(I make great dressing, but this year I am strongly considering 'cheating' on the mashed potatoes....what I'm thinking of doing is making a whole box of Potato Buds the night before, mixing in sour cream and cream cheese, putting it in a cake pan and baking it at 350 on Thanksgiving.......instead of doing all the real potato thing at the last minute)

Do they sell canned pumpkin in the stores in Aus.? I just use the recipe on the can. Have never tried making it from real pumpkin.  One year I did follow a fancy recipe where you cooked the canned pumpkin with spices before putting it in the shell. It tasted fine but turned quite brown which was all wrong. Looked like chocolate. Back to the recipe on the label!
