    I have a question for all the experts .... Does homemade pumpkin pie need to be refridgerated ?. I use evaporated milk in it. I have always put mine in fridge. But will be making 3 for a dinner for the holidays and with the other stuff for the dinner in fridge, I won't have room. I would hate to change the pie to apple, I love pumpkin pie. I read this board all the time, but don't have anything to share like the rest of you do. I do however try some of the recipes and they are wonderful. Keep up the good work, girls, after all this is all a learning process, isn't it? thankyou  sharon

    Hi, Sharon ~  Wow, you're organized and planning ahead!  My experience has been that pumpkin pie is fine out of the fridge for one night.   If not refrigerated, they can go bad quickly, especially in a hot kitchen.  Remember, in addition to the milk, which is no longer vacuum sealed, you have eggs in there.  What about outside?  Are you in a cool enough climate to put them in a protected container on a porch or in the garage?    Deanna

    Hi sharon, yes I would keep them refrigerated. Deanna had a good idea about keeping them on a cool porch or outside. That's what I do around the holidays.

    you could put in an ice chest with some of those packets you freeze.  -- AFTER it is properly cooled off.
