo - what a sweet pic of you and DGD! I am sorry you are having to worry about a biopsy, but know we are all pulling for you and hoping for a benign result!
chisandy - hope PT is good for you - I had extended PT treatment in 2015 - most of the year - for multiple gluteus medius stress tears coupled with fluid and trochanteric bursitis in the left hip, and while it was a slow process, it did wonders for me. My sports medicine PT at USF also used US and both heat and cold, and awesome myofascial release massage. This made all the difference and I hope it can for you too! I also have a history of L4/5 disk issues, but the bi-lateral hip and lumbar MRI that led to the hip diagnosis also showed bone spurs, and degeneration now at L3 and T12, and I have one leg slightly longer than the other as well - so I feel ya on the crumbling/back pain thing. It is truly no fun at all. I have weak everything due to 17 surgeries since 2010, and I really need to get back in the gym and work on the fitness. My new problem, diagnosed on Wed is a rather shocking amount of bone loss under a crown discovered at my regular cleaning last Monday - even the endodontist said wtf? It looks like it will require extraction, then grafting and an implant - if that can even be done. Maxillofacial surgeon appt is next week (on my birthday...) and bringing in my MO to the discussion the following day since I was on Prolia for 6 years. Of course, the prospect of ONJ is ugly, as is bone mets. This did not show up on dental x-ray at all, only on cone beam CT. Ugh.
-
Special, bummer about the possible ONJ. Its specter haunts me too, as I've had 2 yrs. on Prolia and 1 more (2 shots) to go (plus that initial Zometa infusion). I understand that the progression of ONJ might be arrestable, and bone grafting looks promising. (There's always a Maryland bridge).
I had the exact same problem as you back in Feb. 2015--my gluteal tear & trochanteric bursitis came first from shoveling snow and then walking 1/2 mile through deep, undulating snowdrifts (practically "moguls" on the sidewalk) during a blizzard to & from a Super Bowl party. Actually had to use X-C ski poles. I didn't get P.T.--just scripts for Flector and Lidoderm patches from my PCP and a cortisone shot from the sportsmedicine ortho I also saw Wed. for my back. It lasted 6 weeks--a whole helluva lot of walking, even with a cane, was what helped. Maybe they're a bit wary of therapeutic-level US and electrostim for me due to fears of shaking the knee implants loose. We'll see--today the therapist did a rolling wand massage on my IT bands and sent me home with a couple of exercises (clamshells, lower-ab contractions). The X-rays & physical did show that my hip joints themselves are very minimally degenerated--unlikely to need replacement any time in the next 10 yrs. (Mild osteopenia in one femoral neck and borderline normal in the other, per my repeat DEXAScan in Nov.).

Bedo, love the picture! Your grandson is so cute. Hoping for benign on the biopsy.
DH brought home 10 lbs of beautiful large shrimp today. I headed them and portioned them into freezer bags with water.
The catfish fillets for dinner with cauliflower mash and romaine salad. The veggie part of our menus is a challenge. I may have to resort to frozen.
-
Special, c'mon down (or up rather)! We need a party - you and Sandy have had more than your share of issues.
Carole, 10 pounds of Louisiana shrimp is wealth indeed! I hear you about the veggies. I really only like fresh vegs and DH doesn't like cruciferous (he will eat one tiny stem of broccoli) so I frequently have to feed him frozen peas while I have whatever is in season. We frequently have potatoes in one form or another, although I often have a sweet potato. Another of DH's dislikes. Sigh.
-
auntie - I need a party too!
All - the house closing finally happened this morning! It was delayed after the hurricane because they couldn't summon all necessary closing parties. That triggered a 10 day extension, but then the lender needed additional documents from the buyer (divorce court and IRS - eeeks!), which he couldn't provide in a timely manner (I mean c'mon it's the IRS) and the closing attorney couldn't get processed within the 10 day window, so another extension happened with a additional earnest money. That brought us to today - buyer now owns the house and the wire transfer is complete - yay!
-
Oh my, oh my - 10 lbs of fresh shrimp. I'd believe I'd have died and gone to heaven.
Bedo - I'm so disappointed I didn't log on soon to see the picture. Glad to hear your GS is a cutie. But I think of you often. Found my 'elf' hat the other day. Hope the biopsy shows no problems.
Nance - interesting about men & cruciferous veggies. My grown son is only interested in green beans or corn.
-
Woo-hoo! The festival we're playing on Sunday contacted us that they'll be setting up the main stage indoors in a pavilion, out of the rain. So we're still on!
-
Lots going on here on this thread....
First of all, I want to join that dinner party at your place, Nance! Sign me up! 😊
Sorry I missed your fam pic, Bedo! And even more sorry that you are facing new procedures when they should be firmly etched in the rear view mirror. Sending hugs and best wishes to you for a good outcome.
Special, so glad that the house closing is finally complete! Your tooth saga sounds familiar....last year I started a year plus long procedure to deal with significant bone loss under a crown...had the extraction, grafting for bone growth, then the implant procedure(s). This process started last June, and at the end of this month, (a full 16 months later) I am finally going to have the impression done for my new crown. I’m expecting to miss that space in my lower right quadrant!
Last night after our Celtics’event, (where we ended up never eating anything due to our priority of meeting players, having pix, etc)we picked up a few pieces of pizza from a place we pass after every game on the way to the parking level. The aroma of the place always lures me, but since it is always way past dinner time at the end of games, we never buy pizza there. Well, we never will again since we eagerly heated and ate the pizza at home, and I was so disappointed since the crust was like reinforced cardboard! It landed like a brick in my stomach, so I think I’ll skip that in the future. Sure smells good tho....
Today we drove to NH, sharing the highway with what seemed like half of the population of Mass. Our usual two hour trip took four! Today’s NPR broadcast did not add any fun to the trip, nor did my prolonged worrying about whether we'd arrive to a house full of mice! So, we decided to stop for dinner at the 3 1/2 hour point, having a quick meal at the Tilton Diner (I had truly been obsessing about making dinner here while chasing mice). I had a Greek omelet with raisin toast and fruit cup for my breakfast/dinner, and DH had a delicious fried haddock sandwich with swt potato fries. Well, we were very relieved to find NO MICE in the house. Yay! Dinner done and no need to hunt mice down. So instead I quickly got a good fire going in the woodstove to warm this place up. It is really chilly here
Tomorrow morning DS2 and DDIL2 arrive for the weekend. It will be nice to spend a good long time with them. DS2 suggested we order take out for dinner tomorrow and Sunday we’ll be at the lobsterfest. I won’t post pix so as not to torture my midwestern lobster missing friends. But, that said, I would love my DH to arrive home with 10 lbs of Louisiana shrimp! I’m curious about you freezing them in water, Carole. But what a nice welcome home for you both!
Thanks for the mushroom info, Mommy2.
Illimae, I hope you got out for a celebration, and that your DH is feeling better.
-
Lacey, I count out eighteen shrimp (these are very large) into a quart zip lock, then cover the shrimp with water, squeeze out the air and seal. The shrimp are as good as fresh when I thaw them by dropping the bag into a bowl of water. I leave the shells on but not the head. I use the same method with fish. No shells, of course! I learned this method because it is commonly used.
-
That's how my mom used to freeze the crappie my dad caught.
-
That's a good fish freezing tipto know. Thanks Carole!
Nance, I wonder if “crappie" would have preferred a different name. 😉
-
Ha ha, I don't know lacey, it's genus is Pomoxis, which sounds like a disease. Fwiw, it's pronounced croppie lol.
-
Yw Lacey!
Picked up a Butternut Squash today. Thinking about making soup with it one night, just got to see if I have a recipe.
Hubby is making spaghetti and meatballs for dinner.
-
Special - I missed the house closing. Hooray!! Done.
Carole - we always used to freeze shrimp in saltwater. That said, we used the water from the bay where we caught them. I don't know how it might work with tap water & table salt. Do you add salt?
Lacey - loved your long post. How lucky - no mice. I too had a tooth that broke off so - extraction, a 'post', powdered bone and a long wait before I could get the actual implant. Thank heavens this was before I started Prolia shots.
Supper was "clean the fridge" - a couple of pieces of delicious left over Cod and a big bowl of macaroni & butter. And I also had to finish the last of the wine from earlier this week that I found disappointing. Waste not want not (for those of you old enough to remember that saying)
-
Spaghetti Bolognese--had to use up the jar of sauce (which had these neat little pork mini-meatballs) so I made it for two...then Bob came in with cavatappi Bolognese and a tuna poke appetizer! Will see if we want to share all that when I return from my gig tomorrow (play till 5, likely home by 6), or got to Eataly & a movie.
-
Well, DH and were going to head out of town for his birthday but a friend needed help painting his house after his Hurricane Harvey repairs. We left at 7 am and returned at 10:30 pm with cheeseburgers. Going back tomorrow to help finish the job. Long day, goodnight all.
-
All my instruments (guitar, std. and 6-string dulcimers) and gear (cables, stands) are ready to load into the car tomorrow. We're on at 3:55, they want us there an hour before--but because I no longer have an HC permit, I don't know how close I can park to the pavilion where the main stage is located; so I have to allow time for a few trips between car & pavilion. It's a 40-min. drive but I'll allow an hour for weather & traffic (fortunately, the marathon is at the other end of the Chicago area). I figure I'll be okay leaving here at 1 pm. It'll be nice to have our instruments indoors, in the shade this year.
-
Minus, I don't add salt to the water for freezing shrimp and fish.
LOL on crappie pronunciation. When I heard MN folks talking about "croppy," I had no clue the name was spelled "crappie."
I did a cooking marathon this afternoon. Made stuffed peppers with yellow bell peppers and put three dinners in the freezer. The stuffing (dressing) was cooked wild rice and turkey Italian sausage with green onions, garlic and onion powder, cayenne pepper, grated blend of cheeses, and a can of Rotel tomatoes with the liquid drained. It was tasty. The wild rice was a bit chewy even after cooking 50 minutes. I have a quart freezer bag with leftover stuffing.
I blanched the pepper halves in the microwave instead of blanching in boiling water. Three minutes was the time for my microwave.
I also used three eggplants making my layered eggplant dish. The tomato sauce was Rao's with turkey Italian sausage. Included in the layers was a liberal amount of grated Italian cheeses. I have two dinner courses in the freezer and a third smaller container in the refrigerator for dinner.
I am also marinating a pork tenderloin in a garlicky mixture to roast for dinner. Sadly, no fresh rosemary growing on the patio. We will have a tossed salad tonight, too.
Needless to say, I was a little weary after all that cooking, but it's nice to have a few freezer dinners for days when I arrive home and don't feel like cooking.
I got out the literature on my air fryer to reacquaint myself with ways to use it. Soon (I hope) it will be cool enough for oven cooking.
